I had the pleasure of helping put together another Star Wars party in SLC Utah in Aug 2012!
The SLC Public Library put together a ton of fun activities like:

Star wars bowling

Shoot the death star with nerf guns

Using long balloons they pretended it was a laser gun while they had a balloon machine going for kids to hit bubbles.
