Io in questi giorni vado in loop continuo con &lt;b&gt;&lt;a href="http://www.youtube.com/watch?v=8UVNT4wvIGY"&gt;Somebody That I Used To Know&lt;/a&gt;&lt;b&gt;&lt;/b&gt;&lt;/b&gt; di Gotye, la metto e rimetto, la canticchio e &lt;i&gt;ricanticchio&lt;/i&gt; - cercando di non confondere le parole - fino a quando non ne sarò del tutto satura.. e potrò passare ad una nuova canzone! :-P Sono pazza o capita anche a voi? &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Bene, nell'attesa di vostre risposte rivelatrici, passiamo alla ricetta del lunedì: è la volta di un dolce con la D maiuscola, una sticky cake ( la chiamano così proprio quelli di Primrose Bakery, &lt;b&gt;torta appiccicosa&lt;/b&gt; ) davvero eccezionale! Una torta al cioccolato senza farina dalla sicura riuscita e dalla consistenza particolarissima, quasi a metà tra una torta ed una mousse! Per poi non parlare di quella crosticina bella croccante!&amp;nbsp;La sorellonza amante del cioccolato questa volta non ha fatto storie e l'ha divorata nel giro di pochi minuti, per cui non è un consiglio, ma un dictat: &lt;b&gt;dovete provarla&lt;/b&gt;!&lt;/div&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;div style="text-align: center;"&gt;&lt;b style="color: #fed452;"&gt;&lt;span class="Apple-style-span" style="font-size: large;"&gt;&amp;nbsp;[ Torta al cioccolato senza farina ] &lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;br /&gt;
&lt;div style="text-align: center;"&gt;Ingredienti per una tortiera di 20-22cm di diametro:&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;uova&lt;/b&gt; 4, tuorli e albumi separati&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;cioccolato fondente&lt;/b&gt; di ottima qualità 200g&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;zucchero semolato&lt;/b&gt; 200g ( anche 170-180g vanno benissimo )&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;burro&lt;/b&gt; 100g&lt;/div&gt;&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;&lt;div style="text-align: justify;"&gt;Preriscaldare il forno a 180° C. Foderare una tortiera, preferibilmente a cerniera, con carta forno. Sciogliere a bagnomaria il cioccolato fondente insieme al burro e tenere da parte. In una terrina capiente sbattere i tuorli con metà dello zucchero ( 100g ) fino ad ottenere un bel composto chiaro e spumoso, poi aggiungervi il composto di cioccolato e burro. Nella ciotola della planetaria, o con uno sbattitore elettrico, montare a neve ben ferma gli albumi ( fino a formare i soliti "picchi" ), poi unire anche il restante zucchero ( 100g ). Versare, molto delicatamente, questo composto di albumi nell'altro, mescolando dal basso verso l'alto. Per cui questa potrebbe essere un'ottima idea di torta da preparare in anticipo per ottimizzare i tempi!&lt;br /&gt;

&lt;div style="text-align: center;"&gt;
&lt;b&gt;semolino&lt;/b&gt; 110g&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;lievito per dolci&lt;/b&gt; 2 cucchiaini&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;sale&lt;/b&gt; 1 pizzico&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;zucchero semolato&lt;/b&gt; 130g&lt;br /&gt;
&lt;b&gt;uova&lt;/b&gt; 4&lt;/div&gt;

&lt;b&gt;olio e.v.o&lt;/b&gt; 90ml&lt;/div&gt;

&lt;b&gt;buccia di limone&lt;/b&gt; 2 cucchiaini&lt;/div&gt;

&lt;b&gt;vaniglia in semini&lt;/b&gt; la punta di un coltello&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;mirtilli rossi disidratati&lt;/b&gt; 1 manciata abbondante&lt;/div&gt;
&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;
Imburrare ed infarinare uno stampo da cake. In una ciotola capiente, mescolare la farina di kamut, il semolino, il lievito per dolci ed il sale. In un'altra ciotola, con uno sbattitore elettrico, sbattere le uova, poi aggiungere lo zucchero semolato, l'olio extravergine d'oliva, la buccia di limone e la vaniglia. Lavorare bene tutti gli ingredienti. &lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
Unire questo composto liquido agli ingredienti secchi e mescolare, con un cucchiaio di legno fino a completo assorbimento e fino ad ottenere un composto liscio. Aggiungere anche i mirtilli disidratati e mescolare brevemente. Versare il composto nello stampo ed infornare, in forno già caldo a 180°C, per circa 40-45 minuti o fino a doratura.&lt;/div&gt;

