Balsamic vinegar used to be one of my favorite condiments but it's been ages since I've cooked with it. I decided to try a new recipe and of course had to share it here!&lt;br /&gt;
&lt;br /&gt;

&lt;br /&gt;
&lt;u&gt;&lt;b&gt;Balsamic Chicken Tenders&lt;/b&gt;&lt;/u&gt;&lt;br /&gt;
10 (or so) chicken tenders&lt;br /&gt;
1/3 cup chicken broth&lt;br /&gt;
1/4 cup balsamic vinegar&lt;br /&gt;
1 tsp garlic powder&lt;br /&gt;
1/2 tsp italian seasoning&lt;br /&gt;
1 Tbsp oil&lt;br /&gt;
salt to taste&lt;br /&gt;
&lt;br /&gt;
1. Mix all of the ingredients and pour over chicken in a zipped plastic bag.&lt;br /&gt;
2. Marinate for 30 minutes&lt;br /&gt;
3. Heat olive oil in a skillet.&lt;br /&gt;
4. Fry the chicken over medium high heat until no longer pink inside.&lt;br /&gt;
5. Serve with noodles or a salad.&lt;br /&gt;
&lt;br /&gt;
I served these with buttered noodles sprinkled with Parmesan cheese. Yum!! &lt;br /&gt;
I love things that are easy. Who doesn't? One of my favorite recipe jumpstarts is the store bought rotisserie chicken, and it's even better when you get them half off which happens at my store after 8 pm! One chicken usually gets us at least two meals.&lt;br /&gt;
&lt;br /&gt;
I just searched my pantry to come up with a great meal. &lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;Chicken Roll-Ups&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;

&lt;br /&gt;
1 rotisserie chicken, shredded&lt;br /&gt;
1/2 cup chopped onion&lt;br /&gt;
1 Tbsp minced garlic&lt;br /&gt;
1 cup chicken broth&lt;br /&gt;
2 Tbsp chili powder&lt;br /&gt;
1/2 - 1 cup sour cream&lt;br /&gt;
2 cups shredded cheese (we like it cheesy around here!) &lt;br /&gt;
Corn tortillas (about a dozen)&lt;br /&gt;
&lt;br /&gt;
Heat a small amount of olive oil in a skillet and saute onions until clear and soft. Add garlic and saute for a couple of minutes. Add shredded chicken, chili powder and chicken broth and bring to a boil. Cover and simmer on low for 20-30 minutes. Uncover, and simmer 10 more minutes, or until liquid is reduced. Remove from heat.&lt;br /&gt;
&lt;br /&gt;
Wrap a stack of tortillas in a clean towel and microwave for two minutes. This will make the tortillas soft enough to roll without hardening them.&lt;br /&gt;
&lt;br /&gt;
To the chicken, add the sour cream and half the shredded cheese and stir. Place a generous spoonful in the center of a tortilla and place in a 9"x12" pan, seam side down. Repeat until the pan is full.&lt;br /&gt;
&lt;br /&gt;
At this point, you could cover with salsa or enchilada sauce, but I didn't have either on hand, plus I actual prefer them "dry."&lt;br /&gt;
&lt;br /&gt;
Top with remaining cheese, cover loosely with foil and bake for 20 minutes. Remove foil and bake for an additional 5 minutes.&lt;br /&gt;
&lt;br /&gt;
They turned out a little like taquitos, a bit crunchy on the ends. This got a thumbs up from my picky eaters, I'm sure your family will love it too!&lt;br /&gt;

