Combine water, sugar and yeast. Proof until foamy, about 5 minutes
2. Mix flours and 1/2 T salt in the bowl of a stand mixer fitted with a dough hook.
3. Add 2 tablespoons olive oil to yeast mixture once it has proofed, then pour into flour mixture. Knead on low speed 10 minutes (if kneading by hand, knead the same amount of time). Place dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled, about 2 hours.
4. Punch down and divide into 4 balls, pinching the bottoms closed. Cover with plastic wrap, and let rise in a warm place another hour.
5. Preheat grill. Brush the onions and peppers with oil and season with salt and pepper. Grill until soft, about 5-10 minutes. Remove the onions and separate into rings and roughly chop, remove the peppers and slice into 1/8 inch slices.
6. Heat grill to high. Roll dough on dry work surface dusted with flour. Shape into 10-12 inch circle or rectangle - don't worry if it's not perfect. An irregular shape makes it look rustic. Brush dough with olive oil and season with salt and pepper, if desired, and use your fingers to lift the edges and drape it directly on the hottest part of the grill and grill for 2-3 minutes or until golden brown. Use a spatula or tongs to carefully flip the crust and brown the other side for 2-3 minutes. Remove the grill and place on a flat surface. Repeat with the rest of the crusts.
7. Divide the shredded mozzarella among the 4 crusts. Top with the grilled peppers and onions then add sliced precooked sausage, and tomato slices.
8. Mix basil leaves, balsamic vinegar, honey, salt and pepper to taste and 1/2 cup olive oil. Pour into a tightly sealed bottle and shake well. Drizzle over pizzas and heat on grill until hot. Serve immediately.

This Grilled Pizza recipe was posted via BigOven Recipe Software to the BigOven Social Network about Food with 160,000+ recipes.

Dimitri's Greek Pie

Dimitri's Greek Pie recipe

6 Servings
Pie
Greek
Kid Friendly Winter Summer Spring Picnics Fall Bake Snacks Main Dish Hors dOeuvres Appetizers Pie Greek

Ingredients
4 yellow, green or Lebanese zucchini thinly sliced into rounds
1/4 cup olive oil
2 leeks, white part only finely chopped
8 ounces Greek feta crumbled
8 ounces fresh ricotta
1/4 cup plain flour
1/2 cup chopped dill
3/4 cup chopped mint
8 eggs, lightly beaten
12 (about 6 oz) slices prosciutto

Method
Place zucchini in a bowl. Scatter with 1 tsp salt and toss to combine then set aside for 30 minutes. Rinse under running water, then drain well and pat completely dry with paper towels.
Meanwhile, heat oil in a small frying pan over medium heat. Add leeks and cook, stirring occasionally, for 8 minutes or until very soft. Set aside to cool then transfer to a bowl. Add zucchini, feta, ricotta, flour, herbs and eggs to bowl. Season to taste with salt and pepper and stir until well combined.
Preheat oven to 350F. Grease a 8 inch springform tin. Line base and sides with prosciutto slices, allowing prosciutto to overhang sides by about 2 inch. Pour in zucchini mixture then fold prosciutto over top, scrunching it slightly around edge of tin. Place tin on an oven tray and bake for 45 minutes or until pie is firm to the touch. Cool in tin for 20 minutes before releasing from tin. Preheat oven to 350F. Grease and line a 2.5 inch deep, 4 x 8 inch loaf bake pan.
Place almonds and walnuts into a food processor. Process until finely chopped. Transfer to a bowl. Stir in sugar and cinnamon. Set aside 1 tablespoon of mixture.
Follow steps 1, 2 and 3 of Basic scone recipe.
Roll dough out between 2 sheets of baking paper to a 8 x 12 inch rectangle. Brush with egg. Sprinkle nut mixture over dough. Starting from 1 short end, roll up like a Swiss roll. Place into loaf pan.
Bake for 50 to 60 minutes or until a skewer inserted into the centre comes out clean. Stand for 5 minutes in pan. Turn onto a wire rack.
Make syrup: Place all ingredients into a saucepan over medium-high heat. Cook, stirring, for 5 minutes or until sugar dissolves. Bring to the boil. Boil, without stirring, for 5 minutes.
Pierce top of warm loaf all over with a skewer. Drizzle with half the syrup. Sprinkle with reserved nut mixture. Stand for 5 minutes. Serve warm slices with remaining syrup.
