October is the most exciting month for Bavarian Clockworks because we can’t help but break out the beer steins, put on a polka, and engage in the lively merriment of our German heritage for Oktoberfest. Even if you’ve never been to Germany or don’t have a German bone in your body, odds are very good that you’ve heard of Oktoberfest. But did you know the close connection between Oktoberfest and Black Forest Cuckoo Clocks?

What is Oktoberfest?

When people think of Oktoberfest, they think of one thing first: beer. And this makes sense, because Oktoberfest is the world’s largest Volksfest, otherwise known as a beer festival. When most people think of Oktoberfest, they imagine crammed people on long wooden tables drinking enormous quantities of beer in huge steins.

Even though that may be true, it also consists of a mix of celebrations including German traditions, food, and beer. Oktoberfest is actually a festival that has run for more than 200 years, originating in Bavaria and lasting between 16 to 18 days. And yes, huge amounts of beer are served at Oktoberfest. In 2013, it was estimated that in Munich, Bavaria, Oktoberfest (the official Oktoberfest) served more than 7.7 million liters of beer, or 1.7 million gallons.

But it’s not just beer that entices people to an Oktoberfest;: There's also parades, bands (both traditional and modern), amusement park rides, and games. There are also more than two dozen massive tents that deliver different experiences--many serving food (from roast ox to fish) and others including crossbow competitions, celebrity encounters, wine tasting, tributes to the 30 years war, and more.

Oktoberfest is many things to many people, but it is quintessentially German. So there’s no surprise that Oktoberfest has worked its way so thoroughly into Black Forest cuckoo clocks.

What is the Black Forest?

The Black Forest is a large wooded region in the southwest of Germany, in the state of Baden-Wurttemberg. Although it was historically used for its timber and mineral resources, now the Black Forest thrives on tourism due to its iconic tableaus of the “perfect” picturesque view of the Germany country.

The food of the Black Forest is legendary and has spread worldwide. You can get Black Forest ham in every grocery store and Black Forest Cake--a chocolate cake with cream, sour cherries, and Kirsch (a cherry brandy)--in most bakeries.

Cuckoo Clock Movements

One of the distinctive features of a Black Forest Cuckoo Clock is its mechanical movement. These precise mechanisms--the mechanics that make the clock tick, turn, and cuckoo on cue--are all managed by what’s known as the movement. A clock’s movement is a series of gears, shafts, and bellows that keep track of passing seconds (giving the clock its familiar tick-tock sound) all driven by the gravitational pull of the weights for a specified amount of time, and finally moving the bellows and mechanical music box that give Black Forest cuckoo clocks their distinctive sound and function.

There are three main types of movements: the 1-day movement, the 8-day movement, and the quartz movement.

1 Day Movement

The one-day movement must be wound every day, by pulling down on the chains to draw the pine cone shaped weights up to the base of the clock. This winding process will reset the clock and keep it running day to day. It’s a classic design, great for those on a budget, but it requires you to wind up the weights each and every morning, and is ideally suited for those who don’t mind a little more interaction with their clock.

8 Day Movement

The eight-day movement must only be wound every week or so (seven to eight days) which makes it much less labor intensive than a one-day movement. It has every feature of the one-day clock but it doesn’t require nearly as much winding, making it more convenient than a one-day cuckoo clock.

The Quartz Clock

The quartz clock uses a quartz crystal to keep time (similar to a quartz watch). It is battery-powered, rather than weight driven. Both the bird’s cuckoo and the music box are digital and activated by batteries, as is the movement of the clock hands. The only maintenance required is changing the batteries. Quartz movements contain plastic parts and are less expensive than traditional brass mechanical movements.

Only cuckoo clocks containing mechanical movements can qualify for certification by VdS (The Black Forest Clock Association)) an organization in Germany that certifies Black Forest cuckoo clocks as authentic. While many of our quartz clocks are hand carved in Germany, a clock must be mechanically driven and manufactured in the Black Forest to be eligible for certification. Therefore clocks with battery operated movements do not qualify even though quartz versions are built by the same craftsmen that build the certified mechanical clocks.

