The possibilties that exist between two people, or among a group of people, are a kind of alchemy. They are the most interesting things in life. The liar is someone who keeps losing sight of these possibilities.

When relationships are determined by manipulation, by the need for control, they may possess a dreary, bickering kind of drama, but they cease to be interesting. They are repititious; the shock of human possibilities has ceased to reverberate through them.

When someone tells me a piece of the truth which has been withheld from me, and which I needed in order to see my life more clearly, it may bring acute pain, but it can also flood me with a cold, sea-sharp wash of relief. Often such truth comes by accident, or from strangers.

It isn’t that to have an honorable relationship with you, I have to understand everything, or tell you everything at once, or that I can know, beforehand, everything I need to tell you.

It means that most of the time I am eager, longing for the posssibility of telling you. That these possibilities may seem frightening, but not destructive, to me. That I feel strong enough to hear your tentative and groping words. That we both know we are trying, all the time, to extend the possibilities of truth between us.

The Forty Foot awe-inspiring curvy eroded rocks welcome the Sun of a Beach to a cloudy Ireland.

On St.Patrick's Day, I did not just choose to watch the parade extravaganza in downtown Dublin. The Irish sun was playing for yet another day "hide and seek" with my high expectations but the futile date did not break my sun-hunting spirit. A visit to the Forty Foot in Dublin acted as a sort of cathartic pilgrimage to my overloaded mind. With me I fetched my new soft "friend" from home Athens, Greece, my Sun of a Beach towel. In addition, the beeswax components aid towards maintaining skin elasticity and firmness simultaneously.

In the morning, after showering, I apply the hydrating body cream with jasmine and lavender on my skin, especially around the drier areas of the knees, wrists, and elbows. The pervading scent of jasmine blended with aromas of lavender and the beneficial attributes of chamomile and carrot oil make this body cream an essential beauty product for every one. Male or female. Let alone that it works miracles after showers and after sunbathing (looking forward to trying it in the context of the latter). I also rub a bit of the rose face cream around my wrists. The chocolate and jasmine soap is mildly scented and works more as a natural cleanser. I love its simplicity and natural wisdom reminiscent of old-school natural soap-making like the ones our grannies used to wash their hair with.

Homework pays off:

1 cup sugar

3 egg yolks

1/2 softened butter (unsalted)

2 cups plain flour

2 tbsp milk

1/2 teaspoon baking powder

a pinch of salt

1-2 teaspoons of cinnamon

In a bowl, mix together the butter and the sugar until creamed. Add the egg yolks and the milk and stir. in a separate bowl, mix the flour, cinnamon, baking powder, and salt and add into the butter mix, stirring well. wrap the dough in cling film and chill for 2 hours at least.Preheat oven at 170 degrees celsius.flour a tin and cut out biscuits from the rolled dough. keep the biscuits 2 cm. apart from each other. bake for 10-14 minutes . they might look to you as non baked but they are , they shouldn't be left longer than that.

The Real Intellectuals might humbly profess that they fancy getting their "hands dirty" while standing by whimsically to observe "what comes out of it,"but you should expect no less than immaculate, authentic, breaking ground, sustainable craftsmanship and an aesthetic invested with a corporate responsibility that elevates Greek street wear design to higher strata of appreciation. Founded in 2012 in Athens, Greece, the TRI team is inspired by "the long road" of a creative quest, an honest journey into tracing the best materials and ideas that in turn materialize into sleek Tees and sweatshirts, wallet ropes and key holders, helmets, handkerchiefs, helmet stickers, shopping bags and patches for a "TRI effect," and other innovative paraphernalia for the intellectual female and male lovers of the paths, avenues, and highways of life. Caught up in the two-wheeled emblem of the vintage motorcycle, an enterprising duo of graphic designers transformed their own vision of what constitutes the lifestyle of a sophisticated rover "of many ways" into a creative business project involving among other things, silk printing techniques, an environment-friendly concept and an ethics of pursuing the dream and making it "real," hence The Real Intellectuals:

"Everything is a hint for brainstorming, anything we experience reflects on our creativity. An adventurous bike road trip with your friends, the wind blowing to your face while riding, the gorgeous landscapes you can come across, an unexpected sleepover in nature, the exceptional designs of vintage and custom made motorcycles, the sound they make. Do you need a ride?

