Creating a Pompompurin character out of buttercream is a fun and rewarding project for any cupcake decorator. Follow these step-by-step instructions to bring this adorable Sanrio character to life on your cupcakes!

Ingredients and Tools:

Buttercream Icing: About 4 cups (divided into different colors)
Gel Food Coloring: Yellow, Brown, Black
Piping Bags: At least three, fitted with different tips
Piping Tips: Round tip #1, Round tip #12
Ice cream Scoop 42 mL / medium ice cream scoop
Spatula: For smoothing
Your favorite Cake recipe: Your choice of flavor
Muffin Thins
Silicone Baking Cups

Step-by-Step Instructions:

Prepare your Cupcake:

Preheat oven at 350 F
Pour prepared batter into muffin tin lined with silicone baking cups and bake for 10 to 15 mins

Prepare Your Buttercream:
- Divide your buttercream into three portions.
- Tint 3 cups of buttercream yellow for Pompompurin’s body.
- Tint a small portion brown for the eyes, snout, hat and details, (or use cocoa powder)
Pompompurin's Body:
- Place 1 cup of room temperature yellow buttercream into a pipping bag fitted with round tip#12 and set aside.
- Chill remaining buttercream until its the same texture as ice cream.
- Scoop out some of the chilled yellow buttercream. Make sure buttercream is tightly packed in the scoop.
- Scrape off any excess buttercream
- Place a scoop of yellow buttercream on top of the cupcake
- Smooth out cracks with a spatula
Ears and Paws:
- Use the Yellow room temp buttercream with round tip#20 to pipe long ears on the side of pompompurin's head and 2 dots in front for paws.
Add Details:
- Use the brown buttercream with a round tip (#2) to pipe the eyes, snout, and mouth.
- Replace the tip#2 with a clean tip#12. On the top of Pompompurin's head place the tip half a centimetre above its head and pipe out a tiny barret the shape of small chocolate wafer.

Tips for Success:

Practice Piping: If you’re new to piping, practice on a piece of parchment paper before working on the cake.
Keep It Cool: Buttercream can soften quickly, so keep your buttercream cool while working.
Have Fun: Don’t stress about perfection. The charm of Pompompurin lies in its cute and whimsical appearance.

What is Yema Cake?

The cake gods were on my side when I redid the Peloton bike cake topper 2 days before it's due date. Man! I'm soo glad I did it!

My cake toppers are usually edible except for this one. My client wanted to save it as a memento so in order to do that I opted to use a cardboard and bamboo stick frame. I then use fondant for details such as bike pedals, bike stand, and handles, etc.

Easter Appetizers: Mini Korean Corn Dogs

Fun for all ages this would be great appetizers in any gathering.

Ingredients

Bamboo Paddle skewers
6 or more beef hotdogs
1 ½ cups all purpose flour
2 teaspoons baking powder
2 tablespoons plus more for topping
¾ cups milk
1 egg
2 cup panko bread crumbs
1 large potato diced into tiny cubes (optional)
1 package of ramen noodles (smashed) (optional)

Preparation

Shorten bamboo paddle skewers by cutting an inch off the pointy side. Use clean garden shears.
Cut hotdogs in half and insert the prepared skewers through it. Chill in the fridge while you prepare corn dog batter.
For the corndog batter: Whisk together flour, baking powder, salt, and sugar.
Beat together milk and eggs and add to the dry ingredients.
Stir the batter until smooth. Keep it cold in the fridge.
Transfer batter into a tall glass.
Dry off the hotdog with a paper towel.
Dip prepared hotdogs into the batter and then dredge with your choice of panko bread crumbs, **crushed ramen, or in ** tiny potato cubes.
Deep fry in at least two inch of hot oil.

Tips

**When making potato or ramen hotdogs make sure to have a thin coat of batter on hotdog. Batter should be thin enough so that the potatoes have something to stick on.

French Toasted Pandesal with Stewed Apples

Frenched Toasted Pandesal with Stewed Apples

Stewed Apples

Desert for Breakfast! This is my French Toasted Pandesal I made by dunking a bunch of days old homemade pandesal in custard, frying it in butter, then topping it off with stewed apples.

