					<p>Thank you for joining us again at <a href="http://accessnowpublications.com/">Access Now Publications</a>.  We are all getting very excited about Christmas on the way.</p>
<p>As our final post of the year we wanted to go with one more Chocolate Recipe.  But then we thought it was Christmas so we have thrown three great Chocolate recipes in for you, your family and friends to enjoy.  These Chocolate recipes are taken from one of our favourite ebooks, <a href="http://accessnowpublications.com/cooking/chocolate/">Chocolate Recipes For Chocolate Lovers.</a></p>
<p>As mentioned in previous posts this one little ebook has 600 delicious chocolate recipes and is available for only $11.00. <p>Here are the three delicious chocolate recipes for you:</p>
<p><strong>Chocolate Fudge Bars</strong><br />
1 Stick Butter<br />
2 oz Unsweetened Baking Chocolate Squares<br />
1 c Sugar<br />
2 Eggs<br />
1 c Flour<br />
1/2 ts Salt<br />
1/2 ts Baking Soda<br />
1/2 ts Vanilla Or Peppermint Extract<br />
1 c Chocolate Chips<br />
Glaze<br />
1 c Powdered Sugar<br />
1 tb Milk &#8212; or more<br />
1/2 ts Peppermint Extract<br />
Melt the butter and the unsweetened chocolate.<br />
When the bowl is cool, add the sugar, beat in the eggs, mix in the<br />
flour, the salt, and the baking soda. Add the vanilla. Spread into a<br />
greased jellyroll pan.<br />
Sprinkle with the chocolate chips, and bake at 350 F for 8 minutes or<br />
so.<br />
Glaze: Mix up the ingredients. It should be like a glaze that will pour,<br />
thickly. Add a couple of drops of food coloring if desired. When the<br />
cookies come out of the oven, spread the glaze. Cool slightly, and cut<br />
while still warm.</p>
<p><strong>Chocolate Marshmallow Bars</strong><br />
2 oz Unsweetened chocolate<br />
1/2 c Butter<br />
1 c Sugar<br />
2 Eggs<br />
1/2 c Flour<br />
1 ts Vanilla<br />
1 c Chopped pecans<br />
16 Large marshmallows<br />
Preheat oven to 350 degrees F. Grease an 11 1/2 x 7 baking pan. Melt<br />
chocolate and butter in top of double boiler over hot water. Set aside.<br />
Cream sugar and eggs until light and fluffy. Add flour. Beat. Add<br />
melted chocolate and butter. Beat well. Mix in vanilla and pecans.<br />
Pour into prepared pan. Bake 18 minutes. Remove from oven and<br />
cover with marshmallows. Return to oven and bake until<br />
marshmallows are lightly browned.<br />
Cool slightly and cut into bars.</p>
<p><strong>Crunchy Chocolate Peanut Butter Bars</strong><br />
1/2 c Light corn syrup<br />
1/3 c Brown sugar, packed<br />
1 c Peanut butter<br />
3 c Rice cereal<br />
1 c Semi-sweet chocolate pieces<br />
2 ts Vanilla<br />
In a 2 quart saucepan, combine corn syrup and brown sugar,. Cook<br />
and stir till mixture comes to a full boil. Stir in peanut butter. Remove<br />
from heat. Stir in cereal, chocolate pieces and vanilla. Stir in cereal,<br />
chocolate pieces and vanilla. Press into an ungreased 9&#215;9x2 inch pan.<br />
Chill 1 hour. Cut into bars.</p>

					<p><strong>CHRISTMAS PUDDING RECIPE</strong><br />
2 cups of sifted flour<br />
1 teaspoon of baking powder<br />
1 teaspoon of cinnamon<br />
1 teaspoon of allspice<br />
1 teaspoon of nutmeg<br />
1/2 teaspoon of cloves<br />
1/2 cup of butter<br />
1/2 cup of sugar<br />
4 eggs<br />
1 lb. of dates, chopped<br />
Oil<br />
Sugar<br />
Roll cooking oil in two, 1 pound coffee tins, drain and sprinkle inside with sugar. In a<br />
lar&#8230;ge bowl, stir together the flour, baking powder, cinnamon, allspice, nutmeg and cloves.<br />
Cream the butter and sugar together with a mixer. Add the eggs one at a time, beating<br />
after each addition. Add the dates and beat well. Blend in the dry ingredients. Turn the<br />
batter into the prepared coffee cans. Place several layers of aluminum foil on the tops<br />
and tie securely with string. Place the cans on a rack in a large kettle and add boiling<br />
water to a depth of 3/4 the height of the cans. Cover the kettle and gently boil the<br />
puddings for 3 hours, replenishing the water as needed. Turn out onto a rack to cool.<br />
They may be frozen, or stored for several weeks in the refrigerator.</p>
<p><strong>FOR THE SAUCE:</strong><br />
2 tablespoons of cornstarch<br />
1/2 cup of sugar<br />
1 cup of hot water<br />
1 egg, beaten<br />
Pinch of salt<br />
2 tablespoons of butter<br />
Red and green Maraschino cherries<br />
Pineapple chunks<br />
Raisins<br />
Pecans<br />
Sugar cubes<br />
Lemon extract<br />
In a saucepan, combine the sugar and cornstarch. Add the hot water, beaten egg and salt.<br />
Cook over medium heat, stirring constantly, until thickened. Drop in the butter and stir<br />
until melted. Add the fruit and pecans. Pour the sauce into a serving container. Drop the<br />
sugar cubes briefly in lemon extract. Place the pudding on a serving platter and surround<br />
with the sugar cubes, placing several on top of the pudding. Light the cubes, and bring<br />
the flaming pudding to the table. Slice the pudding, spoon on the sauce, and top with<br />
Cool Whip.</p>

