Although the groundhog told us we would have to endure six additional weeks of winter, many states are already enjoying spring-like conditions!! I, for one, am tickled pink that flip-flop weather is right around the corner. As the &#8220;grill-master&#8221; in our family I have dusted off our grill just for this recipe.</p>

<div style="padding: 10px 10px 10px 10px;font-size:12px">1 Pound Extra Lean Ground Chicken<BR>1 Tbsp. Dijon Mustard<BR>¼ Teaspoon kosher salt <BR>Black Pepper, to taste<BR>¼ Cup Fresh Tarragon, Chopped<BR>2 Tbsp. Extra Virgin Olive Oil<BR>4 Hamburger Buns</div>

<p>1. Combine the ground chicken, mustard, salt, pepper and tarragon in a large bowl.</p>
<p>2. Stir with a wooden spoon or your hands to combine</p>
<p>3. Divide the meat into four equal portions and form into patties. </p>
<p>4. Heat the oil in a large oven proof skillet over medium heat. </p>
<p>5. Add the chicken burgers and sauté for two to three minutes per side, or until brown. </p>
<p>5. Transfer the burgers to the oven and cook for 15 minutes, or until cooked through. </p>
<p>6. Serve on whole wheat buns. For a complete meal, consider serving the Chicken and Tarragon Burgers with a green salad for a complete meal.<br />

<div style="padding: 10px 10px 10px 10px;font-size:12px">4 boneless, skinless chicken breasts, trimmed of fat and cut into 1-inch wide strips<BR>3 omega-3 eggs, beaten<BR>½ cup whole wheat flour<BR>½ cup whole wheat bread crumbs<BR>Salt and pepper to taste<BR>1/4 cup canola oil<BR>1 6 oz can tomato paste<BR>½ cup pomegranate juice<BR>1 tbsp Worcestershire sauce<BR>2 tbsp apple-cider vinegar<BR>1/8 tsp granulated garlic<BR>½ tsp chili powder</div>

</table> 1. Flour and dust chicken strips, place into egg wash and shake off excess.</p>
<p>2. Dredge in breadcrumbs, cover and place in refrigerator for 15 – 30 minutes.</p>
<p>3. Heat oil in large nonstick sauté pan on medium high. Carefully place chicken in hot oil and cook for 2-3 minutes on each side. Place on baking sheet with parchment paper and cook for 10 minutes in oven at 350 degrees.</p>
<p>4. To make dipping sauce, mix tomato paste, pomegranate juice, Worcestershire sauce, apple-cider vinegar, garlic, chili powder, salt and pepper in bowl and serve with crispy chicken tenders.<br />

1 8-ounce can jellied cranberry sauce<br />
1/3 cup apricot or peach preserves or spreadable fruit<br />
1/4 cup chopped onion<br />
1 Tablespoon lemon juice or cider vinegar<br />
1 canned chipotle pepper in adobo sauce or jalapeño pepper (seeded &#038; chopped)<br />
1 can Campbell&#8217;s Chicken Broth</div>

<p>1. Trim any fat from the pork chops. In a grill with a cover arrange the preheated coals around a drip pan. Test for medium heat above the drip pan. Place the pork chops on the grill rack directly over the drip pan. Cover and grill the chops for 35 to 40 minutes or until the juices run clear.</p>
<p>2. Meanwhile, for sauce, in a small saucepan combine the cranberry sauce, preserves or spreadable fruit, onion, lemon juice or vinegar, chicken broth, and pepper. Bring to boiling, stirring constantly; reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally.</p>
<p>3. To serve, brush the chops with sauce. Pass remaining sauce with chops.</p>
<p>4. To broil: Prepare sauce and pork chops as directed above, except instead of grilling place pork chops on the unheated rack of a broiler pan. Broil with the surface of the chops 3 to 4 inches from the heat for 18 to 22 minutes or until juices run clear, turning once. Serve as above.</p>

<p>The main difference here from classic recipes is the use of sausage, carrots and spinach. The recipe is easy to follow and putting the lasagna together simply requires layering the ingredients. Your family will enjoy this spin of classic lasagna. Chopping the spinach finely and mixing it into the ricotta cheese will also help disguise it enough for even the pickiest little eaters! 1 medium onion, finely chopped<br />
1 carrot, finely chopped<br />
2 cloves garlic, minced<br />
4 cups canned Italian tomatoes, drained, seeded, and chopped<br />
1 teaspoon sugar<br />
1 teaspoon dried basil<br />
1 pounds sweet Italian sausage<br />
1/2 cup dry white wine<br />
Salt<br />
Freshly ground pepper<br />
1 egg<br />
1 pound ricotta cheese<br />
1 10-ounce package frozen chopped spinach, thoroughly defrosted<br />
1/4 teaspoon freshly grated nutmeg<br />
1-1/2 cups freshly grated Parmesan<br />
2 tablespoons vegetable oil<br />

</table> 1. In a saucepan, heat 3 tablespoons of olive oil and in it sauté the onion and carrot over moderately low heat until soft, about 10 minutes. Add the garlic for the last minute of cooking. Add the tomatoes and sugar, bring to a boil, and simmer very gently, partially covered, for 1 hour. Add the basil and simmer for another 10 minutes. Set the sauce aside.</p>
<p>2. Remove the sausage meat from the casing. In a large skillet, heat 2 tablespoons of olive oil and in it sauté the sausage meat over moderate heat, breaking up the lumps with a fork, until the fat is rendered and the meat is lightly browned, about 30 minutes. Drain off most of the fat. Add the wine to the skillet, turn the heat up to high, and cook until it has evaporated.</p>
<p>3. Set aside 1/2 cup of the tomato sauce. Add the rest to the skillet and simmer for 1 or 2 minutes. Add salt and pepper to taste.</p>
<p>4. In a small bowl, beat the egg lightly, then blend it with the ricotta. Squeeze out all the excess liquid from the defrosted spinach, chop it fine, and add it to the ricotta. Stir in the nutmeg and 1 cup of the Parmesan.</p>
<p>5. In a kettle, bring 7 quarts water to a boil and add 1 tablespoon of salt and the vegetable oil. Add the lasagne , stir, and cook until not quite al dente, a bit on the chewy side (about 8 to 10 minutes for boxed pasta ). Holding a slotted spoon at the edge of the pot, pour out most of the hot water and fill the pot with cold water. Carefully remove the lasagne strips and lay them on paper towels.</p>
<p>6. With 1 tablespoon of olive oil, coat a rectangular baking dish that measures approximately 14 x 9 x 2 inches. Place a layer of lasagne strips on the bottom of the dish, overlapping slightly, not more than 1/8 inch. Cut the strips if they extend beyond the length of the dish; do not bring them up around the edges. Over the layer of lasagne, spread 1/3 of the ricotta mixture. Over the ricotta mixture, spread 1/3 of the sausage/tomato sauce. Make 2 more layers of lasagne, ricotta mixture, and sausage/tomato sauce, and top with a layer of lasagne. Spread over it the reserved 1/2 cup of tomato sauce and sprinkle the remaining 1/2 cup Parmesan. Drizzle the remaining 4 tablespoons olive oil over the top. Bake in a preheated 350-degree oven until the lasagne is bubbling and the top is nicely browned, about 40 minutes. Let the lasagne stand for 10 minutes before serving.</p>
