She's smart, funny and warm and has a mischievous sparkle in her eye. I finally got to meet her earlier this year in Monterey at Cooking for Solutions. She did a cooking demo where she had the audience laughing over a story about her appearance on the Paula Dean show (the story is in her latest book, by the way). But what I remember most is the spectacular dish she made with trout. I can still taste it in my mind. It was pan-seared trout drizzled with pecan butter and topped with an incredibly rich smoked trout salad. And the recipe is dead simple. That's the signature of Virginia Willis, amazing food that really isn't all that difficult but definitely something extra special.

Virginia's latest book, Basic to Brilliant, Y'all, is all about the 'something extra special.' Each recipe has a simple component--like the seared trout, and an optional brilliant flourish--like the topping of smoked trout salad. It's what makes this cookbook a real keeper (even if you have other Southern cookbooks). The recipes are fresh and modern and reflect both Virginia's Southern roots and her French training so you'll find recipes like Savory Monkey Bread, Coca Cola Cake and Creole Country Bouillabaisse. If you'd like a personalized book plate from Virginia Willis to go in your copy of the book, buy it within the next two weeks, then fill out this form.

I may be anything but a Southern girl, but like Virginia I am pretty much crazy about sweet potatoes. Basic to Brilliant, Y'all has eight sweet potato recipes in it, including soup, salad and spoonbread. But the recipe that caught my eye was Twice Baked Sweet Potatoes. The reason I wanted to make it was because it uses sorghum as a sweetener (there are suggestions for other sweeteners if you don't have sorghum). I love the earthy flavor of sorghum and just got my first batch of it from Bourbon Barrel Foods earlier this year. The recipe is basically roasted sweet potatoes, mashed and spiced with just a tiny bit of butter and sorghum. But it still manages to be rich and comforting. The twist is to double bake the skins and fill them up with the mash then top them with pecans and bake them yet again. It's a great side dish, but I even ate one of these beauties for breakfast the other day!

Here is the recipe, printed by permission Basic to Brilliant, Y'all by Virginia Willis, Tenspeed Press, 2011

Spiced Sweet Potato Mash
Serves 4 to 6

Sweet potatoes are good and good for you. Most Southern recipes drown them in butter and sugar, but they are so good with a just a whisper of butter. In this recipe the potatoes are first roasted, then scooped and mashed. You can use the microwave if you are pressed for time, but roasting brings out the complex flavors.

4 medium sweet potatoes (about 2 pounds)
2 tablespoons sorghum, cane, molasses, or maple syrup
1 tablespoon unsalted butter
Finely grated zest and juice of 1/2 orange
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
Pinch of cayenne pepper
Coarse salt and freshly ground black pepper

Preheat the oven to 400°F. Line a rimmed baking sheet with a silicone baking liner or parchment paper. (This will help with clean up.) Using a fork, pierce the sweet potatoes in several places and place on the prepared baking sheet. Bake until fork-tender, about 50 minutes. Set aside to cool.

When the potatoes are cool enough to handle, peel the potatoes, discarding the skin. Place the pulp in large bowl. (If you really want them creamy, press
them through a fine-mesh sieve or food mill.) Add the syrup, butter, orange zest and juice, cinnamon, allspice, nutmeg, and cayenne. Season with salt and pepper.

Using a potato masher, heavy-duty whisk, or handheld mixer, beat until smooth. Taste and adjust for seasoning with salt and pepper. Transfer the sweet potatoes to a warmed serving bowl. Serve immediately.

Brilliant: Presentation
Twice-Baked Sweet Potatoes
Meme peeled hers; discarding the skin, and Mama does, too, but I like the leathery skin. It's the extra step of stuffing these that makes this recipe Brilliant.
Using an oven mitt or folded kitchen towel to hold the cooked potatoes, cut the potatoes in half. Using a spoon, scoop the flesh from each half into a bowl,
leaving a 1/8-inch to 1/4-inch thickness of flesh in each shell. Arrange the shells on a baking sheet and bake until dry and slightly crisped, about 10 minutes. Meanwhile, prepare the mash as in the Basic recipe. Spoon the still-warm potato mixture into the crisped shells, mounding slightly at the center. Sprinkle 1/2 cup pecans equally over the filled sweet potatoes. Bake until slightly brown and crisp on top, about 10 minutes. Serve immediately. Serves 4 to 8.
DO NOT REPRINT WITHOUT PERMISSION! ©2011 Cooking with Amy. All rights reserved. I wanted to try some other simple and yummy dish with oats. Last weekend i tried this for our breakfast . I got this recipe from aval vikatan supplementary. It was very nice. The actual recipe called for grinding , fermenting and all. But i made an instant paniyaram with little left over idly/dosa batter. The taste was awesome. It was like the usual one we make with idly batter. We loved it. Try this and let me know.I've also written the actual recipe at the end of the post. Please have a look at it.

