MERENDA CON PASTA SFOGLIA E RICETTA DELLE CIPOLLINE

Un ricordo a me caro che sono riusciata a materializzare, è la "cipollina", un fagotto di pasta sfoglia che viene imbottito soprattutto di cipolla, prosciutto e quant'altro.... specialità che Siciliana che si trova in qualsiasi bar dell'isola.
Vi dirò..... non è da meno la cipollina che sono riuscita a fare, semplicissima da comporre e soprattuttto si può fare insieme ai nostri bambini, anzi per renderla accessibile al loro gusto si possono sostituire gli ingredienti della cipollina, mettendo all'interno funghetti, prosciutto, formaggio o farla dolce con marmellata o cioccolato, rigorosamente all'interno del quadrato di cm 8 di pasta a sfoglia che sigilleremo ripiegandolo come un fazzoletto. In superficie si spennellerà con uovo misto al latte. Mettere in forno cado a 200° per 20 mn circa.
Sicuramente sarà una merenda favolosa per i bambini e non solo, si possono realizzare dei fagottini più piccoli e proporli in occasione del rinfresco per il compleanno dei nostri figli!

Ecco la ricetta della CIPOLLINA:

1 rotolo di pasta sfoglia rettangolare;
gr. 300 di cipolle;
gr. 150 circa di prosciutto cotto;
gr. 150 circa di mozzarella o qualsiasi formaggio di pasta morbida;
2 cucchiai di passata di pomodoro;
1 uovo;
½ bicchiere di latte;
3 cucchiai di olio d'oliva;
sale marino e pepe nero macinato q.b.

Pulire la cipolla, tagliarla a fette. Cuocere a fuoco medio in una padella dove hai versato 3 cucchiai di olio.

Quando la cipolla comincia ad appassirsi (circa 4-5 minuti), versa 3-4 cucchiai di acqua, la passata di pomodoro, salare e pepare. Mescola e lascia cuocere ancora per circa 5 minuti aggiungendo, al bisogno, altra acqua. Quando è cotta lasciala raffreddare.

Sbattere l’uovo con il latte e un pizzico di sale.

Stendi la sfoglia su una teglia( assicurarsi che ci sia la carta forno sotto pasta sfoglia), tagliarla formando dei quadrati.

In ogni quadrato metterai la cipolla, una fetta di mozzarella e il prosciutto.

Chiudi le cipolline ripiegando gli angoli e sigillando.

Spennellale con il latte con l’uovo.

Inforna a 200° in forno ventilato per circa 25 mn ricordandoti, a metà cottura, di spennellare le nuovamente le cipolline con il latte con l’uovo.

CIPOLLINA Here's the recipe:

1 roll of puff pastry rectangles;
gr. 300 of onions;
gr. About 150 of ham;
gr. About 150 of mozzarella cheese or any soft dough;
2 tablespoons of tomato sauce;
1 egg;
½ cup of milk;
3 tablespoons of olive oil;
sea salt and freshly ground black pepper to taste

Clean the onion, cut into slices. Cook over medium heat in a frying pan where you have paid 3 tablespoons of oil.

When the onion begins to wilt (about 4-5 minutes), pour 3-4 tablespoons of water, tomato puree, salt and pepper. Stir and let cook for about 5 minutes, adding, if needed, more water. When cooked, let it cool.

Beat the egg with the milk and a pinch of salt.

Spread the dough on a baking sheet (make sure there is paper in the oven puff pastry), cut it to form a square.

In each square put the onion, a slice of mozzarella and prosciutto.Close the onions folding and sealing the corners.

Spennellale with the milk with the egg.

Bake at 200 degrees in a convection oven for about 25 minutes remembering, half cooked, brush the back of the onions with the milk with the egg.

Quanta gioia quando il tuo piccolo pronuncia questa parola.

Un giorno storico da annotare al calendario,

e non si sa ancora che sarà questa parola a torturarci per i prossimi primi anni di vita,

quando il nostro piccolo la pronuncerà di giorno di notte, sempre MAMMA.

I miei bambini ne fanno un uso smisurato: MAMMA MAMMA MAMMA....

E BASTAAAAAA a volte la pazienza va fuori binario ...

ma poi ci penso e sorrido ....

Quanto Amore sono in grado di tirarmi fuori ......

"... Mamma oggi è la tua festa, questi fiori sono per te!"

Un regalo bellissimo fatto con le sue piccole manine,

dei fiori di cartone riciclato dalle confezioni di uova, che idea geniale, brave maestre...