Things are changing in our household and I'm going to be putting the blogging thing on hold for a little while.&lt;br /&gt;
&lt;br /&gt;
Most  of you know that I adopted my son as an infant. This past week I found  out he has a two year old sister, and we have been asked to bring her  into our home, with the intention of adopting her. We said yes, and were  informed today that the placement should take place by the middle of  next week. They prefer the process to move quickly as it is in the best  interest of the child.&lt;br /&gt;
&lt;br /&gt;
I have not yet told Cooper, as I  don't think he will understand exactly what it means and it would just  confuse him, and I don't plan to tell him until after we meet her this  weekend. But I know that he will love having a sister. &lt;br /&gt;
&lt;br /&gt;
So,  with that said, I will be taking a hiatus from blogging, while we all  settle into our new roles as brother, sister, and mother of TWO little  ones. If you are so inclined, I would love your prayers during this time  of adjustment.&lt;br /&gt;

When I started this blog a year ago, it was for the purpose of sharing recipes. It has since become a clutter of topics, and I've been having a bit of writers block since I'm not really sure of it's direction.&lt;br /&gt;
&lt;br /&gt;
So I've decided to split my two loves...home decor/crafts and recipes/mom stuff. I've started a new blog,  that I can devote to my  home; a place where I can share my journey  as I am learning to find my style and create a home that we love. The  majority of the blogs that  interest me are about just that, and really,  that's where I'm at in my life.&lt;br /&gt;
&lt;br /&gt;
I will still be posting here at Betty Crocker Wannabe, but will most likely limit posts to recipes and parenting antidotes. Don't worry, I'll still keep the printables coming!&lt;br /&gt;

Soooo...drive-thru it is!&lt;br /&gt;
&lt;br /&gt;
I LOVE McDonald's Egg McMuffins, but I also know that they aren't the healthiest thing we could be eating for breakfast (or the cheapest). So what to do when you want something quick and easy and inexpensive for breakfast? You make them at home! It's so easy...you cook the egg right in the microwave!&lt;br /&gt;
&lt;br /&gt;
I first tried this recipe out on a Sunday morning. Rick called me at work the next day (on my cell) three times until I finally called him back. I asked him what was wrong. He said "How did you make that egg in the microwave?" Yup, that's why he called THREE times in FIVE minutes. I gave him the instructions, and could hear my boss laughing in the background. I told Rick my boss thought it was funny, so ten minutes later I got a text from him saying "I'm texting so your boss can't hear...but that was so cool!"&lt;br /&gt;

