<h3>Ingredients</h3>
<h4>Burgers</h4>
<ul>
<li>1 pound ground bison</li>
<li>1/2 cup cooked spinach, squeezed dry</li>
<li>1/2 cup crumbled feta cheese, preferably sheep’s-milk</li>
<li>2 teaspoons chopped fresh dill</li>
<li>1 teaspoon chopped fresh oregano</li>
<li>1 teaspoon ground cumin</li>
<li>1 teaspoon minced garlic</li>
<li>3/4 teaspoon kosher salt</li>
<li>1/2 teaspoon freshly ground pepper</li>
</ul>
<h4>Yogurt Sauce</h4>
<ul>
<li>3/4 cup nonfat or low-fat Greek-style plain yogurt, (see Note)</li>
<li>1 teaspoon freshly grated lemon zest</li>
<li>2 teaspoons lemon juice</li>
<li>1 teaspoon chopped fresh dill</li>
<li>1 teaspoon chopped fresh mint</li>
<li>Pinch of kosher salt</li>
<li>Freshly ground pepper, to taste</li>
</ul>
<h4>Bun &amp; Toppings</h4>
<ul>
<li>4 French rolls, or 4-inch pieces of baguette, preferably whole-wheat, split and toasted</li>
<li>16 thin slices English cucumber</li>
<li>8 slices vine-ripened tomato</li>
<li>4 thin round slices red onion</li>
</ul>
<h3>Preparation</h3>
<ol>
<li>Preheat grill to medium-high.</li>
<li>Place bison, spinach, feta, 2 teaspoons dill, oregano, cumin, garlic, 3/4 teaspoon salt and 1/2 teaspoon pepper in a large mixing bowl. Gently combine without overmixing. Form into 4 oval-shaped patties roughly the size of the rolls.</li>
<li>Oil the grill rack (see Tip, below). Grill the burgers until an instant-read thermometer inserted into the center registers 155°F, 5 to 6 minutes per side.</li>
<li>To prepare yogurt sauce: Combine yogurt, lemon zest and juice, 1 teaspoon dill and mint in a small bowl. Season with a pinch of salt and pepper.</li>
<li>Assemble the burgers on rolls with the yogurt sauce, cucumber, tomato and onion.</li>
</ol>
<h3>Tips &amp; Notes</h3>
<ul>
<li><strong>Note:</strong> Greek-style yogurt is made by removing the whey from cultured milk, which gives the yogurt an extra-thick and creamy texture. Look for it with other yogurt in large supermarkets.</li>
<li><strong>Tip:</strong> To oil a grill rack, oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)</li>

<div>I&#8217;m a big fan of <a href="http://www.bodybybison.com/shop-bison-meats/bison-burgers/premium-bison-burgers-20-pack.html">Bison burgers</a>. If you gotta have red meat go with bison or elk. The meat is leaner and it really tastes delicious without the gamey-ness. Lately, I&#8217;ve been wanting more excitement in my burger department, so I followed my heart <em>and</em>stomach and came up with this recipe. I&#8217;m so pleased with the tasty outcome, I just had to share it with you. Have a great supper!<strong>Curry Bison Burgers</strong></p>
<p>1 lb of Ground Bison<br />
Half a White Onion, minced<br />
1 1/2 teaspoon of Salt<br />
1 teaspoon of Black Pepper<br />
1 tablespoon of Madras Curry Powder<br />
2 teaspoons of Garlic Powder<br />
2/3 cup of Puffed rice cereal<br />
1 egg lightly beaten<br />
Coconut oil for pan<br />
Whole wheat buns<br />
Cubed ripened Ataulfo Mango<br />
Sriracha Chili sauce<br />
Veganaise</p>

<li>In a large mixing bowl, add all ingredients together. Use you hands and squish away!</li>
<li>Form meat mixture into round 4 ounce balls and pat down into burger patties.</li>
<li>Heat pan on medium high. Add a tablespoon or so of Coconut oil. Once oil is heated pan fry patties about 4-5 minutes on each side.</li>
<li>Remove patties on paper towel to drain excess oil. Lowering heat to medium, place both sides of bun face down on hot pan to lightly toast bread.</li>
<li>Carefully remove buns after 30 seconds to a minute. Dress buns with Veganaise and Sriracha sauce. Place cubed mango on burger and enjoy!</li>
</ul>
<div>For a side dish, I sauteed some Kale &amp; Shredded Carrots in garlic infused coconut oil and a couple splashes of low sodium soy sauce.</div>