Even a cursory amount of research into cuckoo clocks will yield a wealth of information. There are volumes of historical information on the origin and construction of these wonderful styles of clocks, along with the many different styles one can find in them, the music they play, and the forms of operations they use. Pretty soon you will come to realize that a cuckoo clock is not as simple as the caricaturish version of one, a decoratively carved wooden clock with a small bird that sings at regular intervals. In truth, the history and lore behind them are far more complex than it would seem at first.

Considering that, you may have come across one of these clocks styled or termed as a coo coo clock and wondered if there was any discrepancy between the spellings. In summary, there is no difference between a coo coo clock and a cuckoo clock, and that the difference in spelling is either a mistake or incidental. Perhaps this disparity can easily be explained away but it requires a bit of background on the fauna of the old world.

Let’s take a look at why cuckoo clocks are named what they are named in the first place. Regardless of the design any one given clock takes, if it is to be called a cuckoo clock it must contain a small bird within the design of the clock. Usually, this bird occupies a recessed area of the clock’s case and above its face. In clocks that are designed to chime or play music on the hour and half-hour, these miniature birds emerge from the recess and sing their song, which is usually a two-note call that sounds like the voice of the eponymous namesake itself, the cuckoo bird.

The common cuckoo is a bird that inhabits most of Europe and is a relatively familiar sight throughout most of its range. It is a handsome bird with a flared tail that mimics the appearance of the sparrowhawk, and it has a very recognizable voice. During their nesting season, the male common cuckoo calls loudly in a two-note call that you might have been able to predict at this point. Birdwatchers and ornithologists liken the call of the common cuckoo to a stylized “goo-koo” or “coo-coo,” which is all too familiar. This is not unusual - many birds, and indeed some frogs and insects are named for their voices. Think of the katydid that breeds in the summer and is named for its strident, typically triply-noted call. Or consider many of the birds in our range that are named for their voices; the bobwhite, killdeer, and whip-poor-will, among others, occur throughout large areas of North America and are named for their calls.

The reason that the clock is called a cuckoo clock is clear at this point - it is named after the bird that is contained within its case. As for the name of the bird, that is evident from its call, and as for why the bird was chosen, it is likely to assume that it was a relatively common sight for people living in Germany where these clocks were traditionally made. In fact, even today, in order to be considered an authentic Black Forest Cuckoo Clock, one of these must be entirely handmade in the Black Forest region of Germany, with the exception of the music box which is permitted to be manufactured in Switzerland.

Back to the discrepancy regarding the name; as the name of the bird itself is a backformation of the sound of its call as interpreted by listeners, throughout history there have been different stylings of the call. Today the bird is accepted into standard English, but as the call has been transcribed using more than one spelling, coo coo may be an alternative spelling for the sound of the bird's call, or simply a mistake. Regardless, you are liable to come across this spelling periodically, even though the more formal spelling is far more common. Suffice it to say that despite this long explanation, there is no significant difference between the two names. They are simply alternative spellings. So then, what of some of the different types of cuckoo clocks?

Operation of a Cuckoo Clock
As mentioned, to be considered an authentic Black Forest Cuckoo Clock, there are some very stringent requirements set out by the Black Forest Clock Association, or the Verein die Schwarzwalduhr, also known as the VdS. Many years ago, in the early days of clockmaking in the Black Forest Region, the clocks were made entirely from wood, and of course, entirely by hand. That does not specifically limit the handiwork to the case of the clock - originally the entire clock, including its internal gears and mechanisms, was made of wood. Advances in technology have made more resilient materials like brass available and these are nowadays the norm.

However, Black Forest Clock Association certification still requires all clocks to be made in the Black Forest Region to be made by hand from wood, with the exception of the internal brass movement. The music boxes may be made in Switzerland. However, all carving and assembly must still be done by hand in the Black Forest Region. In addition, to be considered authentic, these clocks must possess a mechanical movement, which stands in contrast to the quartz movements that are so common in modern clocks.

