Lechón (Tagalog: Litson and Cebuano: Inasal) is the Spanish word for suckling pig. In the Philippines, it connotes a whole roasted pig, lechón baboy. Chicken and beef, are also popular. The process of lechón involves the whole pig/piglet, chicken, or cattle/calf being slowly roasted over charcoal.

Lechón is often cooked during national festivities (known as fiestas), the holiday season, and other special occasions such as weddings, graduations, birthdays and baptisms, or family get-togethers. The lechón is usually the highlight and the most popular dish of these events. It is usually served with a liver-based sauce. However, in some cases, it may be served Chinese style with steamed buns and a sweet plum sauce.

Lechon in Cebu

Another version of lechón, called lechón kawali, involves boiling then frying pieces of pork.

Leftover lechón in the Philippines is easily recycled into another delectable dish, called Paksiw na Lechon. Paksiw na Lechon involves cooking the left-over Lechon by boiling it in vinegar making the meat moist and the skin very soft.

Lechon Cebu is a very popular variety of the dish.

The typical Filipino method of roasting involves placing the pig on a spit and baking it on charcoals while wiping the skin with a brush made out of leaves drenched in water and the pig’s own fat. This makes the skin “pop” and eventually crunchy.

The pig had always been the center of communal feasts in pre-Hispanic Philippines, and “Lechon” is the normal manner it is prepared, from the remote part of the country where no Westernerners ever seen to the lowland Christianized Filipinos. But only lowland Christians use the word lechon to describe it.

Yummy!

In a statement, WWF said that the study was “aimed at helping city planners and decision-makers assess climate change impacts, identify opportunities and decide on a sustainability strategy, site-specific interventions and standards of next practice that will allow the city to retain economic viability and respond more competitively in a climate-defined future.”

Aurelio “Gigi” Montinola III of BPI said during the event, “This study started slightly after Ondoy… Basically we (try to) help the cities that we’re doing the studies in.”

Most vulnerable cities

For the updated version of the survey, WWF and BPI Foundation named Baguio as the most vulnerable city to climate change impact. (See story here.)

City Vulnerability Scores

WWF, using the parameters of the 2009 Coral Triangle and Climate Change study, devised a scenario assessment to analyze the climate or environmental exposure of each city.

To add to this, WWF also measured each city’s socio-economic sensitivity through its population, tourism, agriculture, business and investments, health, and education.

Recommendations for Phase 2

WWF also looked at each city’s adaptive capacity highlighting data on labor, functional literacy, revenue, expenditures, banking and family savings for a 20-year period (1990-2010).

The study found that Cagayan de Oro city is a flood-prone area and that it needs to manage the catchment basin of Tagoloan and Cagayan de Oro rivers, and to have an “alliance with upland towns to ensure the vitality” of these catchments.

For Dagupan City, WWF recommended to “favor rainwater and surface water over groundwater.” The study noted that over-extraction can lead to “saltwater intrusion and deterioration of water quality in the area.”

Meanwhile, Laoag’s strength–its educated population–seems to be its weakness at more and more citizens tend to move overseas for work. But WWF noted that the city sits at a climate change risk point: “the city center and airport lies along a meandering river known for floods.”

Zamboanga City, for its part, is generally protected from climate change effects but its growing population poses a great risk on the adaptive capability of the area.

Climate change-prone zone

The study took into account that the country sits in the middle of a climate change-prone zone. The Philippines is barraged by an average of 20 cyclones per year, to add to the rising sea level, and sea surface temperature, paired with the effects of ocean acidification and the more frequent El Niño phenomenon.

But according to the study, “We know that climate impacts are going to be site-specific, and non-linear. We also know that climate is altering many basic business assumptions, as well as creating a new menu of economic options available to each city.”

“Consolidation is a crucial first step,” it added.

“It is also hoped that this may be a springboard for new investment incentives in “no regrets” opportunities that could serve to boost each city’s competitiveness and sustainability, as we face a climate-defined future,” it concluded.

BPI Foundation Florendo Maranan revealed during the event that they are set to conduct further studies soon soon. — TJD, GMA News

Known for their warmth and hospitality, Filipinos are often found smiling. But what comes naturally for many of us is a dream for those born with cleft deformity.

Last Christmas, while other kids her age wished for toys, five-year-old Angel Torres got a new smile. Her grandmother, Lisa Buenaventura, shared that until recently, Angel almost never got to leave the house.

“Hindi siya nilalabas ng mommy niya dahil nahihiya,” Buenaventura told GMA News Online at a press conference on November 8.

