&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;The secret to this moist chicken is brining the meat prior to cooking. &amp;nbsp;You can use this brine for bone-in or boneless chicken prior to adding your rub, marinade or seasoning. &amp;nbsp;Here's a great article from Fine Cooking on &lt;a href="http://www.finecooking.com/articles/why-brining-keeps-meat-moist.aspx"&gt;how brining works so beautifully to tenderize meat&lt;/a&gt;. &amp;nbsp;It's got all the good&amp;nbsp;scientific info that cooking nerds, like me, love. :)&amp;nbsp;Brine the meat no less than 2 hours (for boneless) or overnight (for bone-in meat), rinse thoroughly and pat dry. &amp;nbsp;Then you can add your favorite marinade, like the &lt;a href="http://www.ameessavorydish.com/2012/03/best-ever-grilled-chicken-marinade.html"&gt;Best Ever Grilled Chicken Marinade&lt;/a&gt;, rub, barbecue sauce or seasonings. &amp;nbsp;I'm sharing my mom's homemade barbecue sauce because it's delicious and my personal favorite!&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;i&gt;&lt;b&gt;Simple Brine for Chicken:&amp;nbsp;&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;3 garlic cloves, peeled and slightly smashed&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;8 cups water&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;3 tbsp sea salt&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 bay leaf&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Combine all ingredients in a large ziploc bag in a deep bowl. &amp;nbsp;Add chicken and seal bag, letting out as much air as possible. &amp;nbsp;Brine for at least 2 hours or overnight. &amp;nbsp;Rinse chicken thoroughly and pat dry.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Mom's Homemade Barbecue Sauce:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/3 cup chopped onion&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 small clove garlic, minced&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;2 tbsp extra virgin olive oil&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 can (10 3/4 oz) tomato soup (go for an organic brand, if available)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;2 tbsp natural brown sugar (I go with coconut sugar-tastes the same and a healthier alternative)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 tbsp vinegar&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 1/2 tbsp&amp;nbsp;Worcestershire sauce&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 tsp mustard&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;dash hot sauce&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;In a saucepan, cook onion and garlic in oil until tender over medium heat. &amp;nbsp;Add remaining ingredients. &amp;nbsp;Cook over low heat for 15 minutes, stirring occasionally. &amp;nbsp;Makes 1 1/2 cups of sauce. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Grilling directions for bone-in chicken:&lt;/i&gt;&lt;/b&gt; &amp;nbsp;Pre-heat grill on high heat, then lower to medium temp and grill for about 20 minutes to sear and crisp the skin, turning occasionally. &amp;nbsp;Baste chicken with sauce and cook an additional 15 minutes, continuing to turn to evenly coat all sides. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 cup white grape juice,the no-sugar added kind (you can also use freshly squeezed orange juice)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/4 cup agave nectar&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 packet Knox unflavored gelatin&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;2 tbsp water&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;2 tbsp freshly squeezed lemon juice&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/4 cup coconut sugar&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;pinch sea salt&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Directions:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;In a saucepan, mix half of the strawberries, juice and agave nectar. &amp;nbsp;Bring to a boil over medium-high heat and boil for 15-20 min, stirring frequently until mixture has cooked down and thickened. &amp;nbsp;This process can take up to 25 minutes. &amp;nbsp;Take off heat and set aside. &amp;nbsp;In a separate glass bowl, whisk together gelatin, water and lemon juice. &amp;nbsp;Stir in coconut sugar and salt. &amp;nbsp;Combine with strawberry mixture and bring back to a low boil and simmer for 2-3 minutes. &amp;nbsp;Cool mixture for 30 minutes then fold in fresh berries. &amp;nbsp;Pour into cooked pie shell and refrigerate for 4 hours until set. &amp;nbsp;Garnish with homemade whipped cream, if desired (see below for recipe). &amp;nbsp;Store in the refrigerator. &amp;nbsp;Best if eaten within 2-3 days.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 cup organic chicken stock (not broth, you want the rich flavor from the stock)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 cup pitted Kalamata olives&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Preheat oven to 450 degrees. &amp;nbsp;Heat oil in a dutch oven over medium-high heat. &amp;nbsp;Sprinkle chicken evenly with salt, pepper and Greek seasoning. &amp;nbsp;Cook chicken, skin side down for 3 minutes, flip and add onion, garlic (minced and whole), lemon juice and oregano. &amp;nbsp;Cook for 5 minutes. &amp;nbsp;Add chicken stock, olives, red peppers, capers and sun-dried tomatoes. &amp;nbsp;Bring to a boil, then cover and transfer to the oven to cook for another 25 minutes. &amp;nbsp;Remove from oven and serve over cauliflower "rice" (see recipe below).&lt;/span&gt;&lt;br /&gt;

