<p><img title="Ozonizer" style="border-right: 0px; border-top: 0px; display: inline; margin: 0px 0px 0px 20px; border-left: 0px; border-bottom: 0px" height="240" alt="Ozonizer" src="http://www.blindmansfaith.com/updates/wp-content/uploads/2009/07/ozonizer.jpg" width="300" align="right" border="0" /> As mentioned in a <a href="http://www.blindmansfaith.com/updates/2009/06/24/our-kitchen-is-not-big-enough/" target="_blank">previous post</a>, we have a machine called an ozonizer. We heard about this machine from a doctor in Hong Kong. The machine uses ozone (O3) to disinfect and kill bacteria from various things like meat, fruits, vegetables, fabric, etc… You can also use the ozonizer to remove odor from the refrigerator, shoes, smoke-filled room, etc&#8230; It’s also supposed to remove synthetic substances used on meat/vegetables, like hormones, antibiotics, pesticides, and other harmful chemicals we put into our mouth.</p>
<p>To clean meat, fruits, and vegetables, we place the item in a big bowl and fill it with water. Then, we insert the tube from the ozonizer into the water and turn the machine on for 15-30 minutes depending on how “unclean” the item is.</p>
<p>We use the ozonizer mostly on chicken. We don’t use it on anything else since we eat mostly organic vegetables. We don’t eat pork either. </p>
<p>Does the ozonizer work? We don’t really know for sure, but what we do know is that when we use the ozonizer on regular chicken breasts (bought from Carrefour and Metro), A LOT OF GUNK comes out. It is so gross that we try not to eat too much chicken, and will avoid eating chicken from outside sources. We tested the ozonizer on organic chicken breasts before and didn’t see gunk like this. </p>

<p>Gross, huh?! Our conclusion is that the chicken farmers here in China (and probably in the U.S. too) injected the chickens with a bunch of things like hormones, antibiotics, steroids, you name it! </p>
<p>Unfortunately, our access to organic chicken is limited. So we try not to eat too much chicken, and instead eat more vegetables, fish, and beef. </p>
<p>Below is a video we took of the oxidizing process. We let the machine run for about 40-45 minutes. </p>

			<content:encoded><![CDATA[<p>When you can’t eat out at all, you eat in! That means we spend a lot of time in the kitchen making <a href="http://www.blindmansfaith.com/updates/2009/04/17/food-allergies-and-jason-friendly-list/">healthy, gluten-free, Jason-friendly meals</a>. It has taken us a long time to figure out a sustainable diet that doesn’t require much imported food items, either from import stores in Shanghai or carried in our suitcase during our annual visit to the U.S. </p>
<p>The key is to <strong><font color="#ff0000">make everything from scratch</font></strong> and <strong><font color="#ff0000">acquire the right kitchen gadgets</font></strong>! </p>
<p>Over the years, we’ve acquired quite a number of kitchen gadgets. Our kitchen is running out of space! But we’re happy and able to eat very well, healthy, and cheaply too! We’ve come to realize how much restaurants in Shanghai charge premium prices for authentic western food, just because Chinese or non-authentic western restaurants can’t get things right (pizza, hamburgers, spaghetti, sandwiches, cheese cake, burritos, etc…). </p>
<p>If we could eat out, we’d be willing to pay those prices! But since we can’t, we make them ourselves and for only a fraction of the price!</p>
<p>Here’s a few appliances occupying our tiny kitchen space. </p>

<p>The <a href="http://www.blindmansfaith.com/updates/2008/05/26/vitamix-in-china/">Vitamix</a> is our most precious (and most expensive) kitchen appliance! We use it to make many things! </p>
<ul>
<li>Fruit smoothies </li>
<li>Peanut/almond butter </li>
<li>Grind gluten-free flours like rice flour, buckwheat flour, sorghum flour, almond meal, cornmeal, flaxseed, etc… </li>
<li>Soup </li>
<li>Mayonnaise </li>
<li>Knead bread </li>
<li>Salsa and sauce </li>
<li>Crush ice </li>
<li>Baby food </li>
</ul>
<p>This machine is definitely a life-saver! Despite the ridiculous price tag (over $1000 USD) for a 220V model, we actually ended up saving a lot more because pre-made <a href="http://www.simplygf.com/more-gluten-free-flour-mixes/">gluten-free flour mixes</a> are very expensive both here and in the U.S., not to mention a glass of 100% fruit juice/smoothies at restaurants!</p>

