Making biscotti from scratch is simple. So simple that I felt a tinge of regret for waiting so many years to try it. If you can make a batch of cookies, you can make biscotti. A basic, yet adaptable dough is formed into two logs on a cookie sheet and baked, cut into pieces and then baked again until crisp. That's it! I say that it's adaptable because you can swap out almonds for pretty much anything from&amp;nbsp;dried fruit, nuts, chocolate chunks, crystalized ginger, coconut, citrus zest and countless other mix-ins depending on your mood or perhaps a favorite flavor profile of the gift recipient. After the biscotti cooled, I dipped the bottoms in white chocolate, but you could drizzle on chocolate or just skip it altogether. No matter how you slice it, at the end of the day biscotti are the perfect gift or the perfect indulgence dipped in a steamy cup of hot chocolate.&lt;/div&gt;

&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;Using a food processor, pulse together 1/2 cup of the almonds and 1 tablespoon of sugar until finely ground, then add the flour, baking powder and salt and pulse a few more times until mixed.&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;&lt;span class="Apple-style-span" style="line-height: 18px;"&gt;In a separate bowl or stand mixer, beat the eggs, vanilla and 3/4 cup sugar together for 3 minutes until fluffy and thick. Slowly mix in the flour mixture and then fold in the almonds.&lt;/span&gt;&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;Line a cookie sheet with greased parchment paper.&lt;/li&gt;

&lt;span id="goog_507437372"&gt;&lt;/span&gt;&lt;span id="goog_507437373"&gt;&lt;/span&gt;Saturday, while shopping at my local Fresh Market, I picked up two packages of strawberries with the intention to make shortcake for Sunday dinner dessert. My husband was raised eating regular yellow cake with strawberries. &amp;nbsp;As for me, we had a large sweetened biscuit that was filled in the middle with cream and strawberries, then topped with the syrupy strawberries and whipped cream on top. The recipe below is like what I used to have as a child.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Strawberries 'n' Cream Shortcake&lt;/b&gt;&lt;br /&gt;
2 quarts sliced strawberries&lt;br /&gt;
1/2 cup sugar&lt;br /&gt;
4 cups self-rising flour (White Lily makes a good one)&lt;br /&gt;
1/2 cup shortening&lt;br /&gt;
1 cup buttermilk&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 425 degrees. In a large bowl stir together the sugar and strawberries, then let set. In a separate bowl, cut in the &amp;nbsp;shortening with the&amp;nbsp;flour and mix until evenly blended.&amp;nbsp;Stir in buttermilk.&amp;nbsp;Remove from bowl and transfer to a floured counter. Gently shape in a circle about 1-1/2 inch thick and transfer to a cookie sheet.&amp;nbsp;Bake until golden brown about 15 minutes.&amp;nbsp;Place on rack and let cool.&amp;nbsp;Cut the large biscuit into eight pieces, then slice each piece in half.&amp;nbsp;Add strawberries and cream into the middle and on top of each piece.&amp;nbsp;Top with dollops of whipped cream.&lt;br /&gt;

3 pounds Granny Smith apples, cored, peeled and sliced&lt;br /&gt;
1/2 teaspoon cinnamon&lt;br /&gt;
1/2 cup brown sugar&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
1/4 cup plus two tablespoons sugar&lt;br /&gt;
1/2 cup softened butter&lt;br /&gt;
1 cup rolled oats&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 350 degrees. Grease a 13x9 glass casserole and spread the apples out on the bottom. Sprinkle with 1/4 cup of the brown sugar, 1/4 cup of the white sugar and the cinnamon. Gently toss to incorporate. In a mixing bowl, mix together the remaining 1/4 cup brown sugar, salt, two tablespoons of sugar, butter and oats until the mixture forms a crumbly texture. Sprinkle over apples and gently pat to adhere the crumb mixture to the apples. Bake for 35-40 minutes or until crumb is lightly golden. Serve warm with whipped cream.&lt;br /&gt;