&lt;div style="text-align: center;"&gt;a piacere: mandorle a scaglie o intere + pistacchi per la decorazione&lt;/div&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;In una terrina capiente: setacciare insieme le farine ed il semolino. Aggiungere il cardamomo, il lievito, la farina di mandorle e mescolare molto bene. In un'altra terrina, con una frusta a mano o uno sbattitore elettrico, lavorare il burro molto morbido con lo zucchero, fino ad ottenere un composto liscio e morbido. Aggiungere a questo composto il mix di farina e semolino e lavorare, a mano, fino a completo assorbimento e fino ad ottenere un bell'impasto compatto. Preriscaldare il forno a 180°C e foderare una teglia con della carta forno. Dividere l'impasto in tante palline ( anche di dimensioni diverse ) e con un coltello inciderne la superficie disegnando dei reticoli.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Disporre le palline nella teglia, e con il palmo della mano, appiattirle leggermente. A piacere: guarnire con mandorle e pistacchi. Cuocere in forno per 12-15 minuti o fino a leggera doratura.&lt;br /&gt;

Insieme a quella dell'attesa in forno: verrà fuori una bella superficie liscia o quell'antipatica cupoletta?? Son problemi seri, eh.. sì, da maniaci di cupcakes!? E che ci volete fare, dovreste saperlo ormai!&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Era da gennaio che &lt;i&gt;ronzavo intorno&lt;/i&gt; alla ricetta dei &lt;b&gt;&lt;a href="http://cakejournal.com/recipes/classic-vanilla-cupcake-recipe/" target="_blank"&gt;cupcakes alla vaniglia&lt;/a&gt;&lt;/b&gt; di Louise di &lt;b&gt;&lt;a href="http://cakejournal.com/" target="_blank"&gt;Cake Journal&lt;/a&gt;&lt;/b&gt;. Le sue foto parlavano chiaro con quelle tortine morbide morbide, e mi ispirava un sacco l'utilizzo della panna invece del solito latte. Ma cercavo un gusto più deciso, e con qualche cucchiaino di caffè ho raggiunto il risultato! E come frosting? Ecco che mi viene in aiuto la&amp;nbsp;&lt;b&gt;&lt;a href="http://www.tarteletteblog.com/2010/05/recipe-gluten-free-tamarind-coffee.html" target="_blank"&gt;ricetta&lt;/a&gt;&lt;/b&gt;&amp;nbsp;della guru Tartellette. Il gioco è fatto e la ricetta è quanto mai &lt;i&gt;fusion&lt;/i&gt;:&amp;nbsp;un cupcake con base al caffè + frosting al cioccolato fondente e formaggio cremoso: una cosa ultraleggera, insomma.. ma taaanto buona! ^__*&lt;/div&gt;&lt;br /&gt;

&lt;div style="text-align: center;"&gt;Per il frosting:&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;formaggio cremoso fresco&lt;/b&gt; 200g&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;cioccolato fondente&lt;/b&gt; 100g, fuso&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;zucchero a velo&lt;/b&gt;&amp;nbsp;30/40g ( è assolutamente necessario l'assaggio ) &lt;/div&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;Preriscaldare il forno a 180° C. Foderare una teglia per muffins con 6 pirottini. Versare in una ciotola gli ingredienti secchi: setacciare la farina con il lievito, aggiungere un pizzico di sale e mettere da parte. Preparare le basi: con uno sbattitore elettrico, in un'ampia terrina, battere a crema il burro con lo zucchero semolato fino ad ottenere un bel composto liscio. Aggiungere le uova, uno per volta, e lavorare bene fino a completo assorbimento. Unire, man mano, tutto il composto di farina alternandolo alla panna liquida. Aggiungere, infine, il caffè e l'estratto di vaniglia. Riempire i pirottini per circa 2/3 ed infornare per 25-30 minuti in forno già caldo, fino a doratura. Lasciar raffreddare le basi prima di decorare.&lt;br /&gt;