A clock based around a mechanical movement is powered by gravity instead of electricity and therefore needs no power besides the potential energy of gravity in order to keep time. Gravity powers not only the movement of the clock but also the movements of the cuckoo bird and characters within the case, along with the music or notes the clock plays.

A system using weights and a pendulum is all the power that is needed to keep time and actuate a mechanical clock. The weights of an authentic cuckoo clock, which are traditionally made in the form of pine cones, and clocks typically contain two or three weights.

Non-musical clocks typically have two weights whereas clocks with a music box will have three. Regardless of the style of the clock, one weight powers the timekeeping of the clock, one operates the movement and sound of the cuckoo bird, and in clocks with a music box, the third weight operates the music box. To power the clock, the weights are wound up by a chain that wraps around a gear that powers the internal gears of the clock.

With respect to the activation of the little cuckoo bird that these clocks often contain, this is driven by the power of the weights as well. Most clocks contain a little cuckoo that emerges on the hour and makes its signature call, a ‘cuckoo’ sound, somewhat reminiscent of the voice of its namesake.

The cuckoo birds movement in and out of the clock is powered by the weights, as is the call. There are two bellows and two pipes on the clock. Each pipe is designed to make one note of the call, either a “cu” note or a “ckoo” note. When the bellows release air through the pipes in accordance with the weights that power them, the pipes vibrate and make these sounds. The sounds vary with the volume of air as well as with the measurements of the pipes.

As the weights pull on the chain gear, their descent is regulated by the movement of a pendulum that keeps rhythmic time. The pendulum swings at a constant rate so from that time can be derived in the form of seconds, minutes and hours. When the weights get to the floor, they simply have to be rewound and the clock will continue keeping time. In fact, as long as the clock is rewound before the weights drop fully, the clock will continue to keep time and will not need to be set. Considering this, there are two main types of clocks that are powered by a mechanical movement.

1 Day and 8 Day Clocks
You will often see authentic clocks labeled either as 1-day or 8-day clocks, but don’t be intimidated by this distinction. It’s even simpler than it sounds and can be easily explained. Basically what it boils down to is the length of time (or close to the length of time) that a clock can keep time before it needs to be rewound.

A 1-day cuckoo clock, as its name might suggest, cannot keep time for much longer than a day. In other words, if you wind up the weights fully, they will reach their lowest point within around 30 hours and therefore must be rewound within that time frame in order for them to continue to keep time. If you can remember to rewind the clock before the weights wind down, this is generally a more affordable option to 8-day alternatives. A good way to work with this is simply to remember to wind your 1-day clock at the same time every day. That will prevent the clock from stopping, and moreover, will enable the clock to keep time without having to be reset. In addition, 1-day clocks tend to be smaller and weigh less than other 8-day clocks.

By contrast, 8-day clocks can keep time for about a week or 7 days. That is, you need to remember to wind them up at least once per week in order to enable them to keep time. Examples in 8-day clocks tend to be significantly larger and heavier than styles of 1-day clocks, though they do not require as much attention. Like a one day clock, consistency is key. Just pick one time each week to remember to wind the clock and the clock will continue to keep time for you.

Quartz Movement Clocks
With all of this talk about the different types of mechanical cuckoo clocks and how they work, it can be easy to forget that there are other options for those looking for the appeal of one of these clocks without the hassle of winding, or the expense associated with traditional clocks. Although a clock must contain a mechanical movement in order to be certified as an authentic Black Forest clock, there are other styles available to modern consumers, including quartz cuckoo clocks.

Whereas mechanical clocks are powered by gravity and a pendulum and thus must be wound, quartz clocks use the power of electricity and the precision of quartz in order to keep accurate time.

The basis by which a quartz clockworks is actually fundamentally the same as a mechanical clock, although the methods of going about it are different. With a mechanical clock, the pendulum swings at a rhythmic speed. With a quartz clock, batteries within the clock feed electricity through a quartz crystal, which vibrates as the energy travels through it as a part of a circuit. The quartz vibrates very rapidly, at almost 33,000 oscillations per second, but very predictably as well. The electronic components then calculate the time as a function of the vibration of the crystal. They have the potential to be very accurate and very affordable. After all, quartz is extremely precise, and despite the apparent complexity of this system, one of the most common minerals on earth.

