Then we conditioned the beer on smoke-tingled chipotle peppers, sea salt, and added a ton of peanut butter to balance the roast, spice, & smoke.”

Flavor Text: An American Bitter. It is a combination of British Malt, a London Thames derived Ale yeast, and American Hops. We love Bitters; they are an everyday drinking beer, full of body and flavor, which sets them apart from American Craft Session Ales, which tend to be much lighter bodied. These are very refreshing, but we wanted to do something a bit different. The malt and yeast provide a hearty sweet backbone, but rather than use British hops, which can be lackluster, we used a very American dose of Cascade to give it a good bitter bite, and a piney nose.

Flavor Text: A 50/50 blend of pale malt and malted wheat, with 100% Massachusetts grown Rakau hops liberally sprinkled through the entire brewing process, from boil to dry hopping. A few pounds of coriander in our hop back yields a super fruity, spicy note, and the purposely unfiltered, quite hazy wheat character adds depth and body. Tart apple notes from the coriander, plus a hint of hop bitterness and juiciness, along with fruity and earthy aromatics from the dry hopping.

Flavor Text: A full bodied, and full flavored Porter. Strong notes of chocolate and coffee, but without the strong roast trending to burnt notes of more traditional porter. The secret is a Chocolate Rye Malt from Valley Malt in Hadley, MA. It gives color, spiciness, and a hint of sweet chocolate, and doesn’t get too dark in the process.

The pair are Swedish and the name comes from slang for one’s forehead shape in Nordic countries.

The story of Victory Brewing Company starts on a school bus in 1973 when fifth-graders Ron Barchet and Bill Covaleski stepped aboard. In 1985 Bill gave Ron a home brewing kit as a Christmas gift. With that, both Bill and Ron developed their love of the craft, and a friendly rivalry grew between the two.

Ron left his job as a financial analyst and started an apprenticeship at Baltimore Brewing Company. After working there for nearly a year, Ron had the necessary prerequisites to move on to study at the Technical University of Munich at Weihenstephan.

Immediately upon Ron’s departure, Bill took over his emptied role in Baltimore. While Ron was enhancing his German brewing knowledge, Bill was expanding the line of beers produced at the BBC to include several German specialty beers, many of which went on to win multiple awards at the Great American Beer Festival

With knowledge, experience and a love of quality beer in place, Bill and Ron decided they were ready to open their own brewery near where they first met in Pennsylvania.

Victory Brewing Company opened its doors to the public on Feb. 15, 1996. What was once a Pepperidge Farm factory became home to a 144-seat restaurant, 70-foot-long bar and a full-scale brewery. In its first year, Victory Brewing Company brewed 1,725 barrels of beer.

Since then, Victory has increased the size of the restaurant to 300 seats. The brewery has also expanded, producing 125,713 barrels of beer in 2014. As loyal craft beer drinkers continue to show their dedication to flavorful, quality beer, Victory plans to continue its own growth. Onward to Victory!

Hill Farmstead Brewery was established in 2010 by Shaun Hill in Greensboro Bend, Vermont, United States. It is located in the “Northeast Kingdom” of Vermont, about seventy miles from the state’s largest city, Burlington. Brewery founder Shaun Hill learned to make beer for a science fair project while in high school, and then started a home-brew club in college. His first commercial experience was at The Shed in Vermont. Hill then went on to brew in Denmark at Fanø Bryghus and Nørrebro Bryghus, before returning to the US to launch his own brewery.

Hill Farmstead Brewery is the culmination of many years of travel and insight—of experience and education—of friendships and explorations.

The brewery is the revival and continuation of 220 years of Hill heritage and hand crafted history in North Greensboro, Vermont.

Its logo is retrieved from a sign that once hung in Aaron Hill’s (our great(x3) grandfather) tavern, just up the hill, in the early 1800s.

At 9.3% ABV the alcohol is well hidden and very deceptive, and the dry finish will leave you eager for more.

Style: Russian Imperial Stout

Flavor Text:Leon is a big beer. So big, it has twice as much malt as any other beer we brew.. On top of the copious amounts of two row barley, Munich, Victory, Chocolate, Black Patent, and Caramel 80 malt in this beer each 15 barrel brew has 50 pounds of freshly in-house handmade marshmallow fluff as well as 16 pounds of bittersweet bakers chocolate, and 30 pounds of crumbled graham crackers. Leon clocks in at just over 80 IBUs and 11.6% ABV. Does it taste like a S’mores? That’s for you to decide, but either way this is one fun beer to make, not to mention drink.