<p>We acquired the <a href="http://www.blindmansfaith.com/updates/2009/03/30/drinking-lots-of-vegetable-juice/">Omega Juicer</a> earlier this year. We use it mostly to make vegetable juice. </p>
<p>Every week, we get a basket of <a href="http://www.blindmansfaith.com/updates/2009/03/28/organic-vegetables-delivered-to-your-house/">organic vegetables delivered to our house</a>. We use the juicer to make healthy (but kind of disgusting) drinks. A glass of pure green juice a day keeps the doctors away!</p>
<p>Aside from juicing vegetables, we tried making peanut butter and pasta once. The peanut butter attempt was a mess. It’s much easier using the Vitamix! As for pasta, rice pasta is quite cheap at Carrefour, so we didn’t bother making them again.</p>

<p>We use this juicer to make citrus—orange, lemon, and grapefruit—juice. Not too much use out of this little gadget since packaged 100% orange/lemon/grapefruit juice is cheaper to buy! But we still use it occasionally to squeeze fresh juice when fruits are on sale.</p>

<p>Surprisingly, not many foreigners in China have a hand mixer. Most people don’t have an oven, so there’s no need for doing any kind of mixing/blending. But even those with toaster ovens still mix manually! It’s probably because it’s not easy to find hand mixers in China. </p>
<p>Before the days of online shopping on Taobao.com, we had to scour the entire city looking for “special gadgets” like a hand mixer! </p>
<p>A baker cannot live without a mixer! </p>

<p>We bought this 3-in1 sandwich maker/waffle/grill a few weeks ago online from Taobao.com. Originally, we wanted to get a bread toaster, but instead, got a sandwich maker so that we can make sandwiches in advance and eat as snacks!</p>
<p>Turns out that making sandwiches was too messy. Homemade gluten-free bread doesn’t always come in nice square slices! =( </p>
<p>However, we’ve been using this machine to make yummy gluten-free waffles. Today, we tried grilling hamburger patties. They turned out wonderful! All the fat was skimmed off on the grill. </p>

<td valign="top" width="350">Before we got the Vitamix, we had this nice little blender that occupied much less space. (The Vitamix is twice as big as this!) We made a lot of yummy smoothies with this blender. However, something got stuck on the blade and broke a tiny piece of plastic that connected the motor and the blade. So now, the motor runs (and quite well), but not the blade.&#160; This happened once before and we fixed it for 30RMB at Braun’s customer service office in Puxi. But the trek out there is too far of a journey for us lazy folks that already have THE king of all blenders (aka the Vitamix). If anyone wants it, go right ahead. Costs 30RMB to get it fixed and working again!</td>

<p>You’re probably wondering, what the heck is an ozonizer? We heard about this technology/machine from a doctor in Hong Kong, so we ordered it on Taobao. </p>
<p>The machine supposedly kills bacteria and disinfects various items including meat, vegetables, fruits, fabric, refrigerator, etc… It’s also supposed to “remove” synthetic chemicals injected into meat, like hormones and antibiotics. </p>
<p>We use the machine mostly on chicken breasts. We place the meat in water, then insert the ozonizer tube into the water, and run the machine for 10-30 minutes.</p>
<p>We did an experiment with organic and regular chicken breasts before. With the organic chicken breasts, the water remains pretty clear and clean after 30 minutes. With the regular chicken breasts, the water turns murky and there’s a mountain of foam on top of the water. We have to run the machine for another half an hour before “things” stop coming out of the meat. It’s quite disgusting actually. Since getting this machine, we are afraid to eat chicken that has not been oxidized. </p>
<p>One of these days, we’ll get around to posting videos and pictures on our blog to gross all of you out! </p>