The whole process is an ode to artisan craftsmanship: our atelier is our playground: first we design the illustrations and this is the most exciting part: sketching, drawing, printing, redesigning until we are completely satisfied. Then, using the amazing silk printing technique, we apply the illustration on each item separately. We apply a multi stages artisan task until water based colors form what we have in mind."

Proudly sporting my new TRI granite sweatshirt bearing the signature illustration "Ath-Greece" on the front, I roamed along the coastline of county Clare in Ireland, only a couple of days ago. Unbearably soft and elegant, made of 100% organic Indian cotton, cut and sewn to perfection, the "simple authenticity" of the bird illustration printed on the front below the signifier of my nostalgia, brought omens of inspiration and admiration to me from home and gazes galore at the exotic "bird" of street style: "I love your top!, a fellow American diner at the Irish sea-food pub exclaimed. And I replied by revealing details of my sartorial acquisition.

Reminiscent of a primitive engraving you could trace on an archaic pelike at a museum in the Greek antiquities section, the "earthpositive" sweatshirt, manufactured in Greece solely using renewable green energy from wind and solar power, transported a bit of "home" to the Odyssean rover roaming the roads far away. And I do not even own a motorbike.

Fava

This recipe is a childhood favourite dish of mine and so easy to make. In fact, all children for some reason love fava (well, apart from my brother who detested it as a child and loathes it now as an adult- and all this big deal from the boy that famously used to devour bananas with ketchup!).

Fava is the Greek word for dried split yellow peas that when boiled melt into a delightful creamy soup. It is a dish on its own or it can be served as a meze on a platter with olives, fried fish, sun-dried tomatoes and chargrilled vegetables or lamb chops. Fava tends to become very thick so you can add water when you re-cook and lemon when you serve to reduce its thickness.

Here, I have served it with pita bread.

500 g split yellow peas

1 red onion

2 garlic cloves

salt & pepper to taste

olive oil

lemon juice

capers and a chopped red onion for serving (optional)

Rinse the fava and put it into a pot filled with cold water.Boil it and drain it. Pour some cold water over the drained fava and put back in the pot, this time covered with 1 litre of hot water. When it starts to boil, add a red onion chopped in four quarters and two garlic cloves on the centre, partly cover with the lid and simmer for 30 more minutes. Make sure you do not stir the onions too much so that you can discard them later along with the garlic. Then, remove the lid and reduce the heat. Let it simmer for 30 more minutes and when the water is reduced and it starts to gloop on the surface add the salt/pepper, stirring from time to time. Discard the onion and the garlic (if some has dissolved in the pureed peas do not worry-it will add to the taste) and pulse the fava with a food processor adding lemon and olive oil. You can serve it with cappers and freshly chopped red onion on top.

Last but not least, I salute the work FISIKA do in their field for they have "married" a very ethically and nature-friendly project with larger endeavors such as the role of females in agriculture and economy on a national and international level to smaller but equally significant contributions to their community in Crete whereby students get educated on how to respect nature and be practical about its uses through visiting the FISIKA workshop and learning how to make their own soap. There is definitely a lot to learn from the FISIKA team and its awesome products.

