Ginger is 13 months and Milton is 2 years and 5 months

These two beautiful little people are my entire world.

Ginger's personality is coming out more and more everyday.

She is a beautiful little soul.

She is playful and sassy, stubborn and opinionated.

She has gone from walking to running and her daddy is teaching her to dance.

I love her with all my being!!

Milton is becoming a little boy.

He is so smart. Watching him, he amazes me on a daily basis.

He is learning to spell and count, he knows all his colors, animals, and is very much a boy..............he loves monster trucks and tractors.

He is learning to share and be gentle with his little sister.

I love him more than words could ever express.

No matter what..................These two little angels make everything okay.

My world can be falling apart but as long as I have my babies, I know I will be okay.

Honestly, they save my life on a daily basis.

The amount of love that God has given me to love these children astounds me everyday.

I have never been so grateful for anything in my entire life, two beautiful healthy children.

Thank you for blessing my life and allowing me to be your guide.

I promise to fill your life with an abundance of love and light.

Chicken Tikka Masala

Indian Food Lovers........This Post's For You!!!

I swear to you this is the absolute BEST Chicken Tikka Masala recipe I have EVER tasted. Better than ANY restaurant., I swear.

If you have interest or taste for Indian food please make this. You will be craving it for the rest of your life. My husband begs for it!!!!

Seriously!

Ingredients

1 large container of plain yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
2 teaspoons salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
1 tablespoon butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoons salt, or to taste
1 (8 ounce) can tomato sauce
1 cup heavy cream
1/4 cup chopped fresh cilantro

Directions

In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour to 24 hours.
Drain chicken in a colander prior to cooking got get rid of all excess yogurt then Heat a large skillet to medium high and cook the chicken pieces for about 15 minuets stirring every few minuets. They should be just tender. Set Aside, you can finish cooking the chicken for a few minuets once you have the sauce prepared.
Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.Serve with jasmine rice and peas.

This is the best time of your life. Life every moment to the absolute fullest. . Your finally old enough to know what you want and what your doing with your life yet young enough to really actively pursue your dreams.You can rest when your dead!

Mascara.

I'm a minimalist when it comes to makeup. Sometimes I wear liquid liner and a little powder but that's it.

4. What is one food that you cannot stand?

Plain yellow mustard. I'm a food snob just in case you didn't already know.

5. Where would your dream vacation be?

There are many, many places on my list but at the top right now is Spain for many reasons but the number one reason is the food. Oh....my husband and I can eat out way through a country like no other. We planned out entire honeymoon in Italy around where we wanted to eat. It was SPECTACULAR!

6. Who is you biggest celebrity crush?

Hmmm........I don't watch TV or read the news so I don't know that much but I would say either Reese Witherspoon or Kate Middleton. Both of them are beautiful, have a wonderful sense of style and carry themselves with amazing grace which all attributes I strive to uphold to everyday.

7. Who is your celebrity lady crush?

Oops.....Guess the question above answers this one. I don't have any guy crushed except my amazing husband. Seriously he's my one and only and always will be. 4-eva

8. What is your favorite cocktail? and if you don't drink then how about milkshake?

I don't drink so I will take a chocolate Malt please

10. If you could have a super power what would it be and why?

To be able to work and be a stay at home with my kids at the same time. All I want in life is to have more kids and to be with them all the time. I miss them so much when I'm at work. I have absolutely no choice. I am the primary breadwinner. It is what it it.

I L*O*V*E my children more than life itself.

11. What is one thing that you wish that you could buy for yourself? I'm taking a selfish buy - like mine would be a pair of Christian Louboutins for sure.

A Garmin GPS system for running, a wet suit, a bike, biking shoes, a camel back and a hydration belt and a new pair of nice running shoes.

I wouldn't mind another eternity band to go onthe other side of my engament ring either but I'll take the triathalon gear first:)

Desicions........Desicions!!!

Hmmmmmmm................................

Well folks, once again I find myself at a crossroads! Let's just get one thing clear right away....no I am not yet pregnant!!!!

My husband asked Little Milton very casually in the car the other day if he wanted a baby brother or sister........WHOA!!!!! Little Milton immediately responded, "sister" and then after he thought about it for a moment, he said "brother"

Then yesterday we all playing in his room and he looked at me and in a questioning voice said over and over again, Another Baby?Another Baby?Another Baby? I replied, Do you want mama to have another baby Milton? and he said "OKAY!!"

My husband and I have always wanted a family..........probably on the bigger side. We haven't talked extensively about this but all of a sudden it just seems "RIGHT"
Well, it seems right to me at least. My only reservation is money. We are in dire straights financially but my children are my everything and I would love to grow our family. On the other hand I feel like it is a little irresponsible on my end as we can barley make it in the world as a family of four.

Sooooooo......................I have butterfly's in my stomach about the possibility of another baby. I feel excited, giddy, like a little kid on Christmas but realistically I know we are in for A LOT more stress that we even know. But, in my heart I think there might be one more little soul out there waiting for us.

My Birth Necklace!! My wonderful, fantastic, romantic husband surprised me with the ruby when my son was born and then surprised me again with the emerald when my daughter was born.

