I was very excited when I received a package in the mail from my friend B.J. with this sweet treat inside.  Flavored of cookies and cream, this would be a perfect thank you gift for and fan of squished nose doggies such as myself.

Our mom & dad had a cookie factory in Tuckahoe, NY. Did we mention that? Click on the images below for some close ups of the in ground veggies that are popping up and super happy so far.

I woke this past Saturday morning and watched my usual hour (four hours+) of cooking shows & was inspired by Jamie Oliver to make this meal using all the fresh herbs from the garden. On the menu was Roast Carrots & Beets w/ the Juiciest Pork Chops.

Tossing the veggies in oil, salt, pepper with fresh herbs & lemon or vinegar. I'm a slob when I cook (and do anything else, really). Need to work on that.

Lining up the veggies to roast by color. Each type of veggie got it's own herb & dressing. My favorite was probably the rosemary/red wine vinegar combo on the red beets.

And here they are fresh out of the oven.

This salad was a bit of an experiment because I tried pickling onions for the first time. I put way too many and all in one place- it was a bit of a miss. I did roast my own peppers and marinate them in oil, garlic, vinegar, salt, pepper & fresh parsley. They are impossible to mess up. Yum.

Here are the chops. Seasoned and stuck with a few sage leaves which are growing in abundance in the garden. They looked and smelled incredible. I did not trust my judgement and overcooked them by following the recipe way too literally. Next time.

I made a pan sauce in the pork chop pan using the pickling liquid, a few of the pickled onions, some shallot, arrowroot & honey. I thought it was really yummy.

This is Jen's Veggie plate sans chop. That is a Hotel Pierre glass in the background. My mom was so excited when she found those at Anthropologie. I bought her a set for Mother's day. The dish is "Bristol" by Crown Ducal, England. They were also part of her huge dinnerware collection.