Make sure your pickles don't come with a lot of preservatives and hidden sugars, though. &lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;In a medium saucepan, mix coconut oil, cocoa, coconut sugar, agave nectar and almond milk over medium heat and boil for 1 minute. &amp;nbsp;Take off heat and stir in peanut or almond butter, vanilla, oats and a dash of cinnamon. &amp;nbsp;Mix well and drop by heaping teaspoonfuls onto a cookie sheet lined with wax paper. &amp;nbsp;Refrigerate until firm, then transfer to a sealed container and store in the refrigerator. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 pint organic strawberries (blackberries and raspberries are great, too!)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;6 large lemons, juiced&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;3 cups water&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/2 cup granulated stevia (more/less to your taste buds)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 cup ice&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Directions:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Juice your lemons and pour juice into a 2 quart pitcher. &amp;nbsp;Add 2 cups water and stevia and stir until well mixed. &amp;nbsp;Place the strawberries, ice and remaining cup of water into a blender and blend until smooth. &amp;nbsp;Add to the lemonade mixture, stir and serve.&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, 'Times New Roman', serif;"&gt;The atmosphere of EAT is warm and upbeat. &amp;nbsp;They had a great band playing (not too loud) and the decor is fun and contemporary. &amp;nbsp;We sat at a table in the bar area since the dining room was full, but it worked out great having a good seat near the live music. &amp;nbsp;We started our meal with some tapas dishes. &amp;nbsp;First we indulged in a trio of deviled eggs (barbecue short-rib, chicken and original). &amp;nbsp;They were scrumptious! &amp;nbsp;I especially enjoyed the shredded barbecue deviled eggs. &amp;nbsp;Next we ordered Oysters Bienville (local oysters with citrus tabasco cream, shrimp &amp;amp; bacon topped...heavenly) and then a cured meat and cheese platter with various homemade jams. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, 'Times New Roman', serif;"&gt;We each got a salad, I got the tomato panzanella salad and my husband got the BLT wedge. &amp;nbsp;Both were delicious! &amp;nbsp;At this point we were getting pretty full, but we decided to share the Seared Diver Scallops entree (with butternut squash risotto, bacon, asparagus and grapes). &amp;nbsp;They were so tender and perfectly seared. &amp;nbsp;My taste buds were in heaven. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Following our meal, Chef Lee came out and talked with us for a bit and offered to bring out samples of their sorbets for dessert. &amp;nbsp;We tried a concord grape, rose petal and key lime sorbet. &amp;nbsp;All of them were fantastic, but I really enjoyed the light and fresh floral flavor of the rose petal sorbet. &amp;nbsp;It was unique and very tasty. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Then he followed up with three different homemade ice creams to try. &amp;nbsp;We had&amp;nbsp;Tabasco, &amp;nbsp;bourbon and espresso ice cream. &amp;nbsp;We both agreed that the bourbon was our favorite. &amp;nbsp;I wish that I had a big bowl of it right now!! &amp;nbsp;All of the ice cream flavors were fantastic, so you won't be disappointed with any flavor you choose. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Ingredients:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 large egg, room temperature (very important!!)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;2 tbsp fresh squeezed lemon juice&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/2 tsp mustard powder&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1/4 tsp white pepper&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 tsp sea salt&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;1 cup extra light olive oil (not EVOO)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;br /&gt;&lt;/span&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;&lt;b&gt;&lt;i&gt;Method:&lt;/i&gt;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Georgia, Times New Roman, serif;"&gt;Combine egg, lemon juice, mustard powder, white pepper and salt in the food processor and blend until frothy. &amp;nbsp;Using the drip hole in the top of the processor, drizzle the oil in a few drops at a time (do not rush this emulsion process...it will result in a liquid mess). &amp;nbsp;Once you have a good bit of drops mixed in, very slowly (I cannot over emphasize VERY SLOWLY) drizzle the oil down the tube little by little until all is mixed in and mixture is nice and creamy.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