<p>In addition to these kitchen gadgets, we also have a full-size built-in oven, a microwave, a dishwasher, a double-door refrigerator, two broken rice cookers, a bunch of pots and pans, and about a hundred Lock ‘n’ Lock containers! </p>

			<content:encoded><![CDATA[<p>Last month, we went to Hangzhou for a weekend getaway. We&#8217;ve been wanting to go to Hangzhou for a long time, but traveling is always stressful when <a href="http://www.blindmansfaith.com/updates/2009/04/17/food-allergies-and-jason-friendly-list/" target="_self">one of us</a> has some serious dietary restrictions. So we&#8217;ve decided, since we&#8217;re <a href="http://en.wikipedia.org/wiki/DINKY" target="_blank">DINKs</a> making more than what we spend (on what?!), we will eat only at 5-star restaurants/hotels if we <em>have to</em> eat out. Not that we can guarantee what we eat is 100% Jason-friendly&#8230; but at least, we can find an English-speaking chef who will at least ask a few questions instead of just nodding his head saying &#8220;ok ok ok ok&#8230;&#8221;</p>
<p>We stayed at the <a href="http://english.orangehotel.com.cn/index.php/Index/showInfo/hotelId/3303" target="_blank">Orange Hotel</a>, recommended to us by a friend. The hotel was very nice and clean, and service was great. We didn&#8217;t get to see what the other rooms looked like, but ours had an interesting bathroom design (see pictures below).  We also had a goldfish and a Rubix cube to keep us company. Very nice touch! The room rates were incredibly cheap for a hotel right infront of the West Lake!  We paid around 450RMB/night! All the nice hotels on West Lake were at least 1500RMB/night!  With all that we saved on hotel, we lavishly spent on buffets (lunch and dinner) at the Hyatt.</p>
<p>The main purpose of our trip was to find a nice resting place for some of Iris&#8217; ashes. She&#8217;s always wanted to travel around the world, so the whole family has planned various trips throughout the year to places she has traveled to (and liked) or wanted to go. That&#8217;s another post for another day.</p>