PRO TIP: Use days old bread for fluffy but not soggy French toast.

Ingredients:

For Stewed Apples:

6 gala apples (any apples will do)

1/2 cups sugar

1/4 cups butter

2 tablespoons water (optional)

Custard:

4 whole eggs

1/4 cups milk

1 tablespoon sugar

1/2 teaspoon cinnamon

6, 3 days old pandesal, cut in half lengthwise.

Instructions:

Wash and cut the apples into 4, remove core, cut each quarters into 2 and roughly slice into smaller pieces. Do not slice thinly and leave the skin on.
Heat up pan into medium heat. Once pan is hot sprinkle 1/4 cups of sugar on it.
Once sugar begins to melt stir in apples. Keep stirring until all the sugar is dissolved.
Stir in butter. Once butter is melted stir in the remaining 1/4 sugar.
Let the apples stew in it's own liquid. Add more water if mixture seems dry. Apples are ready when the apples is soft and all liquid is reduce down to a thick syrup. Set aside.
For the custard: Whip together milk, eggs, sugar and cinnamon.
Soak both sides of the pandesal into the custard.
Melt butter into the heated pan.
Fry up both side of the prepared bread until golden brown.
Arrange French toast open face up and top off with stewed apples. Enjoy!!

Super Mario Cake

This was a vanilla chiffon cake covered, filled with vanilla buttercream and decorated with rolled fondant.

Size: 6" wide by 4" tall serving size: ~8

Equipment used:

Virgin White white rolled fondant

Americolor gel food colouring: teal, pink, red, blue, back, and brown

Small cloud cookie cutter

Letter cookie cutters

round cookie cutter

Sharp scalpel exacto knife

How I decorated the cake:

I crumb coated and covered the whole cake with teal vanilla cream. Gel food colouring: Americolor in teal
Printed out 2 clip art or coloring book images of Super Mario face. Tip: use plain black and white images.
I took one of the images and cut out Super Mario's face.
Then I rolled out skin colored fondant.
I the Super Mario cutout on top of the fondant, cut around the image, and place it on top of the prepared cake.
I used the second image as template to cut out Mario's eyes, nose, hat, moustache and sideburns.
I then cut out clouds and letterings and place them on the side of the cake.
I also sprinkled some yellow star sprinkles to add some sparkle on the side of the cake.

Pastillas de Leche - Filipino Milk Candies

When my family lived in the Philippines my mom would bring these back after our Pampanga trip. I miss them so much. I don't even know why I waited this long to make them. Also I have new appreciation for this candy. The amount of time it takes to turn milk into basically condensed milk is about 1 hour and 15 minutes. I could just use condensed milk but what's the fun in that..

Pastillas de Leche

1 L 3% milk

3/4 cup plus 1 tablespoon sugar, extra sugar for dredging

3/4 cup skim powdered milk, full fat if you have it

2 drops of lime oil or zest of 1 whole lime

1 1/2 tablespoon butter

Method (See Video Below)

In a large skillet whisk together milk and sugar and bring them to a simmer. Simmer until mixture is thick (about 1 to 1.5 hours). Keep stirring and scrapping the sides and bottom of the pan.
When milk mixture is as thick as condensed milk remove from heat and add butter, powder milk, lime oil or lime zest.
Transfer mixture to greased plate. Cool for 15 minutes.
Shape into small tubes (about 2" long).
Dredge the pastillas tubes in sugar. Make sure that all surfaces are covered. This step is important because it prevents the candy from sticking to the wrapper.
After dredging wrap them up in colorful tissue paper. Enjoy!

How to wrap pastillas de leche..

