Ancora riso, patate e cozze?  

Essi, perché non tutti i mali vengono per nuocere... ^_^

Questa vicenda che va assumendo via via aspetti sempre più grotteschi, ha avuto il merito di farmi comprare cozze, patate e riso per gustare, assieme alla mia famiglia, una delle preparazioni tradizionali della cucina pugliese che più prediligo.  Come per le Orecchiette, visto che in rete circolano una marea incommensurabile di sonore sciocchezze, parliamo di Tiella, vanto e orgoglio della Cucina pugliese con  la C maiuscola. 
Come molte ricette della tradizione culinaria italiana, non ha una ricetta codificata, ma  alcuni capisaldi da cui non si può prescindere. Ho accettato infatti di provare alcuni prodotti Pril e di parlarvene... 

Volete sapere il perché? Il motivo è semplicissimo: ogni giorno che Dio ha creato benedico l'inventore della lavastoviglie!  Che sempre sia lodatooooooo...^_^

Quest'anno mi sono persa Masterchef, ma non la replica della puntata in cui la prova in esterni si svolgeva a Ceglie Messapica.













 Cosa dovevano cucinare gli aspiranti Masterchef in Puglia? Le immancabili orecchiette, of course...

 Ma è davvero così facile come sembra fare le orecchiette a regola d'arte?

Il Macco di fave è una tipica preparazione siciliana.







In Puglia, oltre al fatto che il piatto con le fave secche decorticate lo cuciniamo in modo diverso, non lo chiamiamo Macco, anzi non lo chiamiamo... ^_^

Da noi, il purè di fave accompagnato dalla cicoria, si chiama Fave e foglie, Capriata o Incapriata, oppure assume altri nomi  come Pasta e fave, Fave scarfate, Fave a ceca mariti...

Ci credereste, se vi dicessi che questo bread, che bread poi non è, mi ha sempre incuriosito, ma che, fino a qualche settimana fa, non l'avevo mai mangiato ???

Sarà che non amo le banane, il loro gusto profumato e denso, non mi ha mai entusiasmato, nemmeno da bambina, se non sotto forma di frullato insieme ad arancia e mela renetta (l'avete mai provato? è buonissimo!).

Ve la ricordate quella della Panna cotta al cioccolato di Paolina pubblicata su questo blog e finita in TV  a Cotto &amp;amp; Mangiato, senza alcuna autorizzazione?

Ogni tanto guardo la rete con gli occhi di un lettore qualunque e questo mi aiuta a mantenere su binari dritti il dialogo con voi...

Ricordo che i miei primi approcci ai foodblog  ed ai siti tematici furono davvero molto deludenti... 

Il fenomeno mi incuriosiva moltissimo, ma non ne comprendevo  il linguaggio e neppure le dinamiche.  Mia nonna diceva che buttare il cibo " è uno schiaffo a Cristo"... per cui l'imperativo categorico  di questi giorni è riciclare gli avanzi! Per chi, come me, ricorda il gesto di baciare il tocco di pane secco, che inutilizzato, finiva nella spazzatura accompagnato dal segno di croce, gettare il cibo equivale da sempre a un vero sacrilegio!

Lo so, è Venerdì Santo... però prima di Pasqua la ricetta di questo Timballo di zitoni ve la voglio pubblicare...

Dovrei raccontarvi una lunga storia che parte da una ricetta blasonata di un avo francese  di un'amica di Fabiola (la nostra amica del forum de La Cucina Italiana) che dopo lunghe  e approfondite ricerche si è rivelata, grazie a Ruli, essere né più né meno che la storica ricetta dei Curambié o  Kourambiedes. La Pasqua ha come simbologia religiosa l'agnello....

Già la Pasqua ebraica riconosceva in questo animale, o meglio, per mezzo del sangue suo, la salvezza del popolo ebraico ai tempi della schiavitù in Egitto e più tardi anche la Pasqua cristiana vede nell'agnello, il Cristo, che come quello è innocente, ma che accetta la morte per salvare chi crede in lui.....

Ve la ricordate la Pasta Matta di cui vi avevo parlato un anno fa? In molti l'avete provata e riproposta in vari blog e forum,  dandole in fondo lo spazio che merita: è una base semplice, buona e di sicura riuscita.