Tελευταίο και πιό σημαντικό, θαυμάζω το έργο που κάνουν τα FISIKA προϊόντα στο χώρο τους γιατί έχουν "παντρέψει" ένα ηθικό και φιλικό προς τη φύση πρότζεκτ με μεγαλύτερης κλίμακας προσπάθειες όπως εκείνες που αφορούν στο ρόλο των γυναικών στη γεωργία και την οικονομία σε εθνικό και διεθνές επίπεδο μέχρι τις μικρότερες αλλά εξ'ίσου σημαντικές συμβολές τους στην Κρητική κοινότητα όπου μαθητές σχολείων μορφώνονται για το πώς να σέβονται τη φύση και να είναι πρακτικοί ως προς τις χρήσεις της με το να επισκέπτονται το εργαστήριο παραγωγής και να μαθαίνουν να φτιάχνουν τα δικά τους σαπούνια. Είναι πραγματικά πολλά και μεγάλα τα μαθήματα που μπορεί να πάρει κανείς από την καταπληκτική ομάδα παραγωγής των FISIKA.

Crostata di Ricotta/ Τάρτα με ρικότα από τη Νάπολη

pastry:

250 g. plain flour

pinch of salt

150 g. butter

1 egg yolk

2-3 tbsp. iced water

1 tsp vanilla essence

icing sugar for dusting

for the filling:

375 g. ricotta cheese

75 g. caster sugar

3 eggs, well-beaten

50 g. blanched almonds, finely chopped

75 g. chopped mixed peel

finely grated rind of 1/2 lemon

juice and finely grated rind of 1/2 orange

1/4 vanilla essence

Sift the flour and salt into a mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs. Mix in the egg yolk and enough iced water and vanilla to form a soft dough. Knead lightly and leave to chill in the refrigerator for 30 minutes. Roll out the pastry to line a 20 cm flan ring/tray. Alternatively, you can place it in small individual flan rings (it is just more work for you but they make great individual tartlets-I always go for that option). Reserve the pastry trimmings.

Make the filling: rub the ricotta cheese through a sieve into a basin and then beat in the sugar. Gradually beat in the eggs, and then add the almonds, peel, lemon and orange rind and juice and the vanilla, beating well between each addition.

Pour the ricotta filling into the prepared pastry case/cases and then smooth over the surface.

Roll out the reserved pastry trimmings and then using a fluted roller, cut into thin 1 cm wide strips. Arrange them in a criss-cross pattern over the top of the flan. Bake in the centre of a preheated oven at 180 degrees c. for 45-50 minutes, or until set and golden. Leave to cool and serve cold dusted with icing sugar or/and a scoop of vanilla ice-cream.

ζύμη:

250 γρ. αλεύρι για όλες τις χρήσεις

λίγο αλάτι

150 γρ. βούτυρο

1 κρόκος αβγού

2-3 κουταλια παγωμένο νερό (από την κατάψυξη)

βανίλια

ζάχαρη άχνη για γαρνιτούρα

γέμιση:

375 γρ. τυρί ρικότα

75 γρ. ζάχαρη

3 αβγά καλά χτυπημένα

50 γρ. καβουρντισμένα αμύγδαλα σε πολύ μικρά κομματάκια

75 γρ. γλασσέ φρούτα σε μικρά κομματάκια

ξύσμα μισού λεμονιού

χυμός και ξύσμα μισού πορτοκαλιού

βανίλια

Κοσκινίζω το αλεύρι και το αλάτι μέσα σε ένα μπωλ και ανακατεύω με το βούτυρο μέχρι η ζύμη να "τρίβεται". Προσθέτω τον κρόκο και το παγωμένο νερό και την βανίλια. Ζυμώνω και το βάζω στην κατάψυξη για 30 λεπτά. Απλώνω τη ζύμη πάνω σε λίγη ζάχαρη άχνη και στρώνω σε ένα ταψάκι τάρτας 20 εκ. (ή σε ατομικά σκεύη, έχει πιο πολλή δουλειά αλλά το προτιμώ). Φυλάω τα περισσεύματα από τη ζύμη.