You will need:

Parchment paper
Various colors of tissue paper
scissors

Instructions:

Take your parchment paper and cut several 2 "wide by 4" long pieces. ** Note the width of the parchment paper should be slightly longer than your pastillas.
Take your tissue paper and cut several 3" wide by 4" long pieces.
Take one of the tissue paper and place it on the counter top. Turn the tissue paper so that the narrowest side is facing you.
Then take one of the prepared parchment paper and place it on the countertop. Turn the paper so that the narrowest side is facing you.
Place a pastillas horizontally at the bottom of the wrapper.
Grab the parchment paper, roll it over the pastillas until the paper is used up.
While holding the parchment paper in place, pick up the pastillas and place it at the bottom end of the tissue paper seam side down.
Roll tissue paper over the pastillas. ** Try to roll it up as tight as you can.
While gently holding the tissue paper seams down tuck in the excess paper into the parchment paper tube.

Mexican Street Corn (Elote)

This is my version not in any way authentic. It's a very last minute attempt and I don't have the majority of the ingredients. In this version the corn is just steamed. Typically the corn is grilled to have that smoky flavor. I think I captured the essence of this dish. I hope you will give it a try.

Adapted from Simply Recipe.

Mexican street Corn

8 medium ears of sweet corn

1/2 cup Dahi 3% plain yogurt (Mexican crema is better)

1/2 cup mayonnaise

1/2 cup minced cilantro

2 cloves garlic, minced

1/4 teaspoon ground chipotle pepper

2 drops lime oil ( 2 teaspoons lime zest)

2 tablespoons apple cider vinegar

1/2 cup baby bell ( baby bell is a milder softer cheese ecause it's what I have, cotija cheese is originally used)

Boil or grill corn until kernels are soft.
Sauce: In a small bowl mix together yogurt, mayo, cilantro, garlic, ground chipotle pepper, lime oil and apple cider vinegar.
Brush cooked corn with the sauce and sprinkle with cheese.
Serve while it's hot.

Zucchini Curry Bread (Kare Pan)

My Take on the Japanese Curry Bread. This curry bread's main ingredient is zucchini flavored by mild curry powder. Bread stuffed with zucchini curry and dredged in panko bread crumbs. So crunchy and satisfying, kind of reminded me of a savory doughnut.

Zucchini Curry Bread

For the Bread

200 g bread flour
2 ½ tablespoons sugar
½ teaspoon salt
2 teaspoons olive oil
120 mL milk (vegan sub: almond or soya milk)
1 teaspoon yeast

For the filling

1 medium onion
3 cloves of garlic
Zucchini
1 medium sized potato
Carrots
2 teaspoons or more Madras curry ( or 2 japanese curry cubes)
1 tablespoon better than boullion chicken
¼ cup water
Salt and pepper to taste

For dredging

1 egg ( Vegan sub: 2 tablespoons aquafaba)
1 cup Panko bread crumbs
Canola oil for deep frying

Preparation

Prepare the bread dough. In a large bowl mix together bread flour, sugar, and salt.
Then add olive oil, milk and yeast. Blend everything together with a fork until dough clumps together.
Knead the dough until flour is completely mixed into the dough. Coat dough with a bit of oil, place it back into the bowl and cover it with plastic film. Let your dough rise for 1 hour in a dark warm place. If your oven has a “proof” function, use it.
Prepare zucchini filling. Slice up your zucchini, carrots, and potatoes into small cubes.
Finely chop onions and garlic.
In a small bowl mix together hot water, better than bullion chicken, and madras curry. If you have japanese curry cubes you can omit the bullion and madras curry powder.
Saute onion until soft. Stir in carrots, garlic, potatoes, zucchini and water
Cook until vegetables are soft.
Season with salt and pepper.
Assemble curry bread. Take out dough from the bowl and cut into 2 equal pieces ( cut it like pizza). Take one of the halves and cut it into thirds. Do the same with the other half. You should end up with 6 dough pieces
Flatten one of the sections with your fingers, pinch the edges together into one single point.

Turn it over and shape into balls. Place them on a greased plate, cover with
plastic wrap, and proof for another 15 minutes.
Roll out dough on a clean surface.
Add zucchini filling in the centre and pinch together seams (it should resemble pizza pops).
Flip over bread. Seams side down. Move bread from side to side to flatten out the seam.
Dredge prepared curry bread. Dip curry bread into an egg bath and coat it with panko bread crumbs.
Deep fry ** in a couple inches of oil at 320 degrees Fahrenheit. Deep fry until golden brown. ENJOY!!