Cleft abnormality can be repaired easily, but many cannot afford the treatment. Because they are shunned and ridiculed, cleft children develop low self-esteem, become withdrawn, and forgo formal education, according to Operation Smile, a non-profit organization devoted to provide free reconstructive surgeries to children and young adults born with facial deformities.

Buenaventura said that they could not afford surgery, but after Torres was featured in an advertisement for Operation Smile’s 30th anniversary, she was operated on last December 20, just in time for Christmas.

“Tuwang-tuwa siya, nakakapag-straw na siya. Dati hindi siya makapag-straw kasi butas. Nung nakapag-straw siya, kahit tubig ini-i-straw niya,” Buenaventura shared.

The operation was life-changing for Angel, who is now able to go outside and play with other children. The operation has also made a big difference in their communication at home.

“Malaking pagbabago, kasi naiintindihan na namin. Pero dati, hindi namin naiintindihan,” Buenaventura said.

Angel, who is now undergoing speech therapy, is still shy, preferring to communicate with her hands, but her smile almost never leaves her face.

4,000 Pinoy kids born annually with cleft deformity

Angel is one of around 4,000 new cleft children born every year in the Philippines. Operation Smile said oral cleft is among the top 12 congenital defects in the country.

Cleft children suffer from low birth weight, which is difficult to correct owing to the nature of their deformity, Operation Smile said.

As a baby, Angel was very difficult to feed, Buenaventura recalled. “Halos hindi kami natutulog gawa ng mahirap padedehin itong batang ito,” she said, explaining that Angel refused to use the nipple designed for children with cleft palate, so they would use a normal nipple instead. “Lalagyan lang namin ng kaunting butas na medyo mas malaki sa normal. Tapos pipigain namin,” she said.

According to Operation Smile, one in every 10 children born with cleft die before their birthday, and 12 percent do not reach the age of five. Buenaventura noted that the sooner cleft children can be operated on, the better.

<img class="size-medium wp-image-494" title="Operation Smile has given free reconstructive surgeries for 200,000 indigent cleft children all over the world. Nearly 25,000 of those treated globally are Filipinos.

Free reconstructive surgeries

This month, Operation Smile is holding its “Journey Home” in celebration of its 30th year. It embarks on the biggest ever medical mission in the Philippines from October 25 to December 2.

Some 1,000 volunteers will perform free reconstructive surgeries on 1,500 indigent cleft children in the cities of Naga, Angeles, Silay, Cagayan de Oro, Manila, Dasmarinas, Cebu, and General Santos.

Of the 1,000 volunteers, 700 are Filipinos, and 300 are from 35 countries.

“We can describe Operation Smile as a global Pinoy. Born in Naga to American parents, and now, serving the whole world, the children of the world, that even our Filipino volunteers are participating in missions outside the country. And in this journey home, there are some Filipino volunteers coming home to give back to their own country,” said Roberto Manzano, president and executive director of Operation Smile Philippines.

Manzano said that in order to continue their charity work, they will adopt the public-private partnership approach. Operation Smile will focus on expanding its outreach programs, going to more areas, treating more children, and establishing more cleft care centers.

He noted that Filipinos can help by participating in mapping patients.

“If you want to treat more patients, you have to look for them, and we will do this with the use of technology,” Manzano said.

Developed by the Ateneo Java Wireless Center for Smart Communications, Inc., the Op Smile mobile app allows volunteers to help map patients by taking their photos using a mobile phone camera. Volunteers will then key in patient information, and send the data to a central web-based database that specialists can access.

The app will be used in the “Journey Home” missions, which Operation Smile’s founders hope will change the lives of 4,500 Filipino children through 1,500 cleft surgeries and at least 3,000 dental treatments.

It all started in PHL

“The Philippines is the home of Operation Smile. If it hadn’t been for the wonderful personalities of the Filipino people, if it hadn’t been for their warmth, their energy and involvement, I doubt that we would have ever thought about coming back that second time,” said Dr. Bill Magee, who co-founded Operation Smile in 1982.

Magee had come to the Philippines for a one-time medical mission with his wife, Kathy. Out of 300 children, only 40 were operated on. Magee recalled one woman who came up to them with her daughter at her side. The woman offered them a basket of ripe bananas, a thank you gift despite their having turned her daughter away.

“It was then with tears coming down her cheeks and ultimately, tears coming down our cheeks, that we said we really need to bring a group of our friends back to take care of those 200-plus kids that we had turned away,” Magee said.

The Magees did return, and eventually Operation Smile grew to become a global movement. Over the past three decades, it has provided medical evaluations to two million indigent individuals around the world of whom 200,000 received free reconstructive surgeries.

