<p>As probably you read, in our company we focus our efforts in supplying the Australian market with specialty single origin green <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> beans; single farm or estate, micro lot, and gourmet coffees. All our products are bought directly from co-ops and small farms, additionally working with them and there communities by sending volunteers, doing social works and improving life to these remote areas around the globe.</p>

<p>Our &#8220;community&#8221; work starts buy buying <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> with a premium, meaning we pay the farmers a additional price, generally 30 cents more than market or stock price for the coffee they give to us. This higher income to the farmers directly transcends to a higher quality of life for them. Secondly we visit the farms, encourage and teach the farmers about the supply chain after the coffee leaves their farm, this by conferences held in coop.</p>
<p>&nbsp;</p>
<p>We also organise origin trips with our clients, this also to educate both sides and the supply chain and linking the grower with the roaster.</p>
<p>&nbsp;</p>
<p>Finally with help of our clients we send volunteers to work in these farms for a season, while also encouraging farmers to come to australia and visit the industry, finally and after some time working with the coops and farmers we try organise a social project for them, in a case in Antigua Guatemala, we helped build a school for the community.  In Andes Colombia we are organising a project where we will buy a piece of land, we will give this land to a grower family and they will grow this land as theres, we will buy the crop from them, this will generate employment, give them a home and a land to live and work in.</p>

<p>Okay, i&#8217;ll explain a little more. I was trundling through the net as i do from time to time and came across a news article about Starbuck being sued. Yes i know what your thinking&#8230; again. So i read on anyway, and according to an article on eater.com they are being sued after having thier tips jar stolen at a store in St Louis.</p>
<p>The story goes something like this: A teenager steal a tips jar at the startbucks <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> houses, the kid is then chased by a customer. Why i&#8217;m not quite sure as it is not his responsibility to enforce the law, but he does the &#8220;good&#8221; thing anyway. The thief drives at the customer causing him to fall and 2 days later the guy dies. A very tragic event i&#8217;m sure you&#8217;ll agree. After all he was only trying to help.</p>
<p>Later in the article i read that the &#8220;estate&#8221; of the dead man has decided to sue Starbuck, the ones being wronged in this story for not providing security for the tips jar and inviting criminal theft! Thats right, they dont want to sue the kid who nearly ran the guy over, they want to sue the company who were being robbed, and because the man chose to take chase (through complete free will) they are somehow responsible?</p>
<p>I really don&#8217;t understand this one im afraid. It is indeed a terrible thing that the man died, however in a real world where everyone thinks logically Starbucks couldn&#8217;t and shouldn&#8217;t be help responsible for anything. The blame should be at the door of the thief, the person causing the crime and the individual who drove at the man who is now dead as a result. This is truly insane.</p>

			<content:encoded><![CDATA[<p>Being a <a title="barista" href="http://www.baristatrainingcourse.com">barista</a> is never easy, but then there are times when it is i guess. This past week has not been easy let me tell you.</p>
<p>I&#8217;ve been such a busy <a title="barista" href="http://www.baristatrainingcourse.com">barista</a> and this is about the first time I&#8217;ve stopped for more than 5 minutes. Having said that its been a fun week for me as a barista. I&#8217;m still plodding along with the planning for my new stores, you know what paperwork is like, never fun and always more paperwork to be done. Things are moving on slowly and soon i&#8217;ll be taking more action im sure.</p>
<p>Also this week i&#8217;ve been doing a lot of training as usual but admittedly more than normal, which is great i think as it mean people are still interested in being baristas, coffee shops are either opening or improving their staff and the coffee industry is moving in the right direction. Its also great to see people learning and to read an email or two from students who are enjoying my online barista course and getting somewhere with their barista jobs.</p>