I know once we start trying I will be pregnant immediately. I got pregnant with Milton the first time we ever tried and Ginger was a very happy surprise. So I'm not worried about that.

And I have a marathon or so to run before we can make it a reality but the wheels are in motion......I think??? YIKES!!! I'm scared. Mom's of 3, got any recommendations? Also take into account that my first 2 are only 14 month apart and we don't want his one left behind so this would be a fairly quick decision. What do you think?????I'm dying to hear your opinion!!!

Animal Prints and a Little Blogger Heart to Heart

Do you ever get your feeling hurt by a complete stanger in the blogospere? I DO! I have had my feelings hurt quiet a few times here in blog land. Granted, I am sensitive and ALWAYS get my feelings hurt easily although I'd rather die than admit that.
I get my feelings hurt when I repeatedly leave comments on someones blog and never, not once, receive a visit or a reply. I get my feelings hurt when I directly email someone with a legitimate question for some advice or just to tell them how much I admire their blog and just never get a reply. It hurts my feelings. It makes me feel unimportant and I start to question, why are these people doing this if they don't find joy in it?
I have noticed a trend that almost every blogger's goal is to get as many followers as they can. I too have been guilyt of this. Over the past year, I have really learned to let that go and still find it flattering to get more followers but am not obsesed with it anymore. If people like me and want to read my blog then they will. If they don't, then they won't!
PERIOD. END OF STORY!

I ALWAYS try to reply to all direct emails and even try very hard to reply to most comments OR visit the person's blog and reciprocate the comment. I'm not perfect and I am sure I have not replied on serveral occasions but always TRY to and always try to at least pay the other person's blog a little visit to just say thanks for stopping by mine. Often in the middle of my work week I won't have time to comment back or visit blogs but I wait until my weekend and then spend a little time visiting with other bloggers.

I know that some bloggers following grows to the point where they feel they simply cannot reply to all comments and emails. They simply don't have the time. I TOTALLY understand that. We all have a million commitments and such a time shortage but I still feel like it's important to engage with your readers. I Have nearly 3000 followers and I think I manage it pretty well. I guess I'm just not at the point yet where I have so many followers that I can't respond and I kind of don't want to be. I enjoy engaging with my readers.

My opinion is that the person behind the blog should be accessible to their readers. I just don't really understand the point of the whole thing if your not going to engage with your readers.

I mean let's face it people, It's not like we're celebrities!!!

I think it's VERY important to be HUMBLE!!! Humility is a beautiful quality. To be able to do something well, with grace is a wonderful thing.

Maybe it's just me???

A few weeks ago I read a post on E Tells Tales. It REALLY inspired me. It changed me forever. It changed the way I think about blogging and REALLY, I mean really made me question exactly what I was doing. There is most certainly a compultion and sort of addictive quality to blogging that we can get caught up in. I too have struggled with those things. I don't quiet have the courage she has to remove comments and followers because I truly enjoy them but PLEASE read {THIS} post. I promise it will change you.

Hey, when I first started out I tried to make money with my ad space . My goal was to be able to stay home with my children. I hardly made anything.

Well obviously that goal was laughable hence I now have to work overtime every week outside the home at my nursing job. It was enough to pay one bill but I can see if I had more followers and started charging more I could make more money at it.
Do I really want to do that?
The answer is NO!
Because what I get from this blog has absolutely nothing to do with money!!! That's not why I'm doing this. I'm doing this because I love it. It fills me. It gives me a space that is all my own. It makes me feel accomplished and gives ME a space to just BE ME! I LOVE THAT! I NEED THAT!
All the ads you see on my blog are either swap buttons or just blogs and shops that I love. I receive absolutely no monetary compensation and I'm proud of that!

I just thought I'd have a little discussion about this since it is something that has been urching me.

It's like if the blogger has 2000-5000 followers than you can pretty much expect that they are unapproachable and I hate that. Why even bother following them if your never going to make an impact or a connection. Sometimes I wonder, do they even read my comments? I wouldn't know.....because I never get a reply.

That's why I always ask people to please email for anything, questions, advice, to chit chat, whatever........I want to meet new people and help in any way I can. I wouldn't be doing this if I didn't want to.

That's just my humble opinion.

I have started a little interview process called "Brutal Truth is a Beautiful Thing."

I'm doing this because I love to get to know the "real" people behind their blogs. I think so many of us are afraid to tell the truth whatever it may be. We want others to like us. We want others to read our blog. We don't want to scare anyone away.

You can read my itnterview anytime {HERE} For the first year I never really shared a lot of personal information because I didn't think people wanted to hear it.I posted my recipes and a few cute pics of the kids and that's it. Well, I couldn't have been more wrong. Yes, people still want all the fabulous recipes and cute photos but they want to know me. I have gotten the biggest responses from my "on my heart" posts. People want to know you, what makes you you, the person you are. They want to know how you live your life. They don't want a bunch of nonsense about how fancy your car is and perfect your life is. I think we all want to be able to relate to each other and NONE of us are perfect!!!

Today's Interview: Cori from La Vie Petite

What's your greatest Weakness?

I'm impatient. With myself, with things I want to happen in life, and sometimes with my littles. But, I'm working on it... daily.

What's your greatest strength?