Style History

Started off as strong English Porters that were popular with the Russian Imperial Court.
1. Peter the Great fell in love with stouts during his 1698 trip to England, and he requested that some be sent to the Imperial court in Russia. Much to the embarrassment of the English, the beer had spoiled somewhere along its tedious thousand-mile journey! Determined as always to save face, the Barclay brewery of London came to the rescue by rapidly increasing the amount of alcohol and hops for their second effort.
Because of the Napoleonic wars the beer trade was interrupted.
The style all but died out until the modern craft beer era when it was revived in England and reimagined in the US with more American characteristics like hoppier varieties.
1. The John Courage Brewery continued to brew its Imperial Stout, with the boast on its label that it was originally brewed by Imperial order of Catherine the Great, up until the 1990s. While hugely popular through the 19th century, Porters had fallen away completely from consumer’s tastes by the end of the 20th Century.
Currently Imperial Stouts are widely available in both their American forms but English varieties can also be found. Popular examples include:
1. North Coast Old Rasputin Imperial Stout
2. Great Divide Yeti Imperial Stout
3. Samuel Smith Imperial Stout

Beer #1: The Lion and Other Beasts

Style: Grisette

Flavor Text: This Belgian Style ale called a Grisette that is somewhat of a lost beer style named for the coal miners wives that would serve this up after the long work day in the mines. It is typically a low alcohol ale at 4 to 5% by volume with low bitterness and aromas of yeast-spice as well as subtle hop notes. The base malt on our approach was Full Pint 2 Row from Madras Oregon, water from St Helena, Amarillo hops from Yakima Valley then aged in French Oak for varying times. Our resulting beer is bright with light fruit tones, yeast spice, dry and clean. The first release of this beer will be a Members Only release and clocks in at 5.7% alcohol by volume and was aged in chardonnay barrels for one month.

Flavor Text: Our Honey Ale is a collaboration with Rob Keller of Napa Valley Bee Company and who lives and breaths with the Buzz of the Bees. He had foraged some honey from multiple wild hives from around the Napa Valley and offered us the opportunity to create a beer with it. We chose a clean and light base barley sourced and malted in Madras Oregon with very low color yet a with a distinct malt tonality from the variety Full Pint Barley. We used our relatively soft water from St Helena and Hallertau Hops from Yakima, WA as well as our French Saison yeast to create a beer that was dry and crisp on the finish. The honey was married with the beer at the end of boil with specific timing and technique to retain and boost the impact of its aromatics. After the primary fermentation and settling in stainless we racked to a new French Oak barrel (600 L puncheon M toast -Saury) and aged briefly for settling and light oak aromatics. This first release Lot 107 (160414107) is allocated for memberships Q2-16 although can be tasted at the brewery for a short time. Its flavor profile is somewhere between a chardonnay, dry mead-Hydromel style and a Belgian Strong Ale its soft spiced with round honey tones and oak notes. A focused and clean palate (TFG 1.000) with very subtle hop bitterness. Our second release lot 124 is crafted using Vince Tofinelli’s Honey from Calistoga where he grows organic wine grapes that are dry farmed as well. He is veteran of this valley as a 4th generation farmer and we are excited to show case this beautiful honey with our beer.

Beer #3: Ringdove and the Hunter

Flavor Text: he Ring Dove and the Hunter is a beer I have been brewing for decades, once called ‘Peoples Porter’ , it has always been a Robust Style Porter and it has inevitably changed throughout the years (20+). This rendition is framed by the malty-rich and biscuity Full Pint malted barley, Black Patent malt, a pinch of Coffee malt and hints of Caramel 100-120. We hopped with US grown Goldings hops from Yakima Valley in WA, which were hit hard during set and yields were very low so we were lucky to get our hands on some. We aged the beer in a red and white wine barrel for three weeks prior to bottling. A spicy herbal nose balanced with subtle roasted malts and a mild bitterness brings this beer alive and should age gracefully in your cellar at 6.8. to 7.3% ABV.

Our Impressions: A delicious concoction of sweet darkness. The beer equivalent of chocolate milk. A sweet malty dark brew.

Commercial Examples: Bristol Beer Factory Milk Stout, Left Hand Milk Stout, Lancaster Milk Stout, Samuel Adams Cream Stout.