<div>Nothing is more quintessentially Italian than dining al fresco on narrow streets in quaint medieval villages.</div>
<p>The thought conjures images of hand-made pasta tossed in delicate tomato sauce and served alongside glasses of ruby-hued chianti in the fresh Italian air.</p>
<p>On the heels of touring Gradara castle, immortalized in the fifth canto of Dante’s Inferno, I settled in to enjoy a late and leisurely afternoon lunch at a casual osteria. Tucked behind pristinely preserved castle walls in the Marche region of Italy, the eatery’s grapevine covered patio proved to be a perfectly enchanting setting for a most memorable lunch.</p>
<p>The diminutive, Osteria Della Luna, located in the charming town of Gradara served me the finest meal I enjoyed during my recent Italian adventure. Rather than select a predictable pasta dish, my eyes veered toward the rustic menu offerings centered around Italy’s coveted Chianina beef.</p>
<p>Chianina are among the oldest beef cattle breeds in the world and the large white cows pepper the hillsides throughout Italy. The hefty animals yield surprisingly lean meat with a bold flavor that foodies across the globe clamor for.</p>
<p>Monstrously thick Chianina steaks are the star ingredient in the iconic Tuscan Porterhouse steak dish called Bistecca alla Fiorentina, but I opted for something a little more manageable during my lunch in Gradara. On instinct I ordered a divine Chianina tenderloin steak with grilled pears, soft Stracchino cheese, crispy fennel and peppery arugula.</p>
<p>I savored every last bite of my glorious meal and washed it down with a memorable Sangiovese.</p>
<p>The simple preparation methods and limited ingredient list produced a surprisingly complex flavor and well-balanced dish. The entire experience left me feeling like the queen of the castle and I left inspired to riff on the dish at home.</p>

<p>Italian-Inspired Bistecca Fit for a King and Queen</p>
<p>My savory steak lunch at Osteria Della Luna in Gradara, Italy inspired me to create this indulgent entree bison entee at home. Bison is leaner than beef and boasts a bold flavor like the coveted Chianina beef I discovered in Italy.</p>
<p>For the Steak:</p>
<p>Two 4- to 6-ounce Bison tenderloin steaks (beef tenderloin may be substituted)</p>
<p>1 Tablespoon Dijon mustard</p>
<p>Kosher salt and fresh cracked pepper</p>
<p>Extra virgin olive oil</p>
<p>&nbsp;</p>
<p>For the Fennel Topping:</p>
<p>2 Tablespoons butter</p>
<p>1 small fennel bulb, thinly sliced</p>
<p>1 small garlic clove, minced</p>
<p>2 teaspoons brown sugar</p>
<p>&nbsp;</p>
<p>For the Garnishes:</p>
<p>1 organic packham pear, sliced vertically into ¼-inch slices, halved and grilled until tender-crisp*</p>
<p>4 ounces Fontina Fontal cut into thin wedges</p>
<p>1½ cup baby arugula</p>
<p>Extra virgin olive oil for finishing</p>
<p>&nbsp;</p>
<p>Bring the Bison to room temperature and tie with butcher’s twine to ensure the steaks hold their shape during the cooking process. Meanwhile, preheat a grill pan over high heat or prepare an outdoor grill for high-heat cooking. When ready to cook, brush the steaks with the Dijon mustard and season with salt and pepper. Drizzle with olive oil and place presentation side down on the hot grill pan. Allow steak to sear without disturbing for 6 minutes. Turn the steak and allow it to continue cooking for 5-6 minutes or until desired degree of doneness is reached. Remove steaks from the grill and allow them to rest uncovered for 10 minutes.</p>
<p>While the steak rests melt the butter in a small skillet and add the fennel. Cook over medium heat for three for minutes stirring frequently. Add the garlic and brown sugar and continue cooking for another 3 minutes or until crisp tender. Season with salt and pepper.</p>
<p>To serve: Place a handful of arugula on each of two dinner plates. Arrange the cheese wedges and the grilled pear slices on the plate. Place the steaks on the greens and top with the warm fennel compote. Drizzle the dish with extra virgin olive oil and season with salt and pepper.</p>
<p>Serves 2</p>
<p>*Grill the pears in a grill pan for about 2 minutes per side. If you don’t have a grill pan sauté them in a little olive oil until golden brown and tender.</p>