Persistence. I don't give up. I've always been extremely miniature. When I was a child this meant that everyone was always telling me that I "couldn't" do something because I was too small. It developed in me a kind of willful defiance where I won't let anything stop me. Especially being the underdog. I have my height (or lack thereof) to thank for a lot of the things that define me. If I wasn't so short, I don't know if I ever would have learned to sew and design my own clothes, and now that is such a huge part of my life.

What has emotionally crippled you in your lifetime?

The times when I have engaged in self-pity. Everyone is carrying a heavy load in life. Everyone has had some sort of trial or other, but I truly believe that wallowing in it only makes it worse. My husband (I call him Mr.) has taught me more about this than anyone I've ever met. The man never feels sorry for himself, he's infinitely forgiving and never holds a grudge. He is the most happy, proactive person I have ever met. It's so refreshing to live with someone who decides to be in a good mood everyday no matter what life throws at them. And I can testify that following his example has changed my life into something so much more wonderful than I could have ever imagined.

What has elated you with joy in your lifetime?

My marriage and being mom to my 3 littles.

Have much have you evolved since your teenage years? Are you a similar person?

Essentially, I'm still very much the same person I was as a teenager. I have the same values that I had then, the same personality. But growing up, going to college, having a family, being married to Mr. has taught me so much about who I really am. I understand myself far better now than I did then, I'm more patient (definitely) and probably a lot more understanding and kinder to other people as well. I also have much more reasonable expectations. I realize that there are seasons to everything. But I'm still the same, the roots where always there, I just had to wait for them to break out.

What's something you don't want to tell us about?

I used to be very insecure. It was crippling, and turned me into a self-fulfilling prophecy. Choosing to be insecure is very poisonous. I'm glad it's in the past.

When the world is crashing down on you, where do you go?

Straight to my knees. My faith in God has pulled me through so many things. And to Mr. As I mentioned above, he's about the most ideal person in the world to go to when you need support.

Do you have any goals? What are they?

Yes. So many. More than is reasonable for a mother of 3 littles. But a few of them are:

1. To raise well-adjusted, kind children; who get an education and are upstanding citizens.

2. Always have a fabulous marriage.

3. Launch my own clothing line (working on this now-- eek!)

Can you honestly say you love what you do?

Yes! I love being a mom. Every wonderful thing about being a woman is wrapped up in motherhood. I completely embrace my femininity. I cherish it. I believe in it's strength. I am proud that Mr. works his booty off so I can be there for my babies at all times, so I can see their faces when they get off the bus everyday. I know that I could be doing a lot of things in the world, I have talents unique to me, just like everyone else, and for me it was a choice between giving those talents to others or my babies. I choose them. I know that everyone doesn't feel that way, and that I am so blessed to have the opportunity. And I thank Mr. everyday when he gets home from work. ;-)

I also love to write. I always have. Someday I want to be a real published author, but until then, blogging is a lovely way to put my thoughts on paper-er the internet...

And of course, what girl doesn't love great clothes? I love the pure creation of the design process. Painstakingly obsessing over the pattern, the measurements. I love the cutting, pinning, ironing, and when a piece of clothing comes together it's one of the most rewarding feelings in the world.

Who has been the single most influential person in your lifetime thus far?

I have 2.

My Brother. He has taught me more about compassion than any other person on this earth. And growing up with someone like him shaped who I became and the way in which I view the world.

And Mr. I am extremely fortunate in my choice of spouse. I'm so lucky that 20-year-old me chose so well, because I married an amazing man. Being his wife has made me a much much better person. He treats me like I am everything I should be, and it makes me want to be that.

Honestly, we are all striving for something, what is your greatest goal in life? I'm not talking about money!

To be the very best version of myself, in every aspect of my life. Especially as a wife, mother, and daughter of God. I think if I could get there, everything else is collateral success.

Name your most defining moment!!!
The day I truly came to understand myself, nothing brilliant happened, I just suddenly woke up and realized who I really was. It was awesome.

Also, the day I became a mother. Like whoa.

Are there people in your past that you wish you could make amends with?

Yes, but they aren't really interested in it I think.
I'm learning that sometimes people just don't like you, and there's nothing you can do about it. So I'm nice, and I move on. What else can you do?

What memory will be forever burned in your mind to the point where you can smell the room and feel the energy?

The day my brother was diagnosed with cancer. Worst. day. ever.

What movie and/or book speaks to you?

Aw, so many. I am such a reader. And I love great films.

Books:

Anything Jane Austen. Those are my kind of love stories. I absolutely adore Pride and Prejudice. Also, her characters often have a very strong bond with their sisters, and I have 4 sisters who are my very best friends in the world.

"The Guernsey Literary and Potato Peel Pie Society." I know. It has the strangest name ever, but it is such a wonderful book. When I read the main character, it's like reading myself. Also, it's takes place just after World War 2 and I am obsessed with that time period. Amazing book.

"Atlas Shrugged." I won't get political on you, but I think every responsible citizen should read this book. It's a beast (almost 1,100 pages, I think) but so captivating. I don't agree with every single idea in the book, but for the most part she is spot on. It was written like 60 years ago, but the stuff she writes about is so relevant to today, that it's almost prophetic.

