I'm back with a quick Rum Cake recipe that I think you'll like.&lt;br /&gt;&lt;br /&gt;On my trips to the Bahamas, I've always made sure to try some Rum Cake before I leave.  I've even had it made for me in North America and it's really a delight.  You won't regret the time it takes to make this!&lt;br /&gt;&lt;br /&gt;&lt;img src="http://img4.myrecipes.com/i/recipes/sl/05/11/rum-cake-sl-1120196-l.jpg" /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;Basic Cake Mix&lt;br /&gt;2 cups cake flour&lt;br /&gt;1 1/2 cups granulated sugar&lt;br /&gt;4 teaspoons baking powder&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1/2 cup butter, cut into bits&lt;br /&gt;3 tablespoons vegetable oil&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For the Cake&lt;br /&gt;1/2 cup finely chopped walnuts&lt;br /&gt;1 (3 1/2 ounce) package vanilla instant pudding mix&lt;br /&gt;1/2 cup milk&lt;br /&gt;4 eggs&lt;br /&gt;1/2 cup whaler vanille rum  (Hawaiian-style rum)&lt;br /&gt;1/2 cup vegetable oil&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Rum soaking Glaze&lt;br /&gt;1/2 cup butter  (do not substitute)&lt;br /&gt;1/4 cup water&lt;br /&gt;1 cup granulated sugar&lt;br /&gt;1/2 cup whaler vanille rum  (Hawaiian-style rum)&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;1 Basic Cake Mix: In a large mixing bowl, combine basic cake mix ingredients.&lt;br /&gt;2 On low speed combine ingredients until the mix is the consistency of fine gravel, and all particles are about the same size.&lt;br /&gt;3 This mix may be contained and stored for up to 3 months in the refrigerator.&lt;br /&gt;4 For the Cake:.&lt;br /&gt;5 Preheat oven to 325 degrees.&lt;br /&gt;6 Spray a large Bundt pan (12 cup) with nonstick cooking spray.&lt;br /&gt;7 Sprinkle the chopped walnuts on the bottom.&lt;br /&gt;8 Place Basic Cake Mix, pudding mix, milk, eggs, rum, oil, and vanilla extract in a large bowl and combine on medium speed with electric mixer for 2 to 3 minutes, scrape down the bowl halfway through.&lt;br /&gt;9 Batter should be very smooth.&lt;br /&gt;10 Pour into Bundt pan.&lt;br /&gt;11 Bake for about 55 minutes- until fully golden and tester comes out clean and cake springs back.&lt;br /&gt;12 Remove from oven and place on a cooling rack while making the soaking glaze.&lt;br /&gt;13 Rum Soaking Glaze:.&lt;br /&gt;14 Combine butter, water and sugar in a small saucepan.&lt;br /&gt;15 Bring to a boil carefully as mixture boils over very easily.&lt;br /&gt;16 Reduce to a simmer and cook until sugar is dissolved and syrup is well combined and a little thicker.&lt;br /&gt;17 Remove from the heat and add the rum, mix to combine.&lt;br /&gt;18 While cake is still cooling, pour some of the hot syrup on top of the cake, allowing it time to soak in (this may take a few minutes as there will be a lot of syrup) continue to add syrup until all of the syrup is added.&lt;br /&gt;19 Allow cake to cool completerly in pan before turning out onto serving platter.&lt;br /&gt;20 This cake is delicate, so once it is turned out, it can not be moved around easily.&lt;br /&gt;21 Can be eaten when fully cool, but even better the next day!&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/7443902611961122791-9099471041045288711?l=bamboo-wind.blogspot.com' alt='' /&gt;&lt;/div&gt;</description><link>http://bamboo-wind.blogspot.com/2011/02/caribbean-tortuga-rum-cake-recipe.html</link><author>noreply@blogger.com (Bamboowind)</author><thr:total>0</thr:total></item><item><guid isPermaLink="false">tag:blogger.com,1999:blog-7443902611961122791.post-8484175481434367042</guid><pubDate>Wed, 01 Sep 2010 14:05:00 +0000</pubDate><atom:updated>2010-09-20T12:28:41.283-07:00</atom:updated><category domain="http://www.blogger.com/atom/ns#">Tahiti</category><category domain="http://www.blogger.com/atom/ns#">paradise</category><category domain="http://www.blogger.com/atom/ns#">Moorea</category><category domain="http://www.blogger.com/atom/ns#">tropical island</category><title>Moorea:  Where Tahitians Vacation</title><description>&lt;img src="http://wallpapers-diq.org/wallpapers/42/Moorea_Island_Sunset%2C_French_Polynesia.jpg" width="360px" /&gt;&lt;br /&gt;&lt;br /&gt;Moorea (which sounds a lot like Moria from Lord of the Rings, but looks a lot more inviting), is becoming a major tourist destination.  I've read that this is a place where Tahitians go to vacation. The same travel difficulties for Americans would apply as they would going to the main Tahiti island.  This could very well be something for those who want to avoid the main tourist congested areas.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img The lush mountain slopes are covered with rain forest or pineapple plantations, and white sand beaches border crystalline lagoons.