Although quartz clocks do not qualify for VdS certification because they are not powered by mechanical movements, there are some cuckoo clock makers that still produce high-quality clocks with a very traditional appeal. They are a reasonable alternative for those who do not wish to have to remember to wind their clock every day or week.

1.They have been made for so long, no one knows exactly when the practice originated

Cuckoo clocks have been made for centuries in the southern Black Forest region of Germany; for so long, in fact, that their exact origins remain a mystery. We know it to be likely that the practice originated from enterprising Black Forest farmers looking to supplement their income through the winter months by selling handmade clocks, and that there are attestations dating back to the early 1600s, but just how long they have been produced is a mystery.

2.To be certified, they must be made in the Black Forest Region of Germany

An organization known in German as the Verein die Schwarzwalduhr (VdS) and in English as the Black Forest Clock Association certifies the production of authentic cuckoo clocks. Some clockmakers certify their own clocks too. For a German Black Forest Clock to be certified authentic by the VdS, it must be made in the Black Forest Region of Germany. The only exception is that the music boxes contained in some musical clocks may be made in Switzerland, as per tradition.

3.They must be made by hand

As per the regulations of the VdS, it is not enough for a  German Black Forest cuckoo clock only to be made entirely within the region; it must also be built by hand. There are no exceptions for this, and all parts, including the internals, must be built by hand within the region using time tested traditions. This brings up another interesting fact.

4.They are made of wood (with very limited exception)

The VdS takes this a step further. In antiquity, all cuckoo clocks were made entirely of wood, including the internal gears that powered the clock’s movement. As you can imagine, the very fine teeth and arrangement of the gears make this a challenge for even the strongest of woods, so as technology adapted, the gears and other internals were later made from brass. Today, a certified German cuckoo clock must still be made by hand from wood generally sourced in the Black Forest with the exception of the brass internals.

5.Authentic clocks require only the power of gravity

As electricity, and subsequently, batteries, are relatively modern inventions, and we know the history of Black Forest clock making to extend at least as far back as the 1600s, the first cuckoo clocks could not have been powered by electricity. Still, today, to be considered an authentic German Black Forest cuckoo clock , a clock must contain a mechanical movement. This consists of a weight, a pendulum, and a system of gears to power the clock and keep time. It’s not limited only to the movement of the clock, however; the cuckoo bird, and, in the case of musical clocks, the music box, is also powered by weights.

6.You can usually find them in 1-day and 8-day movements

It is customary to find most designs in Black Forest cuckoo clocks in 1-day movements or 8-day movements, signifying the length of time that a clock’s movement will keep time before you need to rewind and reset the weights. Don’t be fooled, though - a 1-day clock typically lasts somewhere between 24 to 30 hours whereas an 8-day clock typically lasts about 1 week.

7.There are many different styles of cuckoo clocks

Finally, there are many different styles of clocks, and not all of them are traditional, authentic styles. To some out there, the definition of a cuckoo clock might seem self-evident. In essence, some might have a preconceived notion that if a clock has a little bird in it that sings every hour or half-hour, or maybe even plays music, then all of the boxes are checked off.

In truth, there is much more to most cuckoo clocks than initially meets the eye. There are many details hidden in the rich history of clockmaking in the Black Forest region of Germany. These finer points simply cannot express themselves in one superficial detail. A defining feature of many cuckoo clocks is that they do contain a small bird that sings, typically on the hour and at the half, but with a closer look the cuckoo clock begins to reveal many pleasant little surprises courtesy of its Black Forest maker. The question is then, what is a cuckoo clock? Or, more specifically, what is a  Black Forest Cuckoo Clock?

Perhaps most often you will see the term more carefully fleshed out as “Authentic Black Forest Cuckoo Clock ,” and the prescription for this is adequately described by the Verein die Schwarzwalduhr, or the Black Forest Clock Association.