<strong>CHOCOLATE FILLED BON BONS</strong><br />
1/2 c. butter flavor shortening<br />
1/2 c. granulated sugar<br />
1/4 c. firmly packed brown sugar<br />
1 tsp. vanilla<br />
1 egg<br />
1 2/3 all purpose flour, unsifted<br />
36 chocolate kisses<br />
36 peach halves<br />
Cream shortening, sugars, vanilla and egg in large bowl at medium<br />
speed of mixer. Combine flour, baking soda, and salt. Stir into<br />
creamed mixture. Press 2 level measuring teaspoonfuls dough around<br />
each kiss, covering kiss completely. Gently place pecan half on top of<br />
each. Bake on ungreased baking sheet for 6-7 minutes (cookies will<br />
not brown, do not over bake). Gently press pecans into hot cookies.<br />
Cool on baking sheet for 1 minute, then remove to cooling racks.</p>

<strong>Cadbury&#8217;s Creme Egg</strong><br />
Serving Size: 12<br />
Preparation Time:<br />
Categories:<br />
1/2 cup light corn syrup<br />
1/4 cup butter, softened<br />
1 teaspoon vanilla<br />
1/4 teaspoon salt<br />
3 cups powdered sugar<br />
4 drops yellow food coloring<br />
2 drops red food coloring<br />
1 bag milk chocolate chips (12 ounces)<br />
2 tablespoons vegetable shortening<br />
1) Combine the corn syrup, butter, vanilla, and salt in a large bowl.<br />
Beat well with an electric mixer until smooth.<br />
2) Add powdered sugar, one cup at a time, mixing by hand after each<br />
addition. Mix well until creamy.<br />
3) Remove about 1/3 of the mixture, and place it in a small bowl. Add<br />
the food colorings, and stir well.<br />
4) Cover both mixtures, and refrigerate for at least 2 hours, or<br />
until firm.<br />
5) When mixtures are firm, roll a small, marble-sized ball from the<br />
orange filling, and wrap a portion of the white filling (approx.<br />
twice the size) around it. Form this filling into the shape of an<br />
egg, and place it on a cookie sheet that has been brushed with a<br />
light coating of vegetable shortening. Repeat process with the<br />
remaining filling ingredients, then refrigerate these &#8220;eggs&#8221; for 3-4<br />
hours, or until firm.<br />
6) Combine the milk chocolate chips with the shortening in a glass or<br />
ceramic bowl. Microwave chocolate on HIGH for 1 minute, then stir,<br />
and microwave again for 1 minute more; stir.<br />
7) Use a fork to dip each center into the chocolate; tap the fork<br />
lightly on the side of the bowl, then place each candy onto waxed<br />
paper. Chill.<br />

1 1 lb. box honey graham crackers**<br />
2 small regular OR instant vanilla pudding*<br />
2 3/4 c. milk<br />
1 8 oz. container Cool Whip</p>
<p><strong>Frosting:</strong><br />
1 can Duncan Hines Chocolate Buttercream frosting, softened for<br />
about 10 seconds in the microwave, so that it will spread easily across<br />
the top layer of the cake.<br />
OR<br />
1 pkg. Choco-bake (unsweetened liquid chocolate)<br />
2 tsp. white Karo<br />
2 tsp. vanilla<br />
3 T. soft margarine<br />
1 1/2 c. powdered sugar<br />
3 T. milk<br />
Butter 9&#215;13&#8243; pan, and layer with whole graham crackers.<br />
Prepare pudding according to pkg. direction, and let cool, or for<br />
instant pudding, mix pudding and milk. Blend in cool whip.<br />
Put 1/2 pudding mixture over crackers. Layer more crackers over<br />
pudding. Top with rest of pudding. Cover with a layer of crackers.<br />
You will have 3 layers of crackers.<br />
Refrigerate for 2 hrs. before frosting.</p>
<p><strong>Frosting:</strong><br />
Beat all frosting ingredients until smooth. Frost cake and<br />
refrigerate 2 hrs.<br />
Cake can be frozen.<br />
Makes 10-16 servings<br />
Note:<br />
*Chocolate pudding can be used.<br />
*French Vanilla pudding can be used.<br />
**Chocolate graham crackers can be used.</p>

