Do not peel. Heat oil in large heavy fry pan. When oil is hot, brown vegetables very rapidly in 4 or 5 batches. Golden mushroom soup (undiluted)&lt;br /&gt;2 can (4 oz.) mushrooms&lt;br /&gt;1 c. red cooking wine&lt;br /&gt;&lt;br /&gt;Combine all ingredients in crockpot and cook on low for several hours. (This is good meal to start in the morning and forget about) or cook in covered dish for 3 hours in 300 degree oven. Worcestershire sauce&lt;br /&gt;10 oz. ketchup&lt;br /&gt;Dash of lemon juice&lt;br /&gt;&lt;br /&gt;Brown ground beef and onion; drain well. Mix with other ingredients and cook overnight in crockpot on low heat. Stir occasionally. Serve with rice.&lt;br /&gt;&lt;br /&gt;NOTE: In a 3 quart crockpot, you may have to leave out some of the juice from tomatoes or it will run over. usually, when making this stew, I cook a 3 pound chicken and remove meat from bones (instead of the more expensive canned chicken). Also I substitute ground turkey for the ground beef. Add water if chicken broth does not cover. Cook on high 1 hour, then switch to low 6-8 hours. Or cook on automatic 5-6 hours. One half hour before stirring, add macaroni. Serve soup generously sprinkled with cheese. Minute rice&lt;br /&gt;1/2 lb. spinach fresh or frozen chopped&lt;br /&gt;1/2 tsp. oregano&lt;br /&gt;1/4 lb. ham chopped&lt;br /&gt;2 1/2 tbsp. parsley&lt;br /&gt;&lt;br /&gt;Mix beef, 1/2 cup stock, flour and egg. Form into small balls. Set aside. Put remaining stock, chili pepper, carrots and rice in crockpot on high to simmer. When simmering add meat balls cover and cook 1/2 hour. (10-12) flour tortillas&lt;br /&gt;1 med. onion, chopped&lt;br /&gt;2 (10 oz.) cans cream of chicken soup&lt;br /&gt;1 can (1 c.) tomatoes &amp; chilies&lt;br /&gt;4 tbsp. quick cooking tapioca&lt;br /&gt;4 c. grated Cheddar cheese&lt;br /&gt;&lt;br /&gt;In a large bowl mix chicken, soup, tomatoes, chilies and tapioca. Rip 2 to 3 tortillas into pieces and line the bottom of a 5 quart crockpot. Add 1/3 of the chicken mixture; top with 1/3 of the onion and cheese. Repeat layers of tortillas, chicken mixture, onion and cheese two more times. Cover; cook on low for 6-8 hours or on high for 3 hours. For a smaller 3 quart crockpot makes 1/2 recipe.
