Memphis Barbecue Sauce Recipe

A sweet Memphis Barbecue Sauce Recipe, oh boy is it sweet. Feel free to try it on bbq pork and my suggestion is to try chicken as well.

Ingredients:

1 tablespoon butter
1 large onion finely chopped
2 red chili seeded and chopped
500ml or 1 1/2 cups ketchup
3 tablespoons molasses
3 tablespoons brown sugar
2 tablespoons English mustard (ready mixed, not powdered)
1 tablespoon
Juice of a lemon
1 tablespoon
1 teaspoon garlic salt
1 teaspoon fresh ground black pepper

Method:

Heat a saucepan, melt the butter and throw in the onions and chillies for about 3-4 mins until the onions turn translucent.

Then simply throw in the rest of the ingredients, simmer for about 10 minutes and you’re ready to go.

Barbecue Pork Ribs Rub

The fire pit aromas that come off this barbecue pork ribs rub are fantastic and makes a very quick alternative to a barbecue sauce if short on time. And because it’s a dry rub you can make it up in advance and store in an airtight jar.

With all barbecue rubs you need to leave at least one hour for the herbs and spices to work their magic. You have been warned – this is a hot one!

Ingredients:

1 tablespoon Caster Sugar
1 tablespoon Hot Paprika
1 tablespoon Dry Chilli Flakes
1 tablespoon brown Muscovado sugar
1 tablespoon each of salt and freshly ground black pepper
2 teaspoons Cumin
2 teaspoons Cayenne Pepper

Apply the barbecue rub to the ribs and leave for an hour which should be just enough time to prepare the smoker for 225°F and then smoke for 60 minutes per pound.

Memphis-Style Dry-Rub Ribs

My favorite ribs in the whole world, serve with a variety of sauces but don’t be surprised if you dip less and less with each bite…

(2) 3 to 3 1/2 pound slabs St. Louis-style spare ribs

2-3/4 cups Memphis-Style Dry Rub (recipe below)

Trim bottom side of ribs of white membrane and trim excess fat. Pat both sides of the ribs so that no meat is visible. Wrap and refrigerate over night, or at least an hour or two.

Preheat the grill to 250. If using gas, run one side. If using wood or charcoal, gather them on one side of the barbecue. Place ribs meat-side down on the side not over direct heat. Put a handful of pecan or apple wood chips in a perforated foil packet and place over direct heat, holes facing up. Have another handy if smoke runs out.

Smoke for 2 to 2-1/2 hours, then flip for the last 45 minutes to an hour or until an internal temperature of 155 is reached. Set out for at least 10 minutes before chopping the ribs.

Serve with baked beans and tangy slaw.

Memphis-Style Dry Rub:

Makes about 3 cups

1 cup Paprika

1/4 cup granulated sugar

1/4 cup sea salt

3 tablespoons garlic powder

3 tablespoons onion powder

2 tablespoons toasted, ground coriander seed

2 tablespoons toasted, ground cumin seed

2 tablespoons toasted, ground tellicherry pepper

1 teaspoon ground mustard

Combine thoroughly and store in an air-tight container.

Another bizarre story I just had to share with my fellow campers!

Jim Harris spent four years in the Marine Corps during the Vietnam War and has thrown Hells Angels out of Maine's biggest biker bar — and never suffered a scratch.

But when a stuffed water-buffalo head with large horns fell off the wall, it took four 911 responders to pull the trophy off of him.

The 56-year-old Harris was in his comfy recliner in his rented waterfront home in Tavernier when, he said: "I leaned over to turn on the lamp and ka-pow."

"Bubba," the 200-pound head of a water buffalo shot in Africa, fell off the wall and landed on his head and right side.

The impact knocked him out.

"I guess it's payback for the buffalo, but I'm not even the guy who shot him," Harris said. "It's not even mine. I don't even like hunting."

When the 6-foot-2-inch, 220-pound Harris returned to consciousness more than two hours later, he was trapped under the water buffalo's head.