Φτιάχνω τη γέμιση: "περνάω" τη ρικότα μέσα από ένα σουρωτήρι σε ένα μπωλ και προσθέτω ζάχαρη. Σταδιακά, προσθέτω τα αβγά, τα αμύγδαλα, τα γλασσέ, το ξύσμα λεμόνι, το ξύσμα και το χυμό πορτοκάλι, τη βανίλια.

Αδειάζω τη γέμιση πάνω από την τάρτα-ζύμη. Η επιφάνεια πρέπει να είναι λεία.

Κόβω τη ζύμη που περίσσεψε σε λωρίδες 1 εκ. με το εργαλείο που κάνει κυματάκια. Τις βάζω σταυρωτά πάνω από τη γέμιση, στην επιφάνεια της τάρτας. Ψήνω σε προθερμασμένο φούρνο στους 180 β.Κ. για 45-50 λεπτά μέχρι να σφήξει και να χρυσίσει. Αφήνω να κρυώσει και σερβίρω με πασπαλισμένη άχνη ζάχαρη ή/και παγωτό βανίλια.

Apple Pie/Μηλόπιτα

Επινόησα αυτή τη συνταγή πρίν ένα μήνα περίπου στην προσπάθειά μου να αναβιώσω την ευχαρίστηση που μου έδινε η μηλόπιτα του ζαχαροπλαστείου της γειτονιάς μου στην Αθήνα, Special. Στην ουσία είναι ένας συνδιασμός 2-3 διαφορετικών συνταγών που βρήκα, με μερικά στοιχεία που πρεσέθεσα ακολουθώντας το ένστικτο μου. Πίστευα πως θα ήταν ακατόρθωτο να ξεκλειδώσω το μυστικό της θρυλικής μηλόπιτας του Special που πιά δεν υπάρχει. Ευτυχώς, έκανα λάθος.

Ζύμη

550 γρ. αλεύρι

2 κρόκους αυγών

150 γρ. βούτυρο

βανίλια

3-4 κουταλάκια γάλα

3 κουταλιές ζάχαρη

Γέμιση

5-6 μήλα ψιλοκομμένα

λίγη κανέλλα

1 φλυτζάνι ζάχαρη

λίγη βανίλια

3 κυβάκια βούτυρο

Ανακατέψτε όλα τα υλικά για τη ζύμη μαζί αφού κοσκινίσετε το αλεύρι. Φτιάξτε μια μπάλα σκληρή (προσθέστε 1-2 κουταλιές γάλα αν δεν πλάθεται). Βάλτε τη ζύμη στην κατάψυξη μέσα σε μια σακούλα για 5 λεπτά να κρυώσει.

Κόψτε 5-6 μήλα σε πολύ μικρά κομμάτια και ανακατέψτε με το βούτυρο, την βανίλια, την κανέλλα, και τη ζάχαρη.

Βγάλτε τη ζύμη από την κατάψυξη και χωρίστε την σε δυο μέρη, το ένα λίγο πιο μεγάλο από το άλλο.

Προθερμαίνετε το φούρνο στους 180 βαθμούς Κελσίου. Βουτυρώστε ένα πυρίμαχο ταψί 23 εκατοστών περίπου. Ζυμώστε την μεγαλύτερη μπάλα ζύμης για την βάση της μηλόπιτας και αφού την στρώσετε στο ταψί, ρίξτε μέσα τα μήλα. Από πάνω στρώνετε τη δεύτερη μπάλα ζύμης, "σφραγίζετε" γύρω- γύρω τις ζύμες, τρυπάτε ελαφρά την επιφάνεια της μηλόπιτας με πηρούνι και την βουρτσίζετε με ένα κρόκο αυγού. Ψήνετε για 30-40 λεπτά μέχρι να χρυσίσει.

I came up with this recipe almost a month ago in an attempt to recreate the delight I used to get from the apple pie of the Special patisserie of my neighborhood in Athens. In essence, it is a combination of 2-3 recipes I found plus a few elements I added following my instinct. I thought it would be impossible το unlock the secret recipe of the legendary apple pie from Special that is no more. Fortunately, I was wrong.