Un bigliettino con il nome della mia bambina e dietro il bigliettino,

la poesia che per tutto giorno mi ha recitato:

ti vorrei mettere una corona in testa,

regina vorrei farti

brillanti ed oro vorrei donarti

Fra poco si festeggia San Valentino: la festa degli innamorati.

Lo scorso anno, mio marito, mi dona uno charm della "Pandora".
Da quand'è che mi ha regalato il bracciale, non si perde occasione di aggiungere un "pendaglio" per allestirlo, sicuramente sarà un oggetto legato a un qualcosa che mi appartiene e racconta la mia storia .....

Praticamente, il tutto è personalizzabile e non ci sarà mai un bracciale uguale all'altro.

Ad ogni evento, mettono in vendita degli oggettini sempre diversi ....
ma soprattutto, mio marito sarà tranquillo per un pò, di qua che si completa il bracciale, ce ne vorrà un po.

Ebbene, mi dilungo sempre ..... dicevo .... lo scorso anno mi regala uno charm della Pandora, mia figlia si è arrabbiata tantissimo perchè si è sentita esclusa: " oggi è la festa di quelli che si vogliono bene " disse, e chi può dagli torto?

LA RICETTA FRIULANA DELLA NONNA CLARA: LA PINZA

In questo periodo ho desiderio di raccontare delle storie, che ai giorni d'oggi risuonano come "favole", forse sarà la nostalgia dei tempi trascorsi ... chissà...

Ultimamente, nei miei pensieri c'è mia nonna, si, mia nonna Nunzia.
Dalle mie parti si usava dare il nome dei nonni paterni e poi materni.... che nostalgia di mia nonna.
Quando andavo da lei, a farle visita, mi raccontava di quelle storie .... lei ha vissuto nel periodo della guerra, mi raccontava di essere fuggita via mentre c'erano i bombardamenti, con tutti i figli a seguito, mi raccontava di quando non c'era da mangiare, e si divideva quel poco che c'era ...

In proposito, sono andata a sfogliare una raccolta di ricette della nonna Clara, la nonna di mio marito, anche lei a raccontare di quelle storie ....
Nella prima pagina c'è una premessa che riporto:

" Per gustare questo aneddoto, bisogna immedesimarsi

ai tempi in cui si è svolto,

quando il companatico di una famiglia

si riduceva a una fetta di cotechino a persona

e due fette di polenta

e in qualche malaugurato caso

a una cresta di gallo divisa in due.

- Mamma ti ricordi quando sei stata

invitata dal cugino Santo a pranzo?

Cosa disse a sua moglie quando porto in tavola

un po di antipasto

( due fette di salame e tre pezzetti

di giardiniera fatta in casa)...

in friulano (Nuta! me datu el companasego prima dea menestra?)

Anna! mi dai il secondo prima della minestra?"

Da questo ricettario, rubo un dolce, fatto con ingredienti poveri, ma di grande risultato.

LA PINZA

INGREDIENTI:

Una grossa fetta di zucca lessata
3 hg di zucchero
2 pugni di farina di polenta
½ kg farina doppio zero
2 tazzine da caffè di olio
2 tazzine di caffè di latte
1 tazzina di caffè di grappa
1 bustina di lievito in polvere
sale
uvetta e fichi secchi
buccia grattugiata di un limone

PREPARAZIONE:

Mescolare tutti gli ingredienti molto bene.
Imburrare e infarinare una teglia rettangolare, versarvi l’impasto e cuocere a fuoco medio, in forno, per un’ora circa. Deve risultare ben colorata.

N.B. Per dare un tocco in più, prima di infornare, spolverate la superficie con zucchero semolato, darà croccantezza e un sapore in più al dolce.

INGREDIENTS:

A big chunk of boiled pumpkin
3 hg sugar
2 handfuls of maize flour
½ kg flour double zero

1 tablespoon baking powder
salt
and raisins dried figs
grated rind of one lemon

Preparation:

Mix all ingredients very well.

Ogni anno, nel mese più freddo dell'anno, si accende una luce, nella città di Catania.

Parlo di lei, della festa, della grande festa, per la grande signora di Catania: Sant'Agata.

Iniziando da questa cantata che risuona fra le strade della città, voglio raccontarvi una storia, una favola che ascolto da quand'ero piccola.

Una notte, calda e buia del mese di Agosto del 1126, le campane di tutte le chiese di Catania, suonarono a festa. I cittadini, uscirono fuori dalle loro case ancora in camicia da notte, stupiti da tanto chiasso. Si guardarono sbalorditi chiedendosi cosa potesse essere successo....