Preparare il frosting:&amp;nbsp;sciogliere a bagnomaria il cioccolato fondente e lasciar intiepidire.&amp;nbsp;Versare il cioccolato fuso in una terrina e, con uno sbattitore elettrico, lavorarlo con il formaggio cremoso. Aggiungere lo zucchero a velo fino ad ottenere un bel composto liscio e sodo. Con una sac à poche munita di bocchetta a stella distribuire il frosting sui cupcakes.&lt;/div&gt;&lt;i&gt;La ricetta del frosting è ispirata al &lt;b&gt;&lt;a href="http://www.tarteletteblog.com/2010/05/recipe-gluten-free-tamarind-coffee.html" target="_blank"&gt;frosting&lt;/a&gt;&lt;/b&gt; di Tartellette.&lt;/i&gt;&lt;br /&gt;

Partendo dal centro della tortina ho effettuato due giri sovrapposti di frosting, un doppio strato per intenderci! :-D&lt;br /&gt;

E' preferibile scongelarle a temperatura ambiente, più o meno un'ora prima di decorarle. Naturalmente i cupcakes andranno consumati entro breve tempo!&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;

Tempo di fragole, di luce, di tinte pastello. Ecco, questo dovrebbe essere il degno sottotitolo di un post di metà aprile. Se solo non stesse piovendo a dirotto da quando son tornata a Bologna! Ma sì, è il bello della primavera: passerà anche questa e poi inizieremo a lamentarci del caldo! :-P Ora, però, arriviamo a ciò che mi preme di più: questa torta dovete proprio provarla! E' soffice soffice e delicata, con quelle fragoline che ogni tanto fanno capolino.. e poi, cioè, vedete quanto mi è cresciuta in cottura? L'abbiamo adorata tutti qui a casa! Da rifare assolutamente, magari sostituendo le fragole con qualche altro delizioso fruttino rosso!  &lt;/div&gt;

Lavare le fragole sotto abbondante acqua corrente, tagliarle a metà, metterle in una ciotola e cospargetele con 1 cucchiaio di zucchero a velo. Mescolare la farina e il lievito. Dividere i tuorli dagli albumi: raccogliere questi ultimi in una ciotola e tenere da parte.&amp;nbsp;Lavorate il burro con lo zucchero semolato fino a ottenere un composto cremoso, poi unirvi 1 tuorlo e mescolare; aggiungere il secondo tuorlo dopo il completo assorbimento del primo e unire gli altri con la stessa modalità. Versare lo yogurt e, mescolando con cura in modo da non formare grumi, aggiungere anche la farina miscelata al lievito. Montare gli albumi a neve ben ferma e incorporarli al composto di farina mescolando dall'alto verso il basso. Imburrare ed infarinare una tortiera di cira 20cm di diametro, versare l'impasto e &amp;nbsp;disporvi sopra le fragole, premendole leggermente. Infornare a 180 °C per circa 45-50 minuti fino a completa doratura. Sfornare e lasciar raffreddare.&lt;br /&gt;

In realtà, l'effetto finale non era per niente male: prima di addenta la morbida consistenza della torte e dopo arrivano le fragole.. insomma, niente male! Magari la prossima volta cerco di infarinarle un po'! &lt;/div&gt;

Sta capitando anche a voi di desiderare più frutta e verdura del solito? Devo ammettere che per me è la prima volta, almeno con questa intensità! Mi brillano gli occhi davanti alle&amp;nbsp;coloratissime&amp;nbsp;foto dei tanti blog stranieri che seguo, e poi - vogliamo dirlo? - davanti a quelle meravigliose ciotoline di&amp;nbsp;Anthropologie&lt;span style="font-family: Inconsolata; font-size: x-small;"&gt;&lt;span style="line-height: 17px;"&gt;&amp;nbsp;&lt;/span&gt;&lt;/span&gt;colme di frutta! Così, tra un'insalatona ed una macedonia, avrei pensato bene di frullarmi qualcosina. In particolare, avevo voglia di mirtilli e fragole. Il risultato? Uno smoothie super vitaminico e rinfrescante.. con buona pace di mia sorella che non è del mio parere: fosse per lei, &lt;i&gt;mangerebbe&lt;/i&gt; cioccolato fuso anche in piena estate!! &lt;b&gt;LOL&lt;/b&gt;! Lavare bene le fragole sotto abbondante acqua corrente, e tagliarle a metà. Lavare delicatamente i mirtilli e tamponarli con un po' di carta assorbente. Sbucciare la banana e ridurla in grossi pezzi. Spremere due arance e metterne da parte il succo. Versare tutti questi ingredienti in un frullatore ed aggiungere 3 cucchiai di yogurt bianco magro. Frullare per circa 20 secondi fino ad ottenere un composto omogeneo e mediamente liscio. Servire subito.&lt;/div&gt;