He was able to reach his cell phone and managed to call 911.

Because he could not put the phone next to his ear to hear what the dispatcher was saying, he just kept repeating his address and saying, "I'm trapped. I'm crushed."

Monroe County Sheriff's Office deputies and emergency workers had no idea what to expect when they arrived a few minutes later.

Harris said he was in excruciating pain. He said it took four of them to lift the water-buffalo head.

Rex Andis, who owns Bubba and the house rented to Harris, said it originally took four people to mount the wildlife trophy on the wall.

"I looked like the Michelin man when they took me to the hospital," said Harris, who had been stabilized for a possible broken neck.

"I was stuck with needles and had all these IVs in me, and the nurses were all laughing their heads off," Harris said.

He was treated for bruises, a concussion and pinched nerves, and released.

Bubba appeared to be just fine but will have to move.

"I told Rex I want it out of here," Harris said of the head.

Grilled Recipes for Your Camping Trip

Grilled Center Cut Pork Chops w/ Red Onion Marmalade

Ingredients

Convert Measures

6 x Center cut pork chops
1 gal Apple cider
2 1/2 c. Kosher salt
15 x Juniper berries, crushed
1/2 bn Rosemary
1 1/2 c. Sugar
3 Tbsp. Extra virgin olive oil
4 lb Red onions, thinly sliced (10 c.)
1 Tbsp. Brown sugar
Salt and white pepper, to taste
3/4 c. Red wine vinegar
1/2 c. Grenadine
1 1/4 c. Red wine

Directions

Combine apple ciderapple cider, kosher saltkosher salt, juniper berriesjuniper berries, rosemary and sugar. Add in pork chopspork chops and marinate in brinebrine for 40 min, refrigerated. Remove chops from the marinademarinade and pat dry.
Cook on an open grill for approximately 10 min, turning as needed.
Yield: 12 portions
RED ONIONRED ONION MARMALADEMARMALADE:Heat extra virgin olive oil in a large heavybottomed saucepan and add in the onions.
Cook over medium heat till they begin to soften, about 10 min, then add in the brown sugar and stir to coat. Season with salt and pepper. Continue cooking over medium heat, stirring frequently, till the onions are golden, another 10 to 15 min. Add in the vinegar and grenadinegrenadine and cook till it has completely evaporated, then add in the red wine and repeat the process, stirring the onions frequently to prevent sticking and burning. When the red wine has evaporated, taste and correct the seasoning. Remove from the heat and keep hot (marmalade may be made up to 2 days ahead).

The Red Onion Marmalade is delicious on most any grilled meat!!

Try Grilled Vegetables for your Side Dish!

Grilled Vegetables

Ingredients

3 red bell peppers, seeded and halved
3 yellow squash (about 1 pound total), sliced lengthwise into 1/2-inch-thick rectangles
3 zucchini (about 12 ounces total), sliced lengthwise into 1/2-inch-thick rectangles
3 Japanese eggplant (12 ounces total), sliced lengthwise into 1/2-inch-thick rectangles
12 cremini mushrooms
1 bunch (1-pound) asparagus, trimmed
12 green onions, roots cut off
1/4 cup plus 2 tablespoons olive oil
Salt and freshly ground black pepper
3 tablespoons balsamic vinegar
2 garlic cloves, minced
1 teaspoon chopped fresh Italian parsley leaves
1 teaspoon chopped fresh basil leaves
1/2 teaspoon finely chopped fresh rosemary leaves

Directions

Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Brush the vegetables with 1/4 cup of the oil to coat lightly. Sprinkle the vegetables with salt and pepper. Working in batches, grill the vegetables until tender and lightly charred all over, about 8 to 10 minutes for the bell peppers; 7 minutes for the yellow squash, zucchini, eggplant, and mushrooms; 4 minutes for the asparagus and green onions. Arrange the vegetables on a platter. The key to getting those great grill marks is to not shift the vegetables too frequently once they've been placed on the hot grill.