<h2>Prep Steps</h2>
<ol>
<li>Cut the ends off the green onions and peel away any loose or damaged outer layers. Rinse under cold water and dry.</li>
<li>Slice the green onions thinly to measure the indicated amount. Place in a large mixing bowl.</li>
<li>Remove a chipotle pepper from the can. Slice down the center, scoop out the seeds and discard. Mince enough pepper to measure the indicated amount. Use more if you want more smoky spice. Avoid touching your face when handling peppers, and wash hands immediately after.</li>
<li>Scoop mayonnaise into a small mixing bowl. Add some of the minced chipotle to the mayonnaise and stir to combine well. Add more chipotle if you prefer more spiciness.</li>
<li>Slice kaiser rolls in half horizontally.</li>
<li>If you bought a block of white cheddar cheese, cut 1 thin slice for each burger.</li>
<li>Prepare a plate with layers of paper towels. Set plate near the stove for the cooked burgers.</li>
</ol>
<h2>Cook Steps</h2>
<ol>
<li>Place ground bison in the large mixing bowl with the green onion. Add seasoning salt, garlic powder, Worcestershire sauce, black pepper and kosher salt. Use clean hands to combine thoroughly.</li>
<li>Divide bison mixture into 1 equal portion per serving, about 5 ounces per serving. Shape into flat, round patties, approximately as wide as the buns you are using. Press them a little thinner in the center to prevent them from seizing into a ball when they cook.</li>
<li>Heat a large saute pan over medium heat. Add the olive oil and butter and heat until butter is melted and foamy and oil is hot.</li>
<li>Once butter is foamy and oil is hot, add the burger bun tops, insides down. Toast about 3-4 minutes until golden brown, then remove to a clean platter.</li>
<li>Allow the pan to cool for a few minutes.</li>
<li>Place the burger bun pan back over medium heat. Add olive oil and butter to the pan again, and repeat the toasting process with the bottom of the buns.</li>
<li>Place the burger bun pan back over medium heat. Add a little more olive oil to coat the bottom of the pan and warm.</li>
<li>Once oil is hot, gently add each burger patty. Cook about 3 minutes, then flip and cook another 2 minutes.</li>
<li>After the burgers have cooked on the 2nd side for about 2 minutes, place a slice of cheddar cheese on top of each burger. Cover pan with lid or foil and cook another 2-3 minutes until cheese is slightly melted. Transfer to the plate lined with paper towels.</li>
<li>To build the burgers, divide one tablespoon of chipotle mayonnaise between the top and bottom of each bun.</li>
<li>Place a loose 1/4 cup of arugula leaves on top of the bottom bun, then top this with the cooked bison burger and the top of the bun.</li>
<li>Transfer the burgers to dinner plates and serve warm!</li>

<li>Heat the broiler to high and arrange a rack in the middle. Place a cooling rack inside a baking sheet and set aside.</li>
<li>Heat a large frying pan over medium heat. Add bacon and cook until browned and crispy, about 10 minutes. Remove bacon to a paper-towel-lined plate and set aside; do not discard bacon fat (you should have about 2 tablespoons). Return the pan to medium heat, add onion and jalapeños, and cook in reserved bacon fat until soft and starting to color, about 4 minutes; set aside.</li>
<li>Mix together Worcestershire, garlic, egg, salt, and pepper in a large bowl until egg is broken up. Add bison meat and mix until thoroughly combined.</li>
<li>Shape meat mixture into 6 (3/4-cup) patties and place on the rack inside the baking sheet. Broil until browned and springy to the touch, about 10 minutes for medium. Place cheese on top of patties and cook until cheese melts, about 1 minute.</li>
<li>To serve, place cheeseburgers on buns and top with bacon, avocado slices, and sautéed onion mixture.</li>

