Vegetarian Chorizo and Potatoes Recipe

Since we have moved from San Diego to Chicago the amount of GOOD mexican food restaurants is slim pickens. I have not found a good, authentic mexican restaurant that has me raving about it. It's even HARDER to find a vegetarian/vegan mexican place. OMG, so hard! If any of you are in the Chicago area and know of one, please please please let me know!

With the amount of mediocre restaurants around here, I am left with lots of cooking. Like, a lot of it! We rarely go out to eat anymore. So these days i'm cooking up a storm in my kitchen. Today, I wanted to share with you a yummy vegetarian dish. I grew up eating chorizo with potatoes and it's soooo yummy! but since I do not eat meat, I am left craving this dish in particular. This dish can be made with regular chorizo but I used the Soy kind. Here is what you will need

about 4-5 large russet potatoes

Peanut oil

Soy chorizo link

Salt

Pepper

peel and cut your potatoes to how you like them. I cubed mine to medium size. Add peanut oil in large, deep pan. You can use as much or as little as you like but keep in mind that they potatoes need to fry a little bit. Once the oil is heated, place your potatoes in there and add salt and pepper. I like to use coarse sea salt on almost all my dishes.

Let your potatoes cook for about 10-15 minutes uncovered. Please note that in order for your potatoes NOT to become MASHED, it is important not to stir too much. Just let them do their thing. So after those 15 minutes, cover them for about 20 minutes. More or less depending on how crispy you want them. I personally like mine to be on the crispy side so I let mine get a bit crispy. Once they are just about cooked, add the soy chorizo link in there. Let that cook for about 10-15 minutes and make sure that all the potatoes are covered in it. It doesn't take that long to cook but, again, I like my potatoes to be somewhat crispy. So once you are done you can serve them as is or make a quesadilla with them or just eat them in a taco. I ate mine with black beans (homemade) and it was muy delicioso!

You can add anything that you want. Cheese, parsley, cilantro, onions. Anything that you want but I don't like to venture out much. hehe...

P.S. these are really good as next day leftovers!

Homemade Applesauce

So, back in the day, I did not even care if the stuff that I ate was natural or not. I didn't care if it was organic, fresh, animal, artificial or anything like that. I know, it's so sad to think about that. Now, I try to feed my son all natural, organic and ACTUAL food not products that are supposed to taste like food. There are so many fake food products out there, it's scary! I want the best of the best for my child (what mom doesn't) So with that being said, I made homemade apple sauce today! it turned out pretty tasty. Here's what I used....

about 15 small pink lady apples
1/4 tsp cinammon
1/4 c. dark brown sugar (more or less to YOUR liking)

You can use any other products you like. There are some recipes out there that you can add vanilla and stevia instead of sugar. For now, I made this with the stuff that I had on hand. I SOOO did NOT want to make a trip to the grocery store. Especially with a cranky-because-I-didnt-take-a-nap kiddo.

Ok, so I peeled, cored and chopped up the apples to my liking. Then I filled up a pot with water, just covering the apples. I turned up the heat to medium-high and brought them to a boil. Once boiling, I turned it down to a simmer for 10 minutes. I added the sugar and cinnamon and let simmer for another 5 minutes. Your house will smell divine after that step is done!
I put the apples plus a cup or so of water (from pot) in the blender and I alternated between the pulse setting and the low setting. Once it was done to the texture that I liked, I put them in mason jars. Voila! you're done.

The real taste test here is if mr. little dude will like it :)

My home decor style

Lately, I have been really into home decorating. I have never been a picky person when it comes to decorating my home. But now I have a child and some days its harder than others to get out of the house. I love being outside and driving to places. More specifically, I love to take him to parks where he can run around and I love to take him to the play areas of the malls more than I like to go in the stores themselves. So, it's not that I like being cooped up, its just that it has been this way for the past few weeks. Now, with that being said, I don't like it when my space is cluttered and, well, ugly. My eye for home decor has changed. I like white and black and shiny metallic things. Pops of color are a must and with that color scheme its perfect. I get my ideas from watching YouTube videos, pinterest, online images from anywhere, google and my head. I have a very specific taste and it is hard to describe.

Every time I go to a store where they have a kids section of clothing, I am always left with wanting to see more clothes. Boy clothes, that is. Why do people putting these clothes out think that only girls are meant to be stylish?? huh?! answer me that. They are very few stores that offer a nice variety of little boys' clothing. Zara is one of the very few. Old navy has an excellent array of cute clothes. More stores need to up the cute boy clothes factor. Target, I'm looking at you...

What's in my bag?

So, okay, New York fashion week has started and...you know what that means! I will be refreshing style.com and Women's Wear Daily feverishly trying to see the latest fashion shows that are happening at the moment.

I love fashion week but I don't love that I am not there. Someday. Sigh.
