Is your garden bursting with ripe tomatoes and other veggies? Does your local farmer’s market and the produce aisle of your grocery store have all kinds of tempting vegetables on display? It’s getting to be that time of year!

One of the healthiest- and most yummy- things you can do with this bounty is create salsa. Bowls full of delicious, raw (or mostly raw) vegetables just waiting to be scooped up? YAY! Sometimes I skip the chips eat it with a spoon; using sliced bell peppers as a scoop is also a great option, as is using some butter or romaine lettuce as a wrap and eating it like a 100% vegetable burrito.

When summer vacation begins, you’re going to need a nice cold glass of strawberry lemonade to get relaxed. It’s almost time to unwind and sip on a refreshing and fruit filled drink.

Kick your feet up and celebrate the end of the school year!

This strawberry lemonade is quick and easy to make. Simply put the gorgeous strawberries in with the lemons and some simple syrup and you’ve got a juice that is a-okay for your children to drink. Make it even more fun, but putting it in mason jars or milk bottles accessorized with pretty paper straws!

Strawberry Lemonade

Ingredients

• 1/4 cup sugar
• 1/4 cup water
• 2 lemons
• 1 pint strawberries, hulled

How-To

1. In a sauce pan, heat the sugar and water together until the sugar has dissolved. Remove from the heat, pour into a bowl and refrigerate until ready to use.
2. Cut the lemons, discarding the peels and seeds.
3. Place the lemon slices and strawberries into a blender and purée.
4. Add in the sugar water and blend until combined.
5. Serve on ice or place in the fridge until you’re ready to serve.

Servings: 3 cups of juice

A friend recently asked if I would teach her daughter to knit. I knit rather simply as a stress reliever and can’t imagine I’d be very good at teaching anyone else, but I started thinking about the books I pored over as a teenager teaching myself knitting and crocheting. I wished back then that I had someone to actually show me the stitches as I attempted to master them.

So since I can’t teach the skill, I’ve found five easy to follow videos that should set anyone up with the basics of knitting! With a ball of yarn and a pair of needles (try a worsted weight yarn and a needle size that matches the number on the yarn label) you’ll be practicing your knits and purls in no time.
 

With the basic knit stitch (from the first video) and this simple purl stitch, you’ll have the essential tools you’ll need to create wonderful knitted projects!

Now grab your yarn and get practicing! I’ve been known to carry a ball of yarn in my purse to easily add a few more rows to simple squares throughout the week. Later, I put them all together into patchwork baby quilts. Great colorful project for practicing stitches!

Healthy isn’t the first thing you think of when you hear queso, right? Well, in this case the queso is almost screaming healthy…except you can’t hear it.

You see, the queso doesn’t taste healthy, but it’s packed with veggies and has no heavy cream or butter! Just a little cheese and a secret ingredient.

Drum roll, please. The secret to this healthier queso is cauliflower!

With Cinco de Mayo just around the corner, we don’t want to spoil our diets with queso. So my challenge to you is to give this queso a try and be sure not to reveal our little secret until everyone has tried it!

Healthier Queso Dip

Ingredients

• 1 head of cauliflower, chopped into florets
• 1 1/2 cups water
• 1 chicken or vegetable bouillon cube
• 8 ounces shredded monterey jack cheese
• 1 tablespoon canned chopped green chiles
• pepper, to taste

How-To

1. In a large pot over medium heat, cook the cauliflower in the water and bouillon cube for 10-15 minutes until the cauliflower is tender.
2. Place the cauliflower and liquid into a blender or food processor and purée.
3. Add in the cheese and blend until combined.
4. Stir in the chillies and pepper.
5. Serve with your favorite chips or vegetables!

Servings: about 2 1/2 cups of queso

Want to make her something that she’ll love for years to come? Follow a few simple steps with me today as we make Mom a nest pendant filled with “eggs” that represent each of her children. It’ll be fun! And she’s going to LOVE it.

First, gather your supplies.

{You’ll need needle nose pliers, 24 gauge beading wire, beads, jump rings and a necklace to put your finished pendant on.}

Start by counting out how many beads you’ll need. One bead, or “egg”, will represent each child. Of course these pendants would be perfect for grandmothers as well. In which case you’ll put as many eggs in her nest as she has grandchildren.

Once you have your eggs chosen string them onto your wire and wrap the end loose end around them until you feel it’s secure.

Now, begin to wrap the wire in a non-uniform manner. By that, I mean to just be carefree. {If you’re a perfectionist you’re going to have to set that sense aside for this project.}

Think of a momma bird building her nest. Her twigs and strings and straw are all nonchalantly placed in nest form. It’s not perfect. However, it’s secure. So be sure you’re wrapping your wire secure.

It’s beginning to take shape, yes? While you wrap, wrap and wrap some more think of the smile on Mom’s face when she opens this gift.

Once you’ve wrapped the wire until you feel it looks like the most perfect bird’s nest clip it with your pliers. Be sure to leave 2-3 inches.

Use those 2-3 inches you just left loose to begin to secure your creation. You can add one or two more wires if you feel it needs it but, it’s not necessary.

Add a jump ring to the back and string it on your chain. You did it! You just made a gift for mom {or grandma} that she will absolutely treasure for years to come.