"Agata era ritornata in città!". Le reliquie, trafugate circa un secolo prima, e portate a Costantinopoli dal generale bizantino Giorgio Maniace quale bottino di guerra, vennero restituite alla loro città e ai suoi concittadini che, commossi, salutarono la propria santuzza, sventolano i fazzoletti.

La devozione per Sant'Agata aveva le sue origini ai tempi della presenza romana sull'isola. La giovane vergine aveva preferito il martirio pur di difendere il suo onore e non abiurare alla sua fede come ordinatole dal proconsole romano.

La ricorrenza dei giorni di febbraio, ricorda un tremendo terremoto che rase al suolo, il 4 febbraio 1169, la città di Catania seppellendo sotto le macerie i fedeli raccolti in preghiera all'interno della cattedrale per la celebrazione del martirio di Sant'Agata.

Con un rigoroso protocollo cerimoniale, tre differenti chiavi, custodite da tre persone diverse, aprono il cancello di ferro che protegge le reliquie della Santa nella Cattedrale.

In trepida attesa una moltitudine di "devoti" che sporgono la testa per cogliere il primo bagliore del busto della Santa.

Un unanime "W Sant'Agata" accoglie l'uscita del reliquiario dalla Cattedrale e il suo percorso lungo le strade del centro.

Il centro della processione è rappresentato dal fercolo o vara (in catanese), un tempietto di argento che ricopre una struttura in legno, e che contiene le reliquie della Santa. E' sormontato da un busto realizzato completamente in argento che riproduce il volto di Sant'Agata.

Un lungo cordone, trainato dai devoti, trascina la struttura che sostiene la santa, per le vie della città.

La processione del 4 febbraio dura l'intera giornata, ed attraversa i luoghi del martirio. Il fercolo è addobbato con dei garofani rossi che simboleggiano il martirio stesso.

Il giorno dopo, il colore dei fiori diventa bianco a rappresentare la purezza. La processione si sviluppa per le vie della città e termina ben oltre la mezzanotte, l'ultimo giorno non rientra prima delle 8 del mattino.

Co-protagoniste della processione sono le candelore: grosse costruzioni in legno, riccamente scolpite e dorate in superficie, costruite, generalmente, nello stile del barocco siciliano, e contenenti al centro un grosso cereo. Sono dei doni della cittadinanza alla patrona e rappresentano le corporazioni delle arti e dei mestieri della città. Precedono il fercolo, e in passato rischiaravano il percorso privo di illuminazione elettrica. Nei giorni di festa e fino a 10 giorni prima, girano per la città portandosi presso le botteghe dei soci della corporazione a cui appartengono.

Con l'accompagnamento della banda musicale, vengono portate a spalla, a seconda del peso (da 400 fino ai 900 chili), da un gruppo costituito da 4 a 12 uomini, che le fa avanzare con un'andatura caracollante molto caratteristica detta 'a 'nnacata.

Lungo il percorso si possono incontrare anche alcuni devoti che, in segno di penitenza o voto, effettuano il percorso trasportando sulle spalle dei ceri più o meno grossi, accesi e grondanti cera liquida molto calda. Quelli rappresentati in questa foto sembrano veramente molto pesanti ... come direbbe mio marito: "Ammazza, devono avere grossi peccati da farsi perdonare..."

I devoti indossano tutti il tradizionale "sacco agatino", un abito formato da cinque elementi essenziali: la tunica bianca (che ricorda il saio penitenziale, bianco, indice di purezza, ma anche le camicie da notte indossate il giorno del rientro delle reliquie), il copricapo nero (la "scuzzetta" che sembra rappresentare il capo cosparso di cenere in segno di sottomissione e umiltà), il cordone (che rappresenta la castità), i guanti bianchi (in segno di rispetto alla purezza della Santa) e il fazzoletto (come segno di esultanza) e ... ultimamente il cellulare tenuto ben visibile in alto, per fotografare e riprendere le fasi salienti della festa.

Da qualche anno il sacco, ma di colore verde, viene indossato anche dalle donne. Il colore ricorda la tunica che avrebbe indossato Sant'Agata durante il Martirio.

Il giro termina nella famosa salita di San Giuliano; ormai è il mattino del 6 Febbraio. I devoti, stanchi dalle fatiche e dalle notti insonni, e ormai con un sottile filo di voce residuo, corrono fino a su, senza sosta.

Per poi salutare, in lacrime, la propria Santa che sarà riposta all'interno del Duomo, nella sua cameretta, fino al 17 Agosto, quando sarà esposta per poco tempo sull'altare maggiore.

