Fruit Leather

Trying to find a recipe for children's snacks can be challenging. Thankfully my kids and I have been able to make a fun fruit leather thanks to Chow.com. There are other options and recipes on how to make variations of this healthy version, but we liked the easy use of the applesauce lightly flavored with raspberries. Enjoy!

Looking around my own property I find that I have inherited trees, shrubs and plants that are considered moderately invasive in the Adirondack Park. Before I go ripping up my whole yard, I am looking into substituting the plants with native species to New York and the Adirondacks. It will take some weeding, but will be worth it in the long run!

My daughter is celebrating her birthday so we felt that it was only appropriate that she be given a b'earthday cake in a double Earth Day/Birthday celebration. If anyone is interested in making it, what I did was quite simple. 1) Make your favorite cake recipe. I used the one-bowl chocolate cake from Craig Claibourne's New York Times Cookbook.
