The Barbecue (BBQ) Rules

Therefore, it is important to refresh your memory on the etiquette of this sublime outdoor cooking activity .

When a man volunteers to do the BBQ, the following chain of events are put into motion:

Routine…

(1) The woman buys the food.
(2) The woman makes the salad, prepares the vegetables, and makes dessert.
(3) The woman prepares the meat for cooking, places it on a tray along with the necessary cooking utensils and sauces and takes it to the man who is lounging beside the grill - beer in hand.
(4) The woman remains outside the compulsory three meter exclusion zone where the exuberance of testosterone and other manly bonding activities can take place without the interference of the woman.

Here comes the important part:

(5) THE MAN PLACES THE MEAT ON THE GRILL.

More routine…

(6) The woman goes inside to organize the plates and cutlery.
(7) The woman comes out to tell the man that the meat is looking great. He thanks her and asks if she will bring another beer while he flips the meat

Important again:

(8) THE MAN TAKES THE MEAT OFF THE GRILL AND HANDS IT TO THE WOMAN.

More routine…

(9) The woman prepares the plates, salad, bread, utensils, napkins, sauces, and brings them to the table.
(10) After eating, the woman clears the table and does the dishes.

And most important of all:

(11) Everyone PRAISES the MAN and THANKS HIM for his cooking efforts.
(12) The man asks the woman how she enjoyed ‘ her night off ‘, and, upon seeing her annoyed reaction, concludes that there’s just no pleasing some women.

Every once in a while when looking for great barbecue joints you run across a real gem, a diamond in the rough as they say. That happened to me today while on a road trip to Nashville. Just off of Interstate 24 at exit 86 (Oak Grove Kentucky and Fort Campbell) there is a small barbecue restaurant in HWY 41-A called Old South Bar-B-Q. I have driven past here several times over the years but for one reason or another never stopped. There are always cars in the parking lot which is a good indicator that something good is cooking.

Well today I stopped and am I glad. The building itself looks kind of run down and old but it really isn’t bad at all. In fact it ads to the whole “bbq joint” feel of the place. Walking in the door we were met by a very pleasant woman named Laura who told us to take a seat anywhere. You could tell this place was near a major military base as there were posters and photos supporting our troops everywhere (I like this). She asked what we would like and after looking over the menu I decided on the Brisket and Cecil my travel partner said he wanted the same plus a side of pulled pork. In about 5 minutes we got our plates and it looked like some top notch barbecue brisket. There was a generous helping of sides (for me potato salad and baked beans with corn bread) and the brisket looked very good. There was a nice smoke ring penetrating the meat about an eighth of an inch and the meat was definitely juicy. I took my first bit without any sauce or any thing added and let me tell you it was first rate. The meat was very tender and juicy with just a slight smoke taste. I wasn’t disappointed! These gals knew what they were doing. For the next bite I added some sauce which was in an unlabeled bottle and it was very good. I should have asked what kind it was and if they made it themselves……. hhhmmm now I have an excuse to go back.

I like barbecue that is easy to chew…… no work involved here. The meat was not tough and it pulled off very easy. This was some really good barbecue and I could kick myself in the butt for not stopping in before this. Overall the experience at Old South Bar-B-Q was grade A and I thoroughly enjoyed our stop there.

I give Old South Bar-B-Q a BIG THUMBS UP. If you are ever travelling Interstate 24 between St Louis and Nashville and you are looking for someplace to eat be sure to stop off at exit 86 and go north on Hwy 41-A for about a mile and it is on your left.

The address is:

Old South Bar-B-Q, 11275 Fort Campbell Blvd (Hwy 41-A) Oak Grove/Fort Campbell KY.

Chocolate and barbecue. Things that make you hhhmmmmmm. This is one of them and I must say it was a pleasant suprise. I opened my box and there were two bottle of chocolate barbecue sauce; one is the Donya Marie’s Original Dark Chocolate Barbecue Sauce and the other is a spicy sauce called Sassy Fiesta which I hope to try next week at my Fathers Day cookout.

First impressions was of a very professional and elegant label on a rather heavy 12 oz bottle. When it comes to marketing visuals are almost as important as taste, especially when trying to tempt someone to pick your bottle up off the shelf over someone elses. I like the simple and classy label. The next thing I noticed was when I tipped the bottle how thick the sauce was inside. I prefer thick sauces to ones that are thin and transparent.

I opened the bottle and took a whif and immediately liked it. There didin’t seem to be any single overpowering ingrediant and the aroma was very pleasant. I dipped my finger in for a quick taste and there it was….. bbq sauce with the taste of chocolate. The chocolate was not overpowering but it was there. As a side note, this would make a great dipping sauce with just about anything, especially just your finger…. I decided to try this with some grilled boneless chicken breasts and put about 5 large pieces in a freezer bag with about half a bottle of sauce and made sure all the pieces were well covered and put them in the refrigerator for a couple of hours.

Finally on the grill they went and it didn’t take long for that aroma to reach me. The chicken cooked through but the suace didn’t burn which was good. I don’t mind a little carmelization but too much seems to steal away from the flavor. Off the grill and onto the plate and we were ready. I poured a little extra sauce in a bowl to dip for a little extra flavor. My first bite was straight up with no extra and the taste was great. A little more of the tomato and vinegar taste came out after cooking but the chocolate was still there. Once again no one ingrediant overpowering the other. The next bite I dipped into some extra sauce and it was perfect. This is some really good stuff !!!!

I really enjoyed this unique sauce and highly recommend it to anyone looking for a good solid barbecue sauce with a little something different.