&lt;b&gt;Breakfast Sandwich&lt;/b&gt;&lt;br /&gt;
One whole wheat english muffin, toasted&lt;br /&gt;
One slice of cheese&lt;br /&gt;
One egg&lt;br /&gt;
&lt;br /&gt;
Spray a coffee mug with cooking spray. Crack the egg in a coffee mug and scramble with a fork. Cover with a wet paper towel and microwave for about 40 seconds. Place the cheese slice on one side of the english muffin, top with the egg, and the other muffin half and enjoy! The day after she won, Deanna was diagnosed with Stage 1 Cervical  Cancer. She has a husband and two girls, and for her eight year old  daughter, this will be especially frightening. She is ready to fight,  but could really use positive thoughts and prayers. I was blessed this  week by meeting her, and I was thrilled to be able to give her something  fresh and new, amidst the pain of her diagnosis. &lt;br /&gt;
&lt;b&gt;Chewy Oatmeal Yogurt Bars&lt;/b&gt;&lt;br /&gt;
3/4 cup firmly packed brown sugar&lt;br /&gt;
1/2 cup granulated sugar&lt;br /&gt;
1 (8-ounce) carton yogurt (vanilla or fruit flavored)&lt;br /&gt;
1 egg, lightly beaten&lt;br /&gt;
2 Tbsp vegetable oil&lt;br /&gt;
2 Tbsp milk &lt;br /&gt;
2 tsp vanilla&lt;br /&gt;
1 1/2 cups all-purpose flour&lt;br /&gt;
1 tsp baking soda&lt;br /&gt;
1 tsp ground cinnamon&lt;br /&gt;
1/2 tsp salt&lt;br /&gt;
3 cups oats&lt;br /&gt;
1 cup add-ins (diced dried fruit, raisins, cranberries, chocolate chips)&lt;br /&gt;
&lt;br /&gt;
1. Heat oven to 350 degrees.&lt;br /&gt;
2. In a large bowl, combine sugars, yogurt, egg, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and add-ins of your choice (I used cranberries and chocolate chips; 1/2 cup of each).&lt;br /&gt;
3. Spread dough onto bottom of ungreased 9x13 baking pan.&lt;br /&gt;
4. Bake 28-30 minutes or until light golden brown. Cool completely on wire rack. Or just do what we do and cut into them as soon as they don't burn your fingers when you touch them.&lt;br /&gt;
5. Store tightly covered.&lt;br /&gt;
&lt;br /&gt;
Makes about 24 bars.&lt;br /&gt;
&lt;br /&gt;
I have more recipes to share later this week as time permits...we are beginning a remodel of our enclosed patio on Friday...which happens to be the playroom and laundry room, so we will be living for two weeks without either. I'm feeling better, and even had a burst of motivation last night to finally get my pantry organized. &lt;br /&gt;
&lt;br /&gt;
And I did!&lt;br /&gt;
&lt;br /&gt;
It's not 100% where I want it to be, but it's a good solid start to getting my kitchen into an organized kitchen that will work with me instead of against me.&lt;br /&gt;
&lt;br /&gt;
If you've been following for a while, you know that my home belonged to my grandparents before they died. So I basically grew up in this house. My grandmother was the kind of person who had a place for everything, and everything in it's place, even if it made no sense to anyone else. &lt;br /&gt;
&lt;br /&gt;
When I moved in, I had a hard time visualizing any other way of storage and organization. Cereal was in the bottom cabinet to the right of the stove. Pasta and spices in the top cabinet to the left of the stove. Canned soup and veggies in the top right. Even my drawers were the same. But after three years of living in this house, I decided it was time to make some changes. Now, they may not seem major to anyone else, but they are huge to me.&lt;br /&gt;

&lt;/div&gt;I have a very large pantry, but it really wasn't set up in a way that  made the best use of the space, so I moved some of the shelving around. It's so deep that it's hard to see what you really have. Perhaps the reason I have eight bags of chocolate chips, five of them half empty.&lt;br /&gt;

I took everything out of the pantry and the cabinets, and set it on the kitchen counters.&lt;br /&gt;
&lt;br /&gt;
The cabinet is somewhat custom, as my grandfather installed it and didn't glue in or tack down any of the shelving. So it was all very easy to move around.&lt;br /&gt;
&lt;br /&gt;

I have a ton of Tupperware (I used to be a consultant), and I love my Modular Mates. I also used a bunch of $1 shoeboxes that were on sale at Target last week.&lt;br /&gt;
&lt;br /&gt;
I still need to make labels, and I would really love to get rid of that ugly shelf paper and paint it...but I think that may be a little too ambitious for me right now. I'm just happy everything is in one place. I'm considering taking the doors off, since this is just a former laundry and it's closed off from the other rooms in the house. What do you think? Doors? or No doors?&lt;br /&gt;

Tomorrow I will be working on the rest of the kitchen. If I'm still motivated!&lt;br /&gt;

I think I have the January blues. (Is there such a thing?). Or maybe it's the after-Christmas blues.&lt;br /&gt;

Whatever it is, it's sucking the inspiration right out of me.&lt;br /&gt;
&lt;br /&gt;
I'm having a hard time coming up with things to blog about, like tonight when I sat down to write a blog post (about four hours ago) and this is all I've come up with.&lt;br /&gt;
&lt;br /&gt;
I need inspiration.&lt;br /&gt;
&lt;br /&gt;
I could share recipes, but since we're eating healthier, it's all I can do to come up with the basics. Eating healthy sucks. Ok, so it doesn't really SUCK, I know, it's fun! (did you detect the sarcasm?) But the stuff we have to eat, sometimes, sucks. I would much rather be eating the Hershey kisses we have leftover from Christmas while I sit and blog surf, than carrot sticks.&lt;br /&gt;
&lt;br /&gt;
I could share some home decor, but we're preparing for a big remodel of our enclosed patio and my house is a disaster. I'm not motivated to clean it either. There are rooms and pantrys and closets that need organizing. But I don't want to.&lt;br /&gt;
&lt;br /&gt;
I could share some feel good story about motherhood, but quite frankly my son testing my patience lately. He did say something funny the other day though. He told me I was like the Grumpy Old Troll from Dora the Explorer.&lt;br /&gt;