INGREDIENTS

Quaker quick oats – 1/4 cup

Idly / dosa batter – 1/4 cup

Salt & water – As needed

To temper

Olive oil/ Cooking oil – 1 tsp

Mustard seeds – 1/4 tsp

Urad dal – 1/2 tsp

Channa dal – 1/2 tsp

Big onion – 1 no (chopped finely)

Green chilly – 1 no (-do-)

Ginger – 1 small piece

Curry leaves – a few

SOUR CURD – 1.5 TSP (OPTIONAL)

METHOD:

Dry roast oats for few minutes and grind to make a fine powder.

Mix idly batter and powdered oats with the required salt and water. The batter should not be too thick.

Temper all the items given above and mix in the batter.

Take a non-stick paniyaram pan and pour the batter. Drizzle little oil if necessary.

Cover and cook for sometime. Flip and cook the other side for few mins.

Delicious oats paniyaram is ready to savour with coconut chutney or any other chutney of ur choice !!

NOTE:

This paniyaram would be very soft inside . So dont think its uncooked. It cooks very fast just like our normal paniyaram . Just cover and cook in sim fire for sometime. Its enough.

I dont like the smell of oats to be dominant here . So i've added equal quantity of oats and idly batter. U can lesser the amount of idly batter and try.

Sometimes the sourness of batter may reduce if u add oats. Add little sour curd if needed.

ACTUAL RECIPE GIVEN IN THE BOOK

OATS – 1 cup

Urad dal – 1/2 cup

Salt & water – as needed

To temper :

The same ingredients as mentioned above.

METHOD

Soak the urad dal for 30 mins and grind with oats in a mixie .

Leave it for 4 –5 hrs for fermentation. If u feel the batter is not sour , add little curd to it. Now make the paniyaram with seasoning as mentioned above

.

KITCHEN CLINIC

OATS

Breakfast is the most important meal of the day as it can affect mood and energy level for the entire day. And the best way to start your day is Oatmeal. Oatmeal has long ranked among the best foods for fighting cholesterol. A single bowl of oatmeal provides all essential nutrients like complexcarbohydrates, B vitamins, fiber, and minerals such as phosphorous, iron, selenium, and calcium.
The Oat (Avena sativa) was originally cultivated in southern Europe some 5000 years ago. Hippocrates wrote that oats made into porridge or gruel (a thin porridge) is refreshing and helps hydration. During wars, the Scottish soldiers use to carry a bag of oatmeal as a source of strength. They also believed that it could build and regenerate bones andligaments.
We are all aware of the high fiber content of Oats but very few people know about the other benefits of Oats. These include:

Lowers cholesterol: Beta-glucans, a soluble fiber present in oats has been proven effective in lowering blood cholesterol thus reducing the risk of cardiovascular disease (CVD). A study confirms that having a bowl of oat meal everyday reduces the CVD risk by 10%.

Reduces high blood sugar: Being a lowglycemic index (GI) food and the fact that it is high in fiber content, it can normalize blood sugar spikes. Type 2 diabetes patients can benefit a lot from a morning breakfast of oatmeal.

Boosts Immune system: Selenium and Vitamin E present in Oats significantly enhances the human immune system's response to bacterial infection. This makes oatmeal the perfect food to have on the table during flu season. Zinc, present on oats, helps in metabolism, healing wounds and growth of new cells.

Reduces weight: The high amount of soluble fiber in oats forms a gel when digested. This causes the viscosity of the contents of the stomach and small intestine to be increased. The gel delays emptying of the stomach making you feel full longer which helps with weight loss. Also, being low in fat content, oats don't add to your weight as well. A new research found that the children who ate oatmeal were 50% less likely to become overweight, when compared to those children that did not eat it.

Good source of Protein: Oats have a higher concentration of well-balanced protein (100 gm of oats have around 17 gm of protein) than other cereals - 100 gm of oats contains twice as much protein as 100 gm of wheat or cornflakes). Also, the quality of the protein is superior to the quality of protein found in wheat or other grains. Protein is used to build, repair, and maintain all body tissues and provide the body energy.

