L'autunno, che concentrato in maniera isterica le sue precipitazioni in un'unica settimana e che pare destinato a concludersi asciutto, ci sta consentendo di realizzare qualcosa che non avrei creduto possibile: sostituire prima dei geli invernali le centinaia di ceppi divorati negli ultimi due anni dalla Flavescenza Dorata con nuove viti. Un lavoro cominciato nell'estate con l'estirpo delle piante malate, proseguito appena terminata la vendemmia con la realizzazione di buche adatte al trapianto e che vede in questi giorni il suo atto finale con la messa a dimora delle barbatelle in quello che a mio giudizio è il periodo dell'anno migliore. Non sempre praticabile alle nostre latitudini.&amp;nbsp;&lt;/div&gt;

Ho avuto il piacere di pranzare con uno degli agronomi acquesi che più stimo. Sbranava le cotolette della mamma e intanto mi osservava sornione esporre con foga millenarista e paranoica minuzia le innumerevoli pratiche adottate negli ultimi anni per far fronte a questa peste surreale.&amp;nbsp;&lt;/div&gt;

Sì, sì, bravo!, annuiva tracannando mezzo bicchiere di rosso alla volta, a me piace bello fresco... E sorrideva.&amp;nbsp;&lt;/div&gt;

Vedi, disse non appena ebbe svuotato la tavola, tu sei pazzo se pensi, armato delle tue pratiche virtuose, di essere in grado di sconfiggere da solo un insetto. Un insetto è invincibile. Bastano due ore di bufera di vento per mandare all'aria tutto il tuo lavoro in una stagione.&amp;nbsp;È una lotta di compartimento, questa, che si vince o si perde insieme.&amp;nbsp;Perchè qui non stiamo parlando di Oidio, che se non tratti sono cazzi tuoi (ma neppure questo è del tutto vero).&amp;nbsp;Le esperienze di lotta alla Flavescenza che hanno dato gli esiti migliori si sono svolte tutte con la cooperazione praticamente unanime dei vignaioli di quel compartimento.&lt;br /&gt;
Questo è un discorso che puoi estendere in senso generale al tuo mestiere. Non esisterà mai un grande vignaiolo senza un buono sviluppo quantitativo e qualitativo della viticoltura nel suo territorio. I grandi vignaioli, pure loro, sono nani sulle spalle dei giganti.&lt;/div&gt;

Moscato intendo. Quello di Acqui. Quello che da sempre ha accompagnato la coltivazione del Brachetto in tutto il Piemonte meridionale. Con il suo acino tondo dai riflessi violacei e la quasi totale assenza di pruina che rende la buccia sottile particolarmente croccante all'assaggio, con la tannicità dei suoi semi&amp;nbsp;che non ne vuol saper di sapere di sottostare agli aromi della polpa tipici del suo più blasonato fratello. Fratellastro, meglio.&amp;nbsp;&lt;/div&gt;

Tra i ricordi che conservo con maggiore tenerezza delle vendemmie d'infanzia vi sono quelli dei dialoghi tra i miei vecchi circa l'ampelografia delle viti appartenenti a varietà diverse da quella dominante nel vigneto. &amp;nbsp;&lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
Nel Brachetto, pur trattandosi quasi sempre di Moscato Nero, le dispute erano quantomai accalorate. Giunto in prossimità di una pianta sospetta, il nonno, con le sue mani di cuoio, strappava il picciolo e si portava il grappolo diritto davanti al naso:&lt;/div&gt;
&lt;div style="text-align: justify;"&gt;
- &lt;i&gt;E ìsta, che ìua ch'l'è?&lt;/i&gt;¹&lt;br /&gt;
E dopo aver piluccato un acino e averne sputato la buccia sentenziava:&lt;br /&gt;
- &lt;i&gt;Malaga.&lt;/i&gt;&lt;br /&gt;
La trafila si ripeteva per tutti i vecchi che lavoravano lungo la &lt;i&gt;filéra,&amp;nbsp;&lt;/i&gt;non di rado interrompendo le operazioni di raccolta. Va da&amp;nbsp;sé, non ne risultavano due verdetti uguali.&lt;br /&gt;
- &lt;i&gt;Ma che Malaga! Ist' l'é Aleatico.&lt;/i&gt;&lt;br /&gt;
&lt;i&gt;- I capisse niente. 'S chi qué l'è Muscaté nèier.&lt;/i&gt;&lt;br /&gt;
&lt;i&gt;- Cito. L'è Braghèt ed Nissa.²&lt;/i&gt;&lt;br /&gt;
E la giaculatoria continuava, snocciolando nomi che il più delle volte non erano altro che sinonimi usati in questo o quell'altro paese per intendere sempre la medesima varietà: il Moscato Nero d'Acqui, appunto.&amp;nbsp;Con il suo grappolo rado, presto asciutto dopo i temporali di fine agosto, praticamente immarcescibile, veniva aggiunto in uvaggio al Brachetto in virtù della sua aromaticità, debole a dire il vero, e del suo discreto contributo in tannini da che, si sa, &lt;i&gt;'l Braghet l'è mòl.&lt;/i&gt;³&amp;nbsp;Per non parlare del Brachetto secco, nel quale la percentuale di Moscato Nero poteva salire a valori che nessun disciplinare di produzione consentirebbe. Oggi.&lt;br /&gt;
&lt;br /&gt;
Oggi la moltiplicazione viticola moderna fornisce materiale con un'omogeneità varietale, meglio, clonale, superiore al 99%. Nonostante ciò, spesso sono gli stessi viticoltori a contestarti come una riga sulla fiancata dell'auto quelle poche piante di varietà differente (ma spesso compatibile) in cui gli capita di imbattersi&amp;nbsp;allevando&amp;nbsp;i loro impianti nuovi fiammanti: squadrati con il laser, dai pali d'acciaio luccicanti nel tramonto. E la vinificazione in purezza delle uve viene sovente&amp;nbsp;sottolineata&amp;nbsp;nelle schede dei loro vini come un ariano segno di pregio.&lt;br /&gt;
&lt;br /&gt;
Viva la biodiversità.&lt;br /&gt;

