<p>Mutton 1/2 kg<br />
Chopped coriander 1/2 cup<br />
Chopped mint leaves 2 tbsp<br />
Ghee 2-3 tbsp<br />
Coriander powder 3-4 tbsp<br />
Large tomatoes 2-3<br />
Onions (chopped) 1/2 kg<br />
Turmeric and red chilli powder A little<br />
Salt to taste<br />
Curd 2 tbsp</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Heat ghee in a pan. Put all the ingredients together, after mixing them properly with hand, into hot ghee.</p>
<p>2.Cover with a lid and seal the edges with a little dough.</p>
<p>3.Now simmer till the mutton is tender.</p>

<p>Mutton 1 kg<br />
Onion finely sliced 2<br />
Asafoetida/hing a pinch<br />
Clove 3<br />
Cinnamon 3<br />
Black cardamom 2<br />
Aniseed 3 tsp<br />
Cumin seed 1 tsp<br />
Red chili powder 1 tsp<br />
Ginger garlic paste 1 tbsp<br />
Paprika powder 1 tsp<br />
Dry ginger 1/2 tsp<br />
Turmeric 1 tsp<br />
Baadian flower 1<br />
Whole spice powder 1 tsp<br />
Curd 1/2 kg<br />
Salt to taste<br />
Oil 1 cup<br />
Wheat flour 2 tbsp</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Heat oil in a wide mouth pan and fry the onion till light brown.</p>
<p>2.Now add ginger garlic paste and saute’.</p>
<p>3.Add meat and cook on low heat.</p>
<p>4.When the color of the meat changes, add red chili, asafoetida, turmeric, dry ginger, paprika powder and salt.</p>
<p>5.Let it simmer gently for a while then add curd.</p>
<p>6.If water is required to cook the meat, add water after adding curd.</p>
<p>7.Make a bundle of aniseed, cumin seed, clove, cinnamon, cardamom and baadian flower in a muslin and knot it.</p>
<p>8.Put it in the pan and, cover with the lid and cook on low heat.</p>
<p>9.When meat is get tender, take out the cotton cloth.</p>
<p>10.Spoon out all the oil from the surface of the gravy in a bowl and reserve.</p>
<p>11.Dissolve the flour in some water and add to the gravy while stirring constantly.</p>
<p>12.Cook for 5 minutes more.</p>
<p>13.When ready, take out in a serving bowl and pour oil reserved gravy oil back on the gravy.</p>
<p>14.Sprinkle whole spice powder and serve hot with naan.</p>

Yogurt 1/2 cup (whisked)<br />
Ginger 1 tbsp (finely cut)<br />
Coriander seeds 1 tbsp<br />
Fennel seeds 1 tsp<br />
Onion seeds 1 tsp<br />
Turmeric powder 1 tsp<br />
Salt to taste<br />
Oil 1 cup<br />
For stuffing chillies:<br />
Green chillies 6 (big)<br />
Cumin seeds 1 tsp<br />
Fennel seeds 1 tsp<br />
Mustard seeds 1 tsp<br />
Coriander seeds 1/2 tbsp<br />
Tamarind pulp 2 tbsp<br />
Salt to taste</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Heat oil in a pot and fry onions. Remove and dry on paper.</p>
<p>2.In the same pot, add meat, turmeric and salt and cook till water dries.</p>
<p>3.Add ginger, garlic, coriander, fennel and one cup hot water.</p>
<p>4.Cook till meat becomes tender.</p>
<p>5.Add red chillies and yogurt.</p>
<p>6.Fry and squeeze lemon in it.</p>
<p>7.Roast cumin, fennel, mustard and coriander in a shallow pan, and grind together.</p>
<p>8.Add salt and tamarind in the ground masala and stuff into green chillies.</p>
<p>9.Fry the stuffed chillies and add in the meat pot.</p>
<p>10.Add curry leaves and onions seeds and keep on dum.</p>

<p>Beef or mutton meat with bone 01 kg<br />
Garlic cloves chopped 10<br />
Ginger fine slice 1 tsp<br />
Onion 1 large size<br />
Whole black pepper crushed 1 tsp<br />
Roasted coriander seed crushed 1 tsp<br />
Cumin seed’s crushed 1 tsp<br />
Turmeric powder 1/2 tsp<br />
Oil 2 tbsp<br />
Water as required</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Take the meat with fat and bone on it.</p>
<p>2.Take medium size cooking pot, put on the flame, pour in some oil, as the oil warms up, put chopped onion, garlic cloves crushed, ginger, and stir it for couple of minutes.</p>
<p>3.Now add the meat into the pot stir it for couple on minutes, add crushed black pepper, crushed coriander seed, cumin seed’s, turmeric powder and stir it for some minutes.</p>
<p>4.Add water, enough to dip the ingredients in water, let it cook at medium flame till the water dries.</p>
<p>5.Now cook the meat till tender.</p>
<p>6.Serve it with lemon quarters, thinly sliced green chillies and naan or chapati.</p>