Dal 3 al 6 febbraio giungono a Catania circa un milione di persone fra devoti, pellegrini, turisti e curiosi provenienti da tutto il mondo.

Ad accoglierli ci sono postazioni di grigliate di carne e salsiccia con del pane caldo.

Tanto calore dell'animo dei Catanesi a riscaldare le gelide notti di Febbraio, nello scenario barocco, offerto dalla città.
La mia Catania, dal manto nero, macchiata dalla terra dell'Etna che rimane a segnare le mura delle case.
La mia Catania, simile a una donna dai facili costumi, così vissuta, così misteriosa e profonda.
La mia Catania, che non smette mai di stupire e raccontarci il presente, attraverso la vita, attraverso il folklore.

Every year, in the coldest month of the year, a light goes on in the city of Catania.

I speak to her, the party, the big celebration for the grand lady of Catania: Sant'Agata.

Finalmente mi ritrovo a scrivere di un'avvenimento molto importante e caro alla mia memoria: il carnevale di Misterbianco.

Misterbianco è un paese in provincia di Catania, con grande commozione lo cito nel mio blog.

Ebbene si, il mio paese natio, nel quale ho vissuto per 30 anni.

Un paese che mi ha dato tanto e dove tanto è stato fatto fino a quando sono andata via io, poi .... si è fermato tutto; ossia da 8 anni a questa parte (forse anche di più...) non si sono più organizzate le varie manifestazioni musicali e culturali; soprattutto per le strade non ha più sfilato il Carnevale, una vera religione per il nostro paese.

Diciamo che una delle cause è stata una "cattiva" gestione della Amministrazione Comunale; forse avevano individuato altre priorità nelle quali investire ... priorità di cui ancora oggi i cittadini di Misterbianco vanno alla ricerca.

Ora l'Amministrazione Comunale in carica è riuscita a organizzare nuovamente la manifestazione, con gioia, soprattutto, degli abitanti del paese.

Parliamo allora del Carnevale di Misterbianco e dell'importanza e risalto che ha preso sia a livello nazionale, che a livello Europeo, riconosciuto e pubblicizzato dai grandi circuiti dello spettacolo.

La manifestazione è particolarmente caratterizzata dai costumi: dei veri e propri capolavori, frutto dell'estro e della creatività, che vengono espresse nei minimi particolari, ed opera di mamme, zie, nonne, sarte; uno sforzo enorme e sacrifici che spingono a fare notte fonda per diversi giorni.
Costumi con diversi materiali e strutture così elaborate e pesanti, che spesso occorre un fisico da uomo per poterli reggere.

E' doveroso ricordare che il costo degli abiti è interamente a carico del cittadino che partecipa alla sfilata. Ci sono persone che durante l'anno mettono da parte i soldi, per poter partecipare con il vestito più bello, magari sacrificando una vacanza o altro; nessuno può toglierci il piacere di ballare per le vie del paese, di stare in allegria e prendersi un po' in giro (... che mal di piedi alla fine... Ohi! Ohi! Ohi!....).

I gruppi presentano dei temi specifici; per esempio, la televisione, le stagioni, la natura e così via. Su questo tema lo stilista prepara i bozzetti degli abiti che verranno poi realizzati dalle persone che scelgono quel determinato costume. Io ho potuto partecipare attivamente sia alla realizzazione che alla manifestazione ...... vado alla ricerca di qualche foto personale....).

Quanto sono belli i miei concittadini, nei giorni del Carnevale; soprattutto chi partecipa ai gruppi in maschera: un sorriso fantastico e quando si sorride, tutti diventiamo più belli!

Ci sarà una votazione, per il costume più bello, per la musica più bella, tanti altri i premi e alla fine, ovviamente per il gruppo più scenografico.

Saranno più di 1.000 i costumi realizzati.

Il Carnevale di Misterbianco richiama persone provenienti da tutta la Sicilia e non ho mai sentito nessuno che vada via deluso.

Mi sento di ringraziare in modo speciale il sindaco Di Guardo che sta riuscendo dove tutti gli altri hanno fallito; sono certa che oltre al Carnevale, ridarà al paese tanto altro e lo farà risplendere come una volta.

Andate tutti a Misterbianco, dal 7 al 12 Febbraio, diverse manifestazioni saranno realizzate ma soprattutto la grande sfilata dei carri in maschera, il 10 e il 12 Febbraio.

POLPETTINE AL POMODORO

Sta sera da sola a preparare la cena.
Mio marito torna tardi ed io, con i piccoli a casa insieme per tutto il giorno, inizio prima a preparare la cena.