<p><strong>Beverage pairing</strong>: <a href="http://www.vinquire.com/wines/search/buy/?search_text=Ridge+Three+Valleys+Zinfandel&amp;myrets">Ridge Three Valleys Zinfandel</a>, California. Sometimes wines are dismissively cast off as “hamburger wines,” meaning that they’re not fit for anything better. But a good hamburger is a complex thing, a mélange of flavors and textures that deserves a great wine. Zinfandel has all the red fruit and sappy depth to pair perfectly with a burger, but this one from Ridge has a firm and elegant structure to bring a little bit of discipline to the pairing.</p>

<p>Ingredients:</p>
<p>2 pounds Ground bison</p>
<p>2 tablespoons Minced shallots</p>
<p>2 tablespoons Worcestershire sauce</p>
<p>2 tablespoons Tomato paste</p>
<p>2 teaspoons Brown sugar</p>
<p>Salt &amp; Pepper to taste</p>
<p>1 c Gorgonzola cheese, crumbles</p>
<p>4 ea Onion Roll</p>
<p>2 ea Roma tomatoes sliced</p>
<p>1 hd Leaf lettuce</p>
<p>Directions:</p>
<p>· Mix first six ingredients together in bowl. Then shape into 8 patties.</p>
<p>· Insert shredded cheese into center of 4 of the patties. Then place</p>
<p>remaining patties onto each of the cheese topped ones. Insure the</p>
<p>edges are closed sealing in the cheese.</p>
<p>· Grill 6 minutes on one side, flip and grill 4-5 minutes or until done.</p>
<p>· Serve on toasted onion roll with toppings and your favorite</p>
<p>condiments.</p>
<p>· Prep Time: 10 min Cook: 10mins Serves: 4</p>

<p><em>Back from Europe and happy to announce Eliza was thrilled to see us and hardly held a grudge. Second to throwing my arms around my baby, I was eager to get into the kitchen again. These burgers are super easy and a nice alternative to the hamburger. Given that I was all cheesed out from France, I opted for a refreshing yogurt to top these off.  Oh, and hang in there on my photos…my fancy camera is in the shop.</em></p>
<p>Serves 6</p>
<p>Ingredients:</p>

<p>- 1 LB <a title="bodybybison burger" href="http://www.bodybybison.com/shop-bison-meats/bison-burgers/premium-bison-burgers-20-pack.html" target="_blank">Bison Burger</a></p>
<p>- ¼ teaspoon paprika</p>
<p>- ½ teaspoon Kosher salt</p>
<p>- ¼ teaspoon garlic salt</p>
<p>- 2 tablespoons sour cream</p>
<p>- ¼ cup plan non-fat Greek yogurt</p>
<p>- Juice from ½ lemon</p>
<p>- 2 tablespoons finely chopped green onions</p>
<p>- 6 pretzel rolls, sliced in half</p>
<p>- 2 cups fresh greens</p>
<p>Instructions: Pre-heat the grill to medium – high heat.</p>
<p>Mix the sour cream, yogurt, lemon juice and green onions in a small bowl. Cover and refrigerate for 30 minutes.</p>
<p>In a large bowl use your hands to mix the meat with the paprika, the remaining ¼ teaspoon of salt and the garlic salt. Make 6 patties and grill for 5-6 minutes per side. Grill the rolls for 1-2 minutes per side.</p>
<p>Serve each burger on a roll with a dollop of yogurt mixture and a handful of greens.</p>