Pastry:

550 gr. flour

2 egg yolks

150 gr. butter

vanilla extract

3-4 tsp. milk

1 sp. sugar

Filling:

5-6 apples cut in small slices/pieces

a pinch of cinnamon

1 cup of sugar

vanilla extract

3 small cubes of butter

Mix together all the pastry ingredients after you sift the flour. Make a dough ball and if it is still not doughy enough add a tiny bit of milk. Wrap and put it in the freezer for 5 minutes to chill.

Slice the apples in small pieces and mix with the butter, vanilla, cinnamon, and sugar.

Take the pastry out of the freezer and divide it in two balls, one bigger than the other.

Preheat the oven to 180 degrees. Grease a 23 cm. pie plate/tin. Roll the bigger pastry sheet on the bottom of the tin and pour the apple filling in. Cover with the second pastry ball "sealing" the pastry around the edges and use a fork to pierce gently on the surface of the pastry. Brush it with an egg yolk. Bake for 30-40 minutes until the pastry is golden.

Autumn walk in Coole Park/ Φθινοπωρινός περίπατος στο πάρκο Coole

Θυμάμαι καλά: ήμουν πρωτοετής φοιτήτρια όταν πρωτοδιάβασα τους "Αγριόκυκνους στο Coole" του Γουίλιαμ Μπάτλερ Γέιτς στην Αθήνα και έμαθα ανάμεσα σε άλλα οτι το Κουλ ανήκε στην Λαίδη Γκρέγκορι και αποτέλεσε πόλο έλξης για πολλούς συγγραφείς και διανοούμενους της εποχής, από τον Ο'Κάσει μέχρι τον Σο. Μερικά χρόνια αργότερα, επισκέφτηκα το μέρος για πρώτη αξέχαστη και εμβληματική φορά. Συνεπαρμένη από την αβάσταχτη φυσική ομορφιά του τοπίου από τη μια, χωρίς να κρύβω την συγκίνηση μου από την άλλη, το ποίημα τώρα είχε άλλο νόημα: περπατούσα στα μονοπάτια που ιχνηλάτησε ο ποιητής πριν βγει στο φως, εκεί που λίμνη και ουρανός γίνονται ένα, ασημένιος ορίζοντας καθρεφτισμένος στα φτερά των αέναων κύκνων που μελαγχόλησαν τον Γουίλιαμ εκατό χρόνια πριν. Χτυπήθηκα κι εγώ από ένα είδος χαρούμενης μελαγχολίας:

Όμορφα τα δέντρα το φθινόπωρο,
Ξερά τα μονοπάτια,
Κάτω απ’ του Οκτώβρη το λυκόφως, το νερό
Καθρεφτίζει έναν αρυτίδωτο ουρανό.
Και στης λίμνης τα χείλη, ανάμεσα σε πέτρες και νερά,
Πενήντα κύκνοι βρίσκονται και εννιά.

Τα δεκαεννιά φθινόπωρα με ’φτάσαν
Από τότε που άρχισα να τους μετρώ
Και πριν καλά καλά το μέτρημα τελειώσω,
Είδα ξάφνου το βουερό τους το φτερό
Να τους σηκώνει σε μεγάλα δαχτυλίδια,
Λίγο πριν σκορπίσουν, ψηλά στον ουρανό.

Τα μάτια μου έχουν δει τα υπέροχα αυτά πλάσματα
Και έκτοτε η καρδιά μου είναι πικραμένη.

Ο χρόνος σε fast forward. Το πρώτο φωτογραφικό μέρος μας οδηγεί μέχρι το μακρύ μονοπάτι των "επτά δασών" σπαρμένο με φύλλα σε εκατοντάδες χρωματικούς τόνους της ώχρας και ποιήματα χαραγμένα σε ασβεστόλιθους, πριν συναντήσουμε τους "αγριόκυκνους" που δεν "φεύγουν" ποτέ. Στο δεύτερο μέρος, θα βγούμε στο φώς.

