<p>紅豆是我自己蜜的，其實相當簡單但是我嘗試電子鍋煮紅豆不太成功，下次還是繼續電鍋法。現在對麵包的想法也慢慢改變，發酵是最該好好掌握的地方，寧可不及也不能過發，會嚴重影響組織跟風味，而整形的輕柔我還在練習，慢慢有點感覺了。</p>

<p>上課之後迫不及待養了草莓酵母，當真超香的。草莓酵母加進麵團，一邊做麵包一邊稱讚好香。出爐之後更是不得了，麵團香加上櫻桃乾相得益彰，軟Q美味，一定不是市售麵包可以有的好滋味。</p>

<p>我不是一個愛做飯的人，我可以花很多時間做烘焙而樂此不疲，但是正餐我通常沒這麼多耐心，總是追求快速而方便的料理，有愛跟沒有愛差很多。所以我總是吃同一個快速餐，就是懶得準備啊！</p>

<p>我最近的早餐都長一樣：蛋液煎櫛瓜，沾剩下的蛋包起司煎一下，配上一杯紅茶，就簡單結束了。</p>

<p>大約一年前發現自己胖得不像話，肚子肥厚得褲子都穿不下，就算穿了也很醜，體重計ㄧ站發現胖了快五公斤，難怪整個人都腫，除了懷孕還沒這麼失控過。</p>
<p>第一個嘗試是跟以前一樣的熱量控制，但是要不吃東西頗難，人老了之後很不喜歡虐待自己，而且就算不吃也沒有變瘦（翻桌）。</p>
<p>第二個嘗試是網路上看到的類生酮飲食，戒除所有的澱粉與糖，其他的東西完全不限制。我必須要說這對我的影響很大，我熱愛麵包甜點，拿掉這些樂趣我的人生都黑白了，試行了一個月，還加上運動，但是體脂體重不動如山，褲子還是一樣緊。然後我就放棄了，回到我大口吃飯的日子。</p>
<p>後來看了更多資料，我得到一個結論，我是無法進行生酮的，生酮的爭議也頗多，這時候看到所謂減醣，大概就是一個緩和版的生酮，不是不吃醣，是少量，不是不吃任何東西，只是量是被控制的。我覺得這種中庸之道可能比較適合我，所以又開始新的飲食法。</p>
<p>我在家工作對於我的減醣很有幫助，午晚餐我都可以在家煮，剛開始我秤重食材一陣子，那一陣子的確是減重最快的時期，但是我懶惰的個性不可能一輩子秤重，久了也就放水流。體重計這一回事，在我每天患得患失一陣子之後，我也決定不站體重計，就是悶頭默默執行。</p>
<p>就這樣默默減醣，中間還去歐洲出差兩週完全破功（不吃pizza沒有別的可以吃難道要餓死？），回來繼續維持這種飲食。然後發現褲子漸漸不緊了，肚子凹了，身形看起來不腫了。這時候我的飲食已經不再以嚴苛的標準限制，反而稍微放寬，偶爾給自己吃點麵包，醣量放到80g，肚子也沒有因此變大。</p>
<p>現在我已經把減醣當作一個我的生活方式，我完全不碰米飯跟麵，每餐以蔬菜當主食，配上一個蛋白質來源，不避開油脂，醣量繼續管控，但是也不患得患失，不讓自己陷入壓抑越大反彈越大的循環，我想這會是一個適合我的飲食方式。</p>
<p>畢竟，可以大口吃菜吃肉不用挨餓還可以不發胖，不是太棒了嗎？</p>

<p>口感當然一貫的外脆內Q，只是涼了之後可能需要回烤才能重現，口感我有信心，但是外觀一直是我做得不夠美。今天終於可以重現上課時的裂紋，證明裂不裂跟烤箱蒸汽通通沒關係，跟自己的那雙手才有關係！</p>
<p>幾個重點紀錄</p>
<ul>
<li>中發要夠冰，下次只取幾個整形，剩下繼續躺冰箱</li>
<li>桌面要抹油，油太少表面會唸住，太多不好捲</li>
<li>後發不能太久，目前室溫30分就要入爐</li>
</ul>
<p>還是有幾個孩子長得畸形，繼續練習直到每個孩子都正常（握拳）。</p>

<p>今年的新技能就是牛軋糖，其實不難做，就是會搞到滿身汗。之前做了抹茶還算成功，這次改原味加入乾燥草莓乾，一整個華麗，大家都是衝著那個草莓來的嘛！芽還會先挑草莓外露大顆的吃。今年伴手禮免擔心了。</p>

<p>當初對2018的期許是可以多學會一點技巧，別老是做那幾款，這個期待完全達成了！因為跟了陳共銘老師的課，所以一天到晚都有各種挑戰跟作業，有了老師的範本，永遠都覺得自己離完美還很遙遠。上面那些是自己覺得有成就感的，歐包漸漸做出一點樣子，台包大概駕輕就熟。</p>
<p>2019還是會繼續跟著陳老師學習，願望是可以做好我最愛的可頌，除了麵包之外蛋糕也可以精進一些，然後找到固定試吃團不用常常傷腦筋麵包太多怎麼辦！</p>

<p>一直沒有練習的鮮洋蔥吐司，因為洋蔥培根還要炒，我懶。今天終於托耶誕假期的福做出來了！組織綿密，洋蔥培根又不至於過多，果然是陳老師的風格。</p>
<p>耶誕假期是一年一次的大假，敝公司各地的人通通在同一時間消失放假，連香港北京這些沒有放假的人，也都自動進入待機模式。我有一天連一封信都沒有收到，以為是壞了，開會時間大家也就自動沒出席，我也就開心的游泳開心的聚餐開心的做麵包過完這一週。</p>
<p>快樂的日子過得特別快，等新年過完，又是開始戰鬥的時候了。</p>
<p>轉頭多啃兩口吐司吧</p>

<p>這個香檳麵包失敗了兩次，第二次失敗氣到連拍照都不想，怎麼老師做的跟我的可以差這麼多。</p>
<p>剛好剩下一些青提子酵母就來挑戰第三次，這次大概有個80分，雖然麵包還是頭大腳小脊椎側彎，但是症狀沒有以前嚴重，而且八條辮子根根分明，我覺得大概就是我能做到最好的了吧。</p>
<p>小撇步永遠都是，寧可不及，也不能過頭。</p>
<p>這是麵包給我的人生小啟示。</p>
