2 C water
2 C grated cheese
1 tsp black pepper
1 Tbsp onion powder
1 C milk

Place broccoli and water in a glass bowl, cover, and microwave on high for 20 minutes. Broccoli will be soft and very hot - be careful. Put into a blender and, starting slowly with the pulse option, puree the mixture until smooth. Pour the puree back into the glass bowl and add the cheese, stirring until completely melted. Stir in seasonings. Carefully add milk and mix in thoroughly. For best flavor, chill overnight.

Broccoli is not the only viable option here: use cauliflower, carrots, squash, beans; or a mixture of vegetables.

Use your favorite cheese; cheddar or monterrey jack work well.

Real Vanilla Pudding

2 C cold milk
In a small saucepan over medium heat thoroughly combine tomato paste and water; let this mixture warm up a bit. Add the dry ingredients and stir to dissolve. Mix in vinegar and Worcestershire. Taste and adjust as necessary. Let simmer to thicken. Great on pulled pork in the crock pot!
2 C sugar
4 eggs
1 tsp vanilla
5 C unbleached all purpose flour
2 tsp baking powder
1 tsp salt

In a large bowl cream together butter and sugar. Beat in eggs and vanilla. Sift in flour, baking powder, and salt. Cover and chill dough for at least one hour. (Also freezes well for later use: I made this dough in December, used some for Christmas cookies, and popped the rest in the freezer. Then in February I used the remaining dough to make heart-shaped cookies for Valentine's Day.)

Roll out dough, on a surface dusted with confectioners' sugar, to 1/2 inch thick. Cut into shapes with cookie cutters. Place cookies 1 inch apart on cookie sheets lined with parchment paper.

To decorate with colored sugars: brush egg wash (1 egg white + 1 Tbsp of water) on raw cookies, then sprinkle with as much or as little sugar as you wish.

Bake 6 to 8 minutes in 400 degree oven.

To decorate with icing and other decorations: bake cookies first, allow to cool thoroughly, then apply icing.
2 C sugar
1/4 tsp salt
4 Tbsp cocoa
1 C butter
1 C boiling water
1/2 C buttermilk (or 1 Tbsp vinegar + enough regular milk to fill measuring cup to 1/2 C line)
2 eggs
1 tsp baking soda
1 tsp vanilla

In a large bowl sift together flour, sugar, and salt.

In a saucepan, melt butter. Add cocoa. Stir together. Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture.

Pour into muffin tins and bake at 350 degrees for 16-20 minutes. Makes 18 cupcakes.

Remove cupcakes from tins and place on metal rack to cool. Then frost with:
1 Tbsp strong, fresh brewed coffee
1 C cocoa, plus some for dusting the pan
1/2 C unbleached all purpose flour

1/2 tsp salt

Preheat oven to 300 degrees. Butter an 8x8 pan and dust with cocoa.

Pour batter into prepared pan and bake for about an hour. Brownies are done when a toothpick comes out a little wet but batter doesn't jiggle anymore. They may seem very wet at first but will firm up to the perfect consistency once cooled.
1 onion, minced
3 cloves garlic, minced
dash salt
1/2 tsp ground black pepper
2 Tbsp unbleached all purpose flour
2 C beef broth
1 16 oz bag frozen mixed veggies, thawed
6 red potatoes, peeled and chopped
1/2 C butter
1/2 C milk
1 Tbsp paprika

Place ground meat, onion, garlic, salt, and pepper in large frying pan over medium heat. Cook, stirring occasionally, just until meat is browned. Do not drain. Sprinkle with flour and stir to coat the meat mixture, then add beef broth. Simmer until thickened.

While meat is cooking and veggies are thawing, bring potatoes to a boil (salt the water if desired. Another option: add a bay leaf or two to the water and remove when draining.) Simmer for ten minutes, then drain. Add butter and mash thoroughly with a potato masher, then add milk and stir well.

To assemble: in a casserole dish (no need to grease) layer first the veggies, then the meat and gravy, then carefully spread the mashed potatoes on top. Sprinkle with paprika for color. Bake, 375, for 30 minutes.

Preheat oven to 450 degrees. Combine the dry ingredients in a medium bowl. Cut the butter into chunks and mash into the flour until it resembles course meal. Add the buttermilk and mix JUST until combined. Turn the dough out onto a floured board. Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick. Use a round cutter to cut into rounds. Place the biscuits on a buttered or parchment papered cookie sheet. Bake for about 10 minutes - the biscuits will be a beautiful LIGHT golden brown on top. Do not over bake!
Chop veggies and meat and saute in oil over medium heat just until meat is no longer pink. Add flour and mix in completely. Add broth and bring to a boil, then simmer until thickened.

Cook noodles according to package directions.

Take veggie mixture off heat and mix with noodles. Add in sour cream and mushroom soup, mix well.

Serve warm, with extra sour cream on the side.
1 1/2 C peanut butter
2 C packed brown sugar
3 eggs
2 tsp vanilla extract
3 C quick cooking oats
2 C whole wheat flour
2 tsp baking soda
1 tsp salt
1 24 oz bag chocolate chips

Preheat oven to 350 degrees. Cream the shortening and peanut butter. Add the brown sugar, eggs, and vanilla; mix well.

