The specifications include using fresh and mostly organic produce, taking the focus off of our meat based diet by incorporating more vegetarian options, and trying unique food that is out of our comfort zone. In one year I hope to increase my cooking experience while chiseling my culinary skills, acquire a stockpile of tried and true recipes to knock ‘em dead (whoever 'em are), and most of all, truly please my husband with each hot meal that I provide him every night. I am a career woman by day and a homemaker by night. My priorities are God, my husband, my career, and my cooking. I hope you get as much fun out of my trials as we will!

aTEMPTING dinner

Do you like See Food?

2 Cups Cooked White Beans

1 Tablespoon Tahini

2 Cloves Garlic

2 Large Sprigs Fresh Rosemary

½ Cup Olive Oil

2 Teaspoons Salt

1 Teaspoon Pepper

Pulse garlic cloves in a food processor until minced. Add all other ingredients in the food processor except the oil and pulse a few times to incorporate. Turn processor on and slowly drizzle the olive oil in. Continue processing until you’ve reached desired consistancy. Pour hummus into a bowl and drizzle a little olive oil on the top and garnish with some fresh Rosemary. This dip can be served with warm pita bread, crackers, and an assortment of veggies. I just used what I had in the fridge!

Upon reading my first few blog posts, she was so excited that she thought that she would send me some good ol’ fashioned recipes for me to try out. It just so happened that they were a hit!

I was excited to see which one of these oldies but goodies would grab my hand and walk me right down memory lane, as I knew it would. I couldn’t help but remember those wholesome days when we would come home to a hearty and well balanced meal that my mother prepared almost every night and I was longing for that feeling again. Grandma’s recipes definitely didn’t disappoint!

For the main course I prepared Shake N’ Bake chicken. I used chicken tenders because they were on sale this week but the recipe called for boneless, skinless breasts. They were crisp, juicy, and flavorful! In addition to that I served some lovely, chopped and buttered Parsley Potatoes with a delicious mushroom gravy. The potatoes were ready in a snap! I cubed ‘em, boiled 'em, and drained them. I put them back in the pot then added about 2 TBLS of butter. (No wonder they were AMAZING!) I put the lid on and gave it a toss to let all the butter get nice and melted (Grandma specifically told me to.). When I was ready to serve it I took the lid off and tossed in about a TBLS of dried parsley and swirled again. To balance out this quick and simple dish, I served all of that with a California mixed veggie that I pulled out if the freezer heated up with some Salt and Peppa. Voila!

This entire meal was really good and took barely any time at all to prepare! Overall we couldn’t have been happier with the results it tasted delicious! This was a quick and easy dinner that I will be sure to serve again. Thanks, Grandma for reminding me where I *deliciously* came from!

Goodnight and happy BUTTERING!!!

We had Haddock with fresh Rosemary, diced tomatoes, and white beans along with a beautiful Ceasar Salad with some awesome homemade salad dressing. I sifted the dry ingredients 3 times and let my milk and eggs come all the way to room temperature before stirring into the melted butter. Also, be careful not to over work the batter! Here’s a couple great tips for perfect pancakes. Keep the temp on the burner at a medium high. Do not touch the pancake until the top is covered in air bubbles UNLESS they start to smell like they’re burning. Most of the time they will not be golden the first time you peek at them so be patient! Next time I make them I will experiment with toppings and fillings and other stuff. I searched long and hard for the best MFS(made from scratch) panacakes and this one definitely gets the job done! Hope you love them as much as we do!!
