&lt;span style="font-size: small;"&gt;"Barista" é um substantivo masculino, cujo significado é balconista e garçom, feminino "Bariste", plural "Baristi". Isso segundo a maioria dos dicionários italianos, mas qual a ligação desse profissional com o café?&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-size: small;"&gt;Eu antes até pensava que Barista era o mesmo que barman, que em inglês significa homem de bar, mas conversando com vários colegas baristas italianos, mais antigos de profissão, sempre fiz e faço muitas perguntas de como é o profissional lá na Itália. Também converso com colegas brasileiros um inclusive trabalhou por muito tempo na Itália e se chama Aldo de Rosa, um brasileiro que tem uma história muito interessante com o café, mas contarei em outra oportunidade. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Voltando a falar sobre a profissão na Itália, as respostas que sempre ouvi sobre barista é que até um tempo atrás era uma função que realmente se parecia com as funções de um&amp;nbsp; simples balconista.&lt;b&gt;&amp;nbsp;&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-size: small;"&gt;&lt;b&gt;Perfis de balconistas:&lt;/b&gt;&lt;/span&gt;&lt;span style="font-size: small;"&gt;&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Os serviços típicos de um balconista, no caso do Brasil é servir coxinha, pão com manteiga, salgados e café filtrado de baixa qualidade o dia inteiro, os puros, pingados e médias. Espresso no brasil não chega nem a 5% do consumo café.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Agora indo pro perfil do barista italiano, é o dia inteiro servindo croissants, brioches, umas doses de grappa e licores etc... Aí quando se fala em café, vamos ver: espresso, ristretto, cappuccino, correto, romano, mocha, latte, latte macciatto, lacrima etc.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Já deu pra ver que o trato com café é bem diferente né? &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Mesmo assim ha pouco tempo o legal era ser Barmem na Itália, imagine um Italiano falando barman com o sotaque bem carregado. Existia de fato uma diferença entre barista e barman. &lt;/span&gt;&lt;br /&gt;

&lt;span style="font-size: small;"&gt;Barman é quem prepara Martinis, Daiquiris e outros drinks mais elaborados, até tirava café, mas o barista sempre foi o&amp;nbsp; simples balconista , o rapaz do espresso e agradeço muito. Se não fosse por isso a profissão não tinha tomado o rumo que tomou.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Na Itália eles praticamente não tomam café filtrado, são 85% espresso e os outros 15% são cafeteiras do tipo Moka e french press. O espresso na Itália é quase uma religião e vale lembrar que são os inventores&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;O hábito de tomar café em cafeterias ou caffé, como chamam, é um ritual diário, com isso 85% dos cafés espressos consumidos na Itália quase que obrigatoriamente passam pela mão do barista. Os números não são exatos mas são bem aproximados.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;E por esse motivo o barista italiano foi preenchendo o cargo de porta voz do café, em sua frente de trabalho com o consumidor final, moldando a profissão pelo mundo a fora, e realmente se diferenciando como profissional do café, assim como outros profissionais representa seus produtos. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Perfeito já que o mercado de café não tinha nenhum porta-voz nesse âmbito. O barista passa a ser o elo de ligação entre o café e o consumidor final.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Então quer dizer que se você for passear na Itália a profissão lá é muito desenvolvida e que os baristas lá irão te dar&amp;nbsp; aulas sobre café e você voltará um expert em café. Engano!!! Não será em qualquer lugar que terá este tratamento.&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-size: small;"&gt;O perfil do profissional Italiano é formado em sua maioria por pessoas de idade mais avançadas e em muitos lugares você será atendido por profissionais com idade próximos dos 40 anos muitas vezes os donos dos cafés. E não estranhe se ocorrer de você tirar uma ficha no caixa, pedir seu café, mau ser olhado no rosto e ouvir um “prego” que significa de nada em Italiano e o barista te dar as costas sem nem te atender direito para voltar ao seu trabalho que é corrido.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Agradeço muito a esses profissionais italianos pelo fato de transformar um simples balconista em um profissional que cada vez mais assume o papel de especialista em café devido ao trato que eles sempre tiveram com o café. &lt;/span&gt;&lt;br /&gt;

