Spread strawberries on the baking sheet. Add vanilla seeds and pod, basil, cinnamon, and honey; toss gently.

Roast 20 minutes, stirring halfway. Cool completely and discard vanilla pod.

Beat cream cheese and egg yolk until smooth. Add sugar, lemon juice, and vanilla; mix well and refrigerate until ready to use.

Thaw puff pastry according to directions on package. Roll puff pastry and cut into 4-inch squares.

Create Danish kites by folding each square diagonally, cutting two short slits along the folded edges without cutting through the opposite side, unfolding, and crossing opposite corners to form a frame.

Whisk egg yolk and milk and brush pastry edges.

Add about 1 tablespoon cream cheese filling to each pastry. Top with strawberry jam and roasted strawberries.

Bake 18–20 minutes until puffed and golden. Cool slightly.