Improves digestion: The high fiber content of Oats makes it an ideal medicine-food for individuals suffering from gastritis, colitis, and other digestive problems.
As the name implies, this vegetable is a melon that is bitter. There are two varieties of this vegetable: One grows to about 20 cm long, is oblong and pale green in color. The other is the smaller variety, less than 10 cm long, oval and has a darker green color.

Both varieties have seeds that are white when unripe and that turn red when they are ripe. The vegetable-fruit turn reddish-orange when ripe and becomes even more bitter.

Bitter gourd thrives in hot and humid climates, so are commonly found in Asian countries and South America.

Westerners may not be so used to bitter melons, so may find them more difficult to consume. But if you can generally take bitter taste, you may be able to take this too. Try it, at least for all its healthful virtues!

Nutritional Benefits

Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folic acid, zinc, phosphorus, manganese, and has high dietary fiber. There is also another insulin-like compound known as polypeptide P which have been suggested as insulin replacement in some diabetic patients.

Health Benefits

Few other fruits/vegetables offer medicinal properties for these ailments like bitter melon does.

Blood disorders: Bitter gourd juice is highly beneficial for treating blood disorders like blood boils and itching due to toxemia. Basically it's a ground up mixture of roasted nuts, spices and dried herbs in which to dunk bread or raw vegetables. It appears to originate from Egypt though has become very fashionable in Australia. And it's dead tasty.

To keep down the cost if you're making it from scratch buy one of those packs of mixed chopped nuts. I'm not mad about their flavour normally but if you roast them and mix them with spices they taste fine - just nicely nutty. And - hopefully it doesn't need saying by now - buy your spices from a ethnic grocer rather than from the supermarket. You'll pay a fraction of the price.

Makes about 250g mix - enough to feed a group of six to eight though obviously check no-one has a nut allergy.

100g chopped mixed nuts
75g sesame seeds
25g coriander seeds
10-12g cumin seeds
1 level tsp dried oregano
1 level tsp sea salt
1/2 tsp black peppercorns

Preheat the oven to 180°C/350°F/Gas 4

Spread the nuts and seeds on separate baking trays or tins and roast them in the oven until lightly coloured and fragrant - about 7-8 minutes for the nuts, 4-5 minutes for the coriander and seeds and 3-4 minutes for the sesame seeds. (It might sound a faff roasting them separately but you don't want to overcook them. You could toast the cumin seeds in a dry frying pan if you like. The main thing is to watch them like a hawk).

Set the nuts and spices aside to cool. Put the nuts and peppercorns into a food processor or spice grinder, pulse a few times then add the coriander, cumin and sesame seeds and oregano and salt and pulse again. Don't overdo it - you want a rough textured mixture that looks like coarse breadcrumbs (see below). If you haven't got a food processor you could use a pestle and mortar to grind everything up but that's obviously harder work.

Serve with good olive oil, chunks of bread or warm pitta bread and raw veg like carrots and radishes. It's also great as a sprinkle over roast vegetables or you can use it as a coating for soft goats' cheeses - or a topping for roast fish. You could add a few chilli flakes if you want to spice it up but this version is better for kids (provided, just to stress it again, they're not allergic to nuts).

You can keep any leftover dukka for a week or two in an airtight tin or plastic box though you might want to refresh it in the oven for 2-3 minutes before you serve it.

<img style='display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 240px;' src='https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjvtCEhGA8vuAHuMyiBvE4PlXpiK3w6d0J-PpshHuCarwqFs5HTlxwUBpthrQ71RoZXlmrkhmZvgwHqjbtUhmF1fqlMla74aN6BNG4BkkNo2dW7Cu2j-kYbIQaWLqlnJdVZSrGAx33YZ3M/s320/dukka+and+beetroot+dip.jpg' border='0' alt=''id='BLOGGER_PHOTO_ID_5705585601327437090' />
By the way the beetroot dip in the rather messy pic above (suddenly remembered I should snap it half way through eating it) is made from a couple of vac-packed beets - a recipe I adapted from Stephen Markwick's A Well-Run Kitchen. You simply chop them up and whizz them with 2 tbsp Greek yoghurt, 1 tbsp balsamic vinegar, about a teaspoon of ground roast cumin, a pinch of hot pimenton or cayenne pepper and 3 tbsp olive oil and season well with salt and pepper.