When I started this blog almost a year ago, I had so much fun designing it that I wanted to do more! So I emailed my FIRL (friend in real life), &lt;a href="http://salvagedior.blogspot.com/"&gt;Kate of Salvage Dior&lt;/a&gt;, and showed her a concept I had for her blog. She agreed to let me give her blog a makeover. I've done three makeovers for her, the latest just a week ago. Each time she was so excited, and I loved the simple joy a makeover could give!&lt;br /&gt;
&lt;br /&gt;
One of my bloggy BFFs, &lt;a href="http://noelleplatt.blogspot.com/"&gt;Noelle of Because Nice Matters&lt;/a&gt;, had mentioned how she had paid a designer to design her blog and the designer had never followed through. Pour&amp;nbsp;olive oil in a 9" x 15" pan. Add the garlic and spread to evenly. Preheat your oven to 400 degrees, and place the pan in the oven as it heats to warm the oil &amp;amp; garlic and help blend the flavors. When the temp is set, pull the pan out of the oven and dredge each chicken piece in the oil/garlic, coating both sides. Season with salt &amp;amp; pepper. Bake for about 25 minutes, turning halfway through, until juices run clear.&lt;br /&gt;

This chicken was so flavorful and moist. &lt;b&gt;Lesson 1&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
1. Go to the grocery store.&lt;br /&gt;
2. Arrange to have your salary paid directly to their head office.&lt;br /&gt;
3. Go home.&lt;br /&gt;
4. Pick up the paper.&lt;br /&gt;
5. Read it for the last time.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 2&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Before you finally go ahead and have children, find a couple who already are parents and berate them about their...&lt;br /&gt;
1. Methods of discipline.&lt;br /&gt;
2. Lack of patience.&lt;br /&gt;
3. Appallingly low tolerance levels.&lt;br /&gt;
4. Allowing their children to run wild.&lt;br /&gt;
5. Suggest ways in which they might improve their child's breastfeeding, sleep habits, toilet training, table manners, and overall behavior.&lt;br /&gt;
Enjoy it because it will be the last time in your life you will have all the answers.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 3&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
A really good way to discover how the nights might feel...&lt;br /&gt;
1. Get home from work and immediately begin walking around the living room from 5PM to 10PM carrying a wet bag weighing approximately 8-12 pounds, with a radio turned to static (or some other obnoxious sound) playing loudly. (Eat cold food with one hand for dinner)&lt;br /&gt;
2. At 10PM, put the bag gently down, set the alarm for midnight, and go to sleep.&lt;br /&gt;
3. Get up at 12 and walk around the living room again, with the bag, until 1AM.&lt;br /&gt;
4. Set the alarm for 3AM.&lt;br /&gt;
5. As you can't get back to sleep, get up at 2AM and make a drink and watch an infomercial.&lt;br /&gt;
6. Go to bed at 2:45AM.&lt;br /&gt;
7. Get up at 3AM when the alarm goes off.&lt;br /&gt;
8. Sing songs quietly in the dark until 4AM.&lt;br /&gt;
9. Get up. Make breakfast. Get ready for work and go to work (work hard and be productive)&lt;br /&gt;
&lt;br /&gt;
Repeat steps 1-9 each night. Keep this up for 3-5 years. Look cheerful and together.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 4&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Can you stand the mess children make? T o find out...&lt;br /&gt;
1. Smear peanut butter onto the sofa and jam onto the curtains.&lt;br /&gt;
2. Hide a piece of raw chicken behind the stereo and leave it there all summer.&lt;br /&gt;
3. Stick your fingers in the flower bed.&lt;br /&gt;
4. Then rub them on the clean walls.&lt;br /&gt;
5. Take your favorite book, photo album, etc. Wreck it.&lt;br /&gt;
6. Spill milk on your new pillows. Cover the stains with crayons. How does that look?&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 5&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Dressing small children is not as easy as it seems.&lt;br /&gt;
1. Buy an octopus and a small bag made out of loose mesh.&lt;br /&gt;
2. Attempt to put the octopus into the bag so that none of the arms hang out.&lt;br /&gt;
&lt;br /&gt;
