I messed up my sleep schedule badly last night. I fell asleep shortly after work at about 5:30pm, and woke up at midnight. I couldn’t go back to bed, so I decided to make the best of it and head down to the beach to take care of something I’ve been meaning to do for a while now …

Get some pictures of Honolulu, Waikiki, Diamond Head, etc, as the sun comes up.

I’m embarrassed to say that I forgot some of my elementary school lessons (I went to Hawaii schools from 2nd-7th grades), because I didn’t realize until after I’d decided to do this post that the Pink Hibiscus is actually the Hawaii state flower.

Pretty cool … I’ve got the Hawaii state flower just out my back door.

As promised, here are a few of the fireworks shows at Hickam AFB and Magic Island. We’re lucky living here in Iroquois Point. It’s about a 10 minute walk to the beach, where we can see 2 different fireworks shows …

Magic Island is a bit off in the distance, but the Hickam show is basically right in front of us. Just after those two shows ended, we got another show from Pearl Harbor that we watched on the way home.

I took quite a few pictures, and ended up with a couple that I liked. All shots were from a tripod using my Canon 20D with a Tamron 28-75mm lens. Most were 4 second exposures at F9.0.

Luckily we were there early, so it wasn’t overly crowded. They had some good food booths (we had Puerto Rican BBQ), games for the kids, and several rows of booths selling things. In addition they had a big stage (which you can see in the picture) where Billy Ray Cirrus will be playing later this evening. lol, you wouldn’t believe how many 10 year old girls are already there wondering if Miley came too.

We left early to beat the traffic. But fortunately we have a great view of 3 fireworks shows from the beach here at Iroquois Point. I’ll post some fireworks pictures tomorrow.

Just wanted to drop a quick note to let you know that I probably won’t be posting much (if at all) for the next couple of weeks. In a couple of hours, we’re off to Hickam AFB to try to catch a Space-A hop back to the mainland.

I may pop in with a few thoughts from time to time while I’m gone, but for the most part, I’ll be hanging out with my kids.

I’ve gotten a few picture while she’s been here, but for some reason I almost always have to be sneaky to ever get one of her smiling. While not a full out smile, this picture was somewhat willing on her part. And since it may possibly be one of her last pictures here in Hawaii, it is the alohateam picture of the day.

Today, I thought I’d try something different and share a quick and easy recipe. I do a lot of the cooking for our family, and one of my favorite meals is “breakfast for dinner” … and one of my favorite “dinner breakfasts” is my (Better than Dennys) Potato and Egg Skillet.

Here’s what you’ll need to make it:

• A large frying pan or electric skillet
• Oil … I used macadamia nut oil tonight
• 6-9 eggs
• 4 small potatoes
• 1 small onion
• Ham or Bacon
• 2 tomatoes
• Shredded cheddar cheese

I start out with the pan on low heat, and add a couple of tablespoons of oil.

Wash and cut the potatoes into cubes and chop the onion. Add both to the pan, and turn up the heat. Use a spatula to stir/turn over occasionally. Season to your taste with salt, pepper, Italian seasoning, and even a little bit of garlic if you like. If you cover the pan, it will cook a little quicker.

While the potatoes are cooking, chop up the ham into small pieces. Once the potatoes start to become soft (about 10 minutes), add in the ham and mix it in well. Give it a few minutes to heat up while cutting the tomatoes into small pieces … add them in.

In a medium bowl, scramble 6-9 eggs with a little bit of milk, some paprika, and if you like a little bit of ketchup (will turn your eggs pink).

Pour the eggs right over the top of the potato mixture in the pan. Turn/mix for a couple of minutes until the eggs start to harden. Spread shredded cheese over the top, turn down the heat to low and cover.

In just a couple of minutes it will be ready to eat … easily feeding 4-5 people.

Can somebody please tell me why people today are in such a hurry that they’ll risk not only their own lives, but those of others to save a shave a couple of lousy minutes off their drive time?

It’s been about 30 minutes, and my heart is still beating faster than normal. At this point, I don’t know whether I’m more scared or mad. I was coming home from work about about 11:15pm, driving down Kunia Road from Schofield towards Ewa Beach. It was already bad enough that many people are too inconsiderate to turn off their brights, so every time there were cars coming the other direction I was almost blinded anyway. But then, about halfway down the road, as I was being blinded again, at the last minute I was lucky enough to notice that there were two sets of headlights… and one of them was in my lane!

I had to slam on my breaks and veer to the right, almost off the road.

And would you believe the punk didn’t even slow down … just kept speeding right along on his merry way.

He probably got up to Schofield a whole 5 minutes sooner.

In the two years that I’ve been here there have been several fatal crashes on Kunia road.

Almost all of them having been caused by some moron passing illegally.

I just don’t understand it.

Slow down !!

… is the couple of minutes you’re saving really worth the risk?