<p>In addition to all that, i&#8217;ve been making improvements to my own website in the hope i can get more people to come and take a look, but this is never a easy task. Anyway, thats my week so far, it doesn&#8217;t sound like much but its certainly been busy for me. What have you guys been up to? <p>I had the idea a couple of days ago of having a VW camper as a mobile <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> van. i found some pics on google and it looks so very cute&#8230;hehe</p>
<p>I asked around on CoffeeForum.com and got some really help info from people so i thought i&#8217;d bring it over here for you guys to read too.</p>
<p>&#8220;My wife and I operate a mobile espresso van in our county. I&#8217;ve been into &#8216;spro for 4-5 years on a home level and we thought about doing a double drive-thru kiosk, but that was going to be expensive and time consuming. I told her we should try going mobile so we can go to the people instead of being stuck in a spot waiting for them to come to us and it just took off from there. She does the business side of it and I have the self-taught technical side of it and it works well.</p>
<p>There are pros and cons with being mobile. Getting &#8220;permission&#8221; to vend in certain areas can be harder than one would think. AND so many businesses worry about you driving into an area and being competition for them&#8230; believe me, we do everything legal and pay our way just like anybody else. There are TONS of food trucks around the U.S. and very few <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> vans. People make the mistake of thinking it&#8217;s easy though and it&#8217;s far from that!&#8221;</p>
<p><em>&#8220;Are there places you are not allowed?&#8221;</em></p>
<p>&#8220;Lots&#8230; college campuses because they usually have some dinky automatic machine in the breakroom that gives nothing more than sludge in a cup when it&#8217;s working. That would be going against their &#8220;no competition clause&#8221; by their current vendors.</p>
<p>Most events we check into are glad to have us because there is nothing around that does what we do. Basically a full blown coffeeshop on wheels. Have a 2 group NS Aurelia, 3 grinders, 2 BlendTec commercial blenders with 4 jars, an icemaker, a BUNN drip system, the van built to CA health code, 90 gallons of fresh water capacity, full size refrigerator, capacity to do 4-500 cups per event if need be. We offer drip coffee, anything espresso based you can imagine, chai tea, hot tea, hot chocolate, all sorts of frozen/blended drinks with espresso or without, fruit smoothies, canned sodas, water, pastries, etc. Having a 13KW propane fired generator allows us to go anywhere as long as the ground is fairly level as we haven&#8217;t added hydraulics&#8230; just yet anyway!</p>
<p>We do as many events as we can squeeze into each month, but also operate it like a retail shop through the week. We have electricity at a daily spot and people come from around our county for what we do. We are currently looking into a spot that will give us 4 times more traffic flow/work area than where we&#8217;re at now. We also do street fairs, musical festivals, birthday parties, cater drip coffee for meetings, fall festivals, Christmas parades&#8230; we give ALL tip money to local non-profit organizations as well. We figure others can use it more than us. We also give all coffee grounds/pucks to a local organic farmer for tilling, composting, etc.</p>
<p>When we started a little over 1 year ago we knocked on alot of doors and made alot of phone calls asking to get into areas. We got 1 YES to maybe 20 NOs. Now we have people approaching us quite often asking if we can do an event for them. So much that we had to decide between 4 events for 1 upcoming Saturday. Will do one that morning and one that evening. The other 2 just won&#8217;t happen. It is alot of work/effort to do what we do. Being mobile is great, but far from easy!&#8221;</p>

<p>So I took a look at his website this morning as I&#8217;m trying to put together a bunch of info on roasting and stuff for you guys and anyone else who wants to read it.</p>

This is a roaster Ed has designed at home using regular stuff you can get at a hardstore. Its a really good read, and well worth looking at. To be honest, i wouldn&#8217;t stand a chance of building one myself even though Ed shows you exactly how, but i am going to get someone to give it a go!! hehe.</p>

<p>In 1763 Buddhist Monks set out on an unknown expedition. It is now assumed that they were in search of a place to build a monastery. And that they found one in a beautiful, sloping terrain at Darjeeling-Queen of the hills.</p>
<p>Established 1885A sedate and pristine location-the Queen of the hills, Darjeeling, is the exotic niche of AryaTea Estate. The plantation spreads across 125 hectares and starting at an altitude of 1820 meters spreads down to 900 meters with average of 1500 meters. Producing 70 tons annually, Aryatea is prolific producer and exporter of the finest range of Black Tea and the delicate varieties of Green Tea. It also has a range of its own jewels-Ruby (Black Tea), Emerald (Green Tea), Pearl (White Tea), Diamond (Chunky Tips) and Topaz (Oolong).</p>