Di certo quello che non ho fatto oggi, sono le pulizie di casa, oltre a lavare i piatti, il resto è causa persa.

Per camminare all'interno di casa mia, è una specie di salto agli ostacoli, e quando si arriva dall'altra parte della casa, si può esclamare: che "fortuna".....!
Vabbè, bisogna solo rassegnarsi ...

Ho pensato alle polpettine, impasto prima, faccio le palline e poi metto in frigo, pronte per essere tuffate nel pentolone di pomodoro.

ECCO GLI INGREDIENTI:

400 gr di polpa di vitellone tritata;
50 gr di prosciutto a pezzettini piccoli piccoli, unito ad
1 ciuffo di prezzemolo tritato ed a
1 spicchio d'aglio tritato
100 gr di mollica di pane ammollata nell'acqua;
50 gr di parmigiano grattugiato;
2 uova;
olio extravergine d'oliva.

PER LA SALSA di pomodoro:

800 gr di pomodori pelati;
1 cipolla;
olio extravergine d'oliva;
sale.

MANI IN "PASTA":

Prendere una capiente bacinella: strizzo bene il pane che ho già ammollato, prendo il trito di prosciutto, prezzemolo, aglio, lo unisco al tritato di vitellone insieme a uova e parmigiano. Amalgamare fino a formare un composto omogeneo.

Formare delle piccole palline, disponete su un vassoio, coprite con u foglio di pellicola per alimenti e porle in frigo.

Prendere una capiente pentola bassa.

Far stufare la cipolla tritata nell'olio d'oliva, aggiungere i pomodori pelati e lasciare insaporire per 5 minuti. Pizzico di sale.

Tuffare dentro le polpettine e mescolare con cura lasciando sobbollire.

Ci vorranno circa 15 minuti per finire la cottura.

Cosi facendo, le polpettine saranno gustose e molto morbide. Anche il vostro bambino, a partire da un anno, sarà in grado di mangiarle.

HERE INGREDIENTS:

400 grams of lean beef, chopped;

All'interno riempiremo la scatola con oggetti di diversi materiali.

Attenzione a non mettere giocattoli nella scatola, il bambino dovrà entrare in contatto con oggetti di uso comune e che vede utilizzare a voi, e potete aggiungere anche della frutta come anche piccoli libri, chiavi di casa, mestoli, padelle, coperchi, tappi degli omogeneizzati, piccoli cuscini, borsellini, porta-tovagliolo e via dicendo.

In questo gioco noi genitori saremo solo degli osservatori, per controllare che il bambino faccia buon uso dei giochi e anche per rafforzare le scelte che fa il bambino, rimanendo però sempre all'esterno del gioco.
In questo modo il bambino imparerà a gestire il suo divertimento anche da solo.

E' il carnevale più antico del Piemonte, da 7 al 12 Febbraio.

La maschera più caratteristica e quella del maiale.
Una volta, i maiali, si facevano sfilare per le vie del paese prima di andare al macello, ma adesso vendono raffigurati da persone travestite da maiali.

Ma i protagonisti in assoluto sono: Stevulin ‘dla Plisera e Majutin dal Pampardù sono i padroni assoluti della città. Leggenda vuole che si tratti di due contadini che secoli fa giunsero in città da due cascine dei dintorni per il loro viaggio di nozze. Acconsentendo alla volontà popolare, il signorotto locale consegnò ai due giovani sposi le chiavi della città, permettendo loro di governare e amministrare la giustizia per tre giorni.

Protagoniste del Carnevale da sempre sono le Maschere classiche più conosciute.

ARLECCHINO

Pare che la più antica fra queste sia Arlecchino, originario di Bergamo: Il suo vestito è così colorato perché, essendo povero, i suoi amici, in occasione del Carnevale, gli regalano dei pezzi di stoffa avanzati dai loro costumi, in modo che possa averne uno anche lui. Ha una maschera nera e una spatola di legno. E' stravagante e scapestrato, ma pieno di astuzia e di coraggio. Personifica il servo vivace e scanzonato, in continuo contrasto con il padrone. Soffre di una brutta malattia: la pigrizia.

PANTALONE

Nel secolo XVI daVenezia arrivò la maschera di Pantalone: veste sempre molto semplicemente: ai piedi porta le pantofole; ha un camicione e una calzamaglia rossi con un colletto bianco e sopra indossa un mantello nero. Porta una maschera in faccia e una cinta alla vita. In testa ha una cuffia aderente che sembra un tutt'uno con la maschera. Pantalone ha un carattere particolare: è nervoso e "rompiscatole" perché è il vecchio brontolone e testardo. Lui spende poco, è attaccato al suo denaro. Qualche volta la gente lo lascia perdere perché si lamenta sempre.