Combine oats, flour, baking soda, and salt; add to the creamed mixture and mix well. Gently fold in chocolate chips.

Drop by rounded teaspoonfuls onto parchment paper covered baking sheets. Bake 12 minutes.

This recipe makes A LOT of dough. I made a couple dozen cookies with it and then divided the rest of the raw dough in half, put it in zip-locks, and then stashed it in the freezer.
6 C chicken broth
Pie crust
1 12oz bag frozen mixed vegetables
3 Tbsp butter
3 Tbsp flour

Place chicken parts in large stock pot and cover with broth. Place a lid on the pot and bring to a boil, then simmer for 30 minutes. Remove chicken parts from the liquid; place both in refrigerator to cool overnight.

Make the pie crust and defrost the frozen mixed vegetables.

Pick the chicken meat apart from the skin and bones and discard the waste. Cut the meat into bite sized pieces. Set aside. Strain the cooking liquid in a small sieve to remove the solid fat and any other debris.

In a large saucepan over medium heat melt butter. When butter just starts to bubble add flour and whisk into the butter to form a roux. Turn heat up to medium high and slowly add about 1/2 C of the reserved cooking liquid and whisk until incorporated into the roux. Add 2 more cups of cooking liquid. Keep whisking until mixture thickens. Remove from heat.

To assemble pie: place 1/2 pie dough, rolled flat, in pie pan, then thawed veggies, then chicken pieces, then sauce. Top with remaining pie dough. Cut steam holes.

Bake at 350 for 1 hour.
12 lasagna noodles
3 C ricotta cheese
2 C mozzarella cheese
1 C Parmesan cheese
1 C frozen spinach, thawed
2 eggs
2 Tbsp oregano

In a large bowl beat eggs, then add the ricotta, Parmesan, and half the mozzarella as well as the spinach. Mix well.

Spread some sauce on bottom of 13x9 baking dish, then lay down three al dente lasagna noodles. Spread with 1/3 of the cheese mixture and then enough sauce to cover. Repeat x2. Finish with the last three noodles and remaining sauce.

Bake 350 degrees for 30 minutes, then sprinkle with mozzarella cheese and oregano. Bake for 10 more minutes.

Always let lasagna sit for at least 15 minutes before you cut it, or you will have soup. For best results, refrigerate overnight and then cut and heat individual portions in the microwave right before serving. That's what Italian restaurants do!
1 tsp vanilla extract
Sift together flour, corn starch and powdered sugar; set aside. Beat butter and vanilla in large bowl until smooth. Add flour mixture and blend very well. Refrigerate dough at least one hour.

Preheat oven to 350 degrees. Using a teaspoon to measure, make round dough balls and place on parchment paper on cookie sheets. These cookies can be flattened with a floured fork before baking, left in balls, shaped as crescents, or piped through a cookie press.

Bake for 10 minutes. Delicious as is, but even better rolled in powdered sugar or drizzled with chocolate or your favorite icing. Melt in your mouth!
1 onion
2 Tbsp garlic
1 C Italian seasoned bread crumbs
1/4 C ketchup
2 Tbsp mustard

Mix well. Bake in loaf pan, 350 degrees for about one hour.

There are as many variations of this meatloaf recipe as there are days of the month. Today, for example, I substituted the ketchup with 3 oz tomato paste and the mustard with a few splashes of Worcestershire sauce. Also, this is a perfect recipe for "hiding" veggies from picky eaters: shredded carrot, zucchini, mushrooms, etc. all work.

Other meats can be used as well, such as ground turkey, veal, pork, or a combination.

For an Italian flair, add 1 Tbsp oregano and 1/2 C mozzarella cheese to the mixture. After it bakes, cover with 1 C tomato sauce and sprinkle with 1/2 C mozzarella cheese and bake an additional 5-10 minutes until cheese melts.

For Mexican meatloaf, substitute plain breadcrumbs but add 1/2 packet of taco seasoning and 1/2 C cheddar cheese. After it bakes, cover with 1 C salsa and 1/2 C cheddar cheese and bake an additional 5-10 minutes until cheese melts.

Also try it with bacon, swiss cheese, and mushrooms mixed in.

1 onion
3 cloves garlic
1 28oz can crushed tomatoes
2 oz tomato paste
1 Tbsp dried basil
salt & pepper

Saute diced onion and minced garlic in olive oil until softened. Add crushed tomatoes and tomato paste, mix well. Add spices, then let simmer while you cook the pasta.

The variations on this sauce are endless. Saute any veggies you like along with the garlic and onion, including but not limited to carrots, mushrooms, zucchini, squash, celery, etc. Or puree leftover veggies such as broccoli, green beans, or peas along with some beef broth and add to sauce for added (and hidden!) nutrition. If you like a sweeter sauce, add a few teaspoons sugar. For a creamier sauce, add a few tablespoons butter. Use any herbs you like, fresh or dried.

Also, you can add raw ground meat during the sauteing of the onion and garlic, or add any cooked meat you like while simmering.