Meanwhile, whisk the remaining 2 tablespoons of oil, balsamic vinegar, garlic, parsley, basil, and rosemary in a small bowl to blend. Add salt and pepper to taste. Drizzle the herb mixture over the vegetables. Serve the vegetables, warm or at room temperature.

Directions:

Sweet island fruit is the perfect match for zesty jerk spices, and the grill caramelizes their natural sugars. You can leave the skin on – just slice plantains in half lengthwise and cut mangoes, pineapple or papaya into wedges or thick pieces. Brush with oil, then place flesh-side down on the hot grates and cook until marked and tender, 3 to 5 minutes per side. Serve alongside the hens or top with ice cream and caramel sauce for dessert.

Bear Shakes RV, Shreds Tent in Alaska Campground

Park rangers near Fairbanks, Alaska, are asking campers and picnickers to be careful after a bear shredded an empty tent at Chena Lake Recreation Area and later rocked a small RV back and forth while a person was inside, according to the Juneau Empire.

Borough recreation area manager Matt Steffy said rangers have posted warning signs on trails and at campgrounds.

Steffy said the bear visited an empty campsite Monday evening (May 24), destroying the tent and the pillows and sleeping bags inside. The bear also got into some garbage or food that had been left out.

The campers initially reported the incident to some firefighters who were battling a small wildfire at the recreation area. Troopers were called, but the bear had left the scene by then, said Sgt. Scott Quist, with the Alaska Wildlife Troopers in Fairbanks.

The bear returned to the other side of the campground about five hours later and shook the RV. The woman inside honked the horn, prompting the bear to climb a tree before leaving a short time later.

The woman, who is from out of state, was rattled by the incident but not enough to prevent her from spending another night or two at the campground, Steffy said.

Steffy isn’t certain if it was a black bear or a grizzly; either way, it was big.

“We’ve got some pretty good claw marks going up the tree,” he said. “It may be a pretty large black bear.”

Quist said there’s a chance the bear was rubbing against the RV, not rocking it.

“At this time of year, when they’re shedding, they scratch on just about anything they can find,” Quist said.

With the Memorial Day weekend approaching, park rangers reminded campers and picnickers to clean up their camps and garbage.

Quist said a “game plan” will be needed if the bear comes back.

“If it continues to show fearlessness, we’ll have to take action,” Quist said. “Hopefully it’s just passing through and isn’t a local resident.”

No word on the make or style of RV that withstood the bear incident.

Cavendish Music Fest Wants RV Campground

More than 40,000 people attended the Cavendish Beach Music Festival in 2009. (CBC)

Organizers of the Cavendish Beach Music Festival have applied to set up a campground near the festival site.

The campground would be the size of 10 building lots and would accommodate 80 to 100 campsites, complete with an access road, hook-ups and a washroom facility.

Jeff Squires, a spokesman for the festival, said the campground would help event staff. "What we're finding this year is we've been inundated with the demand for people who want to put their fifth wheel [trailers] and their RVs close to the site because they are working there for a week to 10 days," he said.

Squires said the campground would be used by people working at the festival, with leftover spaces made available for the public to rent.

The property would have to be rezoned for the campground to go ahead and there are plans to use it beyond the festival weekend. While some people in the area have no problem with the campground proposal, other neighbours expressed concern. Norm and Paula Hansen have a cottage near the site. Having a campground there with 100 sites would create a lot of problems, I think. Just young people drinking and partying," Norm Hansen said. I think once it has been rezoned, then anything goes there and we're going to have some problems down the road and we did not buy this property with that in mind," Paula Hansen said. "We thought it was cottages only going up there. That's what we were told."

A public meeting on the rezoning application will be held on June 2 at the North Rustico Lions Club hall.

The Cavendish Beach Music Festival runs from July 7 to 11.

8 Ways to Keep Mosquitoes at Bay

Don’t let these blood suckers ruin your outdoor fun

Getting rid of the swarming summertime pests doesn’t have to involve harsh pesticides or gimmicky products, but it does require vigilance.