Movies:
Penelope. I have a huge crush on James McAvoy (which Mr. is fully aware of) and I love everything Christina Ricci wears, plus the movie is just darling.

Strictly Ballroom: I used to be a dancer, and I can't help but love this movie. There was a time when my sister and I were completely obsessed with this offbeat, quirky little Aussie film, and I will forever love it.

It's a Wonderful Life: I love Jimmy Stewart, and this movie makes me weep.

So many more, but that's all I can think of right now.

Music:
Technically this isn't on there, but Mindy Gledhill's music just speaks to me. Her album "Anchor" is my most favorite in the world.

What is your greatest wish right here and now?

To be able to have another little. The Mr. and I have been trying for quite some time for our 4th, but no luck yet. I had a really hard time with it for awhile, but I'm okay now. I realize how blessed I am to have the 3 littles that I have. But if I'm completely honest, I really, really want one more. Fingers crossed.

Easy Stuffed Nutella Muffins for Valentine's Day

You all know my obsession with Nutella and how I want to not only make everything I can out of it but just eat it straight out of the jar. So when I saw {these}stuffed Nutella muffins I knew I had to make them.

They were SUPER easy!!!! Definitely a beginner recipe and SUPER delicious!!!

I spread heart shapes on top of each one for Valentine's day!!! SO CUTE!!!

Nutella Breakfast Muffins

1 egg
1/3 cup oil
1/3 cup sugar
3/4 cup flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon Vanilla Nut & Butter flavoring (optional)
1/2 cup buttermilk
1/2 cup Nutella
1 teaspoon coarse sea salt with 1 tablespoon sparkling sugar

Preheat oven to 350 degrees. In a large bowl, beat together the egg, oil, sugar, flour, baking powder, soda, and vanilla flavorings until smooth. Beat in the buttermilk, then spoon a small amount of the batter into the bottom of a muffin tin lined with a cupcake wrapper. Spoon a tablespoon or so of Nutella into the center of the cup, then cover with a second spoonful of batter. Sprinkle a small amount of the salt & sparkling sugar mixture on top of each muffin.
Bake in preheated oven for 17-19 minutes, or just until the center of the muffins spring back when touched lightly with your finger. Remove and cool. Drizzle warm Nutella on top of each muffin or spread a heart shape on top of each one for Valentine's day before serving. Enjoy!

Valentine's Day Triple Chocolate Truffle Bombs

Valentine's Day Triple Chocolate Truffle Bombs

This recipe will make 12-24 giant truffles depending on the size of your silicone molds.

Special Tools: Silicone heart molds or any other shaped silicone molds

Ingredients Cake:

1 cup semi sweet chocolate chops or chopped chocolate

1/2 cup cocoa powder

1.5 cup boiling water

1.5 cup cake flour

1/2 tsp baking soda

1/2 tsp kosher salt

1.5 cup brown sugar

1/2 cup white sugar

2 stick unsalted butter at room temp

4 large eggs

1/42cup butter milk or coconut milk

1 tsp vanilla extract

Recipe for cake:

1.preheat over to 325.

2.coat 9X13 pan with cooking spray( we are using a large pan because we want the cake to come out 3/4 inch thick.)

3. put chocolate and cocoa in a medium bowl and add boiling water, whisk until smooth

4.In a small bowl combine flour, baking soda, and salt, wick

5. beat butter and sugar until fluffy, add eggs and beat, add vanilla and beat

6. now add the chocolate and flour mixture to the butter mixture and beat well.

Bake for about 30 min at 325 or until knife comes out clean.

Ingredients for Mousse:

1 cup semi sweet semi sweet chocolate

7 tablespoons unsalted butter

2 large eggs, separated

1 tablespoon sugar

3/4 cup heavy cream

1/4 teaspoon vanilla

pinch salt

Recipe for Chocolate Mousse:

1.melt the butter and chocolate in a microwave safe bowl in 30 second increments, stirring in between, set aside once smooth

2. whip egg whites for 3 minuets, add sugar and whip 3 more minuets or until stiff peaks.

3. in another bowl whip heavy cream, set aside

4. in yet another bowl whisk vanilla and egg yolks

5. now fold everything together gently and carefully with a runner spatula.

Ingredients For Ganache:

2 cups semi sweet chocolate chips

1/2 cup of cream

3 tablespoons butter

pinch of salt

Recipe for Ganache:

In a small saucepan heat cream until piping hot but not a boil, add the chocolate and butter and whisk until smooth. Set aside to cool for about 20-30 minuets. You may speed this up by putting in the refrigerator.

Other Ingredients and tools:

Silicone domes or muffin pan

1 bag of red chocolate disks (you may buy at any craft store)

6 tablespoons of canola oil seperated

1 cup of light pink or white chocolate disks for decoration

ASSEMBLY DIRECTIONS:

1. scoop about 3 tablespoons of mousse into each silicone mold

2. when ganache is warm not hot you may fill each mold with 2 tablespoons of ganache.

3.Now with a heart shaped cookie cutter c cut the cake to the size of the silicone mold and place a cake circle over the ganache filling.

4.Once you have done this to all truffles, place them in the freezer for at least 4 hours or overnight.

5. Now peel the mousse truffles out of the silicone molds folding the silicone back to release and place on a wire cooling wrack.