Circa 2 mesi fa mi metto alla ricerca di una torta - un po' diversa dal solito - per il mio compleanno.. e gira che ti gira arrivo alla &lt;b&gt;&lt;a href="http://smittenkitchen.com/2009/07/best-birthday-cake/" target="_blank"&gt;best birthday cake di Smitten Kitchen&lt;/a&gt;&lt;/b&gt;. Il nome è tutto un programma: una bella torta &amp;nbsp;compatta al burro con ripieno e copertura di panna acida e cioccolato. Me ne innamoro subito! :-D Chi mi segue da un po' sa bene quanto ami i sapori aciduli, e questo frosting sembra nato apposta per me! Detto fatto: la preparazione è super rapida e sembra procedere tutto alla perfezione.&amp;nbsp;Anche l'assemblaggio e la glassatura non creano problemi.. ma al momento dell'assaggio della tortina di prova ( preparata aumentando un po' le dosi ) ----&amp;gt; blèèèèèèè! Cos'è 'sta roba? :-( Una cosa devastante!&lt;/div&gt;

"Oddio, come faccio a festeggiare il compleanno senza la torta?", mi domando. E, distrutta vado a letto, tra decine di &lt;i&gt;mumble mumble&lt;/i&gt;..&lt;br /&gt;

La mattina seguente, con fare enigmatico, riassaggio il tutto e - sorpresona! - il sapore è completamente diverso, sommo gaudio! Ebbene, credo di poter affermare con certezza che siamo proprio al cospetto della classica torta del giorno dopo: da preparare in anticipo, far riposare in frigo per almeno una notte, e gustare successivamente in tutta la sua bontà! Cosa posso dirvi di più se non.. di provare? Ma solo, e ripeto &lt;b&gt;solo,&amp;nbsp;&lt;/b&gt;se anche a voi piacciono quei sapori un po' &lt;i&gt;inconsueti&lt;/i&gt;.. non la solita panna, insomma! ^___*&lt;/div&gt;

&lt;b&gt;panna acida&lt;/b&gt;, a temperatura ambiente 500ml&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;zucchero a velo&lt;/b&gt; 60-100g ( questa quantità è assolutamente a vostra discrezione: perciò assaggiate! )&lt;br /&gt;
&lt;b&gt;estratto di vaniglia&lt;/b&gt; 1 cucchiaio&lt;br /&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;
Preriscaldare il forno a 180°C. Imburrare ed infarinare le due tortiere.&lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
Setacciare insieme la farina, il lievito ed il sale in una terrina media. Nella ciotola della planetaria ( o con uno sbattitore elettrico ) lavorare, a velocità media, il burro e lo zucchero fino ad ottenere un composto chiaro e spumoso, poi versare la vaniglia. Aggiungere le uova, 1 alla volta, continuando a lavorare fino a completo assorbimento e raschiando le pareti della ciotola dopo ogni aggiunta. A bassa velocità, aggiungere il latticello ben agitato e lavorare ancora un po'. A questo punto, aggiungere il composto di farina poco per volta, lavorando fino a quando il composto sarà denso e liscio. Versare l'impasto nelle tortiere e cuocere, in forno già caldo, per circa 35-40 minuti o fino a completa doratura.&lt;/div&gt;

Per il frosting: sciogliere il cioccolato a bagnomaria. Togliere dal fuoco e lasciar intiepidire. Nella ciotola della planetaria, lavorare insieme la panna acida, lo zucchero a velo e l'estratto di vaniglia. Aggiungere il cioccolato tiepido e mescolare fino ad ottenere un composto uniforme. Aggiungere altro zucchero a velo a seconda delle necessità e dei gusti. Lasciare raffreddare in frigorifero fino a che la glassa abbia una consistenza spalmabile ( circa 30 minuti ). Se la glassa fosse troppo densa, basterà lasciarla fuori fino a quando non sarà nuovamente lavorabile.&lt;/div&gt;

Assemblaggio: dopo aver fatto raffreddare perfettamente le torte, versare quasi metà frosting ( fate un po' a occhio ) sulla prima torta, che fungerà da base. Coprire con la seconda torta e glassare con il frosting rimanente. Lasciar riposare in frigo almeno una notte e servire.&lt;/div&gt;