Sempre veneziana è Colombina. Il suo vestito è a righe bianche e blu, una parte della sua gonna è di colore blu. Ha le calze rosse e le scarpe marroni con un fiocchetto sempre di colore blu. Sopra la testa ha un copricapo a righe bianche e blu; i capelli sono marroni. Il suo carattere è allegro, furbo e malizioso. E’ una civetta, mordace, pungente, pettegola e spensierata. E’ infatti una servetta allegra e vanitosa. Colombina prende in giro le persone che le stanno vicino e fa delle risate su di loro. Riesce a conquistare l’amore di Arlecchino. PULCINELLA

Da Napoli Pulcinella: è vestito di bianco. Il cappello bianco è a forma di cono rigido, la maschera è nera con il naso adunco, grosso e ricurvo, porta sempre il camiciotto e i calzoni ampi e morbidi. Il suo carattere è indolente e malinconico, buono ma egoista, è un grande mangiatore e ubriacone. Canta dolcemente e prende la vita con filosofia non se la prende molto ma è sempre allegro. Prende nome dal termine napoletano: Pulcinello, cioè piccolo pulcino.

BALANZONE

Seguiti dal Dottor Balanzone di Bologna: è una maschera che rappresenta un personaggio pedante e brontolone; spesso parla tanto e non conclude niente, ma è anche dotto e sapiente. In testa ha un cappello nero a larghe falde; indossa una toga lunga e nera, il panciotto e i pantaloni neri. Ha un merletto bianco sui polsi e, sul collo, un bel colletto di pizzo. Porta le calze bianche e delle scarpe nere con tanto di tacco. Ha i baffetti all'insù. Molto spesso tiene un libro sotto braccio che completa la sua immagine.

GIANDUIA

Gli altri famosi personaggi del Carnevale italiano vengono daTorino Gianduia: indossa in testa un tricorno e la parrucca con il codino. Ha un costume di panno color marrone, bordato di rosso, con un panciotto giallo e le calze rosse. Sul collo porta un fiocco verde oliva e un ombrello sempre dello stesso colore. Ha le scarpe di color nero e i calzini rossi. E' un galantuomo, cui piace il vino, l'allegria e la vivacità paesana.

STENTERELLO

Da Firenze Stenterello: indossa una giacca blu con il risvolto delle maniche a scacchi rossi e neri. Ha un panciotto puntinato verde pisello e dei pantaloncini scuri e corti. Ha una calza rossa e una a strisce bianco - azzurro e le scarpe nere. In testa porta un cappello a barchetta nero e una parrucca con il codino. E’ molto generoso con chi è più povero di lui, è dotato di arguzia e di saggezza che, unite all’ottimismo, gli fanno superare le avversità della vita. Spesso è ricercato dai suoi creditori.

BRIGHELLA

da Bergamo ancora Brighella . La giacca e i pantaloni sono decorati di galloni verdi; ha le scarpe nere con i pon pon verdi. Il mantello è bianco con due strisce verdi, la maschera e il cappello sono neri. E’ un servo sempre in cerca di avventure. Normalmente è lui che inizia a litigare, è un attaccabrighe. Da questa sua caratteristica prende il nome Brighella. Suona e canta molto bene: è un tipo spiritoso e scherzoso. Nelle rappresentazioni teatrali talvolta lo fanno agire come un personaggio fedele e altruista.

Le vicende riguardanti San Valentino sono abbastanza confuse, ma intorno alla sua figura ruotano molte leggende, che riguardano tutte episodi d'amore.

LA LEGGENDA DEI BAMBINI

San Valentino possedeva un grande giardino pieno di magnifici fiori dove permetteva a tutti i bambini di giocare. Si affacciava sovente dalla sua finestra per sorvegliarli e per rallegrarsi nel vederli giocare. Quando veniva sera, scendeva in giardino e tutti i bambini lo circondavano con affetto ed allegria. Dopo aver dato loro la benedizione regalava a ciascuno di loro un fiore raccomandando di portarlo alle loro mamme: in questo modo otteneva la certezza che sarebbero tornati a casa presto e che avrebbero alimentato il rispetto e l’amore nei confronti dei genitori. Da questa leggenda deriva l'usanza di donare dei piccoli regali alle persone a cui vogliamo bene.