The best part, these pendants can be made with one egg or five or eight or ten. The more eggs the bigger the pendant. Or, make it a brooch.

I think almost every kid has had an Ants on a Log as a snack at one point or another (Well, I guess not the peanut allergy prone. Almond butter?). I can’t even begin to count the number I had as a kid. Shoot, it’s even a great mommy snack, now!

This tasty snack is the perfect way to celebrate Earth Day! Completely inspired by all things living, you can make it a lesson about life and saving our planet.

It’s a great interactive snack, too. You can prep the celery with the peanut butter and have your kids put the raisins (ants) on the log! For the more adventurous, you can practice counting the ants as they hop on the log and hop off into those bellies!

Ants on a Log

Ingredients

• celery, cleaned and trimmed
• creamy peanut butter
• raisins

How-To

1. Make sure your celery stalks are dry.
2. Prepare your peanut butter by placing some in a ziplock bag with a small hole cut out of one end.
3. Squeeze a line of peanut butter along the inside of your celery.
4. Place raisins along the peanut butter line.
5. Serve and enjoy!

It’s a strange thing, this motherhood business. No two children are exactly alike, so creating a guidebook is impossible. What works for one mother may be exactly opposite of what works for another. And, as helpful caring mothers, we’re often quick to lend advice about ‘what works’ even before we’re asked.

The problem with lending unsolicited advice about motherhood is we don’t know that mother’s child the way she does. We don’t know what special needs the child may have, what kind of struggles the child may be facing at school, if a sick family member’s needs have affected the normal routine, or even if the mother herself may be struggling with something beyond her control.

Below are some StrongMoms Empower stories that have touched me this week and I hope they touch you too, and remind us all to support one another in the most amazing, most rewarding and the hardest season of our lives: Motherhood.

Special Needs Does Not Have a Look – 7 On a Shoestring
When I read this post by Staci I was so touched and so convicted at the same time. My children do not have special needs, but many of my friends have children who do and I know how these women are judged when their children do not behave the way someone else’s children may. I’ve also been guilty of assuming a home lacked any form of discipline when I saw a child acting terribly in a public place. Staci reminds us that not every child with special needs has physical indicators and many times what we perceive to be a bratty child may in fact be a hurting or confused child, out of their comfort zone or in need of special attention. These children and their parents need our support, not judgement.

Remember that line about not knowing what a mother may be going through that’s totally out of her control? This is what happened to Angela when her body practically shut down due to gall bladder issues. And you know what a fellow breastfeeding mom did? She accused Angela of ‘selling out’ because she needed to feed her baby formula. Sometimes, life throws us lemons and we don’t get to do the things we really want to. We don’t need make it harder by telling her she’s not trying hard enough or that she doesn’t really care as much as she says she does. Instead, let’s show our support; ask if there’s anything we can do to help, and then love on that mother. She needs it.

As a work at home mom, I really connected with Becca’s post. When she talks about having to be online a lot for work, and how it may sometimes look like she’s missing out on special moments, my heart says ‘yes! me too!’. The thing that people don’t see, and Becca explains so well, is that this job we’ve chosen not only pays our bills, but allows us to be there for our children in some very meaningful ways that other parents may not have the privilege of. Does that make us better? No. It just makes our lifestyles and parenting methods a little different and that’s ok!

April showers have brought about the inspiration for some Spring flowers…in wreath form.

All of the supplies needed for this wreath were purchased at my nearby Hobby Lobby. {I’m sure you can find the supplies at any local arts and crafts store. Don’t forget to use your 40% off coupons to save some cash!} Best part, this wreath was complete from start to finish in less than one hour!

Ready to get started? Gather your supplies. You’ll need a straw wreath form {leave the plastic wrap on, it’s less messy that way.}, one roll of burlap ribbon, one roll of pink chevron tulle ribbon, one roll of green chevron tulle ribbon, five burlap rose flower picks, a pair of scissors and a few straight pins {no hot glue. YAY!}.

Begin by wrapping your wreath form with the burlap ribbon. Secure the beginning and the end of your burlap ribbon with straight pins. {I folded the burlap in half so that it was a bit thicker and less see-through.}

Next, use your green chevron tulle ribbon to create grass.

1. Cut pieces of tulle about 24 inches long. Fold one in half and place under wreath, as shown in step one.
2. Place ends through loop.
3. Pull upwards.
4. Tighten and direct tulle upward.

Repeat those steps until you have about six inches or so across the bottom of the wreath covered to the fullness of your liking.

Grab your burlap flower picks and poke them carefully in between the tulle “grass” and through the burlap ribbon into the wreath form. It sounds more difficult than it is. They will go right in as long as you guide them through the layers.

It’s time to trim your grass. There’s no right or wrong way to do this. Just remember that once you cut it off you can’t put it back on. Cut a little at a time until you think it looks great.

Almost finished.

Wrap the top of your wreath with the pink chevron tulle ribbon. Secure on the back with straight pins.

It’s time to hang your Spring Wreath and be proud of what YOU’VE created!
{Use a piece of the pink tulle ribbon cut to about 48 inches and tie your wreath to your wreath hanger. Don’t forget to fluff your bow!}
