To celebrate Cinco De Mayo and Stephen's 15 month mark on his mission (read about it here), I made these simple and absolutely delicious grilled Chipotle Shrimp Tacos last week. 

If you love shrimp and a little spice, you are absolutely going to fall in love with this dish.

Grant, Corrine and I lived in Portland while Grant went to school at Lewis and Clark back in the (should I say it??) 80's. Gasp! We are old. Last summer, my mom and I took a little trip back to the Oregon Coast.


We loved our three years in Portland. We especially loved that in about two hours, we could be at the beach. My favorite place in the world. What is it about the &lt;div class="feedflare"&gt;

We had these at River's Run last time we visited Mary and Will in Mississippi.  I use this recipe when I'm short on time and want to whittle away at the 50 lb bag of Idaho potatoes in my garage. It's a quick, kid friendly side dish that goes with almost any meal. YUM.

One of my favorite dinners as a kid was tacos. How I loved taco night! It's a favorite at our home too. Well, maybe my favorite, because it's such a quick and easy dinner. Karen's Granola is legendary in our neighborhood. We LOVE it at our house. Sprinkled over granola with some fresh fruit. Love it on any type of Greek yogurt. I know this granola is not particularly healthy, but hey, it's better than a brownie for breakfast.

Love this recipe for Thai Chicken Pizza. It's based off of the CPK restaurant recipe.  I love the flavors in this pizza. The original recipe calls for Thai Sate sauce only, but I like to mix it up a bit and add some other flavors.  If you love specialty pizza but have been afraid to try it at home, now is your chance to take a leap of faith! Last year Grant and I took a few days and visited one of our favorite spots in the U.S. -   Marco Island, Florida. Marco is a beautiful island south of Naples on the Gulf side of Florida. If you visit after Easter, you practically have the beach to yourself on the weekdays. Unbelievably beautiful. Wanna see some pics?

The convo tonight at the ballpark turned to important things. Number one on the list: What's for dinner?
If I don't plan early in the day, it's drive thru, or quesadillas, or grilled cheese with tomato soup. Again.
I came up with this dish last week. Served it with some rice I threw in the rice cooker and a salad.  My inspiration? Boneless ribs on sale for about $2.50 per pound.

Here's the couscous dish I told you about yesterday. Loved it with the Cream Cheese Enchiladas. Unbelievably simple. And if you were feeling guilty about the cream cheese and sour cream in the enchiladas, this dish has very little fat. Perfect side for the rich enchiladas. Have a great weekend!

 One of our family favorites for dinner is chicken enchiladas. I've been making a tried-and-true recipe for years, but decided to give this recipe I found on Mel's Kitchen Cafe a whirl. Do you ever crave bran muffins? I do. I love a good bran muffin, and it's hard to get one in Btown. Last week, I was on the hunt for one. After trying 4 bakeries or shops that should sell a bran muffin in the morning hours, I gave up and decided to go to the grocery store and buy the ingredients to make a few batches at home. Who doesn't love a good spaghetti dinner?  The America's Test Kitchen  recipe for Spaghetti and Meatballs intrigued me because it calls for bread soaked in buttermilk, instead of the dried bread crumbs I use in my go-to recipe. The meatballs were extra tender, and the buttermilk added a bit of tang, as the Test Kitchen book promised. Yummy.