&lt;br /&gt;&lt;br /&gt;You can go on a whale and dolphin watch departing daily with marine biologist Michael Poole. Here are two ways to make this great drink:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Lava Flow Cocktail&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;&lt;br /&gt;&lt;br /&gt;1 oz. coconut rum&lt;br /&gt;1 oz. light rum&lt;br /&gt;1/2 banana    &lt;br /&gt;2 oz. pineapple juice    &lt;br /&gt;2 oz. coconut cream    &lt;br /&gt;2 oz. frozen strawberries&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;The key to preparation is to blend the strawberries and rums separately from the other ingredients, rinsing the blender between steps. (If using strawberry puree, you can skip this and simply blend all ingredients except the puree.)&lt;br /&gt;&lt;br /&gt;Pour the strawberry mix or the puree to the bottom of a large glass (a collins or hurricane glass).  Then add the blender ingredients, or as it’s often done, reverse and pour the strawberry mix on top. The red strawberry mix swirls in the drink, simulating a lava flow.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Royal Hawaiian Lava Flow&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;Mix these in the bottom of a Boston shaker glass:&lt;br /&gt;&lt;span style="font-style:italic;"&gt;&lt;br /&gt;2 fresh strawberries&lt;br /&gt;1-2 in. slice of banana&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Fill shaker glass with ice and then add:&lt;br /&gt;&lt;span style="font-style:italic;"&gt;&lt;br /&gt;1 oz. coconut cream (Coco Lopez)&lt;br /&gt;1 oz. pineapple juice&lt;br /&gt;1.5 oz. Mount Gay Rum (or other golden rum)&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;Cover with top of the Boston shaker, shake vigorously. Pour into a hurricane glass. Garnish pineapple wedge and paper parasol. It's definitely one of the more unique places one could visit.&lt;br /&gt;&lt;br /&gt;It's known not only for it's tourism, but also Aribica coffee. It's not risk-free but is far less dangerous than skydiving, kitesurfing and even bungee jumping.  It also turns out to be something you can find in abundance in Hawaii. I "encountered" it several times on my last cruise :)&lt;br /&gt;&lt;br /&gt;It's a good blend of fruit flavor and one or more rums.  I'm going to give you two versions of the recipe here (there may be more).&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Recipe # 1)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;1 oz rum&lt;br /&gt;1 oz dark rum&lt;br /&gt;1 oz coconut rum&lt;br /&gt;1/2 oz grenadine syrup&lt;br /&gt;6 oz pineapple juice&lt;br /&gt;1 whole maraschino cherry &lt;p&gt;&lt;strong&gt;Preparation:&lt;/strong&gt;&lt;/p&gt; &lt;p&gt;Shake all ingredients together with ice in a cocktail shaker. Pour with ice into a hurricane glass and toss in the cherry.&lt;/p&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Recipe # 2)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Glass: highball, serves: 1&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;¾ oz. Bacardi Gold rum&lt;br /&gt;½ oz. Nassau Royale Liqueur or Grand Marnier&lt;br /&gt;½ oz. This island is privately leased by Royal Caribbean Cruises, and is only accessible via one of their cruise ships.&lt;br /&gt;&lt;br /&gt;I must say that it was the high point of a cruise I took a few years ago, and the reviews online seem to agree with me.  The wind and water were so warm, so clear that you just felt wrapped up in paradise.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://www.singleadultministry.com/Coco%20Cay.jpg" /&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;The island is less than a mile (around one kilometer) wide from east to west and less than a 200 yards (meters) from north to south. The east end is the center of recreational activities with beaches fronting a coral basin where manatee, rays, and numerous fish can be seen. There is a rocky inlet on the north side of the island large enough for the tenders operate from. Nature trails run the entire length and width of the island.&lt;br /&gt;&lt;br /&gt;While there, many may take kayak tours, or ski-doo tours.  There's also volleyball, areas to stretch out and get a tan, snorkeling, swimming, parasailing, and other fun things to do.  You can walk around the island in a very short amount of time.  The tenders from the Royal Caribbean cruise ships would run quite often back and forth.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://dianesummer.com/i/str-coco-cay.jpg" /&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;The Royal Caribbean people cook up a bountiful barbeque! Hamburger, hot dogs, and plenty of picnic food await the hungry. While dining, local people will entertain with music and dance.&lt;br /&gt;&lt;br /&gt;Shopping, while it is available, is not a shopping center. Little booths offer the typical tourist items, and if you forget your sunscreen, hat, or cover up, they have it.