Time allowed for this - all morning.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 6&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Forget the BMW and buy a mini-van. And don't think that you can leave it out in the driveway spotless and shining. Family cars don't look like that.&lt;br /&gt;
1. Buy a chocolate ice cream cone and put it in the glove compartment.&lt;br /&gt;
Leave it there.&lt;br /&gt;
2. Get a dime. Stick it in the CD player.&lt;br /&gt;
3. Take a family size package of chocolate cookies. Mash them into the back seat. Sprinkle cheerios all over the floor, then smash them with your foot.&lt;br /&gt;
4. Run a garden rake along both sides of the car.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 7&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Go to the local grocery store. Take with you the closest thing you can find to a pre-school child. (A full-grown goat is an excellent choice). If you intend to have more than one child, then definitely take more than one goat. Buy your week's groceries without letting the goats out of your sight. Pay for everything the goat eats or destroys. Until you can easily accomplish this, do not even contemplate having children.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 8&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
1. Hollow out a melon.&lt;br /&gt;
2. Make a small hole in the side.&lt;br /&gt;
3. Suspend it from the ceiling and swing it from side to side.&lt;br /&gt;
4. Now get a bowl of soggy Cheerios and attempt to spoon them into the swaying melon by pretending to be an airplane.&lt;br /&gt;
5. Continue until half the Cheerios are gone.&lt;br /&gt;
6. Tip half into your lap. The other half, just throw up in the air.&lt;br /&gt;
&lt;br /&gt;
You are now ready to feed a nine- month-old baby.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 9&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Learn the names of every character from Sesame Street , Barney, Disney, the Teletubbies, and Pokemon. Watch nothing else on TV but PBS, the Disney channel or Noggin for at least five years. (I know, you're thinking What's 'Noggin'?) Exactly the point.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 10&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Make a recording of Fran Drescher saying 'mommy' repeatedly. (Important: no more than a four second delay between each 'mommy'; occasional crescendo to the level of a supersonic jet is required). Play this tape in your car everywhere you go for the next four years. You are now ready to take a long trip with a toddler.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Lesson 11&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Start talking to an adult of your choice. Have someone else continually tug on your skirt hem, shirt- sleeve, or elbow while playing the 'mommy' tape made from Lesson 10 above. I had planned to BBQ but it rained (poured actually) all day, so that wasn't happening. I was going to put it in the crockpot, but forgot. At 4:00 I figured I'd better decide what to do with it and started to search my pantry and fridge and came up with beef broth, onion soup mix, carrots and potatoes.&lt;br /&gt;
&lt;br /&gt;
One of my favorite restaurants is Wood Ranch Grill in Yorba Linda, CA. They have amazing tri-tip soup. I searched for the recipe and couldn't find one, so I made one up. (Sorry, I totally forgot to take a photo of this one!)&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Tri Tip Soup&lt;/b&gt;&lt;br /&gt;
1 Tbsp Olive Oil &lt;br /&gt;
2 lbs trimmed Tri Tip, cut into small chunks&lt;br /&gt;
2 cans beef broth&lt;br /&gt;
1 package Onion Soup Mix&lt;br /&gt;
3 cups water&lt;br /&gt;
2 cups potatoes, peeled and cut into chunks&lt;br /&gt;
2-3 cup raw vegetable (carrots, green beans, mushrooms, etc)&lt;br /&gt;
2 Tbsp Minced Garlic&lt;br /&gt;
1 tsp Liquid Smoke&lt;br /&gt;
&lt;br /&gt;
1. Heat olive oil in a 5-6 quart pot; add Tri Tip and brown on all sides. Drain. &lt;br /&gt;
2. To the meat, add beef broth, water and onion soup mix. Bring to a boil, then reduce heat to low and simmer for about an hour, covered.&lt;br /&gt;
3. Add vegetables, garlic, and Liquid Smoke. Bring to a boil, reduce heat to medium-low and simmer for about 30 minutes, or until vegetables are tender. Season with salt and pepper if desired.&lt;br /&gt;
4. Serve and enjoy!&lt;br /&gt;