In recent news, Seattle bikini baristas are the target for a new reality tv show rumoured to be called &#8220;Espresso Girls!.
The show is apparently being filmed and directed by emmy award winning professionals looking to recycle the reality tv image.
Personally, i cant imagine a show about bikini baristas is likely to be a hugely exciting show&#8230; but then maybe im wrong.

<p>After reading an article about 2 baristas loosing their home to a fire, i figured i had to write about it.</p>
<p>The fire took the Brooklyn apartment of Sam &amp; Sasha, a <a title="barista" href="http://www.baristatrainingcourse.com">barista</a> couple who have worked in the industry for some time now. The couple could quite easily have lost their lives and their pets. Unfortunately they lost much of their belonging when the fire demolished the unit below thier apartment taking their home with it.</p>

<p>If you on my Facebook you will have seen me add a link already no doubt. This is a website that i have recently started using, and enjoying. The site is not very old but its building up a good following of good people.</p>
<p>The website im talking about is <a title="Coffee" href="http://www.baristatrainingcourse.com">Coffee</a> Forum. A nice little communiy of people who are extremely friendly. This is one of the main reasons i like the forum, its nice to have a read and a chat with people who aren&#8217;t constantly trying to disagree, argue or prove everyone else wrong. At <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> forum you can get a decent conversation, some tips &amp; advice and just enjoy a forum that isn&#8217;t so intimidating.</p>

<p>Being a <a title="coffee" href="http://www.baristatrainingcourse.com">coffee</a> shop owner myself I realise how difficult and time consuming etc etc it can be when opening a new store.. And frankly if I knew what I know now a few years ago I&#8217;d probably be a bit better off.</p>
<p>Wayne has put together a complete package that covers sooooo many things that you dont always see when opening a new store or that get missed in the chaos of it all. His pack helps you organise everything a bit better and I think is invaluable when when opening a coffee shop.</p>
<p>At the time of writing this, I&#8217;m actually starting the process of turning my little brand into a little chain&#8230; and you would not believe how much work I am doing right now. Infact, I had to stop writing an operations manual so I could squeeze in this blog post. If I had the cash, I&#8217;d fly Wayne over here to give me a hand&#8230;</p>
<p>So there you have it, my first product review.. of a sort. hehe. Anyway, its worth checking out if you&#8217;re thinking about making the steps, and to be honest even if you&#8217;re not its worth bookmarking for later.</p>

			<content:encoded><![CDATA[<p>It seems i&#8217;m writting more and more blogs about coffee shops &amp; stands being robbed in the States, which frankly is quite upsetting. In times like this we could do with less crime and a bit more support in the community.</p>
<p>Well my latest bog post is about a Portland <a title="Barista" href="http://www.baristatrainingcourse.com">Barista</a> who decided to take chase of a man who she spotted stealing money from her tips jar (funnily enough we had our jar stolen last week at one of my stores).</p>
<p>Apparently the stores owner saw a man enter the shop asking if he could try free samples, to which the bikini <a title="barista" href="http://www.baristatrainingcourse.com">barista</a> told him he couldnt have. Unfortunatly for her the individual was a touch persistant and kept on for around 5 mins before making a move for the tip jar.</p>

A lot of the time the confusion is in the words, phrases or brand names they use not what they’re actually trying to ask you. Most people understand these days that there are different types off coffee’s etc but I think some coffee shops make it harder by trying to make thinks sound better than they really are. i.e using different languages when they don’t need to – yes Italian espresso based drinks have Italian names, which is fair enough, however using Italian words for cup sizes and so on is just a little more of a barrier and will confuse people. Anyway, that’s one example.
