O Festival Igarapé Bem Temperado, que foca na gastronomia de raiz da região, nos ingredientes dos quintais, nas tradições gastronômicas das famílias mineiras! Ao invés de apenas importar chefs e ingredientes de fora, o festival mostra pra nós de onde vem a nossa rica cultura gastronômica.&lt;br /&gt;
Eu e meu colega de trabalho, o chef Cléber Junior demos uma aula na praça da cidade ensinando 5 técnicas diferentes de se preparar a Tilápia, que é um peixe tão comum em Minas apesar de não ser originalmente daqui. Utilizamos para a aula frutas e ervas das hortas de Igarapé, e fomos auxiliados por jovens de um projeta local chamado "chefs do amanhã"! Além de termos sido muitíssimo bem recebidos, tivemos uma platéia variada de pessoas de diferentes faixas etárias que participaram, anotaram e degustaram os cinco pratos que fizemos. Foi um sucesso!&lt;br /&gt;
Haviam fogões à lenha e fornos de barro construídos em plena praça da cidade, onde os "mais antigos" mostravam a todos as tradições de família, fazendo e assando na hora biscoitos de polvilho doce em folha de bananeira, broas e roscas caseiras! As famílias trabalhando, secando linguiças defumadas sobre os fornos e cozinhando pratos típicos alí mesmo, deixando a praça completamente perfumada... os licores caseiros de carambola e abacaxi, os doces e os artesanatos... música regional, várias aulas abertas na praça com direito a degustação... fiquei encantada com o capricho, tanto do festival quanto dos participantes!&lt;br /&gt;
Tudo isso feito de uma forma tão organizada e ao mesmo tempo tão simples e verdadeira como o sorriso no olhar dos mineiros do interior...&lt;br /&gt;
Como é bom saber que estamos re descobrindo as nossas raízes, que estamos começando a exportar nosso conhecimento, nossos ingredientes e nossa tão apreciada simplicidade! O sabor da cozinha feita com a alma é inigualável! Foi uma experiência encantadora...&lt;br /&gt;

Ervas como tomilho, alecrim, funcho, manjericão, cebulette e salsa nunca faltam em minha cozinha. &lt;/div&gt;&lt;div class="MsoNormal"&gt;Gosto de usar o funcho para assar peixes no azeite, temperados com sal, pimenta moída na hora e limão. A sálvia e o estragão combinam muito com as aves, o tomilho na minha opinião é fundamental para um bom cogumelo salteado, e o alecrim com cordeiro então... &lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;br /&gt;

Já ervas mais aromáticas como o tomilho, o alecrim e a sálvia que possuem um sabor mais marcante e amargo quando cruas, para soltarem todo seu aroma devem ser cozidas por mais tempo.&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;br /&gt;

Me lembro que em minha casa, na infância, comíamos banana crua no meio da comida, e eu delirava! Um costume que acredito ter vindo da minha avó materna, que segundo "lendas familiares" era uma Paraibana pra lá de "arretada" que colecionava orelhas de homens!&lt;br /&gt;
Meu sonho era ter conhecido a figura, mas como ela se foi antes de eu nascer, me contento com os "causos"...&lt;br /&gt;
Banana, a fruta das crianças... deliciosa de todos os jeitos: amassada com mel e canela, assada com requeijão e açúcar, doce de banana no tacho, vitamina de banana com leite, banana frita, etc etc etc...&lt;br /&gt;

Quando estiver quase transparente, acrescente o vinho e mexa até secar. Tempere com sal e pimenta do reino a gosto e vá pingando o caldo de carne lentamente e mexendo sempre até que o risoto esteja no ponto desejado (al dente). Coloque a manteiga gelada, o tomilho, a banana e o parmesão, mexa até derreter toda a manteiga. Tive receio na escolha, quase desisti com medo de muita resistência, mas resolvi arriscar. A surpresa foi que minha entrada com pequi, acabou conquistando aos que tanto o rejeitavam!&amp;nbsp;Vitória! &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: .0001pt; margin: 0cm;"&gt;&lt;span style="font-size: 13.5pt;"&gt;&lt;span class="Apple-style-span" style="color: white;"&gt;O confit de Pato ao caramelo de pequi com pinólis torrados sempre foi um dos carros-chefe do Chez Aline. Tô pra te falar que muita gente que achava que pequi era horrível comeu esse prato sem saber e adorou!&lt;/span&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin-bottom: .0001pt; margin: 0cm;"&gt;&lt;span style="color: white; font-size: 13.5pt;"&gt;Outra receita “feliz” com pequi, talvez a mais de todas, foi uma sobremesa que eu criei. Essa, tenho o maior orgulho em confessar que das 4 taças que preparei para que o fotógrafo escolhesse a mais bonita para a Prazeres da Mesa, eu comí 3 e ½. 500g de farinha sem fermento&lt;br /&gt;
300 ml de água fria&lt;br /&gt;
1 tablete de fermento fresco&lt;br /&gt;
1 pitada de sal&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Misture os ingredientes e sove bastante (quanto mais, melhor).&lt;br /&gt;
Deixe a massa descansar em um bowl com farinha salpicada por baixo e por cima, e cubra com um pano levemente úmido.&lt;br /&gt;
Uma hora e meia depois, retire as "bolinhas", sove mais um pouco e enrole os pães no formato desejado.&lt;br /&gt;
&lt;br /&gt;
Forre uma assadeira com um pano com farinha salpicada e acomode os pães com uma boa distância entre eles porque irão crescer ainda mais. Cubra novamente com o pano úmido e deixe por mais meia hora.&lt;br /&gt;
Asse os pães a 180 graus em forno pré aquecido até que o pão esteja crocante por fora.&lt;br /&gt;
&lt;br /&gt;
Dica: para ter um pãozinho quente todos os dias de manhã, ao invés de assar o pão por completo, asse-os por menos tempo até que por fora estejam crocantes mas ainda por finalizar (pré assados). Congele o pão pré assado, e na noite anterior retire do frízer para que descongele durante a noite (ou na pressa, 1 minuto no microondas).