Nearly 25,000 of those treated globally are Filipinos, making the country the biggest beneficiary of Operation Smile, the press release said. For Magee, “Journey Home” is an opportunity to thank the Filipino for starting Operation Smile.

“It was because of you that Operation Smile began. So as hundreds of volunteers came here, and your health professionals traveled to other countries, the Philippines became the bedrock of Operation Smile. It was only fitting that we come home to the Philippines to celebrate this,” he said.

Magee encouraged Filipinos to participate in Operation Smile. “There’s a place for everybody within Operation Smile. You don’t have to be a medical doctor, you don’t have to be a nurse. You just have to be a good-hearted individual,” he said. –KG, GMA News

CHICAGO - U.S. researchers have begun testing drugs using a microchip lined with living cells that replicates many of the features of a human lung, a technology that may one day help improve drug testing and reduce researchers’ dependence on animal studies.

In 2010, researchers at Harvard’s Wyss Institute for Biologically Inspired Engineering developed the so-called lung-on-a-chip technology that mimics the function of air sacs called alveoli, which transfer oxygen through a thin membrane from the lung to the blood.

For drug companies, the technology offers a way to better predict how drugs will work in people, ultimately reducing the cost of drug development by identifying problems before drugs are tested in clinical trials.

“Major pharmaceutical companies spend a lot of time and a huge amount of money on cell cultures and animal testing to develop new drugs, but these methods often fail to predict the effects of these agents when they reach humans,” Dr. Donald Ingber, whose study was published on Wednesday in Science Translational Medicine, said in a statement.

Now the Wyss team is putting its artificial lung to the test, using the device to recreate pulmonary edema, a condition that causes fluid to leak into the air sacs of the lungs, and then treating it with an experimental drug from GlaxoSmithKline .

The device, which is about the size of a memory stick, is made of a flexible polymer that contains hollow channels.

These channels are divided by a thin, permeable membrane lined on one side with human lung cells and on the other with tiny blood vessel or capillary cells that are bathed in fluid to simulate blood flow. A vacuum is applied to recreate the way human tissue stretches during breathing.

For the study, the team treated the device with interleukin-2 or IL-2, a cancer drug that can cause pulmonary edema, a deadly condition in which the lungs fill with fluid and blood forms clots.

When injected into the blood channel of the device, the drug caused fluid to start leaking across the membrane, reducing the amount of volume of air in the other channel. Blood plasma crossed into the air channels and started to clot.

Dr. Geraldine Hamilton, co-author on the paper and the senior lead for the organs on chips program at Wyss, said the study is “providing us with a very exciting proof of concept for our ability to use organs on chips to create human disease models.”

When the team turned on the vacuum to simulate breathing, fluid leakage increased, suggesting that breathing may make the condition worse.

“We learned more about the mechanisms by which this happens. Than really wouldn’t have been possible through an animal model,” Hamilton said.

The team next used their model to test a new class of drug being developed by GlaxoSmithKline called a TRPV4 channel blocker. They found that treating the tissues in the device with the Glaxo drug before exposing it to IL-2 prevented blood vessel leakage in the device.

To confirm this finding, Kevin Thorneloe, a scientist at GlaxoSmithKline, did a parallel study in which he tested the drug in the lungs of rodents and dogs with pulmonary edema caused by heart failure and found the drug improved lung function and reduced leakage, consistent with the chip finding.

“These findings suggest that TRPV4 blockers could be used to limit pulmonary edema in patients with heart or lung disease, and were an important step toward validating the lung on a chip model,” said Thorneloe, whose companion study was published in the same journal.

“This technology is still in its early stages of development,” he said, noting that several additional studies will be needed to further validate the chip device.

Although initially, such devices will be used to support early research seeking to get a better understanding of disease at the molecular level, Thorneloe said over time, they could be used to quickly study the impact of several drugs on lung function.

In July, Wyss entered a $37 million agreement with the U.S. defense department to help develop 10 engineered organs, all linked into one system.

The idea is to replicate a human body on a chip, which could be used to rapidly assess responses to new drugs and potential chemical threats.

Donna Dambach, a pre-clinical safety scientist at Roche’s Genentech unit, said she thinks drug companies will be quick to adopt these technologies for their own internal decision-making.

But Dambach said it will likely take much longer for drug companies to replace animal models used for regulatory approval with these engineered organs.

“I think everyone would love that, but animals are complex, like human beings, and we really have to make certain that we’re at least predicting some level of that complexity in these systems.” — Reuters
