<p>Besides Mexican food, I cannot seem to get enough Greek and Mediterranean food. I love it, so I thought I would incorporate into a decadent and rich mac &amp; cheese. I was actually inspired by a feta cheese and macaroni gratin that we recently had on vacation that used feta as the main cheese in the dish. It was so rich, creamy, and delicious that we actually had to go back to the restaurant and order it again.</p>
<p>This is my version all jazzed up with those wonderful Mediterranean flavors that I love. I wanted to make it a little heartier so that we could enjoy it as a meal with a green salad, but could also pair it with a nice New York Strip steak too. Honestly, I think the kids liked this too much! Even my regular mac &amp; cheese loving 2 year old had seconds. I won’t tell you that my husband went around and ate bites off of everyone’s plate (even after having seconds as well).</p>

</div><div id="zlrecipe-ingredient-1" class="ingredient">4 oz pancetta, finely diced
</div><div id="zlrecipe-ingredient-2" class="ingredient">2 tbls butter, if needed
</div><div id="zlrecipe-ingredient-3" class="ingredient">2 tbls flour
</div><div id="zlrecipe-ingredient-4" class="ingredient">1 ¼ cup milk
</div><div id="zlrecipe-ingredient-5" class="ingredient">½ tsp garlic powder
</div><div id="zlrecipe-ingredient-6" class="ingredient">½ cup spinach, roughly chopped
</div><div id="zlrecipe-ingredient-7" class="ingredient">4 oz Wisconsin Feta cheese, crumbled
</div><div id="zlrecipe-ingredient-8" class="ingredient">2 tbls sun dried tomatoes, roughly chopped
</div><div id="zlrecipe-ingredient-9" class="ingredient">Salt and white pepper
</div><div id="zlrecipe-ingredient-10" class="ingredient">2 cups cooked large elbow macaroni
</div><div id="zlrecipe-ingredient-11" class="ingredient"></div></span><span id="zlrecipe-instructions-list" class="instructions"><p id="zlrecipe-instruction-0" class="instruction">In a large skillet, sauté pancetta until cooked and fat rendered (about 5 minutes).  Remove pancetta from pan and place on plate lined with a paper towel.  Add red onion to pan and cook just until tender (about 5 minutes).  Remove from pan and add to reserved pancetta.
</p><p id="zlrecipe-instruction-1" class="instruction">If there is not enough rendered fat to equal about two tablespoons then add  enough butter to hot skillet to make up the difference.  Add flour.  Stir and cook for about 2-3 minutes.  Lower heat to med-low and add milk.  Stir well to combine flour mixture and milk.  Turn heat to medium-high and bring to a simmer, stirring continuously.  Add garlic powder, salt, and pepper.  Stir well to combine.  
</p><p id="zlrecipe-instruction-2" class="instruction">Add in feta cheese slowly, stirring well after each addition.  (The smaller the crumbles, the easier it will melt.)  Gently stir in spinach, tomatoes, and reserved pancetta and onion.  Mix with cooked elbow macaroni.

<p>For the last seven and a half years, I participated in a produce co-op&#8230;most of the time I run the site that I participate in. It is so much fun and I&#8217;ve met some wonderful people.  In fact, some of my closest friends are people that I&#8217;ve met through the co-op.  The only bad thing is getting up at 4am to meet the truck.  It&#8217;s worth it in the end since we get a ton of fresh produce for a fraction of the grocery store prices.  I love it!  I love saving money!</p>
<p>Another plus is that my family has tried all sorts of new fruits and veggies over the years that I would never in a million years buy at that the store.  Ya know&#8230;the green stuff or the weird shaped thing over there or the ones that are too expensive.  We don&#8217;t always get fun new things to try, but when we do I search for recipes and give one or two a try with the new ingredient.</p>
<p>Bok Choy was a veggie that I was not willing to try.  EVER!  It looked weird, had a weird name, used in Asian cuisine (which I don&#8217;t care for), and it was green.  However, one fine Saturday morning, bok choy ended up in our produce basket and I was forced into learning what to do with it (besides the dreaded stir fry&#8230;really, I hate Asian food&#8230;even Americanized Asian food.)  I ended up making this awesome salad.  It is a little sweet, a little tangy, crunchy, and delicious!  I hope you will give it a try.</p>

</div><div id="zlrecipe-ingredient-16" class="ingredient"></div></span><span id="zlrecipe-instructions-list" class="instructions"><p id="zlrecipe-instruction-0" class="instruction">In a large zip top bag combine chicken, 1/2 c. oil, 1/4 c. red wine vinegar, 1 tbls soy sauce, and smashed garlic.  Marinate all day or overnight.  
</p><p id="zlrecipe-instruction-1" class="instruction">In large pan melt butter and add sesame seeds, sugar, broken ramen noodles, almonds. Brown and set aside to cool. After cooled, break up and set aside in small bowl. (This can be made a day in advance.)
</p><p id="zlrecipe-instruction-2" class="instruction">Cook chicken on grill until done. Allow to rest, then slice for salad.
</p><p id="zlrecipe-instruction-3" class="instruction">Wash and chop bok choy (smaller is better) and green onions in large salad bowl.  
</p><p id="zlrecipe-instruction-4" class="instruction">In a small bowl, combine remaining vegetable oil, red wine vinegar, sugar, and soy sauce.  Mix well.
</p><p id="zlrecipe-instruction-5" class="instruction">Just prior to serving the salad, mix bok choy and ramen noodles mixture. Top with sliced chicken. In a mixer, combine butter and sugars until light and creamed well.  Add remaining ingredients, expect chocolate chips.  Mix until well combined.  Dough will be thick.  Add white chocolate and cranberries and incorporate by hand.