6. Melt the red chocolate and 4 tablespoons of canola oil until smooth and pour over top of each truffle. This mixture should be quite thin. If it is too thick it will clump and look terrible. Trust me. More oil is always better!!!!

7. finally melt the pink or white chocolate and place in a plastic bag, cut the tip off and pipe to decorate!!!

VOILA!!!!!!!!!!!

On My Heart

Every since I can remember I have struggled badly with cyclical depression. I go through the spring and summer months with flying colors; not a care in the world.

Then once the winter sets in I get depressed. It's the lack of light. I miss the sunshine on my face everyday. I miss the green trees, the wildflowers, the animal life.

It's like suddenly everything has stopped to hybernate; Everthything except us.

I have traveled the world enough to know what it's like in many other cultures.

So many times in my life I have wished I could live like they do in Europe; work a few hours in the morning, come home cook an afternoon meal, take a family nap, then wake up and work a few more hours.

Meanwhile, on your way home from work picking up a few local ingredients to cook with that evening; always having a beautiful FRESH meal on hand instead of frozen hot pockets or whatever other garbage they try to make us feed our poor children in this country.

We work like dogs........never sleep........eat garbage......and don't mentally nourish ourselves. There is a lot of of work to be done here in the USA if we all want to be healthy, happy individuals. As a counrty we are severly over worked and over stressed.

I am a nurse. I earn a decent salary and yet almost every single coworker of mine has to have 2 jobs or work overtime just to scrape by. I work overtime every single week and we barely scrape by. We have no cable TV. We have no cell phones. We have one land line in our home. We only have one car that we share. It's a 1995 Subaru that barely runs. We go out to ewat teice a year. We do not belong to any clubs or gyms or have any other extra expenses and STILL we BARELY make the mortgage payment every month.

No wonder everyone's on an anti-depressant, obese and has ADD. We feed ourselves poison, never sleep, and work like slaves.

Honestly most of my budget goes to food. Good food. Organic food. I want my children to be as healhty as they can be but some can't even afford that.

The state of everyday life in this country overwhelms me.

We must continue to work and be mothers and wives and role models. There is no choice. We must persevere through the hard times hopefully while staying relitively sane and not gaining 100 pounds or staying in bed for 5 days at a time. I use those as examples because that's what I want do when I can't deal anymore.

I have made a vow since my children were born that I would be the absolute best mother I could be and I am fighting with all my strength right now to hold true to that.

Everyday I fight to get out of bed. I fight to go to work. I fight to have a free happy spirit. And try desperately not to think "what is wrong with me? Why is my life so hard and how can this possibly be my reality?"

and then I remember, God never gives us more than we can handle.

So........I handle it.

I'm running 30-40 miles a week and I think it may have saved my life. Without it I think I probably WOULD be in my bed 5 days a week.

I am so grateful for these legs that carry me.

Sometimes when I'm having a hard time on one o fmy runs I yell out "FIGHT HANNA FIGHT!!" and the other runners on the path look at me like I'm a nut case.

Who cares!!! I probably am but at least I'm trying and at least I'm FIGHTING!!!! At least I'm out there not letting life drag me down.

I say it over and over again, I WILL NOT LET LIFE HOLD ME DOWN!!!!!

And trust me my friends, I have a long, sorted history that many of you don't know about and I'm sure over time it will all be revieled but I assure you this is no where close to rock bottom for me.

That being said, I have been there before and have no intension of going back so ONWARD and UPWARD it must be!!!

So today I stand before you hoping and praying for a break. Hoping and praying that God will give me mercy soon.

Hoping and praying that this imense amount of love I have to give to the world will be allowed to shine through becasue everyday I FIGHT WITH ALL MY STRENGTH, ALL MY HEART, ALL MY SOUL!!!!

I have started a little interview process called "Brutal Truth is a Beautiful Thing."

Today's Interview: Nina Banks

What's your greatest weakness?

Being defensive. I hate disappointing people, making a mistake, or not living up to some expectation, so I get really defensive. I know I'm not perfect, and so does everyone else. I don't know why, but alwasy get flustered and worked up.

What's your greatest strength?

I'm a lover, through and through. Almost to a fault, I just want to love, hug, and support everyone. Many times this strength has led me to befriend people who only use me, or treat me poorly. I want so badly for everyone around me to be happy, so I often allow myself to be a doormat or not standup for myself simply to keep the peace.

What has emotionally crippled you in your lifetime?

I was 14 and it was my first year of high school. I'd been a dancer all my life and loved it more than I could describe. I had danced at a studio for years, but really wanted to get invovled with the activities at school. Our dance team was down right pathetic and there was basically no way on the face of the planet I was joining it....so cheerleading it was.

I rocked the try-outs, made the team, and for the most part came to love my new sport. We were a serious, competitve team. Major stunts, gymnastics, the works. It wasn't dance, but it certainly was fun, except for my coach.

Screaming and yelling were only the tip of the iceberg with her. Her words had a way of biting you, cutting you to the core. I was young, I looked up to her, and got my heart and confidence smashed into pieces.

