Paksiw Na Bangus (Milkfish Stew)

Just had Paksiw Na Isda (Milkfish Stew) for lunch. The kids absolutely loved it. They kept asking for more. Too bad our son can't eat rice because he's allergic to rice.

Ingredients:
3 medium bangus (clean, cut into 3 serving pieces)
2 small ampalaya (quartered)
2 small eggplants (quartered)
1 small ginger (crushed)
4 pieces long green pepper
2 cups vinegar
1 cup water
1 teaspoon patis (fish sauce)

Directions:
In a casserole, arrange vegetables at the bottom. Add in bangus, long green pepper and ginger. Pour in vinegar and bring to a boil. Lower the heat and pour in water. Allow cooking and season with patis. Serve hot.

Tortang Talong (Eggplant Omelet)

Tortang Talong (Eggplant Omelet) is one of my family's favorite. So yummy!

Ingredients:
2 to 4 talong (eggplants), average size
2 to 3 eggs, beaten
salt and pepper, to taste
oil, for frying

Directions:
1. Broil eggplants until tender (the skins are charred and blister appears).
2. Once cool, peel off the skins of the eggplant and retain the crown and the stem. Gently flatten its meat by using the back of a fork. Set aside.
3. In a bowl, beat the eggs and season with salt and pepper.
4. In a skillet, heat oil over medium heat. Dip each eggplant, one at a time into the egg mixture. Gently bring the bowl near the skillet and tip, lowering the eggplant onto the heated oil.
5. Fry until golden brown on one side, then turn and brown the other. Drain on paper towels. Keep warm and serve.

Dear hubby finally got a 10 days off for the Thanksgiving holiday. He's been working ten hours a day, six to seven days a week. He rarely have time with the kids. Spicy Chicken Wings

Ingredients:
12 whole chicken wings
2 tablespoons garlic salt
2 tablespoons black pepper
2 tablespoons cayenne pepper
2 tablespoons fresh greek oregano leaves
2 cups blue cheese dressing, recipe follows

Directions:
1. Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours. Preheat a grill to medium-high.
2. Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
3. Blue Cheese Dressing: 1/4 pound blue cheese 1 cup mayonnaise 1 tablespoon red wine vinegar 1 tablespoon lemon juice 2/3 cup evaporated milk 1/4 teaspoon garlic salt 1/4 teaspoon celery seed
4. Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.