In order to meet VdS certification standards, a cuckoo clock must meet a number of requirements. In the first place, and perhaps most obviously, the clock in question must be made by hand in the Black Forest region of Germany. This includes every single piece of the clock involved, from the wooden case to the mechanical movements inside the clock. The only exception to this rule is the music box. The musical movements are typically sourced in Switzerland. The VdS makes this exception as Swiss music boxes are world renowned for their quality and craftsmanship.

That’s another thing - in the past, the clockmakers who made the traditional clocks coming out of the region made them entirely out of local woods. In part, this was because must do is a good master, and necessity is the mother of invention. They used what they had, and wood is plentiful in the Black Forest. Historically, these clocks were entirely made of wood including the gears and internal components of the movements.

As you might imagine, wood, even the strongest and hardest of woods, is far inferior to maintaining its shape and in wear resistance to most metals. Over time, clockmakers made the shift to metal internals and gears for their clocks. Today, the Black Forest Clock Association certifies authentic clocks with internals made from brass. These brass movements have been produced and assembled entirely in the Black Forest since their infancy in the late 1860s.

In addition, and as mentioned, the case of the clock must be made from wood and built by hand. Traditional Cuckoo Clocks

Traditional cuckoo clocks are more than likely what most people think of when they hear the words “cuckoo clock.” There are a few different features that help to define traditional cuckoo clocks and set them apart from some of the other styles that we will investigate here.

Traditional clocks often feature a rich, dark wood stain and very ornate carvings that celebrate the bucolic heritage of the region in Germany that so intensely color their history and creation. Many traditional cuckoo clocks showcase themes of nature and the wilderness, along with the heritage shared by woodworkers, sportsmen, and others from the region.

For example, it is very common for traditional clocks to feature engravings of trees, forest scenes, flowers, or leaves and other native fauna. Birds, bears, trophy bucks, and other wildlife are commonly represented among the relief scenes of many traditional Black Forest clocks. Oftentimes, the spoils and implements of the hunt are richly carved into the case, along with other related details.

Traditional clocks are not only richly stained but often colorfully painted, which is also crafted entirely by hand. Another common element of their style is the cast-iron weights that they use to power their movements, that typically take the likeness of pine cones. Occasionally clockmakers will carve wooden weights to further enhance the look of the clock too.

Ultimately, if you see a cuckoo clock that includes elements in its design that are geared toward the rural heritage of the Black Forest, it can likely be classified as a traditional cuckoo clock. Chalet Style Clocks

Another very popular category of clocks comes in the form of Chalet style clocks. For these clocks to be certified authentic, they might meet all of the requirements aforementioned. However, in terms of their design and appearance they are somewhat distanced from traditional style clocks.

They are still carved by hand and may be just as richly detailed, but whereas traditional clocks make the most of wild influences, Chalet style clocks depict scenes of life in the Black Forest, farm life, and social scenes at the local Bavarian biergarten. Whereas a traditional clock would showcase a black powder smoothbore alongside a hare and some fowls, a Chalet style clock is going to present some of the fineries of village life.

There are several different subcategories into which Chalet style clocks can be organized, but in general, they feature the scenes from civil life. Anywhere among the richly decorated scenes of one you might be likely to encounter a miller or sawyer about his work, or some villagers leisurely enjoying some authentic German ‘Bier.’ In addition, they typically feature a balcony around which little carven characters dance to the music after the cuckoo chimes.

To further define Chalet style clocks, one can break them down into “Black Forest House”, “Bavarian Beer Garden” and “Swiss Alpine House” styles, each of which has its own subtle characteristics.

Black Forest House style Chalet clocks are just what they sound like. Oftentimes they showcase a private domicile with an overhanging roof. Typically they feature a few scenes from domestic life that would be common in the region and are richly decorated with details of that lifestyle.

Bavarian Beer Garden style clocks, like the former, feature a design that falls into line with the name. They feature denizens of the region enjoying the fine cuisine and company of the region. Characteristically, they depict scenes that one might experience at a Biergarten, including, unsurprisingly, local figures enjoying the brews.