We were on our way to cheer camp happily bouncing around the bus chatting with one another. I remember very little about the conversation, or how it got started. All I remember is a bunch of us were sitting around talking to our coach, eating from a tub of red vines, when she proceeded to call me and a few of my teammates out for being "roley polies".

I heard nothing else from that point on, just feeling my cheeks turn bright red with embarassment and shame. The rest of the camp went by in a blur of being over-practiced, not enough sleep, and having our coach play food police at every meal. The rest of the season went on similarly for me, I was called a liar and brat when my knee hurt due to a 3 month long mis-diagnosed torn meniscus, a wuss for needing surgery to correct the problem, and then was stuck in the back of routines like I didn't exist when I was well enough to cheer again.

The worst part of it all, her son was one of my friends, and her daughter only a year younger. I went to a small school, we all knew each other, we were all friends, sort of. I left the team after that year and started a re-vamped dance team. I became competition, and therefore enemy #1. She told other girls to hate me and make fun of me, all while spying on my team, stealing my choreography and songs. I never realized anyone could be so hurtful to someone else, let alone an authority figure to an impressionable child.

As I write this, I realize that I still haven't really come to grips with this hellish year. Part of me is still that scared little 14 year old who was told she was too fat, a liar, not good enough...

What has elated you with joy in your lifetime?

It sounds so cheesy, but being a mom. I've always been a little mommy, loving to babysit and care for all my younger cousins. I was always dying to hold the baby, or play with the little ones. I kinda always knew I was meant to be a momma, but I had no idea how much love and joy this role would bring me. I really feel that I didn't come into my own until I became a mom.

Have much have you evolved since your teenage years? Are you a similar person?

I am, and I'm not all at the same time. As a teenager I was very self-conscious and not confident in myself at all. While I'm far from being in a great place with this, I'm much better than I was.

I spent much time as teenager searching for answers. I visited many churches, attended different services with friends, spent lots of time questioning. Now that I've found my church, my beliefs, and what I stand for, I'm a much more confident and self-assured person.

What's something you don't want to tell us about?

Two words...chub rub. It's so embarassing and annoying when my pants inbetween my thighs, or my tops along my sides pill up from chub rub. Please tell me someone else gets this too!!

When the world is crashing down on you, where do you go?

My couch with a blanket, my little man snuggled up next to me, and "Pride and Prejudice" the Kiera Knightly version playing. I could sit there for days.

Do you have any goals? What are they?

My biggest goal is to get in better shape. I don't really care what size or weight that means, just as long as I feel good. I've been going to kickboxing and eating healthier and while I hate to admit it, I feel better. I want to keep this up and keep improving.

I also want to grow Momma Go Round and reach moms everywhere who are stuck in that horrible frumpy mom rut that I was in. It has done wonders for my self esteem and confidence to try new looks, put effort into how I look most days, and develop my style. Just because we are moms doesn't mean we have to succumb to the frumpy mom look!

Can you honestly say you love what you do?

I CAN!!! I'm blessed beyond measure that I get to be a stay at home mom. Everyone always warned me that the time goes so quickly and they grow so fast, but I never could comprehend it until now. In the blink of an eye LJ went from a little baby to a big boy. I'm so glad that I get to be here for every minute, even the ones I wish I could skip.

Being at home has also allowed me to develop my identity as Nina, not just a mom. I can carve out time for my blog and Etsy shops. These things have helped me define myself more than I ever thought a little blog or hobby could.

Who has been the single most influential person in your lifetime thus far?

My Papa. He always has the right thing to say, stays calm and collected in every situation, and truly has a heart of gold. By technicality he is my step-grandfather, but has never ever, not even once, looked at me as anything less than his little girl. I can only hope that my son will grow up to be half the man my Papa is.

Honestly, we are all striving for something, what is your greatest goal in life? I'm not talking about money!

To build a happy, peaceful, loving family. We are so close and love spending time together now, I want to strive to continue that as LJ and future kids get older. If I can raise my kids to be kind, generous, loving, open, successfully funtioning adults who still love to call mom for a chat and are never ashamed to give me a hug, then I have succeeded.

Name your most defining moment!!!

I had a C-section with LJ so I was pretty much at the mercy of everyone else for the first few days. The first night we were in the hospital, LJ woke up to nurse and his crying woke up my hubby. He got up, handed LJ over to me, and proceeded to go back to sleep. When LJ was done, there was no way to wake up my hubby without waking the baby, and my bed was too far from the phone for me to reach to call a nurse. That first night, LJ and I slept cuddled in bed with him in the crook of my arm, and we have snuggled that same way everyday since. It was at that moment that I realized my purpose and that he would be the great joy of my life.

Are there people in your past that you wish you could make amends with?

Honestly, no. There are people who I no longer speak to and each one is for a reason. I too often let myself be a doormat and if I were to make amends with those people, I feel that I would never be respected. While I will always be nice and cordial, I never wish to be friends again.

What memory will be forever burned in your mind to the point where you can smell the room and feel the energy?

Turning the corner to walk down the aisle with my dad at my wedding. I'm a rather silly person, and all the anxiety and nerves totally got the best of me. I expected to cry at that moment, but my dad knew just what to do. He pulled out his phone and snapped a picture of us just before our cue. That moment totally helped break my nerves and so I could let go, enjoy the moment, and let out the biggest nervous laugh halfway downt the aisle. It was a very "me" moment.