PIDI KARUNAIKIZHANGU CHOPS / YAM FRY

I love chops made with vazhakkai and senaikizhangu ( Elephant yam ).Recently I bought small sized black colored pidi karunai kizhangu from my native.I heard its a good remedy for piles. We usually make vatral kulambu by adding this kizhangu. This time i tried chops by searching the recipe.I got from a discussion forum hub. It was very nice and aromatic with the perfect blend of spices. The original recipe was named as 'Karunai kizhangu kola ' and it was told to deep fry. But i followed the same recipe and made in dosa tawa instead of deep frying. I would say this recipe is apt for making with elephant yam and raw banana. My doter loved it very much.We enjoyed with sambhar and curd rice !!

INGREDIENTS

Pidi karunai - 4 nos

TO GRIND:

Pottukadalai/ Fried gram dal/ Dalia - 3 tbsp

Tamarind paste - 1/2 tbsp

Turmeric powder - A pinch

Cloves - 2 nos

Cinnamon - 1 inch piece

Fennel seeds/ Soambu - 1 tsp

Garlic cloves - 4 nos

Red chillies - 5 - 7 nos

Shredded coconut - 1 tbsp

Ginger - 1 small piece

Salt & water - As needed.

Lime juice - Optional

Coriander leaves - To garnish.

METHOD

Wash & soak the kizhangu in abundant water for sometime to remove all the mud.

Pressure cook in high flame for 1 whistle. It should be half done.(Skin should be hard to touch)

Now grind all the items given above adding required salt & water to make a smooth paste.

Remove the skin of the kizhangu and chop it round.

Now mix the paste ans marinate for sometime. These plants bloom around spring producing mauve or magenta colored flowers with fragrance. 3-4 years are generally required for the corms to be harvested. These evergreen plants can be grown in container as well if the soil is acidic. Elephant yam is an edible tuber. It is one of the oldest plants known to provide food. It is so called because of its huge size and resemblance with the elephant foot. It is widely consumed as a food crop, usually boiled or baked.
Buying tips
It is preferred to buy elephant yam from the markets where it is available is a fresh condition. It is preferable to wear gloves while handling the elephant yam as the sap of these plants causes skin irritation.

Culinary usage
Karunai Kilangu (elephant foot yam) can be consumed in many ways safely only after removal of its toxic materials. So how is possible to get high quality extra virgin olive oil at a low price? Last week I visited <a href='http://californiaoliveranch.com/ target='_blank'>California Olive Ranch, the largest California olive oil producer, and learned just how they do it.

<img src='http://homepage.mac.com/amybsherman/images/cor2.JPG' alt='California Olive Ranch' title='California Olive Ranch'' />
It all comes down to freshness and quantity. California Olive Ranch plants three varieties, arbequina, arbosana from Spain and koroneiki from Greece. Their olive orchards look nothing like what you may have seen in Europe. The olive trees are pruned into a hedge shape that is harvested mechanically, using a harvester specially developed for shaking the trees to get the olives off without damaging them. Less damage means better quality oil.

Here are some numbers for California Olive Ranch:

Their olive trees grow 6-8 feet high

Trees are planted 5 feet apart

There is 13 feet between each row

There are about 675 trees planted per acre

Each tree yields 7-12 pounds of olives

Only 20% of the olive is oil, 55% is water

12 harvesters run 24 hours a day during harvest season

5,000 acres are owned by the company

5,000 acres are managed by 67 farmers who have long term leases

Each truck holds 66,000 pounds of olives

Each truck is unloaded in 35 minutes

<img src='http://homepage.mac.com/amybsherman/images/cor3.JPG' alt='California Olive Ranch' title='California Olive Ranch'' />
Some more facts:

The tree trimmings are mulched

The ground pits and olives, called pomace, is fed to cattle

California Olive Ranch is using bird boxes and buffer zones to minimize the use of pesticides and tests each batch of olives, and has test plots for organic olives

<img src='http://homepage.mac.com/amybsherman/images/cor4.JPG' alt='California Olive Ranch' title='California Olive Ranch'' />
If you ever get a chance to ride a harvester and see the olives jiggle off the trees I highly recommend it! That I got to share the experience with blogging friends Chef John from Food Wishes, Chrystal Baker from The Duo Dishes, Aleta Watson from The Skillet Chronicles, and Jane Bonacci from The Heritage Cook made it all the more sweet!