Swiss Alpine House style Chalet clocks usually have very steeply slanted roofs as features of the houses they depict. These roofs would have been common in some alpine regions with heavy snowfall as the sharp angle of the roof would shed snow.

Vintage Style Clocks

While Chalet Style Clocks and Traditional Style Clocks are very popular, there are many other styles of clocks that we offer on our website that follow somewhat different futuristic guidelines.

Vintage reproduction style clocks, also known as Antique reproduction clocks, are clocks that are designed after styles that were once more popular. Many vintage reproduction clocks mimic the styles that were popular in Europe at the same time as the height of popularity of the Baroque and Rococo schools of design. Characterized by extremely fine detailing for its own sake and extremely intricate patterning and carving, Baroque and Rococo clocks are very involved and ornate. There you will find some elements in common. Extremely fluid, graceful lines and floral motifs are common with these styles of clocks, along with elegant and highly involved patterning that requires immense skill to produce.

Another popular category of vintage reproduction clocks follows a style known as Railroad style clocks. Railroad style clocks are also called Bahnhaus style clocks are so named because they are modeled after railroad gatekeeper houses.

Shield Clocks

Many Shield clocks can also be classified as vintage reproductions because they are reproductions of an earlier style. In fact, shield style clocks are one of the oldest styles of cuckoo clocks still produced, and even more interestingly, sometimes they even lack a cuckoo bird as part of their design but still have that familiar chime on the hour that accompanies the cuckoo.

Shield clocks were in production as early as 1750 which makes them one of the oldest styles of clock in this list, although stylistically they are a bit different from the styles mentioned so far. Shield style clocks take the form of a square case with a semicircle atop it and are only decoratively and colorfully painted. What they lack in the ornately graven designs of traditional cuckoo clocks, they make up for with their bright colors.

Some popular styles of shield clocks are the miniature style shield clock which is also known as a Jockele clock, as well as shield clocks that do not contain a cuckoo. Modern Cuckoo Clocks

In addition to the styles of cuckoo clocks that we have so far investigated, there is another popular category of cuckoo clocks known as modern cuckoo clocks.

While many modern cuckoo clocks are aesthetically very different from the other styles we have shown so far, many of them are manufactured according to strict standards, are handmade with mechanical movements, and thus qualify for VdS certification. If a modern cuckoo clock meets these requirements, it is considered an Authentic Black Forest Cuckoo Clock.

However, many of them are made with newer movements such as quartz or digital movements and take batteries. In a lot of ways, a modern cuckoo clock can fit into many different environments for which a traditional clock might not make the same seamless fit.

Many modern cuckoo clocks represent a geometric or minimalist take on traditional designs, while others pay more of a tribute to these past influences. A modern clock can give you the freedom to pick and choose between design aesthetics you prefer in a cuckoo clock. While there is still a level of uncertainty surrounding the precise origins of cuckoo clocks, the tradition of carving elaborate clocks in wood showcasing the likeness of a bird as a chime has strong ties to Bavaria in Germany. Clockmaking was also a way for the rural inhabitants of the Black Forest region in southern Germany to supplement their income. They would create clocks from gathered wood carve elaborate designs into them during the winter season. Though it was common in that region at the time as a financial lifeline, it became a cultural tradition that continues to this day. In the current era, Southern Germany is well known for producing some of the most beautiful and lavishly decorated cuckoo clocks in the world.

Today’s Traditional Cuckoo Clocks offer the modern shopper some improvements over the models of the past. They are still meticulously graven or painted, though today they are built using brass gears instead of wood. If you’re looking to WOW your guest at your next dinner party; this is the recipe for you!  This Black Forest Cake will not only encapsulate one’s mouth in a decadent flavor of dark chocolate, cherries, and sweet cream, but will also be a conversation starter.