&lt;a name='more'&gt;&lt;/a&gt;&lt;span style="font-size: small;"&gt;Barista é o profissional especialista no preparo de café, ele é o elo de ligação entre o café e o consumidor final. Mas a profissão não se limita ao preparo de café, o profissional bem qualificado, deve ter o entendimento de toda cadeia do café, uma boa bagagem teórica, história, cultivo, processos, também conhecimentos com diferentes tipos de cafés, assim como maquinários ex: máquinas de espresso, moinhos e outras formas de preparo. &lt;br /&gt;
No campeonato o barista deve preparar 4 espresso, 4 cappuccinos e 4 drinks de assinatura não alcoólicos e com sabor do café muito presente, ele tem 15 minutos para preparar tudo isso.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;A apresentação é avaliada como um todo desde o sabor das bebidas a o comportamento do barista durante a apresentação.&lt;br /&gt;
&amp;nbsp;Esse ano o evento conta com uma novidade, será feito uma seletiva para estados que não tiveram campeonato local, se você é barista e não teve campeonato em seu estado ou região corra pra obter informações.&lt;br /&gt;

Doze baristas disputarão pela melhor performance e criatividade. Cada competidor deverá preparar e servir, em 8 minutos, dois cappuccinos com latte art idênticos, usando apenas leite e café, a máquina de espresso e leiteiras como suas únicas ferramentas; dois macchiatos, da mesma maneira que os cappuccinos; e duas bebidas de criação à base de leite e café, usando qualquer ferramenta ou ingredientes de decoração para a superfície da bebida. O desenho do latte deverá ser anunciado com antecedência (o barista deverá entregar uma foto aos juízes antes da prova). Os 14 provadores afiados disputarão o primeiro lugar em um único dia de prova. A competição consiste em oito testes triangulares: de três xícaras, duas trazem o mesmo café, e o competidor deverá identificá-la. A prova será organizada pela empresa BUNN e pela certificadora internacional Rainforest Alliance (Imaflora) que fornecerá para as provas os cafés de seu Annual Cupping, melhores lotes brasileiros provenientes de fazendas certificadas. De cada dupla competidora, quem acertar o maior número de cafés, ganha. Se houver empate, vencerá o competidor que tiver completado a prova em menos tempo. Inscrição até 17/2 apenas para associados ACBB. De 18 a 25/2, havendo vagas, será aberta inscrição para não-associados. A&lt;/span&gt;&lt;span style="color: black; line-height: 150%;"&gt; taxa é de R$ 80,00 para os associados da ACBB e de R$ 120,00 para os não-associados. Comecei na rede Frans Café, e só depois de dois anos trabalhando na empresa é que descobri a profissão de Barista, próximo do campeonato de Oslo 2002, logo me empolguei e descobri que realmente era com café que iria trabalhar.&lt;/span&gt;&lt;/div&gt;&lt;a name='more'&gt;&lt;/a&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt; &lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Não demorou muito e fui trabalhar na central do Frans café, empresa na qual trabalhei nos departamentos de operação e treinamento, nessa época bem limitado em relação a atuar como barista até por que não era minha função principal, o que não impedia a busca por conhecimento e informação sobre o assunto. Sendo assim adquiri também bastante conhecimento sobre franquias, desde cardápio até como funciona documentos típico.&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Sai do Frans Café em seguida entrei no Santo Grão Café Gourmet, que foi realmente minha grande escola onde aumentei e lapidei mais todo conhecimento adquirido, atuando como Mestre de Torra e Barista por dois anos e meio. (o que mais ouço de alguns é – Nossa quanta gente que já passou pelo Santo Grão! Mas poucos passaram pela torra).&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;

Na Flavors desenvolvi muita habilidade na criação de drinks em geral, alcoólicos não alcoólicos, com café, utilização correta de syrups (xaropes) e uma boa noção de mixologia no sentido tradicional, como combinar sabores (nada dessas coisas moleculares rsrs) e outras &lt;i&gt;cocitas&lt;/i&gt; mais.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt; Atuando como Barista e agregando à área comercial conhecimento para ajudar clientes, desenvolvendo e sugerindo&amp;nbsp; novas soluções.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: small;"&gt;Clientes como: &lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Mc Café, Café do Ponto, Frans Café, Vanilla Café, Café Donuts etc...&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; &amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Durante todo esse tempo me especializei em muitos cursos e worshops e principalmente na prática.&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Barista certificado pela Scae (Specialty Coffee of Europe). &lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Workshops com profissionais renomados na cena Barista,&amp;nbsp; nacional e internacional, assim como na área de classificação e prova.&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Por sinal classificação e prova é algo que vem me tirando o sono, como é um mundo absurdamente interessante e prazeroso que passo cada hora a me interessar mais e mais.&lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;Também fiz pequenas passagens em torrefações como Café Orfeu e Dona Mathilde o que me fez enxergar o quanto é complexo esse mercado. &lt;/span&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif; text-align: justify;"&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;