Ingredients<br />
3/4 cups flour<br />
1/4 t. salt<br />
1 1/2 squares unsweetened chocolate<br />
1/2 c. margarine or butter<br />
2 eggs<br />
1 cup sugar<br />
1 t. vanilla<br />
1 ripe banana, well mashed<br />
1/2 cup semi-sweet chocolate chips<br />
1/2 cup broken walnut meats<br />
No baking powder or soda. This makes them extra dense and moist.<br />
Directions<br />
Preheat oven to 350 F, (325 for a glass pan). Combine flour and<br />
salt in a small bowl. Set aside. Melt margarine or butter and<br />
unsweetened chocolate in a small pan on low heat. Cool to room<br />
temperature. In a large bowl, beat eggs, sugar and vanilla. Add<br />
mashed banana. Stir in chocolate mixture. Gradually sift and<br />
stir in flour mixture. Add chocolate chips and walnuts. Pour<br />
into an 8&#8243;x 8&#8243; pan that has been sprayed with Pam or cooking<br />
oil. Bake for 30 to 35 minutes.</p>

<p><strong>Chocolate Cake In A Jar</strong><br />
1 stick plus 3 T. butter or margarine<br />
3 c. white sugar<br />
4 eggs<br />
1 T. vanilla<br />
2 c. applesauce, unsweetened<br />
3 c. white flour<br />
3/4 c. unsweetened cocoa powder<br />
1 tsp. baking soda<br />
1/2 tsp. baking powder<br />
1/8 tsp. salt<br />
Prewash 8 pint-sized wide mouth canning jars (be sure to use the kind<br />
that have no shoulders) in hot, soapy water. Rinse well, dry and let<br />
them come to room temperature. Grease insides of jar well with<br />
butter.<br />
Beat together butter, and half of sugar until fluffy. Add eggs and<br />
remaining sugar, vanilla and applesauce.<br />
Sift dry ingredients together, and add to the applesauce mixture a<br />
little at a time. Beat well after each addition.<br />
Pour 1 c. of batter into each jar, and carefully remove any batter<br />
from the rims.<br />
Place jars in a preheated 325 oven, and bake for 40 mins.<br />
While cakes are baking, bring a saucepan of water to a boil, and<br />
carefully add jar lids. Remove pan from heat, and keep lids hot until<br />
ready to use.<br />
When the cakes have finished baking, remove jars from oven. Make<br />
sure<br />
jar rims are clean. (If they&#8217;re not, jars will not seal correctly)<br />
Place lids on jars, and screw rings on tightly.<br />
Jars will seal as they cool.<br />
Cakes will slide right out when ready to serve.<br />
Eat within 1 month.</p>

					<p>I hope you enjoyed our last chocolate recipe.  Here is another for you and your family to enjoy.</p>
<p>Caramel Apples w/ Chocolate<br />
Makes 8 apples<br />
1 piece of Styrofoam<br />
1 apples<br />
8 ice cream sticks<br />
12 packages (14 oz each) creamy caramels<br />
2 tbs. water<br />
3/4 cup pistachios, chopped<br />
8 foil cupcake liners<br />
3 ounces semisweet chocolate<br />
Place Styrofoam on a flat surface. Lightly coat<br />
baking sheet with cooking spray. Remove stems<br />
from apples. Insert wooden stick into stem of<br />
each apple. Place caramels in saucepan. Add the<br />
water, heat stirring until caramels are melted.<br />
Working quickly with one apple at a time, and<br />
keeping caramel over low heat, dip the apple into<br />
the caramel, turning to coat the apple, remove<br />
the apple from the caramel and gently shake. Pat<br />
pistachios onto top of apple, place on prepared<br />
sheet. Refrigerate until caramel is cool. Heat<br />
chocolate in top of double boiler, until melted.<br />
Drizzle chocolate over apples. Press apples<br />
sticks into Styrofoam. Refrigerate until the<br />
chocolate hardens. Remove from Styrofoam to foil<br />
cupcake liners</p>

<p><strong>Chocolate Covered Truffles</strong><br />
1/4 C butter 1 1/2 lbs. real semisweet chocolate 3/4 C non-dairy<br />
coffee creamer, any flavor 1/2 teaspoon vanilla extract 1 1/2 pounds<br />
real milk chocolate for dipping 1 cup finely chopped chocolate, milk or<br />
semisweet for decoration<br />
Makes about 3 dozen truffles<br />
Melt semisweet chocolate in double boiler over hot water. Heat butter,<br />
creamer and vanilla in another saucepan to 125° F on a candy<br />
thermometer. Add to semisweet chocolate all at once, beating until<br />
smooth and creamy. Chill in refrigerator until nearly set but still<br />
pliable. Beat with mixer until light and fluffy. Spread in 9 inch buttered<br />
pan until set enough to roll into small balls. Melt milk chocolate over<br />
double boiler. Dip truffles in melted chocolate, then sprinkle<br />
generously, or roll in, chopped chocolate</p>