Sorry for the lack of photos. To make up for it though, I thought I would share a little story about the soup...&lt;br /&gt;
&lt;br /&gt;
We (Rick &amp;amp; I) are attempting to eat healthier. In fact, Rick's son, who is studying to become a personal trainer, has him on a nutritional plan.&lt;br /&gt;
&lt;br /&gt;
(I called it a diet and I was corrected: "It's not a diet. Diet's DIE. It's a nutritional plan." My bad).&lt;br /&gt;
&lt;br /&gt;
So anyway, I made soup this delicious soup the other night, and I put lots of  carrots in it, despite the fact the Rick hates vegetables. In fact,  whenever I have made soup, and I have to remove the  carrots/vegetables from his bowl. Otherwise, I get "the look."&lt;br /&gt;
&lt;br /&gt;
As we were eating, Rick looked over at me,  and very deliberately stabbed a carrot with a fork (yup, he ate the  soup with a fork) and slowly put it in his mouth. I almost fell off my  chair. Literally. And, ok, maybe a little bit dramatically.&lt;br /&gt;
&lt;br /&gt;
The next night he ate some mixed vegetables. Rick had a couple of old cameras, and I had some camera equipment that belonged to my grandparents in the 50s, so we thought there was enough to fill up the space above the hutch.&lt;br /&gt;
&lt;br /&gt;
I added some old photographs and an old Disney movie reel (the only  thing we purchased - found at &lt;a href="http://mycountryroads.blogspot.com/"&gt;Country Roads&lt;/a&gt; in Old Towne Orange for $9)  and the vignette was complete.&lt;br /&gt;

The hutch belonged to my grandparents, too. It kind of came with the house. Mostly because it's just too dang big to get rid of. And I kind of like it.&lt;br /&gt;
&lt;br /&gt;
Because of the ceiling fan, and the fact that it was 11:00 at night, made photographing very difficult, but I am so pleased with how it turned out, that I just had to share.&lt;br /&gt;

Disneyland has the best Santa, and they don't shoo you out if you want to take extra pictures.&lt;br /&gt;
Cooper told Santa he wants a trash can for Christmas.&lt;br /&gt;

He meant a trash truck - Stinky, actually. I have it on good authority that Santa has one of these in his sleigh on it's way to our house.&lt;br /&gt;

Toy Soldiers are one of my favorite parts of this parade.&lt;br /&gt;

After the parade, we made our way to the castle to watch it light up, and then to Main Street for the fireworks and snow.&lt;br /&gt;

