Cream butter, sugar and cream cheese together. &lt;br /&gt;2. When it comes together, pour in cream and whip on medium speed for 10 minutes. Scrape the sides from time to time.&lt;br /&gt;3. Beat in egg yolks for 1 minute. &lt;br /&gt;4. Sift both flours and pour half of it into buttery mixture. Mix on low speed until it comes together and pour in the remaining flour and beat until it comes together. Do not over mix.&lt;br /&gt;5. Let dough sit for 10 minutes minimum before you start wrapping your jam with it.&lt;br /&gt;&lt;br /&gt;Preheated the oven at 180C. Yam - steam and mashed into puree&lt;br /&gt;100 gm. sugar&lt;br /&gt;300 gm. coconut milk&lt;br /&gt;100 gm. whipped cream&lt;br /&gt;&lt;br /&gt;Methods:&lt;br /&gt;&lt;br /&gt;To make sponge cake:&lt;br /&gt;Put all the ingredients except the melted butter into a mixing bowl.&lt;br /&gt;Beat everything on high for at least 7 mins until ribbon stage. This means that if you use your whisk with batter to write an "8" on the batter won't sink in but will appear visible for a while. This will be the right constitency for your batter. Add in melted butter at this stage and mix in thoroughly.&lt;br /&gt;&lt;br /&gt;Pour batter into 8" round pan and bake it in a preheated oven at 190C for about 35 mins. When done, remove the cake from the cup immediately and leave it on wire rack to cool. &lt;br /&gt;&lt;br /&gt;To make filling: &lt;br /&gt;1. sugar over medium heat till sugar is dissolved. Add in yam puree, coconut milk. Stir till almost dry. Leave to cool.&lt;br /&gt;2. Place 1 layer of sponge cake onto a cake board.&lt;br /&gt;3. Spread 300 gm. yam mixture on top and spread till evenly distributed.&lt;br /&gt;4. Cover the yam mixture with a layer of sponge cake.&lt;br /&gt;5. Spread cake with 100 gm. of whipped cream.&lt;br /&gt;6. Cover with the 3rd layer of sponge cake.&lt;br /&gt;7. Deco with whipped creams n fruits.&lt;br /&gt;8. Place ingredient B in mixing bowl, blend evenly at low speed with ball shape whisker. Change to high speed and continue to whisk til creamy.&lt;br /&gt;&lt;br /&gt;2. The latest craze in Singapore is a durian called 'Cat Mountain King' literally translated from it's Chinese name, 猫山王&lt;br /&gt;&lt;br /&gt;Durians, you either love it or hate it. I think it's the pungent smell that people can't handle. Once you get pass the smell ... ahh ... there's no stopping. This means that if you use your whisk with batter to write an "8" on the batter won't sink in but will appear visible for a while. This will be the right constitency for your batter. Add in melted butter at this stage and mix in thoroughly.&lt;br /&gt;&lt;br /&gt;Pour batter into 8" round pan and bake it in a preheated oven at 190C for about 35 mins. When done, remove the cake from the cup immediately and leave it on wire rack to cool. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Durian Fillings:&lt;br /&gt;400ml of non-diary whipping cream&lt;br /&gt;** (200ml to mix with durian puree &amp; 200ml for cake deco)&lt;br /&gt;500gm of durian puree&lt;br /&gt;&lt;br /&gt;**Whip up whipping cream to a soft peak. Yam - steam and mashed into puree&lt;br /&gt;100 gm. sugar&lt;br /&gt;300 gm. coconut milk&lt;br /&gt;100 gm. whipped cream&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;&lt;br /&gt;(1) Sponge cake: Whisk eggs and sugar with high speed until light and fluffy.&lt;br /&gt;(2) Fold in flour and melted butter.&lt;br /&gt;(3) Pour into an 8" square pan and bake at 175C for about 30 to 35 mins.&lt;br /&gt;(4) Slice cake into 3 layers.&lt;br /&gt;(5) To make filling: sugar over medium heat till sugar is dissolved. Add in yam puree, coconut milk. Stir till almost dry. Add the milk-and-yeast mixture and the egg into the well. Mix on low speed for 10mins, using the dough attachment of a hand-mixer or stand mixer.&lt;br /&gt;&lt;br /&gt;4) Dust the work surface with 15g of bread flour. Turn the dough out onto the floured surface and knead by hand for 2-3mins. Check for windowpane stage, where a small piece of dough can be stretched so thinly that light can be seen through it.&lt;br /&gt;&lt;br /&gt;** At this stage, the dough should feel slack and tacky.&lt;br /&gt;&lt;br /&gt;5) Knead in the softened butter until the butter is completely absorbeb into the dough, the dough should no longer feel greasy.&lt;br /&gt;( u can check for "windowpane" again.)&lt;br /&gt;&lt;br /&gt;6) Round up the dough with your hands, place the dough in a large bowl and cover with a towel. Proof in a warm, enclosed space for 20mins, until it doubless in size.&lt;br /&gt;&lt;br /&gt;7) Roll out the dough into a large thin rectangle. Brush the surface with softened butter and sprinkle sugar and cinnamon generously and evenly over the surface. Add Raisins.&lt;br /&gt;&lt;br /&gt;8) Roll up the dough tightly into a log and cut into 12 pieces. Place the pieces on cupcake cases. Arrange on a baking tray, allowing some space between each piece.&lt;br /&gt;&lt;br /&gt;9) Proof for 40mins in a warm, enclosed space.&lt;br /&gt;&lt;br /&gt;10) Preheat the oven to 200C. Brush the rolls with diluted egg wash and bake for 12mins until golden brown. Allow to cool slightly before serving.