<img src='http://homepage.mac.com/amybsherman/images/cor5.JPG' alt='California Olive Ranch' title='California Olive Ranch'' />
Speaking of sweet, all exra virgin olive oil should be a balance of fruity, bitter and pungent. The best way to find your favorite, is to taste them...however...California Olive Ranch uses descriptors like intense and bold and mild to help you find one to your taste.

<img src='http://homepage.mac.com/amybsherman/images/cor6.JPG' alt='California Olive Ranch' title='California Olive Ranch'' />
* If you want the freshest olive oil, known as 'olio nuovo in Italy, sign up to buy California Olive Ranch's Limited Reserve.

* If you like a buttery mild oil without too much bite, look for their basic extra virgin olive oil

* If you like a fruitier variety, try the Arbequina

* The Arbosana is most complex

* The Miller's blend is bold and balanced (and a favorite of some bloggers, food writers and chefs too.)

My thanks to California Olive Ranch for inviting me up to visit during harvest and letting me sample their fresh oils!
DO NOT REPRINT WITHOUT PERMISSION! ©2011 Cooking with Amy. Bargain hunting might as well be called 'treasure hunting,' as far as I'm concerned. Nothing beats the thrill of finding a long out-of-print copy of Better Than Store Bought cookbook, a discarded Moulinex meat grinder, or Santander chocolate priced to move (all things I've scored). Actually, the thrill is in just the possibility of finding something, which is exactly why I like shopping at Grocery Outlet.

Grocery Outlet buys closeouts and discontinued items so you never know what they will have. Unlike similar stores, they focus on quality brands and they have just about everything you'd find at a regular supermarket, including some organic produce. Sometimes you can figure it out why the product ended up there, because the size or the packaging gives it away. It might be something that was packaged for food service or a big box store. Or it might have been a seasonal promotion or flavor.

As you can imagine, each product has a story to tell, on an insider tour I learned why a terrific wine ended up being sold at a bargain price (a bank note was due and the winery needed cash) why an expensive beauty product ended up being discounted (the packaging changed and they needed to reduce inventory), why some fancy imported cookies were available (an order was cancelled after the shipment had already left Germany for the US) and why an adorable stuffed toy was being cleared out (a typo on the label). Prices vary but are often discounted 50% or more.

I also learned that Grocery Outlet is a third generation family owned company and that each store is independently operated and very involved in the local community. Employees even participated in a 'hunger challenge' style effort to experience what it was like to live on a food stamps budget.

Here are some the excellent finds from my most recent shopping trip:

Ok, so clearly this is NOT Baby Romaine! But who cares? It's an organic salad mix for an unbeatable price.

Greek yogurt. This stuff normally sells for $1.65 each at my local supermarket, and here it was 2 for a dollar!

<img src='http://homepage.mac.com/amybsherman/images/englishmuffins.JPG' alt='Thomas' English Muffins' title='Thomas' English Muffins' />
Thomas' English Muffins really are the best you can find at any supermarket as far as I'm concerned, and $2.49 a pack is a steal.

I am crazy about Numi's puerh tea! Even with a coupon I can't get it this cheap.

Not on my usual shopping list, but how could I resist Terra Chips with Olive Oil, Roasted Garlic and Parmesan and for only $1.99 a bag? They are delicious by the way.

I'm guessing the new name 'mascarpone fresca' is what caused this to end up discounted from what the regular price $5.49 to only $1.99 (is it just me or does mascarpone sounds like the name of an Italian crime syndicate?) All that really matters is that the price is amazing for this luscious ingredient necessary for tiramisu. It's not on my regular shopping list, but like I say, I can't resist a bargain...

My thanks to Grocery Outlet for giving me a tour, introducing me to your buyers, sharing your stories and for giving me a gift card. (It will probably come as no surprise that I spent much more of my own money because I found so many good deals!)

What's the best closeout you've found or store where do you routinely find them?
DO NOT REPRINT WITHOUT PERMISSION! ©2011 Cooking with Amy. It's not that they don't have the produce. Down in the Languedoc they have gorgeous leeks right now and great bagfuls of chicory which is something you rarely find in the UK - or not at a reasonable price. Yet the only greenery most restaurants seem to offer - and have done for the past umpteen years - is salade de chèvre chaud (grilled goats' cheese salad).

Anyway I took advantage of some very good prices (about €2.50 a kilo) to buy 5 heads of chicory to make a side dish to go with yesterday's roast chicken. This is roughly the recipe.

Braised chicory with Roquefort
Serves 4-6
5-6 heads of chicory
1 tbsp lemon juice
2 tbsp olive oil
20g butter
About 125ml chicken or vegetable stock
50g Roquefort or other blue cheese. Or almost any leftover cheese for that matter - Comté would be good.

