Perhaps not surprisingly, early attention focussed on zinc&#39;s role as an essential mineral for sexual and reproductive health, particularly in the male; but it is now known that its functions are much more numerous. Indeed some nutritional practitioners go so far as to claim that plentiful supplies of dietary zinc are vital for the proper functioning of every cell in the body.&lt;br /&gt;&lt;br /&gt;Initial laboratory experiments appeared to show two ways in which zinc discharged its anti-oxidant functions. The first is that dozens of vital enzymes within the body contain zinc and in these enzymes the zinc molecule acts directly as an anti-oxidant, protecting the biochemical structure of the enzyme from free radical attack. Secondly, zinc acts to stabilise proteins which may otherwise react with highly unstable minerals, particularly iron and copper, to form free radicals.&lt;br /&gt;&lt;br /&gt;These experimental demonstrations of zinc&#39;s anti-oxidant activity have now been amply confirmed by studies of the effects of zinc deficiencies and supplementation in live humans; and some researchers have given particular attention to zinc&#39;s activity within the brain.&lt;br /&gt;&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;Zinc is found in higher concentrations within the brain than any other essential mineral except iron and is believed to be particularly important in preserving the effectiveness of the so-called &quot;blood brain barrier&quot; (BBB). The purpose of the BB is to protect vital brain and nervous system tissue from the toxins which it might otherwise absorb through the blood supply. The potential problem is that the BBB is made of a highly sensitive and fragile membrane, largely comprised of fatty acids, which is particularly vulnerable to the oxidative damage caused by free radicals.&lt;br /&gt;&lt;br /&gt;The supposition is therefore that oxidative stress upon the body may lead to reduced effectiveness of the BBB, with a consequently increased likelihood of degenerative health problems within the brain and nervous system; the best known of these being Alzheimer&#39;s and Parkinson&#39;s disease. This supposition has been borne out by laboratory experiments on rats, which have also shown that zinc deficiency in these animals significantly reduces the strength of the BBB.&lt;br /&gt;&lt;br /&gt;It is perhaps not surprising, therefore, that zinc deficiency in humans has long been associated with brain pathologies including schizophrenia, multiple sclerosis, dyslexia, Huntington&#39;s disease, various dementias anorexia and depression. The logical corollary of these well-established findings should be that adequate supplies of dietary zinc will protect against these pathologies, perhaps especially those degenerative ones most closely associated with long-term oxidative stress.&lt;br /&gt;&lt;br /&gt;Unfortunately, however, it appears that zinc is one of those minerals which it is becoming increasingly difficult to obtain from the daily diet. Soil depletion, environmental pollutants and diets high in refined carbohydrate diets are all implicated in dramatically reducing the amount of zinc active within our bodies; and the problem is especially acute for the elderly, whose less efficient digestive systems often struggle to absorb adequate amounts of the mineral, even supposing that these are present in the diet in the first place.&lt;br /&gt;&lt;br /&gt;And these problems are compounded by the fact that the functions of zinc are by no means confined to brain and nervous system health. Adequate zinc is also necessary for the effectiveness of the immune system and wound healing, for reproductive and sexual health, the prevention of degenerative eye disease, the regulation of blood sugar and the maintenance of skin health to name but a few.&lt;br /&gt;&lt;br /&gt;Not surprisingly, therefore, nutritional therapists make a strong case for routine zinc supplementation, particularly for the older population, and commonly recommend a daily protective dose of 15-25 mg of zinc per day. Both the US and EU authorities suggest a Recommended Dietary Amount (RDA) of 15 mg, and a good quality multi-mineral product will commonly provide around half this quantity. Still one thing that is unquestionably true is the high incidence of cancer especially in older people.&lt;br /&gt;&lt;br /&gt;The American Cancer Society reported that between 1997 through 2001 the rate at which new cases of all types of cancer were diagnosed in the United States was about 470 per 100,000 people. During the same time period there were about 200 cancer deaths per 100,000 people per year. It further reported that 76% of all cancers are diagnosed in persons aged 55 and older. That would suggest that while the cancer rate is high; the death rate from cancer is not as high.&lt;br /&gt;&lt;br /&gt;With that much cancer in the population it is no wonder that many people have decided on a course of preventative medicine. But what does an antioxidant dietary supplement really do and how does it work?&lt;br /&gt;First, it must be explained that the villains as far as scientists know so far are &quot;free radicals&quot;. These are oxygen molecules and some other reactive compounds that can damage human cells. These villains to human health are produced by viruses, pollutants, solar radiation and even normal cell processes.