Rather than wasting 6 hours in a roundabout flight and killing time at the airport in Macau, Hong Kong, Cheju, or Okinawa, direct flights from Shanghai to Taipei take only 1.5 hours! So fast! Just enough time to find your seat, buckle up, have a drink/meal, read a newspaper, and there you are, landed at Song Shan or Tao Yuan Airport! </p>
<p>Direct roundtrip flight tickets cost about 3000-3500 RMB, which is around what the non-direct flights tickets used to cost. Now, the non-direct flight tickets via Hong Kong are super cheap! Only 2000 RMB!</p>
<p>Susan made two trips to Taipei this year already! Once in January and again last weekend. </p>
<h3>The Terminal 2</h3>
<p>We’ve been meaning to write about the first trip in January, but things got terribly busy the weeks and months after the trip, so the story was left untold until now. It was one of those moments in life that makes an entertaining story only afterwards but not so much while experiencing it. It was <a href="http://en.wikipedia.org/wiki/The_Terminal" target="_blank">The Terminal</a> 2, starring Susan Wu. </p>
<p><img title="U.S. passport" style="border-top-width: 0px; display: inline; border-left-width: 0px; border-bottom-width: 0px; margin: 0px 25px 0px 0px; border-right-width: 0px" height="219" alt="U.S. passport" src="http://www.blindmansfaith.com/updates/wp-content/uploads/2009/06/image2.png" width="175" align="left" border="0" /> Upon the short flight and arrival at Tao Yuan airport, Susan was stuck at the customs arrival area. Her passport did not expire nor the U.S. cease to be a country. Rather, her passport had less than 6 months validity, and the customs official wouldn’t let her through. </p>
<p>Apparently, the Taiwan Department of State signed an agreement with the U.S. government that <a href="http://travel.state.gov/travel/cis_pa_tw/cis/cis_1036.html" target="_blank">U.S. passport holders can enter Taiwan without a visa</a> for up to 30 days <em>only if</em> the passport is valid for at least 6 months. Susan’s passport was going to expire in 5 months and 20 days, 10 days short of the agreement!!!&#160; </p>
<p>The sad thing was, Susan did renew her U.S. passport two weeks prior to the trip. The U.S. consulate called her the morning of her flight and said her passport was ready for pickup. She didn’t have time to pick up the new passport before her flight, so she left for Taiwan with the old passport, not knowing about the passport validity agreement. </p>
<p>Seriously, how often does one’s passport expire in less than 6 months? (Answer: Every 10 years!) Shame on the airport check-in counter agent for not checking passports and informing travelers… </p>
<h3>Six Good Reasons Not to Comply</h3>
<p>So without the 6-month validity, the customs officer gave Susan two choices—pay NT$5000 (~$150 USD) for an on-arrival visa or go back to Shanghai! There were no direct flights back to Shanghai that day so the only option was to get an on-arrival visa.</p>
<p>Susan had about NT$1000 (enough money for a cab ride to mom/dad’s house) and $60USD, which makes a total of about NT$3000. She did not have enough money to get a visa, and visa wasn’t accepted. No visa. No visa. (Get it?) </p>
<p>Susan gave the custom officer 6 VERY GOOD reasons why she should let her through <em>just this time</em>.</p>
<ol>
<li>She didn’t have money to pay for the visa. It’s the visa office&#8217;s fault for not accepting credit card. </li>
<li>She’s a Taiwan-born Taiwanese citizen (who happened to have a U.S. passport). Let her enter her own country!!! </li>
<li>Her mom was injured and in the hospital. </li>
<li>Her passport validity was only 10 days short of the no-visa agreement. </li>
<li>She <em>has </em>a valid, new passport, just not <em>with</em> her. </li>
<li>She’s only going to be in Taiwan for 4 days. </li>
</ol>
<p>With all the begging and whining, the customs official still wouldn’t budge and said even if she were the president of the United States, he still couldn’t let her pass. An agreement is an agreement. He kindly pointed her to the foreign exchange booth. </p>
<h3>Got Money?</h3>
<p>It was then that Susan saw that RMB bills were accepted at the foreign exchange, only that she didn’t bring ANY with her because why would anyone want to bring RMBs to Taiwan?! Oh right, because now there’s direct flights between Shanghai and Taiwan! If only she knew, she wouldn’t have pulled out the big wad of RMB bills out of her wallet that morning!!!&#160; </p>
<p>So the final and last resort? Get money from the ATM machine. There was only one ATM machine, next to the foreign exchange booth. Good thing she brought her bank cards with her!</p>

After numerous attempts at inserting her Bank of America ATM card, China Construction ATM card, ICBC ATM card, Bank of China ATM card, Agricultural Bank ATM card, and even her credit card, the machine just did not want to give Susan any money! She was told that there might be a working ATM machine outside the customs arrival area, but oh wait, there was a reason why she was still <em>inside </em>and not <em>outside</em>!!!&#160; Doh!&#160; Whichever idiot that suggested this had the audacity to say “Why don’t you give me your ATM card and PIN number, and I’ll get some money for you?”&#160; </p>
<h3>When It Rains, It Pours</h3>
<p>And that’s what happened. Unlike <a href="http://en.wikipedia.org/wiki/The_Terminal" target="_blank">Viktor Navorski</a> who made the best of a terrible God-forbid-it-ever-happens-to-you situation, Susan sat down smack in the middle of the in-between land and wailed, ranted, and screamed like <a href="http://shanghaiist.com/2009/02/17/tuesday_timewaster_woman_goes_berse.php" target="_blank">HK Airport Auntie</a>. <strike>The security guards came and took her away.</strike>&#160;</p>
<p>The man at the foreign exchange booth had pity on her. He gave Susan enough money to pay for the on-arrival visa, then called a flight attendant to escort her to outside the customs arrival area where the <em>working</em> ATM machines were.</p>
<p>After withdrawing enough money and giving the money to the flight attendant to give back to the foreign exchange guy, Susan finally made it outside the airport, 6 hours later. So much for a fast direct flight to Taiwan! </p>
<p>The first smell and step into the real Taiwan was quite anticlimactic. There was no parade or cheers or sad parting or anything of that sort. Just taxis honking for business. But Susan stretched out her hands anyway and soaked in the pleasure of being <em>outside</em> and not <em>inside</em>. </p>

