She won’t suspect a thing and as an added bonus, this day will always will have a special meaning for the both of you! Look for shrimp that is slightly bigger than the size of the ring. Fall, Organic Fuyu persimmons . . . . .
Have anyone waited at your favorite store on Thanksgiving day? Believe it or not I tried that before, just to feel what the fuss is all about. After shopping I waited in line, with what seemed like hundreds of people ahead of me waiting to checkout. It was at that moment I wondered why do I bother to get up in middle of the night, go out in the cold and come back empty handed only to suffer from amnesia and so anxious to do it all over again next year?

Well this year I vowed that I would not do this again, this year I went to store about 8 am, when the madness already happened and when there was not a lot of people there. I got some of the stuff that I was looking for, and finally this year I am satisfied.

Burmese Tofu Salad

As I had promised to you in my earlier blog this is classic dish that everyone knows and loves. This is also simple and easy to make. It has the soft property of Burmese tofu; sweet and tanginess of tamarind pulp juice smell of fried onion that has been infused with fish sauce, not to mention umami - msg effect of dried shrimp flakes that will give all five senses extreme pleasure and happiness.

Lately I have had a lot of Banh mi and it reminds me of my college years. You remember what it’s like being a college student - time and money are two things that there is never enough of and you are always looking for good food that is cheap. Well, when I went to school, there was a small Mom and Pop shop there was a hole in the wall sandwich shop- ~~cheap~~ economical too – buy two get one free and split among friends.

Strawberries Milk shake

This recipe does not need ice so don’t be afraid for your blender. Since we freeze the strawberries; they are softer than ice. If you want to reduce the sugar content and use the alternative and replace the ice cream with yogurt. The taste is the almost the same. What a great way to compliment any meal, and this drink certainly has the wow factor. We all need a wow once in a while in our lives. Don’t you agree?

Noodle tossed in garlic oil with spam and Spinach

This is an easy, quick, delicious noodle dish with spinach and spam. I guess no spam dish would be complete without, some sort of history about the origin of spam. Spam was the creation of Hormel Food Corporation, and is made from pork shoulder meat, ham meat, salt, water, with potato starch and others ingredients. Almost like a hot dog in a can. Introduced in the late 30’s and popularized by GI during WWII, because it lasted so long and the fact that fresh meat was difficult to ship to the GIs fighting thousands of miles from home. From a company that was desperate to keep its market share, to the global expansion of spam because of the WWII, it is a truly unique story of an American meat product.

Who would have thought you could cook and eat pot roast in 30 minutes. You normally spend hours waiting for the pork pot roast to finish cook. But the best cook is the one who can efficiently maximize their time, so that we can spend it on something that is more important. Maybe we need to use all the tools that we have in our kitchens. Just like the food processor has made our lives easier, the same can be said of the pressure cooker. What used to take hours in the traditional oven can be cooked in a fraction of the time and taste the same as oven or slow cooker. Meat comes off from the bone softly when you use with fork to pick at the pork.

You will often see this as a cold dish, Chinese appetizer course in most places. In other restaurants they place it as main course. I often order this dish, some good and some bad. I love this dish when the restaurant adds Szechwan pepper corn and chili oil to give this recipe a little zest. A warning for those who do not like spicy food, just omit chili oil if you do not want your dish to be spicy.

Shrimps boil

Crawfish are really hard to find, I could not wait any longer looking for crawfish spill to unearth themselves (figuratively speaking) to me, and did not have the time to go to Louisiana to find them. So I used shrimp instead. On the upside, it very quickly cooks and you get your money’s worth in weight with shrimp. My love affair began with the very first bite of the first time that I tried crawfish and shrimp. This is a dish you will crave over and over for more. It had a sweet, scrumptious spicy seafood taste to it.

Corn Cake

As far as I know this corn cake is uniquely mom’s dish at least this version. This dish I think is influence mostly Fujianese and it’s most sought after dish in our home when I was growing up. Every season when corns are harvested (when we see load and load of corn loading to the market stall) we knew mom would cook this dish. Her version has crust on outside, soft and gooey on inside. It’s family style; eat with rice and among other dishes.

Basil chicken

I love Taiwanese dishes. They are simple and not pretentious quality that I enjoy and want to share with you. This basil chicken is very simple using basil and ginger in sweet and savory sauce. I use boneless, skinless chicken thigh to shorten the length of cooking time but this dish traditionally uses bone-in chicken legs cut into small pieces and simmer in clay pot. The reason basil chicken is so good is that it has comfort food quality!