For people who want to keep their yards both livable for humans and ecologically healthy during the buggy summer months, here’s the bad news: There is no proven effective mosquito solution as simple as buying a zapper or lighting a citronella candle. Still, that doesn’t mean homeowners are helpless. Consider the following:

1. Play water detective: Get rid of any standing water around your home—that’s where mosquitoes lay eggs! Remember that mosquitoes can lay eggs in tiny pools—even the size of a bottle cap. Also, check the places you can’t see, such as rain gutters.

2. Employ fish: If you have an ornamental pond in your yard, find out if your local health department hands out mosquitofish, or Gambusia. As with all species not native to your region, exercise caution in releasing the fish.

3. Screen it: If you collect rainwater for irrigation, be sure to put a screen or filter—even an old pair of pantyhose will work—over the opening of the barrel.

4. Use mosquito dunks: If your yard has any unavoidable standing water, use mosquito “dunks”—usually donut-shaped disks of biopesticide that kill mosquito larvae but are harmless to humans, pets and wildlife.

5. Don’t be fooled: Remember that “natural” or “plant-based” doesn’t always mean safe—or effective. Do the appropriate research to ensure that your mosquito-controlling pesticides aren’t harmful to wildlife or pets.

6. Avoid what DOESN’T work: Studies have routinely shown disappointing results for just about every nonchemical means of repelling or killing adult mosquitoes: ultrasonic repellents, zappers and traps.

7. Use repellant: The most popular repellant is the chemical N,N-diethyl-mtoluamide, or DEET. Because of rare cases of human adverse reactions to the chemical, you might try lemon eucalyptus, a natural repellent that the U.S. Centers for Disease Control (CDC) says provides “reasonably long-lasting protection.” Regardless of which repellent you use, always read and follow the manufacturer's dircetions. For more about the safe use of repellents, visit the CDC website.

8. Call in the pros. Almost every state or municipality has some sort of vector control agency—often run out of the health department. Along with a practiced eye, a vector control officer can look beyond a backyard to a larger area for the source of a mosquito infestation.

Family Still Missing After Sinkhole Swallows Home!

A Canadian couple and two young children are missing after their home collapsed into a massive sinkhole near Montreal.

A family dog has been found alive at a rural property in Saint-Jude, Que., where the land gave way Monday night and swept away a house and several cars.

Police say a family of four has not been heard from since the geological incident caused part of the house to sink near the Yamaska River.

It created a large crevice, damaged a two-lane road and prompted the evacuation of five other houses in the town located about 50 kilometres northeast of Montreal.

"It's a pretty gigantic crater," said Francois Gregoire, a spokesperson for the fire department.

The incident, which happened during the time that the Montreal-Pittsburgh playoff game was being broadcast on TV, remains under investigation by officials.

Still missing are a couple -- an electrician and a daycare worker -- and two young girls who live inside the house.

CTV's Genevieve Beauchemin said police have tried to call the man's cellphone, but have only heard it ringing inside the house.

"He apparently carries his cellphone all the time with him. He has it on his belt, even when he is within the house," Beauchemin told CTV's Canada AM from Saint-Jude on Tuesday morning.

"So, what they tried to do overnight is to call that cellphone to try to see whether he would answer that and they could hear the cellphone ring at times, but there was no one who picked up. No signs of life."

CTV Montreal's Cindy Sherwin said the man had lived in the area for much of his life.

He has grown up here and been in this area for generations," Sherwin reported Tuesday from Saint-Jude. "His father lived on a plot of land just nearby."

Sherwin said police have not revealed where they found the family's dog on Tuesday morning.

Rescuers have made several attempts to make their way inside the house, having to call off two overnight attempts because of safety concerns.

On Tuesday morning, a third attempt was set to go forward.

Family members have gathered near the house as they wait to find out the fate of their loved ones.

"They said that they will stay here all day until there is news -- either way," Beauchemin said.