Add onion, garlic, corn and spinach; cook, stirring frequently, until onion is translucent and spinach is tender (about 5 minutes). &lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Wash and dry kale. &amp;nbsp;Separate the leaves from the stems. &amp;nbsp;Throw away the stems. &amp;nbsp;Break the leaves into bite size pieces. &amp;nbsp;Toss the leaves with olive oil and salt. &amp;nbsp;Spread kale leaves on baking sheet.&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Preheat oven to 450 F. &amp;nbsp;Place slices of bread on a cookie sheet. &amp;nbsp;Spread 2 Tablespoons of cranberry sauce on top of bread slices. Put pieces of turkey on top of the cranberry sauce. &amp;nbsp;Pile spinach leaves on turkey and top with Swiss cheese slices.&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Preheat oven to 325F. Grease and flour a 10 inch bundt pan. Sift together 2 ¼ cups of flour, baking soda and salt. Mix in the lemon zest and set aside.&lt;/span&gt;&lt;br /&gt;

&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;With an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs, then stir in 1 tablespoon lemon juice. Alternate beating in the flour mixture and the yogurt, mixing just until incorporated.&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Pour the batter into the Bundt pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.&lt;/span&gt;&lt;br /&gt;

1 egg&lt;span class="Apple-tab-span" style="white-space: pre;"&gt;                                                                                     &lt;/span&gt;Granulated sugar&lt;br /&gt;
&lt;br /&gt;
Heat oven to 375°F. Remove wrappers from chocolates.&lt;br /&gt;
&lt;br /&gt;
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.&lt;br /&gt;
&lt;br /&gt;
Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.&lt;br /&gt;
&lt;br /&gt;
Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges.&lt;br /&gt;
&lt;br /&gt;
Remove from cookie sheet to wire rack. Cool completely.&lt;br /&gt;

I like fattening foods and desserts. &amp;nbsp;But I also enjoy healthy food. &amp;nbsp;I have fun trying vegan, gluten-free and raw food recipes. &amp;nbsp;This is a recipe I adapted slightly from &lt;a href="http://chocolatecoveredkatie.com/"&gt;Chocolate-Covered Katie&lt;/a&gt;. &amp;nbsp;I want to try some more of her desserts. &amp;nbsp;Have you had any good recipes like this one? &amp;nbsp;My favorite raw food treat is still my &lt;a href="http://www.abusynest.com/2010/10/tropical-fruit-bars.html"&gt;tropical fruit bar&lt;/a&gt;.&lt;br /&gt;

(printable recipe)&lt;br /&gt;
1/4 cup natural creamy peanut butter&lt;br /&gt;
1/4 cup plus 1 tablespoon raisins&lt;br /&gt;
2 heaping tablespoons honey roasted peanuts (dry roasted)&lt;br /&gt;
2 teaspoons oat bran&lt;br /&gt;
1 tablespoon vanilla protein powder&lt;br /&gt;
1/8 teaspoon vanilla&lt;br /&gt;
&lt;br /&gt;
Put all ingredients into your food processor and combine until smooth. &amp;nbsp;You will have to scrape down several times and repeatedly pulse. &amp;nbsp;Roll into 1 inch balls and press a criss cross pattern with fork. Refrigerate at least one hour. &lt;br /&gt;

&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;1 1/2 cups chocolate chips or raisins&lt;/span&gt;&lt;br /&gt;

&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Preheat oven to 375 F. &amp;nbsp;Cream sugars, butter, and egg. Add applesauce and beat until smooth. Combine baking soda, salt, flours and spices. &amp;nbsp;Add to batter and stir. &amp;nbsp;Add oat bran, oatmeal, and walnuts and mix well. &amp;nbsp;Stir in chocolate chips or raisins. &amp;nbsp;Drop by tablespoonfuls onto a lightly sprayed cookie sheet or &lt;a href="http://www.abusynest.com/2011/01/nonstick-baking-mats.html"&gt;non stick baking mat.&lt;/a&gt;&amp;nbsp; Bake for 10 minutes or until center is set and bottoms are golden brown.&lt;/span&gt;&lt;br /&gt;