Scaldare il forno a 180°C. Tritare grossolanamente il prezzemolo. Foderare con 12 pirottini una teglia per muffins. In una terrina capiente, sbattere leggermente le uova con l'olio e.v.o ed il latte. Aggiungere la farina, il parmigiano grattugiato, il prezzemolo tritato, l'olio piccante e mescolare bene. Infine, unire il lievito e lavorare brevemente. Versare nei pirottini ed infornare per circa 25-30 minuti in forno già caldo, o fino a doratura. &lt;/div&gt;

E' molto forte e aromatico, ma se non doveste averne in casa.. utilizzate semplicemente 2 peperoncini rossi a cui avrete eliminato i semini. Affettateli sottili sottili e aggiungeteli al composto! Giorni un po' così, strani, pieni di cose da fare ( questo ci sta, ok ) e di cose a cui pensare: decisioni, ricordi inaspettati e prepotenti. Dolorosi. Giorni in cui, insomma, se ti sfiorano inavvertitamente scatti come se ti avessero strattonato con violenza. Prima non era così, facevo finta che tutto andasse bene, indossavo il mio sorriso migliore anche quando dentro c'era solo un gran casino e un gran dolore. Vorrei essere più &lt;i&gt;scemetta&lt;/i&gt; a volte, dire stop e non pensarci più. Ma sarebbe sempre troppo comodo, e così non mi piace.&amp;nbsp;Perché&amp;nbsp;io lo penso davvero ( lo dicevo a &lt;b&gt;&lt;a href="http://www.chez-babs.com/2012/03/cheese-cake-con-cioccolato-fondente.html" target="_blank"&gt;Babs&lt;/a&gt;&lt;/b&gt; pochi giorni fa ): troppo semplice passare &lt;b&gt;sopra&lt;/b&gt; alla cose, io preferisco passarci &lt;b&gt;dentro&lt;/b&gt;. E restarci anche. Tutto il tempo che mi serve per capire e stare meglio.&amp;nbsp;&lt;/div&gt;

Ed è con questo spirito un po' nostalgico che vi propongo la nuova ricetta del lunedì, una torta di mele semplicissima e meravigliosamente buona. Mi serviva qualcosa di rassicurante, e questa torta è perfetta, una coccola tutta per me! ^___^&lt;/div&gt;

Ingredienti per uno stampo di 20-22cm di diametro:&lt;/div&gt;

&lt;b&gt;mele&lt;/b&gt; 4&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;farina 0&lt;/b&gt; 180g&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;zucchero semolato&lt;/b&gt; 150g&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;zucchero integrale di canna&lt;/b&gt; 1 cucchiaio&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;uova&lt;/b&gt; 2&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;burro&lt;/b&gt; 25g&lt;/div&gt;

&lt;b&gt;latte&lt;/b&gt; 70ml&lt;/div&gt;

Copio/incollo da &lt;b&gt;&lt;a href="http://www.cavolettodibruxelles.it/2009/03/torta-di-mele-vintage" target="_blank"&gt;Sigrid&lt;/a&gt;&lt;/b&gt;:&lt;/i&gt;&lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
Sbattere a lungo le uova con lo zucchero ( io ho messo il tutto in planetaria e ho lasciate che girasse per 10 minuti ), fino a ottenere un composto di color chiaro e quasi spumoso che sia 3 o 4 il volume di partenza. Sempre mescolando, incorporare la farina, il latte, il lievito e la buccia grattugiata. Versare il tutto in uno stampo rivestito con carta da forno. Nel mentre, sbucciare le mele e tagliarle a fettine, poi disporre le fettine sulla superficie della torta, premendo un po’. Spolverare con un cucchiaio di zucchero di canna, distribuire il burro a fiocchetti in superficie e infornare a 170° per circa 45 minuti o finché la torta sarà gonfia e dorata ( fare la prova stecchino ). &lt;/div&gt;