Cut the heads of chicory in half lengthwise and remove any damaged outer leaves. Fill a large shallow pan with water, bring to the boil and add the lemon juice to stop the chicory discolouring. Add the chicory, reduce to a simmer and cook for 4-5 minutes then remove with a slotted spoon.

Discard the water from the pan, add the oil and then the butter. Once melted lay the halved chicory heads in the pan and fry until well browned, turning them carefully halfway through so as not to break them up. Lay them cut side upwards in a shallow baking dish, pour over the stock and crumble over the cheese. Cook alongside whatever roast you're cooking for another 10-15 minutes until the cheese is lightly browned and the stock pretty well evaporated.

I also made a dish of leeks vinaigrette for which I posted a recipe on the blog a couple of years ago. Good to be reminded how good it is though and leeks are very tasty at the moment.

<img style='display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 240px; height: 320px;' src='https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjComyuQf0buz-WELMBeJH5ZQEzrbSpWPSSN-WXvqYKGKzKs2GCM5iD6TsiSWyjzNZjSjqZYWUmOLYIwNynJCucuT9v6lW90KYWFCgki7cF8JVUZV0hL95TaKtHoB4MTTkOm9lOnEsq_2E/s320/leeks.jpg' border='0' alt=''id='BLOGGER_PHOTO_ID_5711185013693837874' />

VAZHAITHANDU /BANANA STEM JUICE - SWEET AND SALT VERSION

I really got bored of making thogayal, pachadi and poriyal with vazhaithandu. My husband hates to eat vazhaithandu just becoz it takes so much time to chew n eat ;). I heard drinking vazhaithandu juice in empty stomach is one of the healthiest way to include in our diet. Its a hassle free job too.Last month when i went to my native ,we tasted this juice in a famous restaurant. We loved it.It was mild in sweet and served chilled. We couldn't find out its the juice of vazhaithandu .I wanted to try the same at home.I tried sweet and salt versions. Both were excellent. The banana stem has many nutritive and health benefits. The stem is usually thrown away once the fruit is cut from the plant. So next time if you happen to find one, think of including it in your menu. Here are some good health reasons why banana stem must be part and parcel of your diet at least on occasions.
Banana stem is rich in fiber and helps weight loss. Due to rich content, it helps body to feel full faster. The intake of food gets reduced by including banana stem to diet. It can be taken in the form of juice, but eating it as a whole provides more benefits. Including it once or twice a week can help people looking for ways to cut down extra pounds.

Like banana, banana stem is also rich in potassium and vitamin B6. Vitamin B6 helps production of chemicals such as hemoglobin and insulin. Again, it improves the ability of body to fight against infection. Potassium helps effective functioning of muscles including cardiac muscles, prevents high blood pressure, helps nerve impulses and maintains fluid balance within the body.
It is a diuretic and helps detoxify the body. Some believe that banana stem can prevent and treat kidney stones. This is fact under study and the effectiveness has not been proven by the western world.
It can be taken as a laxative for constipation. Again, the rich fiber content prevents constipation. It cools the body. So overall, banana stem does wonders to our body.
How to include them in diet? Very tender ones can be used in salads and not so tender ones can be added to soups or as a steamed vegetable.
Slicing banana stem for dishes might be hard work, but it provides unmatchable health benefits. Its a cooling agent to our body , so use it weekly twice is recommended.

It is a very common lentil and easily available as well. Masoor daal cooks very fast and does not need any kind of soaking before cooking it. Even tough people may treat it asa simple lentil; it has many properties which are good for health. People who are purevegetarians can eat this lentil everyday. They will get the same amount of strength that non-vegetarian people have.
Many times we see that people complain about having less blood in their body. Doctors recommend some medicines which will increase the blood and red blood cells in the body for such people. Instead of eating those medicines such a person can have curry made of masoor dal twice a week and they would never complain of less blood. This lentil is good as a remedy when a person is facing dysentery problems. Masoor daal is good for the excretory system and helps keeping it clean. It is good for people facing illnesses due to impure blood.
Masoor daal reduces the growth of cough in the lungs and helps reduce acidity as well. Soup made of this lentil is given to a patient suffering from fever. It will give strength to the body of the patient as well as keep the blood pure. People who have piles and bleed as lot during excretion should definitely have masoor daal. It will help reduce this problem.
Powder made from masoor dal should be used instead of soap for infants and children. This helps restore the moisture in the skin of children. It brings a glow to skin and prevents it from cracking in the winter season. It is used as a face pack when people have very oily skin. It reduces the oil produced from the skin and helps reduce acne and pimples. It also prevents itching of skin.
Our daily diet can include a bowl of lentil soup everyday. This will increase the protein content in our body and make us healthy and fit. Masoor dal will also help increase the digestion rate. Many Indian recipes are made using masoor dal.