<p>Yesterday was Iris’ 33rd birthday, the first birthday without hearing her voice and her laughter. Even though I can’t remember when was the last birthday that we celebrated together, I’d call every year and it was always the same thing—a nice dinner out and then mango mousse cake. </p>
<p>Iris… happy Birthday. We all miss you so much. </p>

<p>The <a href="http://www.chinasmack.com/pictures/guiyang-handicapped-beggar-street-sidewalk-art/" target="_blank">same beggar/artist was in Guiyang</a> last year around September, earning his living from writing calligraphy and sketching beautiful art on the sidewalks. </p>

<p>These reflections were written and posted, not so much for an audience, but for our own reflections as the writings bear much of what’s on our hearts that cannot be articulated coherently in speech. Writing is, in fact, quite therapeutic. </p>
<p>As Nouwen so eloquently writes:</p>
<blockquote><p>Writing can be a true spiritual discipline. Writing can help us to concentrate, to get in touch with the deeper stirrings of our hearts, to clarify our minds, to process confusing emotions, to reflect on our experiences, to give artistic expression to what we are living, and to store significant events in our memories. Writing can also be good for others who might read what we write. </p>
<p>Quite often a difficult, painful, or frustrating day can be “redeemed” by writing about it. By writing we can claim what we have lived and thus integrate it more fully into our journeys. Then writing can become lifesaving for us and sometimes for others too.</p>
<p>One of the most satisfying aspects of writing is that it can open in us deep wells of hidden treasures that are beautiful for us as well as for others to see.</p>

<p>Most of what we write stem from what we’ve experienced, struggled/wrestled with, reflected upon, and are still trying to figure out. While most will find these writings no different than reading a boring book (or blog), there are some who read (or will read) our reflections and are able relate and somehow find comfort because they too have gone through or are going through similar experiences. </p>
<p>We find that we are not alone in our “sufferings.” Some have walked before us. Some trail behind us. But most importantly, we have One who walks <em>with us</em> and shows us the way.</p>

<p>Lent was over more than a month ago. Easter Sunday this year was April 12. It has taken us (or shall we say, the only person who writes here) a long time to write the next installment of our Lenten reflections. What is there to say/write when nothing sparks? Does one write/share only when he/she is inspired or has anything edifying to impart? Or does free speech run wild at the expense of causing another to stumble? </p>
<p>After much delay and writer’s block, here goes a post about a taboo topic not meant to enlighten anyone nor is it bedtime reading for the lighthearted. </p>
<h3>All Living is Dying</h3>
<p>Excerpt from Henri Nouwen’s <a href="http://www.amazon.com/gp/product/0824513533?ie=UTF8&amp;tag=jasu-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=0824513533" target="_blank">Show Me the Way: Daily Lenten Readings</a>: </p>
<blockquote><p>If the God who revealed life to us, and whose only desire is to bring us to life, loved us so much that he wanted to experience with us the total absurdity of death, then — yes, then there must be hope; then there must be something more than death; then there must be a promise that is not fulfilled in our short existence in this world; then leaving behind the ones you love, the flowers and the trees, the mountains and the oceans, the beauty of art and music, and all the exuberant gifts of life cannot be just the destruction and cruel end of all things; then indeed we have to wait for the third day.</p>
<p>But mortification — literally, “making death” — is what life is all about, a slow discovery of the mortality of all that is created so that we can appreciate its beauty without clinging to it as if it were a lasting possession. Our lives can indeed be seen as a process of becoming familiar with death, as a school in the art of dying. I do not mean this is a morbid way. On the contrary, when we see life constantly relativized by death, we can enjoy it for what it is: a free gift. The pictures, letters, and books of the past reveal life to us as a constant saying of farewell to beautiful places, good people, and wonderful experiences. All these times have passed by like friendly visitors, leaving us with dear memories but also with the sad recognition of the shortness of life. In every arrival there is a leave-taking; in every reunion there is a separation; in each one’s growing up there is a growing old; in every smile there is a tear; and in every success there is a loss. All living is dying, and all celebration is mortification too.</p>