&lt;br /&gt;&lt;br /&gt;Also, the local drink is a very fruity and addictive drink called "Coco Locos".  Here's a shot of this drink:&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://farm4.static.flickr.com/3149/2617553816_d0a00b3520_m.jpg" /&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;While most that take a Royal Caribbean Cruise don't see Coco Cay as the main destination (usually, it's Nassau Bahamas), it ends up being the most photographed and most commented-upon stops. Leatherman's 2009 list of top 10 beaches, which was released Friday, May 22nd, 2009.&lt;br /&gt;&lt;br /&gt;Hanalei beat out other shores stretching from San Diego to Cape Cod.&lt;br /&gt;&lt;br /&gt;Hanalei Bay is a scenic paradise on the north shore of Kauai in Princeville. "The sheer beauty of Hanalei Bay is breathtaking," said Leatherman, director of Florida International University's Laboratory for Coastal Research. "It's really an idyllic setting."&lt;br /&gt;&lt;br /&gt;I must agree. Kauai is one of the most beautiful islands in the Hawaiian chain of islands.  They are the northermost big islands, seen here:&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://upload.wikimedia.org/wikipedia/commons/thumb/d/df/Kauai_County_Hawaii_Incorporated_and_Unincorporated_areas_Hanalei_Highlighted.svg/250px-Kauai_County_Hawaii_Incorporated_and_Unincorporated_areas_Hanalei_Highlighted.svg.png"/&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;Hanalei Bay is a spectacular white crescent-shaped sand beach that is considered by many residents and visitors alike to be the most beautiful beach setting in Hawaii.  The two-mile long strand is lined by palm trees with a backdrop of waterfalls and mountain peaks that range up to 4,000 feet high.  One of the best views of the beach is from the Princeville Hotel, located on the high bluff to the east.  The other end of this wide coral sand beach is anchored by a high lava point that extends into the ocean.  This panorama has been the inspiration for many paintings and photo shoots. &lt;br /&gt;&lt;br /&gt;&lt;img src="http://www.drbeach.org/drbeach/top_ten_beaches/hanalei_bay/hanalei_bay.jpg" width="500px" height="380px"/&gt;&lt;br /&gt;&lt;br /&gt;World champion surfers and athletes call Hanalei home - if you are lucky enough to catch it on a good day expect to see some amazing wave riding (from a safe distance).&lt;br /&gt;&lt;br /&gt;There are plenty of other things to do in the area besides lounging on the beach though. Fortunately for me, I'm on the east coast of America, and the Bahamas is just a 2 hour flight away.  While I'm all for cruises, sometimes the flight can be more advantageous if you want to maximize time on the island.  If, however, you want the full pampered experience, there are plenty of great cruise offers going on right now as well.&lt;br /&gt;&lt;br /&gt;For this blog entry, I'm going to focus on Paradise Island, which connects to Nassau island, and is the home of the famous Atlantis hotel.  Paradise Island is connected to the island of New Providence by two bridges that cross Nassau Harbour. The first was built in 1966 and the second in the late 1990s.&lt;br /&gt;&lt;br /&gt;&lt;object height="344" width="425"&gt;&lt;param name="movie" value="http://www.youtube.com/v/4L8qLmV_BSw&amp;amp;hl=en&amp;amp;fs=1&amp;amp;color1=0x006699&amp;amp;color2=0x54abd6"&gt;&lt;param name="allowFullScreen" value="true"&gt;&lt;param name="allowscriptaccess" value="always"&gt;&lt;embed src="http://www.youtube.com/v/4L8qLmV_BSw&amp;amp;hl=en&amp;amp;fs=1&amp;amp;color1=0x006699&amp;amp;color2=0x54abd6" type="application/x-shockwave-flash" allowscriptaccess="always" allowfullscreen="true" height="344" width="425"&gt;&lt;/embed&gt;&lt;/object&gt;&lt;br /&gt;&lt;br /&gt;This island was once known as Hog Island, but was changed in the early 1960's.  Some films were filmed there.  The original James Bond Thunderball and Casino Royale showed some parts of Paradise Island.&lt;br /&gt;&lt;br /&gt;&lt;img src="http://www.hansenhomesaventura.com/blogmiamirealestate/archives/4672638.jpg" width="50%" /&gt; &lt;img src="http://www.realholidayreports.com/hotel_reviews/thumbs/Atlantis_Cove,_Paradise_Island_Bahamas_1.jpg" /&gt;&lt;br /&gt;&lt;br /&gt;The island itself is quite beautiful.  The Atlantis hotel has been called the Vegas on the Ocean, as it has a full gambling license.  There is also a vast aquarium at the hotel that is very popular with tourist.  This hotel is a major tourist stop even for those that do not plan to stay there. &lt;br /&gt;&lt;br /&gt;Prices can change for the season and the economy, but plan on a small room being between $250-400 per night.  The magnificent bridge part of the hotel, shown in the picture below, is $250,000 per night with a 4 night stay minimum. That's $1 million!