<p class="wp-block-paragraph">I just launched my new podcast <strong><a href="https://www.youtube.com/@outofthefirepodcast">OOTF (Out of the Fire)</a></strong>. It came out of a very real place in my life &#8211; the parts of growth that don’t feel clean or linear, but force you to shift, rebuild, and keep going anyway.</p>



<p class="wp-block-paragraph">I’ve been sitting with this new chapter for a while, and it finally feels right to share it here.</p>



<p class="wp-block-paragraph">At its core, OOTF is about resilience, reinvention, and honest conversations with people who have lived through change and are still figuring things out in real time.</p>



<p class="wp-block-paragraph">It’s not about having answers. It’s about being willing to talk through the process.</p>

<p class="wp-block-paragraph">I recently made this while hosting at home (because let’s be honest, that’s usually when I decide to try something new <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f605.png" alt="😅" class="wp-smiley" style="height: 1em; max-height: 1em;" />), and it ended up being one of those dishes that’s simple, flavorful, and just feels <em>good</em> to eat.</p>



<p class="wp-block-paragraph">It’s light but still satisfying, with creamy coconut milk, fresh lime, and a little kick from red curry. And the best part? It comes together quickly and doesn’t require anything complicated.</p>

<p class="wp-block-paragraph">There’s something about a really good mushroom soup that feels a little luxurious and a lot comforting. I recently had the most incredible roasted mushroom soup at a restaurant and immediately thought, <em>why don’t I make this at home more often?</em></p>



<p class="wp-block-paragraph">So of course, I went into the kitchen with one goal: make it just as rich and satisfying &#8211; but a little cleaner, a little lighter, and honestly… even better.</p>



<p class="wp-block-paragraph">Roasting the mushrooms, onion, and garlic is the game changer here. It brings out that deep, savory flavor that makes this soup taste like it’s been simmering all day, even though it’s surprisingly simple to pull together. The garlic gets soft and caramelized, the mushrooms turn perfectly meaty, and everything blends into the smoothest, creamiest texture.</p>



<p class="wp-block-paragraph">I like to finish it with just a touch of cream and butter for richness, plus a splash of Worcestershire for that subtle umami boost. It’s cozy, it’s nourishing, and it’s one of those recipes that feels a little fancy without any extra effort.</p>

<li>2 Cornish game hens</li>



<li>2 tablespoons olive oil or melted butter</li>



<li>2 teaspoons kosher salt</li>



<li>1 teaspoon black pepper</li>



<li>1 teaspoon garlic powder</li>



<li>1 teaspoon onion powder</li>



<li>1 teaspoon dried thyme</li>



<li>1 teaspoon dried rosemary</li>



<li>1 lemon, halved</li>



<li>2–3 cloves garlic, smashed</li>



<li>Fresh herbs (thyme, rosemary, or sage), optional</li>



<li>Optional aromatics for the pan: onion wedges, carrots, or potatoes</li>
</ul>



<h2 class="wp-block-heading">Directions</h2>



<h3 class="wp-block-heading">1&#x20e3; Preheat &amp; Prep</h3>



<p class="wp-block-paragraph">Preheat your oven to <strong>425°F</strong>. Pat the Cornish hens completely dry with paper towels — this helps the skin get nice and crispy.</p>



<h3 class="wp-block-heading">2&#x20e3; Season the Hens</h3>



<p class="wp-block-paragraph">Place the hens on a baking sheet or in a roasting pan. Rub each hen all over with olive oil or melted butter.</p>



<p class="wp-block-paragraph">Season generously as desired or with my Ali in the Valley Essence seasoning</p>



<h3 class="wp-block-heading">3&#x20e3; Stuff with Flavor</h3>



<p class="wp-block-paragraph">Stuff each hen with:</p>



<ul class="wp-block-list">
<li>Half a lemon</li>



<li>A couple smashed garlic cloves</li>



<li>Fresh herbs, if using</li>
</ul>



<p class="wp-block-paragraph">This adds so much flavor while they roast.</p>



<h3 class="wp-block-heading">4&#x20e3; Roast</h3>



<p class="wp-block-paragraph">Place the hens breast-side up in the oven. Roast uncovered for <strong>55–65 minutes</strong>, or until:</p>



<ul class="wp-block-list">
<li>The skin is golden and crispy</li>



<li>Internal temperature reaches <strong>165°F</strong> in the thickest part of the thigh</li>
</ul>



<p class="wp-block-paragraph">If the skin is browning too quickly, loosely tent with foil for the last 10–15 minutes.</p>



<h3 class="wp-block-heading">5&#x20e3; Rest &amp; Serve</h3>



<p class="wp-block-paragraph">Remove from the oven and let the hens rest for <strong>10 minutes</strong> before serving. This keeps them juicy.</p>



<p class="wp-block-paragraph">Serve whole or cut in half, alongside your favorite holiday sides.</p>