We started some new traditions this year, like &lt;a href="http://adventuresofabettycrockerwannabe.blogspot.com/2010/12/christmas-books-countdown.html"&gt;Christmas Countdown Books&lt;/a&gt;, and opening up a new ornament on the day after Thanksgiving, so we can enjoy it for the whole season. We're continuing the tradition of fish on Christmas Eve, and Prim Rib &amp;amp; Twice Baked Potatoes on Christmas Day (YUM!).&lt;br /&gt;
&lt;br /&gt;
One of my favorite Christmas traditions from my childhood was when my mom and I would bake cookies and watch the John Denver &amp;amp; The Muppets Christmas special.&lt;br /&gt;
&lt;br /&gt;
I will leave you with my favorite scene from the special ~ "Stille Nacht." It's absolutely beautiful, and they sing it in German, which is the way I learned it when I was very young. I remember attending Christmas Eve services with my grandparents, and, being the good Germans that they are, when it came to the part of the service where we sang Silent Night, they always sang in German. Quietly, but nonetheless in their native language. Anytime, I hear the song, I can't help but sing in German as well.&lt;br /&gt;

I found the base recipe &lt;a href="http://www.foodbuzz.com/recipes/1358422-white-chocolate-apricot-shortbread-cookies"&gt;here&lt;/a&gt;. I knew when I saw it, that the author was right - these ARE dangerous, because as she states, there are only four ingredients in the base recipe: butter, sugar, cream cheese and flour.&lt;br /&gt;
&lt;br /&gt;
I know, right?&lt;br /&gt;
&lt;br /&gt;
I had actually been looking for a good shortbread cookie recipe that I could make with apricot jam, because after I tried the ones at Corner Bakery, I couldn't stop thinking about them.&lt;br /&gt;
&lt;br /&gt;
Unfortunately,all of the recipes I found had almond extract, and if you been reading this blog for a while, you know that we are now a NO NUT family. So, when I saw this recipe, I knew that it could work.&lt;br /&gt;
&lt;br /&gt;
The recipe is just a basic one, and calls for add-ins, but I decided to make them thumbprint style instead.&lt;br /&gt;
&lt;br /&gt;

&lt;div style="text-align: left;"&gt;&lt;b&gt;Apricot Shortbread Cookies&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 cup butter, softened&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 cups sugar&lt;/div&gt;&lt;div style="text-align: left;"&gt;1-8 oz block of cream cheese, softened&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 1/2 cups flour&lt;/div&gt;&lt;div style="text-align: left;"&gt;Apricot preserves&lt;/div&gt;&lt;div style="text-align: left;"&gt;Powdered Sugar for dusting (optional)&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;1. Preheat oven to 325 degrees.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;2. Cream butter and sugar together; add cream cheese and mix until well incorporated.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;3. Add flour (2 cups for a more delicate cookie, 2 1/2 cups for a firmer, chewier cookie)&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;4. Shape into one inch balls and place on your cookie sheet, 2 inches apart.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;5. Using the end of a wooden spoon, or your finger, make an indentation about halfway into the dough.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;6. Fill the holes with preserves.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;7. Bake for around 20 minutes, until just beginning to brown.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;8. Remove to wire rack to cool, and dust with powdered sugar.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;

&lt;span style="font-size: large;"&gt;&lt;span style="font-size: small;"&gt;I found a recipe last year for &lt;a href="http://www.bettycrocker.com/recipes/mexican-hot-chocolate-cookies/b350f853-bfdf-46a5-888b-ee8439faa61b"&gt;Mexican Hot Chocolate Cookies&lt;/a&gt; that I wanted to try. Only, I couldn't find Mexican Hot Chocolate tablets at my local grocery store, and I really didn't feel like dragging my toddler around to Mexican markets to find them.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;span style="font-size: small;"&gt;So instead, I modified the recipe. I added 1/3 cup of cocoa and a teaspoon of cinnamon.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: left;"&gt;1. Stir cocoa powder and 1 tsp cinnamon into melted butter.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;2. Add sugar cookie mix and egg and mix well.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;3. Stir in mini chocolate chips.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;4. In a separate bowl, combine sugar with 1 tsp cinnamon. &lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;5. Shape dough into one inch balls, and roll in cinnamon sugar mixture.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;6. Place 1-2 inches apart on ungreased cookie sheets, pressing down slightly with the palm of your hand.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;7. Bake for 8-10 minutes in a 350 degree oven, careful not to overbake (I mean really careful. A minute too long and they will be hard as a rock by the next day).&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;8. Remove to wire rack to cool.&lt;/div&gt;&lt;br /&gt;