<p>The excerpt above was from Nouwen’s Lenten reading for day 40, Saturday, the day after the crucifixion. It was the day that Jesus’ followers—His disciples, His family, His friends—mourned the loss of their beloved Jesus. It was also the Sabbath day. No one could do anything or go anywhere. Every heart wreaked with despair because everything these people hoped for was nailed on the cross and buried in a tomb. It was a dark moment in history when death ended everything there was to live/hope for. </p>
<p><img title="image" style="border-top-width: 0px; display: inline; border-left-width: 0px; border-bottom-width: 0px; margin: 0px 0px 0px 25px; border-right-width: 0px" height="293" alt="image" src="http://www.blindmansfaith.com/updates/wp-content/uploads/2009/05/image.png" width="216" align="right" border="0" /> Have you ever experienced moments like this when death ended everything there was to live/hope for? </p>
<p>For most people, probably not. <a href="http://www.caringbridge.org/visit/wayneho" target="_blank">Some have come close to it</a> and some have experienced it through the the death of a dearly loved one—a parent, a spouse, a child, a sibling, a relative, a dear friend—that brought them face-to-face with human mortality and left to ponder upon the meaning of life. </p>
<p>This is the ‘death’ that Nouwen reflected upon, the part of life that no one wants to think about, witness, experience, partake, nor remember. And he calls us to think about why Jesus took part in something that mankind throughout history have sought to escape from in its vain search for the elixir of life, be it an actual magic potion, cosmetics, or modern medicine. </p>
<p>In the end, we all die. <a href="http://www.blindmansfaith.com/updates/2009/02/13/the-quality-of-life/">Some younger than others</a>. Jesus the son of God died a mortal man at 33. <a href="http://www.blindmansfaith.com/updates/2009/02/19/our-beloved-iris/">Iris was 32 when she died</a>. <a href="http://www.blindmansfaith.com/updates/2009/01/26/a-promise-too-good-to-be-true/">Jason brushed death last year</a> at the age of 31. And who knows, Susan might not live to celebrate her 30th birthday this year. </p>
<h3>Purpose Drive Death</h3>
<p>Nouwen says all of life is about making death, becoming familiar with death, and learning the art of dying. </p>
<p>Last year during a business trip to Austin, Susan attended a <a href="http://www.desiringgod.org/Events/RegionalConferences/Archives/2008b/" target="_blank">John Piper conference</a>. The theme of the conference was about suffering. During his message, Piper said something about living a “purpose driven death.” Was he jokingly mocking Rick Warren? Or has he been enlightened like Nouwen was? Piper and Nouwen would have been good friends.&#160; </p>
<p>Who in their 20s and 30s think about dying? We’re just at the prime of life having passed the vicissitude of the 20s (job/career, relationship/marriage). We’re just starting to <em>live</em>! This is the decade when people usually don’t have to think or worry about health issues, major illnesses, aging parents, and dying family members… at least not yet. </p>
<p>So when Nouwen writes about death and dying, it makes us uneasy because we don’t want to think about such morbid topic. It’s the <em>last</em> thing we want to think about having just lost a sister to cancer and still mourning and grieving over such tragedy. We are still living as if it was Saturday, the day after the crucifixion. It has been Saturday every day for a few months. </p>
<h3>A Very Slow Discovery</h3>
<p>If what Nouwen says is true, that “life is a slow discovery of the mortality of all that is created,” then we see life for what it is and not something to be hoarded. Every day is a gift we don’t deserve because we all deserve to die, for the penalty of sin is death. If it weren’t for what Jesus did on the cross, death would have truly ended everything that was good. But because Jesus victoried over death, came back to life, lives today, and gave us LIFE and HOPE, death is and will not be the end.</p>
<p>What does that really mean to us? How does that change what and how we think/feel today? How long does one mourn over the dead? How long will grief last? When will we think of Iris and not shed tears? When will the frequent and sporadic waves of sadness go away? When will we see her again? <em>Will we</em> see her again? </p>
<p>We don’t know. We don’t know…</p>
<p>We’re at a loss for words. This is not the way to end a post nor is it the way to end Lent. One of these days when we have answers, some answers, we’ll write more. As is, this is probably our last post for our <a href="http://www.blindmansfaith.com/updates/series/lent-2009/">2009 Lenten reflections</a>. </p>