&lt;br /&gt;&lt;br /&gt;There are three types of antioxidants which work in conjunction to stabilize free radicals and flush them from the body. Fat soluble antioxidants, like vitamin E and beta-carotene, are the first group of antioxidants which neutralize free radicals. The second type of antioxidant is surface-active. These are polyphenols which are phytochemicals or light absorbing substances which occur naturally and help in plant photosynthesis. The group of antioxidants comprised of these transport neutralized free radicals from the water soluble to the third type of antioxidant. There are over 4000 known polyphenals catalogued so far, the best being found in dark red fruits and vegetables.&lt;br /&gt;&lt;br /&gt;The last group of antioxidants is that which is water soluble such as vitamin C. This water soluble antioxidant receives the neutralized free radical from the transporting surface-active antioxidant and takes it to the liver where it is made inert for excretion.&lt;br /&gt;&lt;br /&gt;This complex interplay amount these three distinct antioxidants is believed to prevent a range of cancers from occurring in the first place. The degree to which a food or supplement possesses this capacity is measured by a new standardized test. This measurement is expressed as the food&#39;s oxygen radical absorbing capacity or ORAC. The best ORAC values are found in deep colored fruits and vegetables as well as green tea and herbs like rosemary. Extra virgin olive oil has the highest ORAC rating.&lt;br /&gt;&lt;br /&gt;Only time can determine whether the American public is successful in lowering the rate at which cancer occurs. Oxalic acid will bind to other valuable nutrients in the food we eat and make them unavailable during digestion. Oxalic acid is also irritating to the intestinal lining and quite toxic if large amounts are consumed. Thus, a steady diet of foods rich in antioxidants and high in oxalic acid can lead to nutritional deficiency and ill health. The key here, as in most things in life, is moderation and variety. You can enjoy average amounts of these and other foods high in antioxidants, but don&#39;t overdo it on any one thing.&lt;br /&gt;&lt;br /&gt;A healthy balanced diet containing plenty of fruits and vegetables, with as much variety as possible, should provide ample foods rich in antioxidants and all the other nutrients essential to good health. Goji berries have been revered for centuries in Asia as a powerful medicinal plant with natural anti-aging properties and a wide variety of other benefits, but does scientific scrutiny back up the longstanding claims about the berries?&lt;br /&gt;&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;Do a quick search on Google for the term &quot;goji juice&quot; and a vast array of marketing websites will come up, most of them touting the same information word for word from a few sources, especially from the main marketing network&#39;s promotional material. Unfortunately, the claims made by the main company selling the juice never panned out, and although noni juice is certainly healthy to drink, one would do much better to simply purchase a bottle of pomegranate juice at their local grocery store for much less, as the antioxidant levels in pomegranates far exceed the levels found in noni berries (if you are going for the anti-cancer benefits).&lt;br /&gt;&lt;br /&gt;So, what about goji? The main claims about goji juice include the claims that it is a natural anti-aging supplement, contains many anti-cancer agents, is the most nutritionally dense food on the planet, contains higher antioxidant levels than pretty much any known food, and various other claims.&lt;br /&gt;&lt;br /&gt;Goji Juice Research&lt;br /&gt;&lt;br /&gt;If we look at the &lt;a href=&quot;http://www.ncbi.nlm.nih.gov/entrez/&quot;&gt;Pub Med medical database&lt;/a&gt; published by the National Library of Medicine and the National Institutes of Health, we can immediately see that there is a lot of scientific interest in goji juice and goji berries, particularly in Asia. Many traditional medicinal plants that have been used for centuries in Asia are now beginning to enter into the mainstream in the West after rigorous scientific scrutiny and indeed, many of our common drugs have been derived from such plants.&lt;br /&gt;&lt;br /&gt;In terms of studies relating to the polysaccharides in goji berries, there are several. One study showed that seventy nine people in advanced stages of cancer who were treated with polysaccharides isolated from goji berries actually demonstrated a high rate of regression. When combined with a common cancer treatment drug patients showed a 40.9% regression rate, as compared to a 16.1% regression rate for patients treated only with the drug.&lt;br /&gt;&lt;br /&gt;Another study showed that the blood pressure in hypertension rats could be lowered significantly by treatment with polysaccharide. Another showed that polysaccharide isolated from the berries significantly inhibited the growth of tumors in mice and encouraged the production of beneficial antibody agents, noticeably improving their immune system.&lt;br /&gt;&lt;br /&gt;Yet another study showed that a &quot;purified component&quot; of polysaccharide significantly enhanced muscle performance of mice, enabling muscles to recover more quickly after strenuous activity and perform better all around.