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src="http://upload.wikimedia.org/wikipedia/commons/thumb/0/0e/Boardwalk_at_Atlantis.jpg/800px-Boardwalk_at_Atlantis.jpg" width="50%" /&gt;&lt;br /&gt;&lt;br /&gt;The island has more than just beaches and hotels. Rio de Janeiro is famous for its natural settings, its Carnival celebrations, samba and other music, and hotel-lined tourist beaches, such as Copacabana and Ipanema, paved with decorated black and cream swirl pattern mosaics known locally as “pedra portuguesa”.&lt;br /&gt;&lt;br /&gt;It was at one time, the capital of Brazil.  It has 23 beaches and nearly 50 miles of sand unbroken.  It has some very distinctive landmarks, including the famous Christ the Redeemer statue on a nearby hill, and a mountain called Sugar Loaf, accessible via cable car as seen below:&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;br /&gt;&lt;img src="http://cache.boston.com/universal/site_graphics/blogs/bigpicture/rio_08_27/rio13.jpg" width="50%" /&gt;&lt;/center&gt;\&lt;br /&gt;&lt;br /&gt;Rio has a tropical climate. The temperature occasionally reaches over 40°C (104°F) in inland areas of the city, and extreme maximum temperatures above 30°C can happen every month. In the main tourist areas, the temperature is moderated by the cool sea-breezes from the ocean.&lt;br /&gt;&lt;br /&gt;Rio has been an important center for the revival of traditional Samba music, especially around Lapa, an old bohemian neighborhood. This has come closely associated with a revival in Choro music, a traditional form which is mainly instrumental.&lt;br /&gt;&lt;br /&gt;You may want to be cautious if taking your family there. Despite its charm and beauty, Rio is reputed to be one of the most violent cities in the world and motivated movies such as Bus 174, City of God and Elite Squad portraying severe social issues. Violent crime is concentrated in the slum areas known as favelas, which are located largely on the periphery of the City. However,                          so long as you don't take any valuables to the beach with                          you, you should be fine. Certainly the jewel in the crown                          of Brazil beaches.&lt;/p&gt;                       &lt;p&gt;&lt;br /&gt;                      - Ipanema: just along the coast a little way from Copacabana,                          Ipanema has a reputation of being a little more sedate                          than its neighbor. Although this is more famously known                          as the "family beach" among Brazil beaches, it is nonetheless                          the beach to go to if you want to see the girls parading                          the latest designs in tropical swimwear. Indeed Ipanema                          beach is the spiritual home of the "tangas" - the mini-bikini!                          Activities on Ipanema beach include the traditional Brazilian                          favorite of volleyball. Brazilian Carnival exhibits some from its European counterparts, having mixed African, Native and Euro elements. In 1840, the first Carnaval was celebrated with a masked ball. This isn't just one island but over 1,100 islands.  Only about 200 of them are inhabited.  Some are just stretches of sand with a tree or two at most.&lt;br /&gt;&lt;br /&gt;The Maldives may be the flattest country in the world — just 2.3 meters at its maximum elevation — but tourist arrivals and new carriers flying there continue on a steep upward trend.  50 new resorts are scheduled to be built over the next couple of years.&lt;br /&gt;&lt;br /&gt;Unsurprisingly, sun-seeking Europeans account for the majority of visitors to the islands —representing around 80 percent of arrivals.  The reason many Americans aren't visiting could be very simple:  It's on the other side of the planet!  These islands are in the Indian Ocean, which is just about as far away from North America as you can get for a tropical vacation.  For those that do go, it is really worth it.  No other location is quite like this one. Maldives with its beautiful coral islands, sunny beaches and tranquil and peaceful environment is a great place for a romantic vacation. More and more couples are nowadays coming to this country for a grand holiday. Because of this reason, one can find numerous honeymoon resorts in the country.&lt;br /&gt;&lt;br /&gt;On 26 December 2004, following the 2004 Indian Ocean earthquake, the Maldives were devastated by a tsunami. Only nine islands were reported to have escaped any flooding, while fifty-seven islands faced serious damage to critical infrastructure, fourteen islands had to be totally evacuated, and six islands were decimated. A further twenty-one resort islands were forced to shut down due to serious damage.&lt;br /&gt;&lt;br /&gt;The world's first underwater Restaurant is located in the Maldives at the Hilton Maldives Resort &amp;amp; Spa.
