Mix flour, pecans and sugar together and add  butter. Mix until crumbly. Press mixture into a 9"x13" pan. Bake at 350  degrees until light golden brown, approximately 12 to 15 minutes. Cool in  pan. Add filling after crust is completely cooled, 20 to 25 minutes.    FILLING: Cream together cream cheese, sugar, milk and vanilla. Fold Cool  Whip into cheese mixture. Spread mixture over cooled crust ann top off with  cherry filling. Refrigerate unused portions. This makes 1 (9"x13") or 2  (8") round pans. Melt butter or margarine in a heavy saucepan over medium heat.  Whisk in 1 cup water and cocoa.  Bring to a boil, whisking constantly.  Remove from heat.  

Stir cocoa mixture into flour mixture.   Pour batter into a lightly greased 15 X 10 inch jellyroll pan.

Bake at 325 degrees for 20 to 25 minutes or until a wooden pick inserted in center of cake comes out clean.  Spread Fudge Frosting evenly over warm cake.

FUDGE FROSTING:

Melt butter or margarine in a saucepan over medium heat.  Whisk in milk and cocoa, and bring mixture to a boil.  Remove from heat.  Gradually add powdered sugar, stirring until smooth;  stir in vanilla extract.  

NOTE:  To thin frosting, add 1 to 2 tablespoons milk.

PEANUT BUTTER-FUDGE CAKE:  Omit sour cream in cake , and substitute 1-1/2 cups creamy peanut butter and 1/2 cup buttermilk.  Continue as directed to prepare cake and Fudge Frosting.  Garnish with miniature peanut butter cup candies, halved, if desired.

Roast on 500 until blistered, keep an eye on them. then turn over, and roast until other side is blistered and charred. Let cool, place in blender with the rest of the items and blend until smooth. You may take out the seeds and devein the Jalapenos to lessen the heat. Season to taste

For the salsa:
On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky. 

Enchiladas:

Change oven temperature to 350 degrees F.

Take 3 pounds of chicken and roast in the oven for 30 minutes at 350 degrees F, or until cooked though.  Let cool and then shred.  Set aside.

Meanwhile heat 2 tablespoons  of olive oil in a medium saucepan over medium heat. Add the onion and cook until soft and caramelized , approximately 5 to 7 minutes. Add the garlic and cumin then cook for a further minute. Sprinkle on the flour and stir to ensure the flour doesn't burn then gradually add the chicken stock to make a veloute. Continue stirring over a low simmer until the flour cooks and the liquid thickens. Turn off the heat, add 1/4 of the can of enchilada sauce and some additional fresh chopped cilantro and fold in the shredded chicken meat. Season, to taste, with salt and pepper. 

Turn oven back on  and  set to 350 degrees F.  Begin assembling the dish. Take a large baking dish and smear the bottom with some of the reserved tomatillo salsa. Now take the flour tortillas  and  put them briefly under the broiler. Using a shallow bowl, coat each tortilla lightly with the reserved salsa mix. Put a scoop of the shredded chicken-enchilada mix on top of the tortilla followed by a sprinkle of the shredded cheese. Fold the tortilla over the filling and roll to enclose it. Place the tortillas in the baking dish and continue to do the same with all the tortillas. Finally pour the reaminder of the enchilada sauce and top with the remaining shredded cheese. Bake uncovered for about 30 minutes until bubbly and cracked on top. Garnish with cilantro and tomato. 

Serve hot with Yellow Rice, the tomatillo salsa, sour cream and fresh guacamole, if desired.

Season both sides of skirt steak with kosher salt and pepper. Cook on Med/High Heat until desired temperature. Allow skirt steak to rest before slicing.

Fry bacon well done and crumble. (Set aside)

In the same pan add EVOO, Butter, Parsley, Garlic, Spinach, and salt and pepper. Allow the garlic to cook approx 5-7 minutes. Combine garlic sauce with pasta and sliced skirt steak.

 <br/><br/>Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the shortening. Place the shortening in a bowl and pour warmed milk over. Set aside. 
In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. After 5 minutes, pour the yeast mixture into the large bowl add the milk and shortening mixture, first making sure the milk and shortening mixture has cooled to lukewarm. Add the egg, sugar, salt, nutmeg,vanilla and half of the flour. Using wooden spoon, combine the ingredients until flour is incorporated . Add the remaining flour, knead the dough untill becomes smooth, approximately 8 to 10 minutes. Transfer to a well-oiled bowl, cover, and let rise for 1 hour or until doubled in size. 
On a well-floured surface, roll out dough to 3/8-inch thick. Cut out dough using a 2 1/2-inch doughnut cutter or pastry ring and using a 7/8-inch ring for the center whole. Set on floured baking sheet, cover lightly with a tea towel, and let rise for 30 minutes. 
Preheat the oil in a deep fryer or wok to 365 degrees F. Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side.
Transfer to a cooling rack placed in baking pan. Allow to cool for 15 to 20 minutes.
for coclate glaze:
On low heat melt coclate  and  milk , then seive icing sugar on it and mix.
for sugar glaze: 
seive icing sugar in a bowl add water and flavor, mix briefly.

Preheat grill to medium-high heat. Place fish in a medium-size dish. Whisk together the oil, lime juice, ancho, jalapeno and cilantro, and pour over the fish. Let marinate for 15 to 20 minutes.

Remove the fish from the marinade and place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side, then flip for 30 seconds and remove. Let rest for 5 minutes, then flake the fish with a fork.

Place the tortillas on the grill and grill for 20 seconds.