&lt;br /&gt;&lt;br /&gt;Nutrition Information and Antioxidants&lt;br /&gt;&lt;br /&gt;In my &lt;a href=&quot;http://www.gojijuices.net/gojijuiceresearch.html&quot;&gt;research on goji juice&lt;/a&gt;, probably the most indisputably interesting thing about them is their nutritional value, including their extremely high levels of antioxidants. To give you an idea of just how high the antioxidant levels are, we can compare them to levels of antioxidants found in the most antioxidant-rich foods we are familiar with. The standard measure of antioxidant levels in food is known as the ORAC test. It is commonly given as a measure per 100 grams of food.&lt;br /&gt;&lt;br /&gt;The foods we are aware of in the West that have the highest antioxidant levels include: black raspberries, with an ORAC score of 7,700, prunes, with a score of 5,770, bilberries, with a score of 4,460, and pomegranates, with a score of 3,307. Other foods high in antioxidants include raisins, at 2,830 and blueberries, at 2,400. Astonishingly, goji berries have a score of 25,300. This means that a person has to eat only 20 grams of the berries to get their daily recommended intake of antioxidants (it is best to get antioxidants from a variety of sources though, so it is extremely important to eat many different fruits and vegetables).&lt;br /&gt;&lt;br /&gt;But antioxidants aren&#39;t the only thing the berries are high in. They are also high in iron, protein (they contain a complete protein), fiber, vitamin C (far more than oranges), vitamin E, essential fatty acids, beta carotene (more than carrots) and many other things. They also contain various anti-cancer agents including selenium, germanium, cyperone and physalin. The claim by many websites that the berries are the most nutritionally dense food on the planet is actually not so far out there, it seems.&lt;br /&gt;&lt;br /&gt;The question is, is it worth it to buy goji berries or goji juice? Although it is indisputable that the berries contain unusually high levels of antioxidants, vitamins, minerals, and other beneficial agents, it is up to you to decide whether or not they are worth the money or not to buy. There may, in fact, be options for you if you can&#39;t afford the $35 juice. Buying berries in bulk would be a cheaper path, and growing your own berries would be even cheaper (plus, you&#39;d get the fatty acids and whatever else is in the seeds, which aren&#39;t included in the juice)! Just make sure to do your research before making a purchase. New research is coming out all the time that seems to indicate antioxidants can prevent cancer, strengthen your immune system and even keep you from aging. Antioxidants work by sucking up free radicals that can damage your body&#39;s cells and transporting them to the liver where eventually they exit the body.&lt;br /&gt;&lt;br /&gt;Heart Disease in particular has been the subject of recent studies. Researchers in Italy examined three hundred and seven middle aged women for Atherosclerosis. This is the formation of plaques and lesions in the coronary arteries, which can signal the development of cardiovascular disease years before a doctor diagnosis&#39;s it. These women did not take vitamin supplements containing vitamins A, C or E. The researchers took blood samples to measure the women&#39;s baseline level of various antioxidants, took questionnaires and performed ultrasound examinations of their carotid arteries and branches of the heart. They found that women who had plaques building in their arteries had a low intake of vitamin E. Women with the lowest baseline concentrations of Vitamin E in their blood were twice as likely to have plaque build up in their carotid arteries and branches of the heart.&lt;br /&gt;&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;In a side note some promising research has come up relating to breast cancer in women. Researchers gave thirty-two women between the ages of thirty-two and eighty-one with metastasized breast cancer a multivitamin supplement. It contained vitamin C, E, Beta Carotene, selenium, coenzyme Q10 and other vitamins and minerals daily for eighteen months. None of the patients died during this period, which is wonderful because without supplements it could be expected that at least four of the volunteers would have died. Also the cancer in each of the patients appeared to stop spreading. Six of the patients showed partial remission. One of the six patients in partial remission had her dosage of coenzyme Q10 increased to 390mg daily and within two months her tumor could no longer be seen on a mammogram.&lt;br /&gt;&lt;br /&gt;Antioxidants are beneficial but they seem to be able to do only do so much. In a French study publicized in 2004 it was found that antioxidants tended to benefit men more than women. The Institut National de la Sante et de la Recherche Medicale and Unite de Surveillance et d&#39;Epidemiologie Nutritionnelle studied the effects of taking supplements in more than thirteen thousand men and women for seven and a half years. The participants were divided into groups, each one taking a different antioxidant daily. The antioxidants were ascorbic acid, Vitamin E, Beta Carotene, Selenium, Zinc and a placebo. At the end of the study they found that the men who took antioxidants were thirty-one percent less likely to develop cancer than women. Some of us women may be automatically thinking what a sexist finding! While it is possible that antioxidants are simply more effective in men it&#39;s not probable. It is more likely that the men had a lower baseline of antioxidants in their bloodstream than women, in other words women may have a better diet than men with lots of antioxidants and their baselines were already high. Antioxidants are the knights in shining armor that subjugate the attack of free radicals in the body, the hazardous molecules that damage cells and procure aging and disease. Though antioxidants are produced naturally in the body, these decline with age, hence an increasing need to acquire them from the foods in our diet.