Style History

Area of origin: England, late 19th and first half of 20th.
Creation:Late 1800’s Brits were looking for a new sweeter version of old stale porters. Brewers added lactose to create a sweeter fresher tasting beverage.
Traditional/unique methods: Addition of lactose as a non-fermentable sugar creates an extra layer of sweetness. Sometimes large amounts of crystal malt are used to create a similar effect with a very different taste profile.
Evolution of style: The idea of milk stout was proposed in 1875 by John Henry Johnson.. Though Johnson never saw his dream realized, the idea was taken up by others who saw its potential. In 1907, a lactose stout was brewed by Mackeson of Hythe, Kent, and sent to market in 1910, with the claim that “each pint contains the energizing carbohydrates of ten ounces of dairy milk.” Some patent infringement squabbles arose, but Mackeson licensed the beer-making to others, and within a few years, a dozen or more milk stouts were being brewed. Marketing sweet stouts as nutritional was a great way in the late 1800s to garner interest, but lactose did not provide the promised nutritive value. Eventually, this hollow claim fell under scrutiny of British authorities, who mandated in 1946 that milk had to be stricken from the label as misleading. But brewers, ever the cagey, gave their brews names suggesting images of cream, milkmaids and dairies. Brewers outside the English mainland are under no such restrictions today, and lactose-enhanced brews made elsewhere, including America and even some of the British maritime islands, can be called milk stouts. American brewers have been at the forefront of reviving them.
Milk stouts proved to be a very popular style of beer in the first half of the 20th century and energized a preference for sweeter stouts in England. Some are widely popular, as they uniquely present a full-bodied, roasted, sweet alternative that delivers all the rich flavor of their stronger brethren without overpowering the palate with hops or the mind with alcohol. Much of that is due to the lactose. Lactose also provides a bit of viscous mouthfeel. Other than this unusual and definitive ingredient, milk stouts are brewed like any other stout, with grain bills of base, black patent and chocolate malts, and roasted barley to the whim of the brewer. All are excellent as dessert beers, rich and complex enough to complement, but not too filling.
Current status: A small wave of resurgence in American Craft beer culture, though not as widely popular as other stout and porter styles.
Notable variations: served on nitro creates an extra creamy texture that yields an almost desert, milkshake like experience. Also known as sweet stout, london stout or cream stout. As of 1946- it can no longer be called milk stout in England to prevent misleading claims of health benefits.

Dave Benfield, the grand poo-bah of DuClaw Brewing Company, began home brewing beer while in college, presumably for the only reason that guys in college do anything: to meet girls. What originally began as a way for Dave and his friends to supply themselves with beer and female admirers, soon evolved into something more.

In 1995, he dove in headfirst and by 1996, DuClaw Brewing Company of Bel Air opened its doors to an unprepared world. Within one year, DuClaw Brewing Company was dubbed “Bel Air’s hippest establishment” by the local newspaper. It was new, it was different, it was fresh, and it stayed true to the central pillar of his mission: It was cool.

Today, Dave and the DuClaw Brewing Company brewing staff are the masterminds behind our amazing array of craft brewed beers. Through constant innovation and testing of new recipes, combinations and ingredients, they have created a staggering variety of unique beers and countless variations and blends. Some are available on tap and in bottles year round, while the others rotate in and out of our lineup depending upon available ingredients, seasonal appropriateness of the style, and what we’re in the mood to drink that week.

The brewery was originally founded by two brothers and their cousin who homebrewed at their vacation house on Fire Island back in 2008. A little while later the founders sold the business to an import brand, Latis Imports, who brought in Simon Leonard to act as a consultant head brewer with production being handled under contract at Two Roads in CT. Sometime later Latis approached Simon with an offer to sell him Fire Island Beer and he jumped on the opportunity. Fire Island has now built their own brewery in the very same building as Great South Bay Brewery in Bay Shore with their tap room under construction for an opening later this year.

Flavor Text: The first people to make chocolate were the ancient tribes of Mexico and Central America, including the Incas, Aztec and Mayans. They mixed ground cacao seeds with various seasonings to make a spicy, frothy drink which they called chocolatl. The Aztecs valued their drink so much that cocoa was used as a currency worth more than gold.

We celebrate this invention with our Aztec Gold Imperial Chocolate Stout. We brewed it with cocoa nibs grown in Belize and roasted by Raleigh’s own Videri Chocolate Factory. The addition of vanilla beans makes this beer a well balanced treat.

Our story started in 1998 with two friends who noticed a lack of fresh beer on Long Island and wanted to lower their bar tabs. We built a brewery on Long Island’s South Shore in Patchogue, a tough and humble coastal town. The first beer we ever brewed was Toasted Lager, an American Amber Lager named for the original direct-fire brick kettle used to toast six specialty malts for a rich and unique flavor.

In 2014, Blue Point partnered with Anheuser-Busch, joining its family of craft brands in The High End business unit. 1940’s Brewing Company was founded in 2014, when homebrewer Charlie Becker decided to make the jump to professional. Brewing is a part of the Becker legacy, as Charlie’s father and great grandfather both worked in the industry. His father worked for Rheingold for 41 years and graduated in–you guessed it–1940.

He began perfecting his recipes in an alternating proprietorship brewery and brought on fellow brewer Jon Brengel. For almost a year and a half they brewed on a 3 barrel system, dialing in recipes such as Hefe Injustice Hefeweizen and Arsenal IPA.