White cumin 1 tbsp<br />
Ginger 1 tbsp<br />
Garlic 1 tbsp<br />
Green chilies 4 to 5<br />
Salt to taste<br />
Allspice powder 1 tsp<br />
Oil as required<br />
Water as required</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Place the mutton leg in a heat proof dish and gently prick it with a knife.</p>
<p>2.Heat oil in a pan and saute the onions.</p>
<p>3.Now add tomatoes, red chili, cumin, ginger, garlic, green chilies and salt, then saute more for a while.</p>
<p>4.Marinate mutton leg in this mixture.</p>
<p>5.Again prick the mutton leg with a fork this time.</p>
<p>6.Take a large pan and pour required water in it, now place small bowl up side down in it making sure the water level does not touch the top surface of the bowl.</p>
<p>7.Now place the heat proof mutton leg dish over the bowl.</p>
<p>8.Cover the pan and cook on the stove till tender.</p>
<p>9.Take out the done mutton leg roast in a serving platter and sprinkle allspice over it.</p>

<p>Motton 1/2 Kg<br />
Mutton stock 2 cups<br />
Onion 1 (chopped)<br />
Hot spices powder mixed with mace 1/2 tsp<br />
Black cumin seeds 1 tsp<br />
Ginger/garlic paste 2 tbsp<br />
Red chilli powder 1 tbsp<br />
Turmeric powder 1/2 tsp<br />
Coriander powder 1 tbsp<br />
Roasted whole to taste<br />
Clarified butter 1 cup<br />
Ginger for garnishing (finely cut)</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Heat oil in pot and fry meat.</p>
<p>2.Add ginger/garlic coriander, turmeric, red chillies, salt and onions and fry for 5 minutes more.</p>
<p>3.Add stock and water as required.</p>
<p>4.Cover with lid and cook till meat turns tender.</p>
<p>5.Add black cumin, hot spices and salt and keep on dum for 10 minutes.</p>
<p>6.Increase flame and add flour paste a little at a time.</p>
<p>7.Bring to boil. When flour is cooked, remove from flame.</p>
<p>8.Serve garnished with ginger.</p>

<p>Mutton (cut into cubes) 1/2 kg<br />
Curd 2 cup<br />
Medium onions (sliced finely) 8<br />
Almonds (blanched and sliced) 16<br />
Onion for garnishing 2<br />
Oil as required<br />
Salt to taste<br />
Grind Together:<br />
Ginger 1&#8243; piece<br />
Cloves of garlic 4<br />
Cumin seeds, coriander and chilli powder 1, 1/2 tbsp<br />
Peppercorns 8<br />
Cinnamon 1&#8243; piece<br />
Bay leaves 2<br />
Green cardamoms 6<br />
Almonds (blanched) 16</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.Heat 1 tbsp oil and fry 4 sliced onions, then remove and crush.</p>
<p>2.Heat 2 tbsp oil and add the ground spice.</p>
<p>3.Stir well till oil separates.</p>
<p>4.Crush the 4 onions left and add to the curry.</p>
<p>5.Cook till it is a rich brown in colour.</p>
<p>6.Then add the meat and pressure cook for 10-15 minutes.</p>
<p>7.The meat should get tender.</p>
<p>8.Then add beaten curd and cook again for 5 minutes.</p>
<p>9.Before serving, add crushed, fried onions and almonds.</p>

<p>Mutton chops 1/2 kg<br />
Yogurt 250 gm<br />
Clarified butter 1/4 cup<br />
Cumin powder 1 tbsp<br />
All spice powder 1 tbsp<br />
Turmeric powder 1 tbsp<br />
Red chili powder 2 tbsp<br />
Ginger garlic paste 2 tbsp</p>
<p><strong>Cooking Directions:</strong></p>
<p>1.In a cooking pot gently heat clarified butter.</p>
<p>2.Add ginger garlic paste and sauté.</p>
<p>3.Then add mutton chops, yogurt, ground cumin, all spice powder, turmeric powder, red chili powder and salt.</p>
<p>4.Cover with lid and cook for 15 to 20 minutes.</p>
<p>5.When chops are about to get tender, increase the flame and let the water evaporate.</p>
<p>6.Grease a grill pan with some oil.</p>
<p>7.Grill the mutton chops for 10 to 15 minutes.</p>
<p>8.Delicious Grilled Mutton Chops are ready to serve.</p>

<p>1.Fry the sliced onion in ghee and add ground garlic, red chillies, ginger, coriander, black pepper and cloves.</p>
