Temos de manter o que de melhor fizemos até agora, mas é necessário abandonar algumas práticas que encarecem a nossa  oferta, mas que após cuidada análise concluímos que não trazem muito valor acrescentado.&lt;br /&gt; &lt;br /&gt;Por isso, decidimos alterar a forma de rotação dos menus. Até agora, apresentámos dois menus por ano: primavera/verão e outono/inverno. Vamos deixar de ter esta rotação de cartas tão rígida. Em vez disso, vamos trocar pratos de acordo com os produtos que encontramos no momento. Ou seja, vamos fazer uma cozinha mais de estação, uma cozinha de mercado. Deixamos de ter duas cartas por ano mas passamos a ter novidade muitas vezes ao ano!&lt;br /&gt; &lt;br /&gt;Iniciámos já esta fórmula e inserimos nos nossos menus alguns pratos novos, outros de anteriores estações, já testados, e que foram considerados pratos de sucesso pelos nossos clientes. Entre estes pratos estão, por exemplo, as bochechas de porco em vinho tinto, que tanto sucesso fizeram, ou alguns risottos.&lt;br /&gt; &lt;br /&gt;Esta nova forma de trabalhar, procurando os ingredientes do mercado e apresentando pratos já testados, vai permitir-nos reduzir o preço médio da refeição, tão agravado pelo brutal aumento da taxa de IVA sobre os serviços de restauração.&lt;br /&gt; &lt;br /&gt;Num tempo de crise e restrições, tínhamos de mudar alguma coisa. Este produto, com enormes potencialidades económicas, já reconhecidas internacionalmente, tem todas as condições para se tornar numa exploração muito rentável em Portugal. Este movimento nasceu da consciência e da necessidade em contrariar e ajudar na resolução de problemas em regiões de elevada susceptibilidade à desertificação, não só de pessoas, como de baixa densidade em oportunidades de emprego, de empreendedorismo e de inovação. Existe um trabalho de grupo o qual já desenvolveu, nos últimos 7 meses, experiências no terreno, em campos de ensaio, possuindo informações de grande relevância, concluindo que a Opuntia Ficus Indica, é um recurso acessível e fácil de produzir a “baixo custo”, podendo constituir-se numa fileira inovadora e com grandes oportunidades no mercado Nacional e Internacional. De realçar que o nosso figo-da-india, devido às características do nosso terreno e com muito sol, factores essências para esta planta, permite produzir um fruto de elevada qualidade, já comprovada.