Technorati Tags: DAL PALAK FOR ROTI,PALAK DAL,MASOOR DAL RECIPE,MASOOR DAL PALAK FOR ROTI,DAL FOR ROTI,SIMPLE DAL RECIPE ..

Cooking My Way Back Home, Kokkari & Bi-Rite Market's Eat Good Food

I always get excited about cookbooks with a connection to the Bay Area. There are so many things that make eating here special. Of course, it's the fresh produce, but it's much more than just that. It's also the vibe, the service and personality of our local restaurants. The latest crop of cookbooks capture much of that.

It may sound odd to say I don't go to Mitchell Rosenthal's restaurants, namely Town Hall and Anchor & Hope (never been to Salt House) primarily for the food. Oh the food is good, some of it is outstanding, but I really go because those restaurants just feel so good and welcoming. It's like a party every night, at both places, not in a rowdy way, in a 'I can't remember the last time I had so much fun at a restaurant' way. At Town Hall I always sit at the communal table, and I love it. You cannot eat there without making friends with your neighbors and chatting over your dishes. Rosenthal's new cookbook, Cooking My Way Back Home, manages to share a lot of the fun through stories and photos, not to mention recipes.

Thankfully my favorite dish from Town Hall is in the new cookbook, it's Faith's Warm Ham & Cheese Toast with Jalapeno Cream as well as my favorite bite from Anchor & Hope, Angels on Horseback with Remoulade. The recipes are a mix of Southern and Jewish/Deli favorites with a few Mexican, Seafood and barbecue recipes and somehow it all works. I'd call it comfort food meets party food. Bookmarked recipes to try include Hot Mixed Nuts with Truffle Honey and Maldon Salt, Sweet Onion and Funky Cheese Fondue, BBQ Shrimp with Toasted Garlic Bread and Lemon Chicken with Olive and Feta.

Kokkari is hand's down the number one Greek restaurant in San Francisco. Of course, we are not a city known for Greek food. What makes the restaurant so successful is a classically trained chef who takes family recipes and elevates them to something even more special. The Kokkari cookbook is a compendium of Chef Erik Cosselmon's refined takes on Greek food and family recipes from the owners of the restaurant, the Frangadakis and Marcus (Moutsanas) families. Recipes you must try include the best Zucchini Cakes (fritters) I have ever had, Spiced Meatballs with Green Olive & Tomato Sauce, Orsa's Flaky Cheese Pastries, Braised Lamb Shanks and Moussaka.

<img class='imgNoBorder' style='float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;' src='http://homepage.mac.com/amybsherman/images/birite.jpg' alt='Bi-Rite Market's Eat Good Food' title='Bi-Rite Market's Eat Good Food'>Every food writer I have spoken to lately is excited about Bi-Rite Market's Eat Good Food. Bi-Rite is one of the most incredible grocery stores you will ever visit. It is tiny and yet every single item that is there is there for a reason. It is the most curated store you can imagine. If you want to eat like we eat in the Bay Area, this is your book. It's not just recipes, it tells you just what you need to know about the ingredients you use. You'll learn how to store persimmons, how to use fresh fennel, how to buy heritage turkeys and where to best store cheese in your fridge. It also highlights many of the most beloved (mostly Northern California) producers and purveyors like McEvoy Ranch, Cowgirl Creamery and Mariquita Farms.

The book is like one of my other favorite cooking reference books, Zingerman's Guide to Good Eating, only on steroids because it includes so much more information, specifically about fresh meat, seafood, dairy, wines and a plethora of fresh produce. Read it and become an expert on choosing, storing and using the best ingredients possible. Then suddenly I'm on to something else. At the moment, my breakfast of choice is a granola parfait. I bought parfait glasses for ice cream, but use them for breakfast and fruit salad more frequently. I also got those skinny spoons you need to fit down into the bottom of the glass! This is hardly a recipe, more of a technique. But anything that can help 'cereal' sound more exciting is worth doing. The trick to making a good parfait is to layer the ingredients nicely. Start with the yogurt on the bottom because anything else is too hard to get at with your spoon.

