				<content:encoded><![CDATA[<p></p><p>Famed restaurateur, Monica Greene, couldn’t find the right word to properly describe her new fast-casual concept – so she made one up! An “<strong>enchiladeria</strong>” is a new fast-casual concept where enchiladas are made your way with fresh, natural, and organic products.</p>
<p>Enchiladas, a centuries-old tradition in Mexico, are now part of the American dining lifestyle. Enchiladas are legendary in Tex-Mex cuisine but are too often overlooked as a source of inspiration in American restaurants. At <strong>bee</strong>, enchiladas will become the food of your own imagination allowing you to make enchiladas your way with extensive choices of fillings, tortillas, cheeses, and sauces.</p>
<p>Why enchiladas?  &#8220;I am digging the well for Mexican food lovers, before they are thirsty for it.&#8221; Greene quips, &#8220;The discovery of our handmade enchiladas will do more for the well being of mankind, than the discovery of a new astrological sign.”</p>
<p>As you enter the restaurant, you will fill out an order form and customize your choice of enchilada, taco or burrito with tortilla, filling, cheese and sauce. After handing it to the cashier, you will walk though the line and watch your unique creation being brought to life. You may then choose to add toppings or sides from a host of fresh, natural and organic, products and top off your meal with a margarita, beer or delicious sangria.  Sit and stay a while or take it to-go!</p>

<p><strong>ABOUT MONICA GREENE:</strong></p>
<p>Monica Greene was born in Mexico City and arrived in Dallas in 1974.  She has been responsible for bringing about some of Dallas’ most exciting restaurant concepts, such as Monica&#8217;s ACA Y ALLA, Ciudad and Pegaso.   During recent years, Monica has consulted in creating menus and menu recipes for various new restaurants.  Her passion is creating original health-oriented Mexican food.</p>