Shanghai, with a city population size of about 16 million, has 4 million migrant workers. 			<content:encoded><![CDATA[<p>There are nearly 200 million migrant workers living and working in big cities in China. Shanghai, with a city population size of about 16 million, has 4 million migrant workers. It’s not clear whether migrant workers are actually counted in the city’s population, but regardless, migrant workers constitute nearly 20-25% of the city’s population! They include construction workers, restaurant staffs, manufacturing workers, coalminers, cleaning ladies, ahyis, street sweepers, hairdressers, masseuse, street sellers, etc… </p>
<p>Migrant workers are the hardest working, yet most underpaid workers. They work 10-12 hours a day, 6-7 days a week. Most of them earn less than 1000 RMB ($150 USD) a month. Because of <a href="http://en.wikipedia.org/wiki/Hukou_system" target="_blank">China’s hukou system</a>, migrant workers are not protected by labor laws nor are they able to access government services such as education and basic health care. Their children can’t attend public schools, so many of them take hour-long bus rides to migrant schools outside of the cities. </p>
<p>Migrant workers live as second class citizens in big cities, but they are the backbone of China’s economic boom. They built the country’s skyscrapers, assembled its exports, and sent billions of dollars back home to their families in the poor rural regions. Some of the country’s biggest and wealthiest banks like China Construction Bank and Agricultural Bank got rich from migrant workers sending money home. </p>

That was the last time he had pizza or Italian food. The man is allergic to EVERYTHING in a pizza. </p>
<p>Actually, he <a href="http://www.blindmansfaith.com/updates/2007/08/13/a-bite-of-heaven/">cheated once</a> after having been on Chinese medicine for a few months. He had a small bite of Papa John’s pizza and paid dearly for the mistake for <a href="http://www.blindmansfaith.com/updates/2008/11/10/and-job-said/">weeks and months</a> afterwards.</p>
<p>Last summer, we were in New York City and visited a gluten-free Italian restaurant. We figured, this is the land of the gluten-free, and the chef could accommodate and make a special pizza for Jason without the cheese or the tomato sauce. And he did. He made a pizza with just bread and slices of sausage on top. It was lame. How can you even call that a pizza?! But Jason was happy eating “pizza” for the first time since 8.</p>
<p>So finally, after four years of being married to a man with allergies to everything about Italian food, Susan finally figured out her way around the gluten-free kitchen (and in Shanghai too)! We’ve acquired most of the ingredients necessary to make decent gluten-free and Jason-friendly meals, breads, and snacks. Thanks to our <a href="http://www.blindmansfaith.com/updates/2008/05/26/vitamix-in-china/">VitaMix</a> and <a href="http://www.blindmansfaith.com/updates/2008/02/20/tears-of-joy-but-not-from-the-onion/">food processor</a>, we are able to <a href="http://www.simplygf.com/making-organic-sorghum-flour-using-vitamix/" target="_blank">grind our own gluten-free flours</a> and knead dough quickly. </p>
<p>Our latest discovery and obsession is making <a href="http://www.simplygf.com/gluten-free-dairy-free-tomato-free-pizza/" target="_blank">gluten-free, dairy-free, and tomato-free pizza</a>! You’re probably wondering, how can you even call that a pizza? Well, believe it or not, it’s so good that even our neighbors liked it. In the past few weeks, we’ve made curry chicken, Mexican chili, teriyaki chicken, pepperoni, and Hawaiian pizzas. Jason has been very happy eating his gluten-free, dairy-free, and tomato-free pizza!</p>