BLACK FOREST CAKE RECIPE :

INGREDIENTS:

CAKE

1 2/3 cups all-purpose flour

2/3 cup dark cocoa powder
1 ½ teaspoons baking soda
1 teaspoon sea salt
½ cup shortening
1 ½ cups white sugar
2 eggs
1 ½ teaspoon vanilla extract
1 ½ cups buttermilk*

FILLING

½ cup Kirsch (cherry liquor)**

½ cup unsalted butter
3 cups confectionary (icing/powdered) sugar
¼ cup espresso
1 ½ lbs fresh black cherries

ICING

2 cups heavy whipping cream

1 teaspoon vanilla extract
1/8 cup Kirsch
2 tablespoons powdered milk
2 tablespoons icing sugar

TOPPINGS:

½ cup dark chocolate shavings

Handful of dark cherries
Sprinkle of icing sugar
* For home-made buttermilk: Pour 1 cup of milk into a bowl and squeeze in the juice of one lemon or 2 tablespoons of vinegar. Mix and let sit for at least 5 minutes.

** if serving to children, do not use kirschwasser but instead a cherry juice.

DIRECTIONS

1) Pit all of the cherries and place in a bowl with ½ Kirsch. Cover with wrap and let sit overnight to soak.
2) Preheat oven to 350°F. Line the bottom of three 9 inch round cake pans with parchment.
3) Mix the cake’s dry ingredients together in a bowl.
4) Place the shortening and sugar in a bowl and with an electric mixer, cream together till peaks start to form. Add the eggs and vanilla - mix well.
5) Alternate mixing in a bit of the dry ingredients and the buttermilk to the shortening mix to well combined.
6) Pour cake batter evenly into each of the 3 pans.
7) Bake for 20 minutes or until a tooth pick comes out clean.
8) Place the cakes on a cooling rack and make some holes in the top of the cake with a toothpick. Pour 1/2 cup of the Kirsch liquid (from the bowl of soaking cherries) onto the cakes.

Filling:

1) Place butter in a bowl and beat with an electric mixer till creamy.
2) Add the icing sugar, salt and espresso - mix well. (Add small amount of Kirsch if too thick).
3) Cut the cherries from the soaking bowl into halves.
4) Put one the three cakes onto your serving tray/plate then spread half of the filling on top of that cake. Coat with cherries then place a second cake layer on top.
5) Spread the last half of the filling over that layer of cake, cover with cherries then place the last layer of cake on top.
6) Cover in wrap then let sit in the fridge for 1-2 days to let the Kirsch to soak into the cake making it extremely moist.

ICING (to prepared on the day you will serve the cake):

1) Place cream in bowl and with an electric mixer, whip until it peaks form.
2) Lightly fold in the dry milk and icing sugar.
3) Add the vanilla extract then slowly pour in the Kirsch until it's a smooth consistency.
4) Spread the icing all over the top and sides of the cake
Toppings: Place a handful of cherries on top, sprinkle with chocolate shavings, and dust with icing sugar.

FUN FACT: The record for the world's largest authentic Black Forest gâteau was set by K&D Bakery in Germany on July 16, 2006. The cake was roughly 80 m² and weighed 3,000 kg. They used 700 L of cream, 5,600 eggs, 800 kg of cherries, 40 kg of chocolate shavings, and 120 litres of Kirsch to make the cake!

The Black Forest (or Schwarzwald) is a region in southwestern Germany. The Black Forest of Germany is known for abundance of nature and diverse landscapes. It is not uncommon for this area to be called “the most beautiful place in Germany”.

However, the Black Forest Cake is not named after the Black Forest region of Germany but rather one of the ingredients in the cake. Schwarzwälderkirschtorte in German, means Black Forest Cherry Torte or Gateau. The cake consists of multiple layers of chocolate sponge cake, cherries, and whipped cream. The name comes from the liquor Kirschwasser, that is used both to soak the sponge cake and infused in the whipped cream. This brings a rich moist flavouring to the cake.

Some historians believe the cake, in fact, got its name from the traditional outfit that was worn by women in the Black Forest. This attire consists of a black dress, white blouse, and a hat with red pom poms on top, all mimicking the chocolate shavings, cream, and cherries that top the cake.