Drop by 1 1/2 tablespoonfuls (or use a #40 cookie scoop) onto prepared pan leaving 2 inch spaces between cookies. <p>I&#8217;ve been reading, yeah I read too much, about the benefits of almonds.  They are really good for you, but I&#8217;m not a huge fan of just eating plain almonds.  I also learned that half the flour in baked goods can be swapped for ground almonds or almond meal and the integrity of the baked good stays in tack.  So, I set out to do some experimenting in the kitchen last weekend.</p>
<p>I took my favorite chocolate chip cookie recipe and swapped out half the flour for almond meal to see what happened.  It was scrumptious!  In fact, I didn&#8217;t tell anyone that I had done it and no one could tell.  Everyone loved the cookies and said they were awesome.  I had one person say they were better than my other chocolate chip cookies.  I just secretly giggled to myself.</p>
<p>So, if you aren&#8217;t too adventurous then just put back in the flour and take out the almond meal, but I promise you will love these cookies!  Can&#8217;t find almond meal, buy raw almonds and process in the food processor until finely ground.  However, don&#8217;t go to far or you will end up with almond butter. Still good, but not good for this recipe.</p>
<p>Since this recipe is a bit different I thought I would share some pictures of the process.  Let me know if you like this new feature.</p>

</div><div id="zlrecipe-ingredient-9" class="ingredient">1 cup chocolate chips</div></span><span id="zlrecipe-instructions-list" class="instructions"><p id="zlrecipe-instruction-0" class="instruction">Preheat oven to 350F.  In a mixer, combine butter and sugars until light and creamed well.  Add remaining ingredients, expect chocolate chips.  Mix until well combined.  Dough will be thick.  Add chocolates and incorporate by hand.
</p><p id="zlrecipe-instruction-1" class="instruction">Prepare a baking sheet with non-stick cooking spray or parchment paper.  Drop by 1 1/2 tablespoonfuls (or use a #40 cookie scoop) onto prepared pan leaving 2 inch spaces between cookies. <p><span style="font-size: 14px;"><span style="font-family: arial,helvetica,sans-serif;">I also have bad asthma, so I&#8217;ve been using that as an excuse not to do any physical activity.  I need to start small!  I usually get elaborate ideas and then almost kill myself trying to achieve the new goals I set for myself.    Small, realistic goals will hopefully lead to success.</span></span></p>

<p> So I married a soup lover!  He loves soup!  And wouldn&#8217;t ya know it&#8230;he passed his love for soup down to our kids.  My daughter is a soup connoisseur&#8230;she can tell a good soup from a bad one and is very picky about what kinds she will eat.  I find it amusing when my 7 year old orders soup for supper at a restaurant or instead of french fries.  We always get that one eyebrow up look from the waitress.</p>
<p>In fact, she also does this with some veggies.  If there is broccoli on the menu in any way then it better be on her plate.  She has one little friend, the 8yo son of Janice over at <span style="color: #ff0000;"><a href="http://celebrating-family.com/" target="_blank"><span style="color: #ff0000;">Celebrating Family</span></a></span>, that they will fight for each other&#8217;s broccoli. They will both order it and then eat their own as fast as possible so that the winner can eat the rest from the other plate.  It never ends well.  Someone is upset because the other got more.  Seriously?!?!  You&#8217;d think they were fighting over the world&#8217;s finest chocolate or something.  Strange Kids!!!  Kaylynn even asked Santa for steamed broccoli with butter.  Santa forgot, so we never heard the end of it until I made some.</p>
<p>Do you see where this post is going?  To my broccoli cheese soup, that&#8217;s where!</p>

</div><div id="zlrecipe-ingredient-1" class="ingredient">½ onion, roughly chopped
</div><div id="zlrecipe-ingredient-2" class="ingredient">2 1/2 tbls flour 
</div><div id="zlrecipe-ingredient-3" class="ingredient">2 cups whole milk
</div><div id="zlrecipe-ingredient-4" class="ingredient">1 cup chicken/vegetable stock
</div><div id="zlrecipe-ingredient-5" class="ingredient">1 large head broccoli, roughly chopped
</div><div id="zlrecipe-ingredient-6" class="ingredient">1 ½ cups grated cheese
</div><div id="zlrecipe-ingredient-7" class="ingredient">*additional milk and cheese may be needed*
</div><div id="zlrecipe-ingredient-8" class="ingredient"></div></span><span id="zlrecipe-instructions-list" class="instructions"><p id="zlrecipe-instruction-0" class="instruction">Melt butter in a large pot over medium heat.  Add the onions and cook for about 4 minutes.  Stir in flour and cook for a minute or two.  Pour in the milk and broth.  Add the broccoli.  Season with a dash of salt and black pepper.
</p><p id="zlrecipe-instruction-1" class="instruction">Cover and reduce the heat to low. Simmer on low until the broccoli is tender, 20 to 30 minutes. 
</p><p id="zlrecipe-instruction-2" class="instruction">Puree soup using a blender (in two batches), immersion blender, or even a potato masher.  Stir in the cheese and allow to melt.  Taste the seasonings and adjust if needed.  Thin with additional milk to desired consistency.  
</p><p id="zlrecipe-instruction-3" class="instruction">To make it a little heartier, stir in some diced ham or leftover chicken/turkey.  Serve with extra cheese and crackers.