What movie and/or book speaks to you?

Pride and Prejudice. I'm a lost cause as a hopeless romantic. There is nothing I love more than the feeling of being swept off my feet. I know life will never meet the expectations of a movie/book, but a girl can dream can't she?

What is your greatest wish right here and now?

Without a doubt to buy a home. We live in LA and housing prices are more than a little insane. We are working hard and saving as much as we can, so hopefully we can get a place of our own. With a busy body toddler and hopefully more kiddos in our future, we would love a yard for them to run around in, a garage filled with bikes and scooters, and a laundry room filled with muddy jeans from happy kids.

Creole Shrimp and Corn Pot Pies

I have been quiet inspired by my trip back to New Orleans lately and cannot wait to taste all the Delicious food I have waiting for me around very single corner.

If you have all never been there I HIGHLY recommend a visit. You will not be disappointed, I promise.

So this is a little dish I like to to whip up when I 'm in the NOLA state of mind!

Ingredients:

Double order of pie crust. Store bought or I use {THIS RECIPE}

1 pound shrimp peeled and cleaned

1 red bell pepper diced

The corn from 3 fresh corn Cobb's

4 toes of garlic minced

4 stalks of celery, finely diced

2 tablespoons Tony Chachere's

2 cups cream

2 tablespoons flour

2 tablespoons butter

Recipe

1. In a frying pan saute garlic, celery, and bell pepper until tender, about 10 minuets. Now add in corn for a few minuets longer, Salt and pepper to taste.Remove from heat and stir in raw shrimp. Set aside.

2. Next in a saucepan melt butter over medium heat and add flour. Once combined whisk in cream until a little thick and add The Tony Chachere;s spice. Set aside.

3, Now divide your double order of pie crust in 2. Now take each order and divide evenly into 6 little balls. Roll each one out and place into the little tin pie containers. Now fill the pies with the corn and shrimp mixture and top with the cream sauce. Now roll out the addition 6 little dough balls and top the pies. Pinch the crust shut and brush with egg wash or freeze. Bake at 350 degrees for 45 minuets.

Hmm... I don't feel like I've had any! :P Maybe just being content and embracing who God has created me to be?

What has elated you with joy in your lifetime? Watching my business and blog grow! They are a huge part of who I am, and I am so thankful for everyone who has helped them grow!

How much have you evolved since your teenage years? Are you a similar person?

I was a teenager only 4 short years ago, but I do feel like I have changed a lot since then! I'm still naturally very quiet and will generally not say a lot in a large group of people, but I must say, I am getting more comfortable with opening up and talking to people. I really think that blogging has helped me in a lot of ways to not be afraid to be myself and to share what is on my heart!

What's something you don't want to tell us

about?

I struggled with fairly severe anxiety for several years of my life, and sometimes it still wants to creep up on me. When the world is crashing down on you, where do you go?

Do you have any goals? What are they?

I want to follow whatever God's plans are for my life because His plans are far greater than anything I can do on my own. I would, however, love to get married to the man of my dreams, have a sweet little family, and make a living as a potter for the rest of my life.

Absolutely! I feel so blessed to be living my dreams this early in my life! Who has been the single most influential person in your lifetime thus far? my mom

Honestly, we are all striving for something, what is your greatest goal in life? I'm not talking about money! to know Christ and to make Him known! Are there people in your past that you wish you could make amends with? No, not really. I try to never leave relationships on bad terms.

Wear a Little Sass A Frass

Well.........HAPPY SUNDAY TO ME...................I'm technically "supposed" to be volunteering myself for an overtime shift at the hospital tonight but I have decided that I miss my babies too much so I have made the executive desicion to stay here and hold them and kiss them and love them rather than go in.

YAY ME! I feel very pleased with my decision.

There will always be a nursing shortage. I will ALWAYS be able to pick up extra shifts and overtime, however, my children will NOT ALWAYS be toddlers at such a precious, precious age!

Now onto what we should be wearing!!!!!!

Homemade Gnocchi and a Little Love Story

My long run for the week was yesterday morning so I figured I better do a little carb loading!!!! My favorite!

I ran 12.5 miles and the gnocchi did me right!!!!

I've shared this recipe before but I love it so much that I just thougtht I'd share it again!!!

ENJOY!

Ingredients for gnocchi:

2 large russet potatoes

1 egg beaten

1/2-3/4 cups flour

1 teaspoon salt

Ingredients for Mascarpone Cream sauce:

1/2 cup mascarpone cheese

1 cup cream

1 tablespoon tomato paste

2 green onions sliced

1/4 pound thinly sliced pancetta

1 cup frozen peas

3 toes for garlic through a garlic press

Recipe for Gnocchi:

Bake potatoes @400 degrees for 1 hour or until tender. Remove and cool. Next cut the potatoes in half and scoop the insides into a bowl. Now add the salt, egg and flour (start with a 1/2 cup and add more as needed) The dough ball should not be sticky. Add flour until manageable. Knead for a few minuets, separate into 4 sections and roll into a thin tube on a floured surface. NOTE: You may need to add a tad MORE flour than listed in the recipe because all potatoes will be different sizes. Simply start with the amount listed and slowly add more while kneading until you get to a nice consistency that is NOT too sticky to handle. It should be easily manageable! when the roll is about about 1/2 inch thick stop and slice. You may texturize your gnocchi with a gnocchi paddle or a fork. This will help the sauce stick to the dumplings better but it's not necessary. I chose not to for this batch.