I've been using Driscoll's organic berries, Greek yogurt and The Bunnery granola. I recently got some samples of the granola and I really like it. I make my own granola but you have to eat it when it's fresh so I don't always have it on hand. The Bunnery original granola has relatively few ingredients just oats, honey, sunflower seeds, coconut, canola oil, sesame seeds, water, almonds, salt, cinnamon, and cloves. It's light and crunchy and not too clumpy which is best for parfaits.

You can make parfaits with just yogurt and fruit if you like. Or of course, you can also make parfaits with ice cream and fruit or sauces. But I think this is the best way to put a sexy spin on cereal. It's pretty, healthy and easy to make.

Berry Granola Parfaits

Mixed berries, such as blackberries, raspberries, blueberries
Yogurt, plain or flavored, regular or Greek
Granola

Layer a spoonful of yogurt into the bottom of the parfait glass and top with a layer of granola. Just a little! You want to make sure you leave enough room for multiple layers. Top the granola with one layer of berries. Repeat and end with a dollop of yogurt and a berry on top.

Enjoy!
DO NOT REPRINT WITHOUT PERMISSION! ©2011 Cooking with Amy. It didn't make the cut, but it was a great dish. I think it's the only dish I've made out of my Sam Choy cookbook, but I've marked so many pages I'd like to try. The photos in the book are absolutely mouthwatering! We may have to have a Hawaiian week here. I'll use Sam and my Maui Taco book as well.....Here I come Hibachi Miso Chicken with Peanut Butter!

What I liked most about this dish was that it had spinach in it. I too often turn to my 'staple' vegetables (peas, corn, carrots) and forget about the rest. I haven't had the interest and passion for cooking lately that I used to have and it's been reflecting in my dinner menus.

The recipe in the book calls for young taro leaves, which are to be boiled first, but notes that fresh spinach can be used instead.

Chicken Lu'au

from Sam Choy's Cooking

1 pound spinach

3/4 lb skinless boneless chicken breast, cubed

2 Tb butter

1/2 medium onion, chopped

1 cup chicken stock

1 cup coconut milk

1/2 tsp salt

In a large saucepan heat butter and saute onions until translucent. I googled so many basic salad recipes and came out with my version. Here i used grated beetroot .So the color of beetroot dominates here. Otherwise it would be a colorful salad to attract ur kids. Make ur choice of adding or omitting the veggies and fruits given in this recipe.

INGREDIENTS

For 1 person

Sprouted green gram - 1 handful
Carrot - 1 no(grated)
Beetroot - 1/2 no ( grated) (optional)
Big onion - 1/2 no (chop finely)
Cabbage - Few leaves ( chop finely)
Pomegranate - 1 handful
Guava - 1/2 no ( Chop into squares)
Coriander leaves - A few
Lime juice - Few drops
Pepper powder - 1/2 tsp
Salt - As needed

METHOD

Take a wide bowl and mix all the ingredients given above. It just increases the cooking time and makes it harder to get the breast cooked at the same time as the legs. Maybe a bit in the neck but that's never quite enough to meet the family's stuffing needs. So here's a simple stuffing to make on the hob which also has the virtue of getting it browned and a little bit crusty. Yum.

Pan-fried pork, apple and prune stuffing

Serves 6-8 with a turkey or chicken

A 454g pack of sausagemeat or traditional English sausages (e.g. Cumberland) with the skins removed
About 3-4 tbsp dried natural breadcrumbs (i.e. not the bright orange ones)
1 medium egg, beaten
1/2 a small onion, peeled and finely chopped
1 small flavourful apple (e.g. Blenheim or Cox), peeled and finely chopped
100g ready to eat prunes, finely chopped or snipped (it's easiest to cut them with scissors)
1/2 tsp ground mixed spice
Salt and pepper
1 tbsp oil

Put the sausagemeat in a bowl with the breadcrumbs and the beaten egg and mix thoroughly together. Prepare the rest of the ingredients then mix them in too. Heat the oil in a small to medium size non stick frying pan and tip in the stuffing. Pat it down with a wooden spoon or fork until it resembles a cake then let it cook over a moderate heat for about 6-7 minutes, covered with a lid or foil. Turn the stuffing over. (Don't worry if it breaks up, just mash it together again) Continue cooking for another 6-7 minutes or until till the stuffing is lightly browned and cooked through.

(No picture I'm afraid.