<div>Bison. First time trying it ever. I was a bit intimidated by the name, not gonna lie. We never had bison at our dinner table in Ecuador. I probably never even knew people ate this animal now a days! J I was completely familiar with chicken, eggs, pork, beef, and fish…not bison. A couple of months ago I saw a lovely ground beef looking package at CostCo, so I grabbed it. It wasn’t beef though…beef happened to be right next to it, in a slightly different colored package. So what was it? BISON! How cool! Game meat. Totally wanted to try something new…edgy. I was sold. Once I got home, I placed my bison in the freezer. To be honest, I think the poor bison package sat in my freezer for 2 months! I was wayyy intimated by this unfamiliar animal. It’s so massive and hairy and wild. It could kill me if I was left alone with it in a field.  What a creepy thought. Even though it’s tougher than me…someone had conquered it, and I have the convenience of picking it up from the grocery store; sort of crazy to think about. We humans may not be stronger, tougher, bigger, and faster than other animals…but we sure can build tools to help us out.  That’s our gift, being intelligent enough to build tools. Tools help push us all forward and live better, more efficient lives…anywhere from hunting big animals in order to eat and stay alive, to building spaceships that can leave this planet and land on foreign ones… pretty amazing! Using my super helpful kitchen tools, I was extremely anxious to get cookin’ and finally taste bison! I needed to know what my taste buds would think of it. As the burgers were cooking, my husband called and told me he was driving home. He asked me what I was up to and I told him about my little Bison cooking adventure. He was intrigued. Preston got home just as I was taking my burgers out of the oven; we added avocado slices and sriracha on top of our burgers, cut a bite, ate the bite, tasted the bite, and it was…lovely! Success! Preston and I helped ourselves to a second serving. We seem to do that a lot, don’t we?   Tools you’ll need:</div>

<ul>
<li>       1 shallot</li>
<li>      3 garlic cloves</li>
<li>       2 jalapeno peppers (including thier seeds)</li>
<li>       <a title="bodybybison burgers" href="http://www.bodybybison.com/shop-bison-meats/bison-burgers/premium-bison-burgers-20-pack.html" target="_blank">bison burgers</a></li>
<li>       1 egg</li>
<li>       ¼ teaspoon of salt</li>
<li>       ¼ teaspoon of pepper</li>
</ul>

<p>Steps:</p>
<ol>
<li>Cover baking sheet with aluminum foil.</li>
<li>Set broiler on high, arranging rack so that the burgers will be about 2 inches from the heat.</li>
<li>Use cutting board and sharp knife to finely chop garlic cloves, shallot, and jalapeno pepper. Place in mixing bowl.</li>
<li>Add ground organic bison and eggs to mixing bowl with chopped veggies.</li>
<li>Add salt and pepper.</li>
<li>Combine all ingredients well (don’t be afraid to use your hands for this!)</li>
<li>Make patties out of the mixture. Recipe makes 5 medium sized patties.</li>
<li>Place burgers side by side along the baking sheet, so that they form one line in the middle of the sheet. *See picture below.</li>
<li>Broil for 7-9 minutes one side.</li>
<li>Flip and broil for another 6-8 minutes. Make sure you keep an eye on those burgers…you don’t want them to burn!</li>

<p>Using grass-fed bison meat as the base, Executive Chef Michael Paley tops his Bison Burger with local Cheddar, house-cured bacon and Jezebel sauce. For wine, General Manager Rachel Cutler gives a nod to Palazzo’s Cabernet Franc from Napa. “It has structure and spice, but is soft and earthy enough to pair well with the bison.”</p>
<h3><strong>Jezebel Sauce</strong></h3>

<p>2 cups apricot preserves<br />
2 cups apple jelly<br />
1½ cups prepared horseradish<br />
1 tablespoon kosher salt<br />
½ tablespoon ground black pepper<br />
½ tablespoon ground coriander<br />
2 teaspoon ground cinnamon<br />
1 teaspoon grated nutmeg<br />
½ teaspoon grated clove</p>
<p>In a medium mixing bowl, combine all of the ingredients and stir until well incorporated. <em>Makes 4 cups.</em></p>

<p><strong>Bison Burger + Grilled Guacamole</strong></p>
<p>12 oz ground grass-fed bison<br />
1/2 cup chopped onion<br />
1/2 tsp garlic powder<br />
1/4 tsp smoked paprika</p>
<p>1. Combine all ingredients in a medium bowl and form into 4 patties. Grill for 5 to 6 minutes, then flip and grill for another 5 to 6 minutes, or until burgers reach an internal temperature of 155°F.</p>
<p>2. To serve, top each patty with 2 tablespoons grilled guacamole (recipe: <a href="http://www.womenshealthmag.com/nutrition/burger-toppings">Healthy Burger Toppings</a>).</p>