Ok, so it's really not a cookie recipe, but it's a Christmas classic and a must-make at my house. I haven't had much luck with the true candy recipes (mostly because I don't want to buy a candy thermometer), and this recipe gets pretty close, even though it uses marshmallow creme.&lt;br /&gt;

&lt;div style="text-align: left;"&gt;&lt;b&gt;Rich &amp;amp; Creamy Fudge&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 (7 ounce) jar marshmallow creme&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 1/2 cups white sugar&lt;/div&gt;&lt;div style="text-align: left;"&gt;2/3 cup evaporated milk&lt;/div&gt;&lt;div style="text-align: left;"&gt;1/4 cup butter&lt;/div&gt;&lt;div style="text-align: left;"&gt;1/4 teaspoon salt&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 cups milk chocolate chips&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 cup semisweet chocolate chips&lt;/div&gt;&lt;div style="text-align: left;"&gt;1/2 cup chopped nuts&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 teaspoon vanilla extract&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;span class="plaincharacterwrap break"&gt;1. Line an 8x8 inch pan with aluminum foil. Set aside.&lt;/span&gt;&lt;/div&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;span class="plaincharacterwrap break"&gt;2. &lt;/span&gt;&lt;span class="plaincharacterwrap break"&gt;In a large saucepan over medium  heat, combine marshmallow cream, sugar, evaporated milk, butter and  salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;span class="plaincharacterwrap break"&gt;(the key here really is to keep stirring the entire time you are bringing it to a a boil and after it boils. And watch for splatters - don't ask me how I know).&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;div style="text-align: left;"&gt;&lt;span class="plaincharacterwrap break"&gt;3. Remove from heat and pour in  semisweet chocolate chips and milk chocolate chips. Stir until chocolate  is melted and mixture is smooth. Stir in nuts and vanilla. Pour into  prepared pan. Chill in refrigerator for 2 hours, or until firm.&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;

&lt;br /&gt;
Anyway, the woman before me was going to a fancy Christmas party and wanted a cute hairdo so my stylist, Linda, curled her hair in these big beautiful ringlets. It looked gorgeous and I was envious since I've always wanted curls in my straight as a board super fine hair.&lt;br /&gt;
&lt;br /&gt;
Then later, when Linda was blow drying my hair, I said "think you could curl my hair like you did so-and-so's?" She said "Of course!"&lt;br /&gt;
&lt;br /&gt;
So she did. After I saw it, I was wishing I had talked Rick into a date night that night, since all I was going to be doing was going home. What a shame!&lt;br /&gt;
&lt;br /&gt;
When I walked through the door, the boys were on the couch. Cooper was excited that I was home, but when he jumped up to greet me, he stopped and started to laugh. Not just a little giggle, but big 'ol belly laughs.&lt;br /&gt;
&lt;br /&gt;
"Mommy, you look funny!"&lt;br /&gt;
&lt;br /&gt;
Way to pop that bubble, Coop.&lt;br /&gt;
&lt;br /&gt;
Rick just kind of looked at me and said, "I've never seen you with curly hair before." I gave him the "stupid" look.&lt;br /&gt;

Two hours later we were sitting on the couch watching a movie, and Rick turns to me and says, "You know, it's kind of growing on me." I said, "The curly hair?" He said, "Yes, I just thought you should know."&lt;br /&gt;

Another favorite drink in our house is Minute Maid Light Lemonade. Only, this week my grocery store was out of it, and I was stuck with Light LIMEade. (It's actually pretty good.)&lt;br /&gt;
&lt;br /&gt;
Then today I was thirsty, so I opened the refrigerator and was greeted with a choice...&lt;br /&gt;