Le foglie delle patate nell'orto stanno diventando gialle: i primi tuberi sono già maturi, la pianta volge al termine del suo ciclo. Ne ho raccolti alcuni. L'odore avvertito - una volta emersi - è quello di un luogo umido e nascosto, rimasto chiuso per mesi.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Dall'orto ho raccolto anche le costine, i piselli e le zucchine ed ho preparato un passato - componente basilare della tavola estiva. Consumato a temperatura ambiente e arricchito da una &lt;i&gt;punta &lt;/i&gt;di basilico, è la parte del pasto serale che la famiglia più gradisce, al termine di una giornata trascorsa all'aperto.&lt;br /&gt;

Il passato è stato preparato facendo bollire le verdure con poca acqua, in modo che, una volta frullato, rimanga molto denso. Questa talea&amp;nbsp;&lt;i&gt;in nuce&lt;/i&gt;&amp;nbsp;è stata poi riposta in un sacchetto ricavato dalla juta grezza che fino a pochi anni fa veniva utilizzata durante le fasi di lavorazione del vivaio, simbolica protezione per la gemma che, appena innestata, è ancora fragile.&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;La &lt;a href="http://it.wikipedia.org/wiki/Portulaca_oleracea"&gt;Portulaca oleracea&lt;/a&gt;&amp;nbsp;chiamata anche &lt;i&gt;erba porcellana &lt;/i&gt;è una pianta infestante che cresce e si sviluppa su terreni &lt;span class="Apple-style-span" style="background-color: white;"&gt;freschi;&lt;/span&gt;&amp;nbsp;per questa ragione nell'orto trova un luogo ottimale per crescere. E' infatti comparsa da pochi giorni anche nel &lt;span class="Apple-style-span" style="background-color: white;"&gt;nostro&lt;/span&gt;. Verrà lasciata crescere ancora qualche centimetro, poi raccolta: le foglie arricchiranno l'insalata oppure verrà consumata bollita.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Sulla portulaca sono stati condotti vari studi, i quali hanno evidenziato le sue molteplici &lt;a href="http://it.foodlexicon.org/p0000270.php"&gt;proprietà nutritive&lt;/a&gt; e la sua ricchezza di elementi quali vitamine, &lt;a href="http://www.ansci.cornell.edu/plants/medicinal/portula.html"&gt;acidi grassi&lt;/a&gt;, flavonoidi.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Raccoglierla riporta il mio pensiero ai&amp;nbsp;&lt;span class="Apple-style-span"&gt;gesti più semplici&amp;nbsp;&lt;/span&gt;che la natura permette di compiere, primo tra tutti quello del &lt;i&gt;raccogliere&lt;/i&gt;, e alla spontaneità con cui gli alimenti crescono. Da questa riflessione non può che scaturire e una rivalutazione del termine '&lt;a href="http://arsviticola.blogspot.com/2011/04/un-dono-di-primavera.html"&gt;infestante&lt;/a&gt;': occorre depurarlo dell'aura di negatività che lo circonda e inserirlo una nuova categoria di pensiero. Le stagioni non andrebbero pensate come periodi indipendenti tra di loro, ma come momenti di scambio. Ecco che raccogliere i&amp;nbsp;profumati&amp;nbsp;capolini di&amp;nbsp;&lt;a href="http://it.wikipedia.org/wiki/Matricaria_recutita"&gt;camomilla&lt;/a&gt;, lasciarli seccare, conservarli e &lt;a href="http://arsviticola.blogspot.com/2011/02/infuso-di-biancospino-e-camomilla.html"&gt;utilizzarli&lt;/a&gt;&amp;nbsp;in futuro può essere un modo per prolungare questi giorni di primavera nel tempo. Uno sguardo fiducioso a ciò che sarà.&lt;br /&gt;

Essa si riproduce con tale velocità, da essere considerata infestante. Se gestita nel modo corretto, questa specie si trasforma in una risorsa di grande valore, per il legname di qualità disponibile in tempi ristretti.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;In questi primi giorni di maggio le acacie, al massimo della fioritura, decorano con i loro fiori a bianchi i lati delle strade e della ferrovia, inebriano l'aria con il loro profumo e sono una fonte di nettare che le api utilizzano per la produzione del miele.&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;Attendo la fioritura del biancospino (&lt;span style="font-size: small;"&gt;&lt;a href="http://it.wikipedia.org/wiki/Biancospino"&gt;Crataegus monogyna&lt;/a&gt;) &lt;/span&gt;come una festa. Il momento adatto per la raccolta si ha quando è al massimo della sua fioritura, come quando in montagna si oltrepassa l'alta via e inizia la discesa. Con i fiori si raccolgono anche i piccoli rami dai quali nascono e si lasciano seccare in un luogo ventilato e buio, per poi preparare &lt;a href="http://arsviticola.blogspot.com/2011/02/infuso-di-biancospino-e-camomilla.html"&gt;infusi&lt;/a&gt; durante l'inverno.&lt;br /&gt;
Questo mi è stato insegnato, come rituale consuetudine.