La festa di Carnevale risale al periodo greco-romano ed è legata alle cerimonie

pagane in onore del dio Saturno, per propiziare un raccolto copioso.

Più tardi è entrato a far parte del calendario liturgico ponendosi tra

l'Epifania e la Quaresima.

Il termine "carnevale" deriva, infatti, da "carnevalare" (carnem levare)

che significa astenersi dal mangiare carne a partire dal primo giorno di Quaresima,

vale a dire dal giorno successivo alla fine del carnevale, sino al "giovedì santo" prima della Pasqua.

Nel medioevo il giovedì e martedì prima delle ceneri venivano detti "grassi" e si festeggiava con ricchi banchetti e ogni tipo di divertimento.

Il vero scopo del carnevale è la purificazione. Un particolare, infatti, unisce tutti i luoghi il giorno in cui i carri allegorici sfilano mostrando le proprie maschere e cioè il funerale di un enorme "omaccione", che altro non è che l'anno vecchio che muore e porta via con sé tutti i mali passati.

L'ultimo giorno di Carnevale è il così detto "giovedì grasso" che cade il 47 esimo giorno prima di Pasqua.

Il Carnevale è la celebrazione del travestimento: di quella promiscuità ribelle che sovverte l'ordine naturale e morale stabilito da Dio: "La donna non si vestirà da uomo, e l'uomo non si vestirà da donna poiché il Signore,

il tuo Dio, detesta chiunque fa queste cose" (De.22:5). La condanna è estesa ad ogni licenza dalla propria identità spirituale e dalle responsabilità etiche (So.1:89).

Chiude il carnevale il mercoledì delle ceneri. La celebrazione delle ceneri nasce a motivo della celebrazione pubblica della penitenza. Sono le ceneri benedette, ricavate bruciando i rami d’olivo dell’anno prima, formando una croce. Il rito, dava inizio al cammino di penitenza dei fedeli che sarebbero stati assolti dai loro peccati la mattina del giovedì santo.

Nel tempo il gesto dell'imposizione delle ceneri si estende a tutti i fedeli e la riforma liturgica ha

ritenuto opportuno conservare l'importanza di questo segno.

BISCOTTINI CON SCAGLIE DI CIOCCOLATO E AROMA ALL'ARANCIA

Eccomi qui con i biscottini che ho realizzato, insieme alla mia piccola Gemma, in queste vacanze di natale.
La ricetta l'ho recuperata dalla scuola materna della mia bambina, ho ritenuto opportuno rifarli.... buonissimi.
In occasione del natale, ho utilizzato le formine apposite, qualsiasi forma è valida!

Ecco gli INGREDIENTI per circa 50 biscotti ( ovviamente ho utilizzato delle dimensioni generose ):

gr. 450 farina 00;
gr. 230 burro;
gr. 210 zucchero;
3 uova;
una fialetta di aroma all'arancia;
cioccolato a scaglie, quanto basta.

PROCEDERE creando una fontana con farina, zucchero, cioccolato a scaglie, mischiato insieme;

in centro, uova, burro, aroma d'arancia.

Impastare, stendere l'impasto e ricavarne tanti biscottini.

Infornare quando il forno raggiunge la temperatura di 190°, occorre circa 12 minuti.

BISCUITS WITH CHOCOLATE CHIPS AND ORANGE FLAVOUR

occasion of Christmas, I used the molds appropriate, any form is valid! Here are the ingredients for about 50 cookies (of course I used the generous size):

PANEVIN TRADIZIONE VENETA

Vasta è la diffusione del panevin: in Provincia di Treviso, Venezia, Vicenza, Belluno (dove è chiamato "pavaroi" o "pavarui") ed in Friuli (dove è chiamato "pignarûi" o "palavins").

La tradizione del Panevin fonda le sue radici nel lontano periodo celtico (circa V sec. A.C.) presso l'antico popolo dei Veneti; questo falò serviva per evocare il ritorno del sole sulla terra, cioè l'allungarsi delle giornate che inizia dal solstizio d'inverno.
Il fuoco serviva per celebrare questo giorno che con il calendario Giuliano coincideva con il 25 dicembre.

Nel Medioevo, con l'evangelizzazione delle campagne venete, il Panevin perse le sue origini pagane assumendo una connotazione cristiana. Il falò venne spostato al giorno dell'Epifania per ricordare i Re Magi che portarono i doni a Gesù Bambino.
Secondo la leggenda i falò della campagna veneta furono loro utili per trovare la via di Betlemme essendosi persi.