Put in a pastry bag and apply to the cold bowl smoothly covered with aluminum foil. &amp;nbsp;Make circular or whatever design you like applying three times. After each application put on a paper plate in the freezer till set.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;1/4 teaspoon salt&lt;/span&gt;&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;In a large bowl, beat first four ingredients until fluffy. &amp;nbsp;Stir in remaining ingredients and combine until smooth. &amp;nbsp;Refrigerate dough 30 minutes.&lt;/span&gt;&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"&gt;Heat oven to 350 F. &amp;nbsp;Between sheets of waxed paper, roll out dough 1/4" thick. &amp;nbsp;With a cookie cutter, cut out gingerbread men. &amp;nbsp;Re-roll out and cut more. &amp;nbsp;Decorate, if desired.&lt;/span&gt;&lt;br /&gt;

My Dad would always make oyster stew for the holidays. &amp;nbsp;It would be an appetizer a couple hours before the dinner.&lt;br /&gt;
&amp;nbsp;Last night I made a pot and we had it as the main dish, with a side salad for dinner. I had some fresh parsley growing and chives in my herb garden that I snipped and garnished the top of the stew.&lt;br /&gt;
&lt;br /&gt;
Oyster Stew&lt;br /&gt;
2 cups of milk&lt;br /&gt;
1 cup of cream&lt;br /&gt;
1 stick of unsalted butter&lt;br /&gt;
1 12 oz fresh oysters&lt;br /&gt;
&lt;br /&gt;
Drain oysters and save liquid. &amp;nbsp;Heat oysters on low in melted butter. Do not overcook.&lt;br /&gt;
Heat 2 cups of milk and 1 cup of cream on low heat till hot. Add liquid from oysters. Then follow with oysters. &amp;nbsp;Cook all on low for about 20 &amp;nbsp;minutes.&lt;br /&gt;
Pour into bowl and garnish with fresh parsley and chopped chives.&lt;br /&gt;

I am still enjoying pumpkin this fall. Pumpkin and dates are a favorite combination and I set out to make a healthier pumpkin cookie today. &amp;nbsp;Mission accomplished. &amp;nbsp;These cookies are made with whole wheat flour, quinoa flakes, pumpkin and dates. &lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Pumpkin Date Cookies&lt;/b&gt;&lt;br /&gt;

1/2 cup butter&lt;br /&gt;
1 cup brown sugar&lt;br /&gt;
1 cup pumpkin&lt;br /&gt;
1 egg&lt;br /&gt;
1 teaspoon vanilla&lt;br /&gt;
1 teaspoon cinnamon&lt;br /&gt;
1/2 teaspoon nutmeg&lt;br /&gt;
1/2 teaspoon ginger&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
1/4 teaspoon salt&lt;br /&gt;
1 cup whole wheat flour&lt;br /&gt;
1/2 cup all purpose flour&lt;br /&gt;
1 cup quinoa flakes&lt;br /&gt;
1 - 8 oz. package chopped dates&lt;br /&gt;
&lt;br /&gt;
In mixer bowl, combine butter and sugar until fluffy. &amp;nbsp;Add pumpkin, egg, and vanilla. &amp;nbsp;Mix well. &amp;nbsp;In small bowl, combine cinnamon, nutmeg, ginger, baking powder, salt and flours. &amp;nbsp;Add to pumpkin mixture combining well. &amp;nbsp;Stir in quinoa flakes and dates. &lt;br /&gt;

Drop by tablespoons onto parchment or &lt;a href="http://www.abusynest.com/2011/01/nonstick-baking-mats.html"&gt;silicone baking mat&lt;/a&gt; atop a baking sheet. &amp;nbsp;Lightly press on top of each cookie. Bake 13 -15 minutes or until set and bottoms are golden brown. &amp;nbsp;Cool. &amp;nbsp;Makes about 24-30 cookies.&lt;br /&gt;