Barnshed Brewing was founded in 2016 after husband and wife team, Bryan and Kristine Murphy, successfully ran a Kickstarter campaign to raise the startup capital necessary. The two honed their brewing skills as over the previous six years in the barn shaped shed behind their home which the brewery takes its name from. They are truly nano, working with a one barrel, horizontal three vessel system. They are Nassau County’s 4th brewery, having opened their doors in May 2017.

Flavor Text: We have had crafted our recreation of this Ale style which is almost straw like in color and actually has Lager like qualities. Kölsch is an ale that tastes like a lager. If you handed a Kölsch to an unaware beer drinker, it is very common to mistake the beer as a lager. This beer has a very soft mouthfeel, exclusively slightly sweet, but has a subtle malty aroma and finishes very dry. The light hop aroma and hop flavor is notable from the use of German Nobel hops during the brewing process. The 4.8 % ABV, and 24 IBUs, creates a very drinkable beer especially during the hot summer months. Kölsch is similar to an American Blonde Ale, but finishes much cleaner and crisper.

Flavor Text: This is from a recipe bought in Dublin, Ireland in 1860 for £500 – a fortune in those days. George Johnson of Ogdensburg, NY brewed it in 1868 and sold the recipe (for a lot less!) to James Hanley of Providence, RI.

In 1860 Guinness was by far the biggest porter brewery in Dublin and getting hold of their recipe would have been expensive, since it must have been done without Guinness’ knowledge. There is no evidence that it was from Guinness and there were other Dublin porter brewers at the time. But £500 in 1860??

Our brew had OG 15ºP, 6.0% ABV, 70 IBU (English Challenger hops – they didn’t grow hops in Ireland!). Black malt was the only roast malt produced at that time so we use only pale and black in our brewing with a few additional secret ingredients.

Barrier Brewing Co. is the collaborative effort of brewers Evan Klein and Craig Frymark, located in Oceanside, NY. Brewing their first batches on a 1bbl system (2 kegs at a time!) in June 2010, the two expanded the business to a 5bbl brewhouse in June 2012 which operated for four short months before being severely damaged by Hurricane Sandy. After several months of rebuilding, Barrier reopened in late-February 2013. The brewery currently produces nearly 50 different beers throughout the year totaling 1500bbl annually, all of which is self-distributed throughout the NY metro area.

Opening in June of 2015, DUBCO began as a small 1 BBL Brewery on the border of Bay Shore and Islip. It has since grown to a 3bbl electric brewery producing 12bbls a month. It features a 600 square foot tasting room with 10 Taps! Full pours and tasting flights are available.

Our Scotch Ale, also known as a Wee Heavy, pours out a reddish-brown color with amber highlights, and a beige colored head. The aroma is malty, with toasted grain notes and a slightly nutty character. Maltopia‘s flavor is true to its name: malt forward, with a deep toasted flavor, slight caramel character, a hint of plum-like fruitiness, and a hop bitterness enough for balance. Flavor Text: “Summer 2016 Series No. 4 “We paired sweet strawberries and tart rhubarb to joyfully marry them in California wine barrels.”

The beer pours a very hazy amber color, with a rosy, pinkish hue from the pureed strawberry floating in suspension. You may see a small amount of pink sediment in the bottom of some bottles if they manage to stand in one place long enough. We searched for only the sweetest strawberries to add to this one, and the juicy aroma of those delicious fruits wafts commandingly off the glass. The lovely essence of California wine barrels mingles with the strawberry, highlighted by hints of barrel-aged funkiness. The first sip is a bit of a surprise, as the super-tart Rhubarb jumps to the front of your taste buds to make itself known. Next comes the tannic character of the barrels and a moderate dose of Brett- and Lacto- induced funk. The beer is definitely sour but not puckering, and as it warms in your hand the strawberries move closer and closer to the front of the stage. The finish is tart and dry, with hints of strawberry lingering between sips. Smooth and refreshing, great for a summer day.”

In 1985, amidst a proverbial sea of watered down and adjunct-plagued lagers, Rosemarie Certo and Jeffrey Ware founded Dock Street Brewing Company, one of the first post-prohibition craft breweries in the country – and Philly’s first all-grain brew pub.

The brewery is located in the historic carriage house and stables of the defunct Theo Finkenauer Brewery. Soak 1 cup mustard seeds overnight in your favorite beer

Started by Rick Sobotka after a childhood of helping his dad brew in his small hometown in upstate New York. A former anesthesiologist who traveled the US touring breweries, worked as a brewmaster’s apprentice at San Diego Brewery and served pints at Breckenridge Brewery.

After returning home he started Great South Bay. Rick sums up this brewery best, “I create beers that I enjoy drinking, and I’m quite particular when it comes to that. If you want quality and creativity in your beer, I know you’ll choose a few of mine.”

The idea and name, Spider Bite Beer Company, was conceived back in 2008, by Larry Goldstein along with co-founder and friend Anthony LiCausi, after a summer of too many bug bites.