I remember it well: I was a first year undergraduate student when I read W.B.Yeats' "The Wild Swans at Coole" for the first time in Athens and learned among other things that Coole was owned by Lady Gregory and that it had attracted a myriad of writers and intellectuals from O'Casey to Shaw. A few years later, I visited the place for the first, unforgettable, and symbolic time. Carried away by its unbearable natural beauty on the one hand, without hiding how overwhelmed I felt on the other, the poem had acquired a new meaning: I was walking along the paths the poet had traced before he came towards the light, there where the lake and the sky become one, a silver horizon mirrored on the wings of the eternal swans which made William melancholic one hundred years earlier. I was struck too by a kind of happy melancholia:

'The trees are in their autumn beauty,
The woodland paths are dry,
Under the October twilight the water
Mirrors a still sky;
Upon the brimming water among the stones
Are nine-and-fifty swans.

The nineteenth autumn has come upon me
Since I first made my count;
I saw, before I had well finished,
All suddenly mount

Time on fast forward:the first photographic part leads us up to the long path of the "Seven woods" strewn with leaves in a hundred shades of sepia and poems engraved on limestone, before we encounter the "wild swans" that never "fly away." In the second part, we will come towards the light.

I bought all the equipment- juicer, super blender and dehydrator- and even omitted putting a cooker into my kitchen when I renovated it. In the market, I sell falafel balls and burgers, raw houmous, raw sushi, raw cookies and pies. I do have a cooker in the small apartment added to my house, where I make my chutneys, jams, and jellies. Just this year, I expanded into selling cakes, tarte tatins, brownies and cookies and some that are gluten free."

Choco Birthday Cake in 10 minutes

This is the easiest birthday cake recipe ever, confided to me by my friend and cakes expert Eleni (whose blog will be ready soon!!!!) .

500 gms. fresh cream

700-800 gms. Nuttela or Merenda

2 big packets of digestive biscuits.

In a bowl mix the cream with the Nuttela/Merenda (with a mixer for 5 minutes). Then add the crumbled biscuits. Pour the mix In a medium tin (round or square) that you have covered with baking sheet.

Put in the freezer for at least 24 hours and then remove the paper to decorate. I brush lukewarm marmelade and then decorate with rolled icing sugar sheets.

Kids and adults love it!

Spanakopita (Spinach Pie)*

Filling:
500 grms fresh {prewashed} spinach
fresh {or dry} dill
5 chopped spring onions
1 grated onion
400 grms feta cheese, crumbled
1-2 eggs
olive oil
2 tbsp. milk
1 small cup of rice {uncooked}
salt & pepper

pastry:

4 generous tea-cups of plain flour

olive oil

pinch of salt

lukewarm water

1 tbsp. white/red vinegar

filling:
in a big bowl, mix the washed spinach, the feta,the spring onions, the 2 eggs, the rice,the dill, the grated onion, milk, olive oil, salt & pepper, and milk.

leave aside.

prepare the pastry:

in a bowl add the flour, and gradually add lukewarm water, vinegar, a pinch of salt and olive oil until you have a smooth and easy to work dough ball. Add flour on the work-top to roll the pastry.

Divide the dough in two parts making sure the one is a bit bigger as you will use it for the base of the pie.

each fillo/sheet pastry should be 0,5-1 cm thick.

in a tray that you have brushed with olive oil, you place the first sheet of pastry making sure the pastry is high around the edges.

pour in the spinach filling and then add on top the second sheet of pastry connecting it to the base pastry and folding it around.

get rid of excess pastry.

with a sharp knife (do not cut deep) but mark the lines vertically and horizontally of the slices so that when it is baked you can cut it easier.

put in the oven in 180degrees for 40-45 minutes until golden brown.

make sure the base is baked.
