What Can I Do With: Pineapple Skins and Cores/Leaves

I, like a lot of people out there, am always looking for ways to use every scrap of my fresh fruits and veggies. When I say EVERY, I mean EVERY thing. So I thought that I would start a series on using every bit of my produce purchases. This first post is on pineapple. What could I possibly do with a pineapple?....... ALL of it?

Here's what I Found:

1. Pineapple Skin Vinegar or Vinegarette

2. Dried pineapple core fruit pieces

3. Tepache (Mexican Alcoholic fermented drink)

4. Leaves

1. PINEAPPLE VINEGAR

chopped skins of one pineapple (preferably organic if you can)

2 1/2 cups water (filtered)

1/4 cup brown sugar or Organic sugar

2 tablespoons apple cider vinegar (optional, but will make things go quicker)

1 quart-size jar

or try making a PINEAPPLE VINEGARETTE:
For a quick vinegarette, mix 3 tablespoons of oil with 1 tablespoon of pineapple vinegar. For a marinade (especially good with pork, chicken or fish), mix ½ cup oil, ½ cup pineapple vinegar, 1 clove crushed garlic, 1 tablespoon chili flakes, a small handful of chopped cilantro, salt and pepper.

2. Dried Pineapple Core Fruit Pieces

This idea was kind of kid friendly and yummy. Take pineapple core and slice them thin lay in a single layer on a baking sheet. Set your oven to its lowest setting and dehydrate away(or use your dehydrator) in a few hours you'll have healthy chewy candy-like treats! Thanks The Essential Herbal Blog for Idea #2

3. TEPACHE
I had no idea what this was so read and found out.

Tepache is a popular drink of Mexican origin made from lightly fermented pineapple, spices, sugar, and beer. Perfect for a summery day, tepache is refreshing while still being complex. The word "tepache" comes from the Náhuatl language, formely spoken by the Aztecs, and still spoken in some regions of Mexico. It means "drink made from corn," which was originally used to ferment the drink. If you want to make tepache and don't know how, read this recipe to make use of one whole pineapple and a little bit of beer.

Ingredients:
1 whole ripe pineapple
4 cups of water (filtered is best)
1 lb of piloncillo, or brown sugar
1 cinnamon stick
5 cloves
1 can/bottle of beer

Method:
1. Wash outside of pineapple thoroughly with a clean brush.
2. Remove both base and stem of pineapple with a knife.
3. Cut pineapple into 1 inch cubes - do not cut off rind - set aside cubes.
4. In a large pot add piloncillo, cinnamon, and cloves.
5. Bring pot to a boil on high heat.
6. once pot has hit a rolling boil, reduce heat to simmer, cooking for 10 min. - make sure sugar or piloncillo has dissolved.
7. Take pot off heat and add pineapple chunks.
8. Cover pot and set aside for 2 days in warm part of the kitchen - Tepache will begin to ferment after first day.
9. After two days, add can/bottle of beer- let this sit for upto 12 hours
10. Strain Tepache through a cheesecloth twice an refridgerate

4. LEAVES!

Did you know that you can also re-plant the crown of a pineapple and make it grow new pineapples?? yep you go it! ..............but it’s a really slow process (about 2-3 years!) so i wouldn't recommend it unless you are ready to invest that amount of time for pineapple.

I also read that some people out there give them to their rabbits, who love them, and eat them up.

Here are some other interesting tidbits about pineapples in general:

In Brazil tribal peoples have always regarded pineapple highly and have used it as a staple food and as an ingredient in some wines. When early explorers brought the pineapple back to Europe, its sweetness and unusual appearance made the fruit a symbol of royal privilege. In the American colonies, the pineapple symbolized friendship and hospitality. And hosts who could provide such a rare and exotic fruit made a statement about their high social standing. Pineapples were so popular in colonial America that confectioners rented them to households by the day. An enzyme found in pineapple is now used as a meat tenderizer. It is said that the fingerprints of pineapple cutters can be obliterated by excessive exposure to this enzyme. The leaf of some varieties is a source of piňa fiber for embroidery thread.

Pineapples have been used in traditional tropical medicine for ailments ranging from constipation to jaundice. Without fresh fruit on board, sailors who came across pineapple in the early days of European exploration escaped scurvy by eating it, a rich source of vitamin C. Pineapple contains bromelain, a protein-splitting enzyme that has been shown to increase bleeding time and reduce the aggregation of platelets. Bromelain also has proved effective in killing parasites such as worms.

The sour, unripe fruit improves digestion, increases appetite, and relieves dyspepsia: In Indian herbal medicine, pineapple is thought to act as a uterine tonic. The ripe fruit cools and soothes, and is used to settle gas and reduce excessive , gastric acid. Its significant fiber content makes it useful in constipation. The juice of the ripe fruit is both a digestive tonic and a diuretic. The leaves are considered to be useful in encouraging the onset of menstrual periods and easing painful ones.

Corn! Freezing Corn, Corn Cob Stock, Corn Cob Jelly

Now that Corn season is here, there are plenty of inexpensive corn deals floating out and about. You could Can your corn after you shuck and clean it. But I have heard from many people say that Freezing is much faster, easier, and less time consuming. as well as costing only a small amount for Ziplocs instead of glass/plastic jars.
Corn does however during prolonged freezing lose it sweet taste because the natural sugars in the corn start braking down and changing into starch, hense the recipe below with sugar added.
I try to be as frugal as possible while still feeding my family of 5 homemade fresh food. I think everyone would do better to adopt the "NEVER waste ANYTHING!" when it come to food rule. So I thought that everyone could benefit from knowing a few of my tricks for stretching that budget. Hopefully these recipes will feed your family super cheap yummy corn, and corn stock, and EVEN Corn Cob Jelly.

Freezing Your Corn
16 cups of cut corn = 4 quarts (about 30 ears) *make sure to save those cobs*
4 teaspoons of salt
1 cup of sugar
4 cups of water = 1 quart

Mix salt and sugar with the water add corn and simmer 10 minutes.
Drain water from the corn and let cool in the fridge till corn reaches fridge temperature.
Pack corn in Ziplock freezer bags flat so they are nice and stackable.

Corn Cob Stock
3 - 4 Corn Cobs
1 onion rough cut
1 Celery stalk
4 garlic cloves (crushed)
Sea Salt
Fresh Ground Pepper
6 - 8 cups water
1 bay leaf

Add corn cobs, onion, celery, garlic and bay leaf into stock pot or Dutch oven; add water. Bring to a boil. Reduce heat and simmer at least 30 minutes, up to an hour. Add salt and pepper to taste as it reduces. When you’re satisfied with the flavor, strain the stock and set aside.

You can use the stock after 30 minutes, but letting it go for at least an hour will impart so much flavor. I ended up with about 2 cups of stock after it reduced. But it’s really concentrated. If you want to end up with more stock, just adjust the ingredients.

(This recipe is from Michelle at Putinsomesugar she has a great picture gallery as well as an EPIC Corncob Veggie Soup. This is one of my favorite things to make stock from)

Corn Cob Jelly
12 large ears of corn
2 quarts water
2 tablespoons lemon juice
1 package powdered pectin
sugar

This recipe is from Chickensintheroad.com she has an excellent tutorial on how to make this wondrful Jelly! I have make this once or twice and the family enjoys every drop of it! Your family will NEVER think of throwing those corn cobs away again!