Al loro ritorno, racconta sempre la leggenda, non vedendo nessuna luce nella campagna, si persero nuovamente nella pianura Padana andando a morire nel Milanese (ciò sarebbe testimoniato dalla presenza nel Duomo di Milano di un sarcofago con l'iscrizione "trium Magerum").
Nella notte del 5 gennaio nel Medioevo, come anche oggi, l'occasione del falò forniva al popolo un momento di unione e ritrovo con tutta la comunità cittadina davanti a un buon bicchiere di vino caldo brulè ( vino bollito con chiodi di garofano e cannella) e un pezzo di PINZA.

Hanno esteso ai due giorni successivi al 5 gennaio su certi paesi in provincia di Treviso.
Faceva eccezione il panevin di Nervesa della Battaglia che era acceso il 3 Dicembre fino a qualche anno fa, in tale occasione si celebrava S. Nicolò, protettore degli zatèri, secondo un’antica tradizione della sinistra Piave, ma sempre nel territorio del Comune di Nervesa della Battaglia i fuochi sono accesi il 17 Gennaio a Santa Croce del Montello (il giorno di S. Antonio) e tre giorni prima a Sovilla.
Il 24 Dicembre 2012 il panevin viene acceso a Colfrancui, nei dintorni di Oderzo, in questo caso si tratta di un ceppo (chiamato: soc Nadaìn ossia ceppo natalizio) che viene fatto ardere solo da un’estremità per poi essere spento e riacceso il giorno del panevin.

Una volta, l'organizzazione veniva fatta a livello famigliare, invece oggi viene organizzata da associazioni e in particolare dal gruppo Alpini.
Il più famoso è quello che si fa nel paese di Arcade in piazza Vittorio Emanuele III.

Inoltre ci sono altre leggende legate al fumo che emana il falò:
se esso va verso sud o verso ovest perché spinte dal vento umido portatore di piogge, il raccolto sarà abbondante;
se fumo del panevin va verso nord o verso est, il raccolto sarà scarso.

Analoghi auspici si traggono dal fumo e dalle faville generate dai falò e dai fuochi che si fanno in Sicilia, Svizzera, Germania e Francia.

Un rito analogo, che viene fatto coincidere col solstizio d’estate, è rappresentato dai Fuochi di San Giovanni che sono accesi sulle rive di corsi d’acqua in Norvegia e Finlandia; anche in questo caso è osservato l’andamento delle faville ed interpretato a seconda della direzione del vento.

PANEVIN VENETIAN TRADITION

DOLCE VENETO: PINZA O ZINGARA O PUTTANA

E' un dolce rustico legato alla tradizione veneta.
Si mangia nel periodo autunnale e invernale ma soprattutto è tradizione nel periodo dell'Epifania nella notte del pan e vin.
E' ottimo da accompagnare con il liquore il Nocino.

Gli ingredienti sono legati a una cucina povera.
Si può fare in diversi modi e ma come base principale di una volta era fatta con il pane vecchio, aggiungendo tutto ciò che c'era in casa: mele, pere, fichi o frutta secca, o anche con farina gialla o bianca di fiore.
A me piace fare le ricerche e riportare quelle ricette che sono legati agli "origini", in questo caso, appunto, ecco come si faceva una volta:

INGREDIENTI:

1 litro di latte intero
1 cucchiaio di olio di semi di arachidi
4/5 cucchiai di zucchero
3/4 pagnotte di pane vecchio o pane biscotto
1 uovo
1 cucchiaio di farina 00
1 bustina di vanillina
½ limone (buccia e succo)
2 cucchiai di marsala o brandy
3 mele
100g uvetta
50g pinoli
1 cucchiaino di lievito per dolci

PROCEDIMENTO:

In una pentola scaldiamo il latte con lo zucchero fino a portarlo ad ebollizione.
A fuoco spento aggiungiamo l’olio e il pane sbriciolato, fin quanto si inzuppa.
Se il composto risulta troppo liquido aggiungere pane, se invece dovesse risultare troppo secco aggiungere latte.

Nel frattempo sbucciare e tagliare a pezzettini le mele.
Una volta che l’impasto si è raffreddato aggiungere l’uovo, la farina e il lievito e tutti gli altri ingredienti, le cui dosi possono essere variate secondo le preferenze.

Versare il contenuto in una teglia imburrata e infornare a 160°C per circa un’ora.
Anche le dimensioni della teglia variano in base alle preferenze: solitamente la pinza è un dolce molto alto e umido, ma alcuni la preferiscono più sottile e croccante.

Pour the contents into a greased baking tray and bake at 160 ° C for about an hour.