			<content:encoded><![CDATA[<p>Last year, Beijing city officials and government issued all sorts of <a href="http://www.shanghaitechwriter.com/2008/08/07/beijing-olympics-style-guide/" target="_blank">rules, policies, and regulations</a> in preparation for the 2008 summer Olympics. These regulations ranged from educating its citizens regarding how to dress and what not to ask foreigners to regulating which cars can drive on what days to shutting down companies and factories on certain days. Rain seeds were shot up to the sky to make artificial rain. It was either going to rain before or during the Olympics. Might as well wring the sky dry before the Olympics. Many people were out of work because factories were shut down for weeks. Toys “R” Us and Wal-Mart had a shortage of made-in-China products. Then there were regulations regarding where people can and can’t go during the Olympics.&#160; Beijing spent many months and years preparing for the summer Olympics, all in an attempt to present an impeccable image of the city/country and its people to the rest of the world. </p>
<p>By the time the Olympics came around, China was ready to greet the world. Beijing was a lot more cleaned up than before. The <a href="http://www.shanghaitechwriter.com/2008/08/18/all-the-buzz-and-controversy-about-the-beijing-olympics/" target="_blank">opening ceremony blew everyone away</a>. But the pollution and smog? It was still there. Athletes came out of the plane wearing masks to the bemusement of the rest of the world. The entire few weeks of the Olympics, there was not a single day of clear, blue sky in Beijing.&#160; </p>

<p>Shanghai on the other hand had a beautiful few weeks of clear, blue sky.&#160; It goes to show that no one can play God. </p>
<h3>Shanghai Expo 2010</h3>

The World Expo site is located about 20 minutes from where we live in Pudong. We’ll be at the heart of the excitement. You bet that in the coming weeks and months, the Shanghai city officials and government will be issuing all sorts of rules, policies, and regulations in <strike>another attempt</strike> preparation to impress the rest of the world again. </p>
<p>So we start with the first policy that we just read about:</p>
<h3 align="center"><strong>Banning smoking in public places!</strong></h3>
<p>From <a href="http://www.shanghaidaily.com/sp/article/2009/200904/20090423/article_398610.htm" target="_blank">Shanghai Daily</a>:</p>
<blockquote><p>THE city&#8217;s first smoking-control law is expected to be issued in January at the annual meeting of the Shanghai People&#8217;s Congress, the director of Shanghai Smoking Control Office told a conference yesterday, banning smoking from public places in time for next year&#8217;s Expo.</p>

This policy should have been in effect long ago! This is the country where 99% of Chinese men (<a href="http://www.chinasmack.com/videos/2-year-old-child-smokes-curses-in-sichuan/" target="_blank">and even little boys</a>) smoke two packs a day. Everywhere you go, there’s smoke everywhere—restaurants, hotels, taxis, buses, even hospitals. Walking on the streets of Shanghai, there’s always a trail of smoke from in front, left, right, and even behind depending on which direction the wind is blowing. The whole city stinks with second hand smoke, but hopefully, that’ll change soon with the new ban on smoking in public places. </p>
<p>In a c0mmun*st country like China, it’s not that hard to enforce a policy like smoke-ban if the government really wanted to crack down. Just like pirated DVDs, corruption, jaywalking, and spitting, it’s often &quot;睁一只眼闭一只眼&quot; (one eye open, one eye shut). So we are curious to see how the ban on smoking will be enforced this time. </p>
<p>Meanwhile, here’s an image of a smoker’s lung next to a healthy lung. Even if the smoke-ban is not strictly enforced, people should at least see what smoking does to people’s lungs, and not just the smokers’ lungs, but everyone else around them! It upsets us to see men smoking next to their pregnant wife and kids.</p>
