<p>It&#8217;s official: next year we, at Bele Casel will set out for a new Organic adventure. Against all past predictions the &#8220;Organic bug&#8221; (pardon the unintended pun) gnawed at my well know skepticism which, particularly in rainy years, becomes rather haughty.</p>
<p>We know that it will not be an easy trip and that, given our geography, there will be many difficulties, but we are determined to commit ourselves body and soul to this undertaking; in first place because we believe in it and, secondly, because we aim at offering products of ever lower environmental impact.</p>
<p>Furthermore, we have always been faithful to the recycling of all kinds of packaging and materials and to resource recovery. Since the construction this year, of our new cellar, for example, we recover and use all grey waters; we also clean our tanks only with hot water, without using any corrosive chemicals.</p>
<p>The &#8220;opening dance&#8221; will be held at the Cornuda vineyard (approximately 6.5 hectares = 16 acres), completely dedicated to the production of Asolo DOCG. At this location, this year, we have already eliminated completely the use of herbicides, with very satisfying results. This has reinforced our belief that we are on the right track, particularly when considering that DOCG represents 90% of our production.</p>
<p>I also wish to thank Intravino for helping us search for an agronomist, to whom we are also grateful for the assistance in our new journey.</p></div>

Today the only profitable crop around is Prosecco.  People without any foresight are now planting acre upon acre with vines, convinced of having made the best investment of a lifetime.  Nine provinces is a lot of acreage: surely this will bring about an unfavorable offer/demand ratio and the consequent drop in price, which I optimistically predict will be at about € .40 per kilo.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">To make our product stand above the crowd and to create a brand that, rather than being just a Prosecco, reflects a terroir, we must believe staunchly in DOCG and work together to keep it alive and making it known to a world that, today, still thinks of Prosecco as &#8220;just another bubbly&#8221;!</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">For the next  few years it will be difficult: the price for DOCG  (€ 1.50 per liter) is practically the same as that of DOC (€ 1.30), while the production per acre is significantly lower.</div>

<p>I have been asking myself this question for months: how should I drink this unknown wine? So I started experimenting, opening dozens of bottles while trying to capture its soul.</p>
<p>I still remember that my first glass of  <em><strong><a style="color: #f09b30;" href="www.surlie.it" target="_blank">Colfòndo</a></strong></em><strong><em> </em></strong>left me confounded; I had completely forgot about this kind of wine. The cloudiness, the dryness, the fragrance of bread crusts, so different from the conventional Prosecco, threw me off completely.</p>
<p>I tried 4 different ways of drinking it:</p>
<p>1 Pouring it directly into the glass. Taking great care to move the bottle ever so slowly, so that only the clear portion would pour. Possibly leaving the cloudy part for later.</p>
<p>2 Decanting it. Thus separating the clear part from the cloudy and allowing oxygen in the wine.</p>

<p>4 D<em>égorgement.</em> This method takes quite some time, but I assure you that the result will be astounding.</p>
<p>Have you ever met a person that you did not like at first, but later on found impossible to leave? That is what will happen with Colfòndo!</p>
<p>If you have just been introduced to  this wine, you will probably be more comfortable with methods  1, 2 or 4. Drinking it with the dregs (4) could be an acquired taste that will grow on you with time.</p>

<p>You will be able to follow and bid at the auction on Twitter, beginning on May 30th at 10:00 a.m. and ending on June 5<sup>th</sup> at 10:00 p.m. (Italian time).  The bid starts at 50€ for each cromobox; it is up to you to raise the bidding to the stars.  Be aware that all proceeds will go to “la cicogna sprint” Association; here is the video .</p>
<p>The boxes will be handed to the winning bidders on Monday, June 7<sup>th</sup>, at the Terroir Vino 2010 event.</p>
<p>To wrap it up: place one hand on your heart and the other on your wallet. I am counting on you.</p>

<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Was it possibly because of that &#8220;great farmer&#8221;, Grandpà Ilario, who cannot be in the picture, but whose spirit seems to pervade and guide the words and deeds of the &#8220;county&#8221;  to this day?</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">I also immediately loved that name, &#8220;county&#8221;, with a lower case &#8220;c&#8221;, a name with implied nobility.  Not inherited, but to be achieved and then maintained and emblazoned with work, ethics and the consistent quest for improvement.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial; min-height: 14.0px;">
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">More simply, perhaps, my virtual encounter with Bele Casel was an unpredictable, yet in some ways, unavoidable coincidence.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Unavoidable because after having reached, and gone well past, retirement age, now I can finally afford the luxury of allowing nostalgia for Italy to embrace me; for years I felt compelled not to let this distraction affect my life.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Notwithstanding the amount of time and vicissitudes, but perhaps also because the ghost of Alzheimer seems to be lurking around the corner, my affection and homesickness for the native land, its culture, its cuisine, wines and traditions seem to be flowing, rather than ebbing, with the passing of each year.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Together with my nostalgia and despite the many problems and afflictions of our Bel Paese, I have a renewed consciousness and confidence of how much Italy, and particularly certain Italians, have to offer to the world. And to themselves.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial; min-height: 14.0px;">
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">And, although initially I had no concrete proof to substantiate my instinctive attraction, I felt that to me the Ferraro family is a prototype of the best that Italy can give to the world.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial; min-height: 14.0px;">
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">I am referring mostly to the artisans, the farmers and the wine growers for whom I have always had so much respect as to border veneration.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">My most vivid and beloved memories of youth are those collected on the workbenches, amid the clods, in the fields, in the stablehand the yards of Lower Brianza, on the hills and vignards of Veneto and Val Trebbia.   They are populated by god folks; honest, wise, smart and, above all, hard working people armed with will of steel.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">These were the people who, despite the fact that I was a short, scrawny &#8220;city kid&#8221;, accepted me as one of their own as soon as I had rolled up my sleeves, donned a pair of clogs and started to work; not only was I an apprentice or a pupil, I would participate in their life, shared their tasty meals of simple, fresh food and partake in their abundant libations around the fireplace at night….<em>(&#8221;Don&#8217;t put too much water in the kid&#8217;s glass, he worked hard today!&#8221;)</em></p>

<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Today, nearly sixty years later and four thousand miles away, thanks to the miracles of electronics and cybernetics, i find myself walking (virtually, of course) in the same fields or along the same vineyards loaded with clusters of grapes whispering to you: <em>&#8220;Not yet…let me bask in the sun one more day…&#8221;</em></p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial; min-height: 14.0px;"><em> </em></p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Arial;">Without your knowledge, I visit vineyard or walk through your stables like a ghostly voyeur, in the sweet pre-dawn hours, sensually filled with promises of a new day.  Or in the middle of the day, when the hot sun shines, I&#8217;ll join you under the shade of a bower or in a cool cellar. Or in the velvety dusk, redolent of the sweat cooling off under your armpits, l savor with you the prize for a good day of work. Or on a sleepless night, I&#8217;ll  come and keep company to the spider, weaving its web under the lintel lit by a moonbeam in the stable…</p>