Fiato alle trombe! Esattamente 4 anni fa il primissimo post e da lì l'inizio di questa meravigliosa avventura! Piccola nota di servizio: tra una settimana Anemone's Corner compie 4 anni! Ben &lt;b&gt;4 anni&lt;/b&gt;, non riesco a crederci!! Diciamo la verità: io non sono tra le persone più costanti che conosca.. ed è per questo che essere arrivata fin qui è davvero un gran risultato per me! Ah ah ah, rido ancora ogni volta!&amp;nbsp;Dopo quel commento ne sono arrivati tanti altri, ed è arrivato tutto il resto. In un percorso meraviglioso di crescita e di confronto. Preriscaldate il forno a 180° C.&lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
In una terrina, setacciare insieme la farina, il cacao amaro in polvere ed il sale.&amp;nbsp;Nella ciotola del mixer lavorare il burro e lo zucchero per circa 2-3 minuti. Aggiungere l'estratto di vaniglia ed il tuorlo d'uovo. Aggiungere anche il composto di cacao e farina e continuare a lavorare fino a quando si sarà formato un impasto omogeneo.&lt;/div&gt;

Foderare la tortiera con della carta forno. Versarvi l'impasto premendo per ottenere uno strato uniforme. Cuocere per circa 20-25 minuti, fino a che la pasta frolla non apparirà più umida e sarà soda al tatto.&lt;/div&gt;

Premere la pasta frolla in uno strato uniforme sul fondo della tortiera. Cuocere per circa 20 - 25 minuti, o fino a che la pasta frolla non appare più umida ed è sodo al tatto. Tagliare in quarti e servire. Conservare in un contenitore ermetico anche per diversi giorni.&lt;/div&gt;

Periodo salato &lt;i&gt;mode on&lt;/i&gt;: non so quanto durerà e se durerà, ma mi piace un sacco! E questo lunedì è la volta di sfiziosi paninetti con speck e pepe nero. Ma più di tutto vi devo confessare una cosa: mi piacerebbe fare il grande salto, testare un po' di pasta madre ( il lievito di birra non mi ha mai entusiasmato tanto, devo ammettere ). Ed è da un bel po' che tengo d'occhio questo utilissimo &lt;b&gt;&lt;a href="http://pastamadre.blogspot.com/" target="_blank"&gt;blog&lt;/a&gt;&lt;/b&gt; che, tra le altre cose, ha dato il via ad un'iniziativa davvero lodevole: &lt;b&gt;&lt;a href="http://pastamadre.blogspot.com/p/spacciatori-di-pasta-madre.html" target="_blank"&gt;spacciatori di pasta madre&lt;/a&gt;&lt;/b&gt;! La conoscete? E' una community reale che condivide il proprio lievito gratuitamente! Controllando sulla mappa ho scoperto che c'è una "spacciatrice" proprio vicino casa mia.. &amp;nbsp;e ci sto facendo un serio pensierino! Se avete esperienze al riguardo fatevi sentire, please! :-P&lt;/div&gt;

Ingredienti per circa 10-12 panini:&lt;/div&gt;

&lt;b&gt;farina 0&lt;/b&gt; 500g&lt;/div&gt;

&lt;b&gt;lievito di birra&lt;/b&gt; 25g&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;latte&lt;/b&gt; 300ml&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;zucchero&lt;/b&gt; 1 cucchiaio&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;uovo&lt;/b&gt; 1&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;b&gt;speck&lt;/b&gt; 120g&lt;/div&gt;

&lt;b&gt;sale fino&lt;/b&gt; 1 cucchiaio raso&lt;/div&gt;

Far intiepidire leggermente il latte e sciogliervi il lievito. Tagliare a dadini o a straccetti lo speck e pestare grossolanamente il pepe nero in un mortaio. Impastare la farina con lo zucchero, il sale e la miscela di latte e lievito; unire all’impasto il pepe e lo speck e amalgamare bene tutti gli ingredienti. &lt;/div&gt;

Formare un panetto e lasciarlo lievitare per 15-20 minuti in luogo tiepido, coperto con un canovaccio. Trascorso questo tempo, lavorare di nuovo brevemente la pasta e suddividerla in trenta piccole palline che schiaccerete leggermente con il palmo delle mani. Rivestire di carta da forno il fondo di due grandi teglie e adagiarvi i panini; spennellarne la superficie con l’uovo sbattuto e lasciar lievitare ancora per 45 minuti.&lt;/div&gt;

Cuocere i panini in forno preriscaldato a 220-230 °C per circa 40 minuti, finché avranno assunto un bel colore dorato. Sfornate e servite i panini tiepidi o freddi.&lt;/div&gt;

Lasciate lievitare più volte nell'arco della giornata, sgonfiando e rilavorando brevemente l'impasto. Risultato garantito! :-D&lt;/div&gt;