During the 16 th century, chocolate began to be integrated into pastries in the Black Forest Region. Sour cherries were also starting to become popular in the area, which are the main ingredient for making the cherry brandy Kirschwasser – by double distilling sour Morello cherries. But the magical combo didn’t occur until a man by the name of Josef Keller came along. His first invention was “ Schwarzwaelder Kirsch ” (translation: “Black Forest Cherry”) in 1915. Keller later built his own café and eventually passed down his recipe book to co-worker August Schaefer.

Presently the recipe book with the original recipe for the renowned Black Forest Cake aka “Schwarzwaelder Kirsch” can be found with August Schaefer’s son, Claus Schaefer. In 1949 the Black Forest Cake took the title of the 13 th Best Known Cake in Germany.

Now, the Black Forest Cake recipe has been adapted into numerous variations to suit different diets (gluten free, sugar free, vegan, etc). 

Note: You should start preparing this recipe at least 1 day before you plan on serving, as the kirsch needs time to soak into the cake.

One of the oldest and largest Oktoberfest events in the United States. Alpine Village hosts traditional Bavarian fun, where guests can expect music supplied by the likes of Oom Pah Pah party bands, German food like Pretzels, Pork Schnitzels, Alpine Weiner Dog (sandwiches ;) ) and lots of German beer on tap brewed by Paulaner. There is a special German American Day celebrated on October 7th, with special events kicking off at 11 am.

The first Oktoberfest in Zinzinnati was held in 1976 and has grown to be one of America’s largest beer festivals attracting 575,000 attendees each year. San Francisco, California

Oktoberfest By The Bay claims to be ¨the best in the West¨. Celebrated across 3 days in September. This years event will be headlined by a 21 piece - Chico Bavarian Band who will be playing for the duration of the event. Traditional Bavarian dancing performances will be provided by The Nature Friends Schuhplattler every other hour. On Sunday, the final day of the event, Oktoberfest By the Bay teams up with United German American Society to host some German traditions - parades, log cutting, and traditional dancing.

This year will mark the 49th Denver Oktoberfest, one of the longest running Oktoberfest festivals in the United States. What started in 1969 with some Pretzels and a few kegs of beer, has since grown into an annual event that attracts 350,000 visitors across 4 days of festivities. Keg bowling, anyone? 

La Crosse, Wisconsin

Helen, Georgia

Helen, known as the Alpine village with Bavarian charm, sits on the edge of the incredible Blue Ridge Mountains. The 48th annual Oktoberfest kicked off this year on September 6th, with weekend events happening until the September 27th. Then Oktoberfest events will be daily until the closing date of October 28th. Visitors can expect lot’s of German music, dancing, food, and beers from this celebration of the internationally renown beer festival. 

Leavenworth, Washington

Leavenworth is located in Washington’s States Cascade Mountains and is modelled on a Bavarian village. According to the 2010 census, there are fewer than 2,000 residents living in the town. During Oktoberfest, the town swells considerably during the three weekends of events October - 5 & 6th, 12 &13th, 19 & 20th, so be sure to book your accommodation early! It is now ranked as one of the best Oktoberfest events in the country.

Nashville has been hosting this Oktoberfest event since 1980. Now entering it’s 39th annual year, they know how to host one of the biggest Oktoberfest events in the US. A glimpse of the entertainment includes the Dachshund Derby, 5k Bier Run, Live German Music, and an Annual Pup Parade. There are many more events planned and a constant supply of German Beer & Food. 

Tulsa, Oklahoma

The USA Today has ranked Linde Tulsa’s Oktoberfest as one of the best in the country. This year marks the 40th annual event in the River West Festival Park, overlooking downtown Tulsa. There will be a huge range of entertainment during the weekend in 40 huge tents similar to those you'd find in Munich, lot’s of music, dancing, beer drinking, and traditional german food on offer. The special event is the das Glockenspiel presented by Williams - which is music, and a dance that emulates a human cuckoo clock!

This event attracts more than 300,000 people every year during this 4-day Oktoberfest event which runs on 12-15th September 2019. Put it in your diary, it’s set to be bigger and better.