**Deep fry at specified oil temperature or medium low heat.

Recipe: Hiroshima Style Okonomiyaki

I got carried away last night and made waaay too much pancit (Filipino stir fried noodles).. What to do with all these noodles? Well, make okonomiyaki with it of course!

What's Okonomiyaki?

Okonomiyaki is a popular Japanese pan fried dish. It's typically made with cabbage, batter, seasonings, bean sprouts, green onions or leeks, then brushed with okonomiyaki sauce, topped with koupie mayo and bonito flakes. Okonomiyaki stems from the Japanese words "okonomi" meaning "to your liking" and "yaki" meaning "cooked over direct heat". So you can put whatever you like in this dish. You GOT TO HAVE the okonomiyaki sauce, cabbage, and the batter.

Hiroshima vs. Okinawa Okonomiyaki

I'll be making the Hiroshima style okonomiyaki. It's different from the Okinawa style okonomiyaki we get in Edmonton in that in Hiroshima okonomiyaki the ingredients are in layers and it always comes with noodles while Okinawa okonomiyaki's ingredients are mixed together.

TIP: You can use any noodles ie: soba (traditionally used), cooked spaghetti noodles, leftover take out chow mien, or leftover pancit (I used this). The ingredients I listed are just starting points. You can change it up to your liking. The okonomiyaki is a must.

OKONOMIYAKI HIROSHIMA STYLE (makes 4 large okonomiyaki)

INGREDIENTS

4 cups thinly sliced cabbage

1/2 cups chopped green onions more if using leeks

6 or more strips of bacon, cut in half (optional)

12 pieces of shrimp cut in half length wise (optional)

2 cups bean sprouts

4 large eggs

3 or more cups of soba noodles (see tip)

Japanese Furikake Seasoning or seasoning salt

preserved red ginger

chopped seaweed

bonito flakes

sesame seeds

Ingredients For the Pancake Batter:

2 cups flour

2 cups cornstarch

1/2 cups melted butter

4 cups water

Ingredients for Okonomiyaki Sauce

1/4 cups ketchup

1/4 cups worcestershire sauce

2 teaspoons honey

1 teaspoon soysauce

Procedure

Wash and cut all the vegetables and meat.
On the stove oil and preheat a large griddle or 2 cast iron pans. Your pan has to be big enough to accommodate 2 medium pancakes side by side. Use 2 pans if you have to.
Prepare batter by combining all purpose flour, constarch, melted butter and water. To avoid lumps add water 1 cup at a time. Batter has to be thin but not too runny, same consistency as pancake syrup. Set aside.
Next prepare the sauce.
In a small saucepan mix together ketchup, worcestershire sauce, honey, and soysauce. Heat on medium heat until everything has heated and honey has melted.
Oil both cookings pans. In one of the pan pour about 1/4 cups of batter, then spread about 1 cup of thinly sliced cabbage on top of the batter. Add been sprouts, murshooms, and some green onions or leeks on top.
Sprinkle on top some furikake seasoning, lay down 3 strips of bacon and drizzle 2 tablespoons of batter.
Let it all hang out for 30 seconds. Slip 2 half moon spatulas underneath the pancake and with one quick swoop flip everything over (see video).
Cook for atleast 5- 7 minutes.
Meanwhile on the other pan start frying up your noodles. Noodles just needed to be slightly crisped and warmed up. Once it's ready shape it into a circle.
Slip both halfmoon spatula under the okonomiyaki and lift the whole thing and place it on top of the noodles.
In the empty pan crack an egg, spread it about the pan and add 4 or more pieces of shrimp. Make it as wide as your okonomiyaki.
Using your halfmoon spatula lift up the okonomiyaki and place it on top of the egg and shrimp.
Cook for a minute and flip the whole thing for the last time.
Spread okonomiyaki sauce and top off with more greenonions, mayonaise bonito flakes, more furikake seasoning, and red ginger preserve. ENJOY!!