At the Aux Quatre-Vents elementary school in Saint-Jude, students heard what had happened at the house where one of their fellow students lived.

Principal Chantal Gagnon said the school had never been so quiet.

"We told them that since there is no official word we can still cross our fingers," she said.

"We told them that in times like these we have to take care of each other."

Mayor Yves Bellefeuille said residents are in shock after seeing what happened to the house in Saint-Jude.

He said counselors will be made available to people who need help.

A Quebec family of four was missing Tuesday after a massive sinkhole swallowed their home, according to reports from CNN affiliates. Authorities said the home fell 30 feet into the hole when it opened around 9:30 p.m. Monday. A couple in their 40s and two children, ages 9 and 11, were believed to be inside, according to a report by CNN affiliate CBC news.

The couple’s vehicles were seen outside the house and efforts to reach them by cell phone were unsuccessful, authorities told the CBC.

"We tried to reach them by phone, because the father always wears his cell phone on him," Quebec Provincial Police Sgt. Ronald McKinnis told CBC. "The firefighters heard the cell phone, but they weren't able to [locate] it."

The hole was about 500 yards long and forced the evacuation of five other homes in the town of Saint-Jude, in a rural area near the Yamaska River about 40 miles northeast of Montreal, CNN affiliate CTV reported.

McKinnis told the CBC that the hole was first reported by a truck driver whose rig fell into it Monday night. He suffered only minor injuries, McKinnis said.

Search-and-rescue dogs were being called in to help the search, according to a report in the Montreal Gazette, and a helicopter was circling the area looking for signs of movement.

Thirty under-the-radar islands, from Oregon to the Greek Aegean, where you can kick back and let yourself go.

Warm blue water, pristine white sand, swaying coconut palms: Belize’s South Water Caye is a tropical paradise pared down to the alluring basics. Some 30 years ago, only fishermen inhabited this 15-acre islet; today, because it lies distinctly off the Caribbean’s beaten path, frankly, not too much has changed. You can still enjoy the surf’s rhythmic, soporific whush-shhh over sunset drinks at a sandy-bottomed bar.

There’s something magnetic—almost primevally compelling—about a fleck of land bounded by endless sea. And having to share the space with a crowd of tourists can ruin the magic. Fortunately, secret islands like South Water Caye still exist. And for those willing to search for solitude, the reward may be your own maritime Shangri-la.

“People rarely follow the road less traveled,” says Kelly Shea, a Travel + Leisure A-List agent who organizes journeys in Greece. “They have their minds set on Mykonos and Santorini.” But Alonissos—in the country’s Northern Sporades archipelago, in the Aegean Sea—is tougher to access. “Americans have never heard of it,” she says, “and there are no luxury hotels. But it has isolated coves where you won’t see another person all day.”

Alonissos’s primary lure is its marine park—at 875 square miles, Europe’s largest—where striped dolphins and endangered monk seals abound. The isle also features hiking trails that meander through fields of ruby-red blooms, olive groves, and pebble beaches. In the cobblestone streets of the old town of Chora, cheery, Venetian-designed tavernas grill up the catch of the day while live Greek music drifts out of open pub windows.

Ferries make the trip to this 14-mile-long ribbon of flowering rock in a couple of hours from nearby Skiathos, where there’s a small regional airport. But Alonissos remains comparatively remote, so—unlike in Mykonos—the beaches and restaurants and bars have space to spare.

While seclusion has helped hide places such as Alonissos, it’s neither a guarantee (think St. Bart’s) nor a necessity. Just 10 miles from Portland, OR, sprawls a 24,000-acre stretch of river-encircled farmland called Sauvie Island. Known among foodies as the epicenter of the Northwest’s locavore movement, the place bursts with fresh, pick-your-own harvests: plum-colored marionberries, sweet corn, plump pumpkins. And with Stumptown only a 15-minute drive away, Sauvie also represents that rare find: a weekend getaway that’s easy and affordable.