&lt;br /&gt;&lt;br /&gt;Before examining antioxidants more closely, it is important to take a look at the free radicals they serve to neutralize.&lt;br /&gt;&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;Free Radicals&lt;br /&gt;&lt;br /&gt;Free radicals are created as by-products in our use of oxygen during metabolism such as the burning of food for energy. Vitamins, minerals and phytonutrients all have antioxidant properties. The most common examples include vitamins A, C and E, selenium and zinc, carotenoids, flavonoids, co-enzyme Q10, alpha-lipoic acid and glutathione.&lt;br /&gt;&lt;br /&gt;As there are many different types of free radicals in the body a variety of antioxidants are required to protect against them. Antioxidants function best as a team, with each other and other nutrients and phytochemicals, which is why incorporating a wide range of plant foods into your diet is recommended. Phytochemical groups such as flavonoids and carotenoids correspond to the colour, taste and smell attributes of plants, hence eating a rainbow array of vegetables and fruits can offer a diverse selection of these potent antioxidants.&lt;br /&gt;&lt;br /&gt;Antioxidant Rich Foods&lt;br /&gt;&lt;br /&gt;Foods especially high in antioxidants include berries, plums, pomegranates, oranges, spinach, green tea, avocado, kale, broccoli, peas, onions, grapes and pure chocolate.&lt;br /&gt;&lt;br /&gt;Scientists at the USDA (United States Department of Agriculture) have developed a rating scale that measures the total antioxidant capacity of a given food. This is known as the ORAC score (Oxygen Radical Absorbance Capacity).&lt;br /&gt;&lt;br /&gt;Of 40 common fruits and vegetables measured by the USDA, top ranking scores were those of prunes(5770), raisins (2830), blueberries (2400 – highest of all fresh foods with other berries close behind), kale (1770), spinach (1260), Brussels sprouts (980), plums (949), alfalfa sprouts (930), broccoli florets (890), beetroots (840), oranges (750 ), red peppers (710 ) and red grapes (739).&lt;br /&gt;&lt;br /&gt;Pure cocoa surpasses all these foods with a whopping score of 26,00 units, more than 10 times the prestigious blueberry (though one is likely to eat far less in quantity). The extraordinary goji berry from Tibet also has outstanding antioxidant capacity with a score of 18,500 units; hardly surprising as they contain 500 times more vitamin C than oranges and even more beta-carotene than carrots!&lt;br /&gt;&lt;br /&gt;According to studies on animals and human blood at the Human Nutrition Research Center on Aging at Tufts in Boston, high-ORAC foods may slow aging processes in the body and brain. Results found that high ORAC foods such as blueberries and spinach could increase the antioxidant power of human blood by 10-25%, prevent loss of long-term memory and learning ability in middle-aged rats, and protect rat blood vessels against oxygen damage.&lt;br /&gt;&lt;br /&gt;Antioxidants and Aging&lt;br /&gt;&lt;br /&gt;As we age, free radical levels rise and yet the body falls short in producing necessary amounts of antioxidants to meet this challenge. For example, cells generate more of the oxidants hydrogen peroxide and superoxide, yet levels of the necessary antioxidant glutathione required to neutralise these decline. The Free Radical Theory of Aging, first proposed by Harman in 1954, is supported by cross-species examination of animals with regard to life span, free radical damage and antioxidant defence. For example, the white-footed mouse lives about twice as long as the house mouse (8 versus 4 years), and is found to generate less oxidants and have higher levels of antioxidants. As Beckman and Ames write in The Free Radical Theory of Ageing Matures (1998), ‘Together, interspecies comparisons of oxidative damage, antioxidant defences, and oxidant generation provide some of the most compelling evidence that oxidants are one of the most significant determinants of life span.’&lt;br /&gt;&lt;br /&gt;Very recent evidence comes from a study on dogs at the University of Toronto by Dr. Dwight Tapp and colleagues who found that ‘old dogs that were on an antioxidant diet performed better on a variety of cognitive tests than dogs that were not on the diet. In fact, the dogs eating antioxidant-fortified foods performed as well as young animals’.&lt;br /&gt;&lt;br /&gt;Additional research by Dr. Rabinovitch and his team, studying aging at the University of Washington, Seattle, found that mice engineered to produce high levels of an antioxidant enzyme (catalase) lived 20 per cent longer and had less heart and other age-related diseases than controls.&lt;br /&gt;&lt;br /&gt;In light of the role free radicals play in the onset of aging and disease, it is important to ensure our diets include a rich and diverse supply of antioxidants.
