Baste comprobar como el “lobby” auspiciado por Juan Mari Arzak y Rafael Ansón, Rafael Ansón y Juan Mari Arzak, Odón Elorza le podía haber dedicado una calle al unísono en San Sebastián, ambos son hijo de Donostia, ha llegado a cuajar el grupo de influencia y manipulación más poderoso que jamás hubiera imaginado. Los artífices son Arzak y Ansón, que en su telaraña han implicado a dos cocineros reputadísimo (no a los Roca, no Arginzoniz, no Dacosta, no a algunos otros que están en The Restaurant), a algunos críticos como Pau Arenos y José Carlos Capel (Salvo que se desdiga de su justificación de la lista, en cuanto luego se beneficia en imagen y económicamente través de los personajes que la inspiran) y de los gabinetes de prensa de Roser Torras y Ana Escobar, que trabajan al dictado de los intereses del “lobby”. Entre todos, cuecen y guisan la pasta a su gusto.

El Broker que lleva los intereses de muchos de estos y de tantos cocineros a los que representa, con los que hace negocios de una manera u otra, es Rafael Ansón. El amiguísimo de Arzak, los que mandan en el negocio, aunque quien haya quien se lleve más que los dos. Sobre quien es Rafael Ansón le pueden preguntar a cualquier cocinero, a cualquier productor, a Mesquita y a Zapatero, que permitió que este personaje del antiguo régimen gozase de todas las prebendas del anterior gobierno.

Ansón, cuando Arthur Lubow vino al congreso lomejordelagastronomia.com, celebrándose entonces en San Sebastián, informado por un cocinero del “lobby” de que iba hacer un reportaje para el The New York Times Magazine, me pidió que el día siguiente de terminar, hiciésemos un acto de exaltación de los productos españoles en Madrid, donde tenía que volver el periodista estadounidense para embarcar a su país. Convocó en Príncipe de Viana a conocidos profesionales y a toda la prensa madrileña. Ideó una cata de jamones en la que puso a Joselito, a Sánchez Romero Carvajal y a un Jamón de Extremadura, del que el llevaba la imagen. Los jamones de Joselito y Sánchez Romero Carvajal no sabremos si habían sido comprados en el rastro o planchados, o metidos en el congelador. Salio lo que se proponía. Luego hizo una cata de que vino iba con el jamón. Eran varios los que estaban en concurso. Entre ellos un tinto, que recuerdo que era un Alión y un fino, vinos de Jerez a los que ha llevado la imagen durante muchos años.