Bring a salted pot of water to a boil and cook gnocchi 2-3 minuets. Cook it in small batches. You should have about 3-4 batches. As soon as the gnocchi floats to the top of the water scoop it out with a handheld strainer so you can reuse the same water for all the batches.

Recipe for Sauce:

Cook pancetta on medium/high heat until done, remove and chop; set aside. Saute green onions and garlic in the pork grease for about a minuet, then add the cream, mascarpone, and tomato paste. Bring to a simmer and add peas and pancetta. Let simmer a few minuets. Add gnocchi directly into sauce when ready. Enjoy!

This recipe has a special place in my heart! My husband and I met when I was 17 and we became fast friends. We remained very good friends for about 7 years prior to dating and during those years my nickname was always "gnocchi" My husband said I reminded him of a little potato dumpling so that's what he always called me. Luckily I thought it was cute and gnocchi happens to be one of my favorite foods.

Anyway, about 3 years into our courtship my husband surprised me with this engraved locket. I love it to pieces and wear it all the time.

It reads,

"Gnocchi, I always knew you were the one"

About 2 years later we got married. I just thought I'd share a little backround on this special meal.

Once in the first year we were dating, I tried to make gnocchi for my husband, then boyfriend, and it was a disaster. We had to go out to eat after I ruined it beyond repair! So I figuered I'd give it another shot!

I hope you'll give this a try! It seems daunting but I promise you this is really easy to make and it's unbelievably delicious.

What's your greatest weakness?

I'm a perfectionist and really hard on myself. I'm a pro at knocking myself down, but thankfully my husband is great at pointing out the goodness.

What's your greatest strength?

I'm determined and I follow through! If I decide to do a project or challenge, I'll finish it even if it seems a little over the top to others.

What has emotionally crippled you in your lifetime?

Worry!!! I've always worried irrationally. Most specifically I worry about those I love getting hurt or in a car accident. Worrying can be exhausting sometimes.

Then I almost lost my husband six days before our wedding, in a cave, when a boulder fell off a ledge and landed on him. It happened in front of me, and I feel like that has thrown me into more of a worry frenzy than ever before. I can't get that image out of my mind, or the noise the boulder made. It was horrible. Ugh.

I spent a few hours keeping him awake while the others went for help. (Search and rescue gave us pictures.)

What has elated you with joy in your lifetime?

My hubby the last three awesome years I've known him, my hilarious family, my singing Mini Italian Greyhound, and materialistically...SHOES! The combination of the four has made for much enjoyment!!

I have a "shoe room" in my home where my hubby built some shelves and I store my nearly 400 pairs! I'm a sucker for high heels.

How much have you evolved since your teenage years? Are you a similar person?

I was soooo free spirited and easy going back then, and I think the knowledge of REALITY, since then, has changed me!! I'm still really friendly, but a little closed off at first. But I think besides growing up...I'm not that different!!

What's something you don't want to tell us about?

I moved to AZ last summer and started working from home and spend a majority of my days in my pajamas, and then my afternoons/evenings are spent in my workout attire. I guess I'd rather sleep in an hour since rarely people see me while I work!?

When the world is crashing down on you, where do you go?

Either running or to the piano. Both are GREAT outlets when stressed, and even on happy days. (Isn't my pup soooo cute!?)

Do you have any goals? What are they?

I loooove to run, and I want to a run a full marathon!! In fact, that is one of things Hanna and I started conversing over in the first place. We are both training and on DailyMile.com, a motivational spot for runners. I am a third through my Hal Higdon training for the Salt Lake City Marathon in April! I'm excited to make a trip "home" with my hubby, to fulfill this!

Can you honestly say you love what you do?

I spend my days on AutoCAD drafting and designing for a company in SLC. I love that I can get lost in a project which makes time pass quickly (wahoo!). It has been a good choice so far.

Who has been the single most influential person in your lifetime thus far?

My dad!! He has been through enough and his faith and attitude never fails. When I would go through breakups in college, etc., he would stay up all night playing ping pong with me to keep my mind from wandering and getting me down, even when he wakes up at 6. His glass is always full. My dad is so awesome!!

Honestly, we are all striving for something. What is your greatest goal in life? I'm not talking about money!

Always communicate with my husband, even years and years down the road. We're determined to make this marriage the best it can be!!

Name your most defining moment!

Our wedding day!! My husband (or...fiance I guess) just was released from the hospital, and since he survived the ordeal, it made it an even more amazing day for everybody!! Those were stressful days though. I woke up at 2:30 A.M. on our wedding day. lol And Ben was on Morphine and Lortab.

It was perfect. The weather was beautiful. Everyone was in town. Awh. I love him!!

Are there people in your past you wish you could make amends with?

There are always people that I have great memories with and wish I didn't grow apart from. But I'm also comfortable with leaving any toxic friendships behind, and surrounding myself with those that bring me up. Positive relationships are soooo important!

What memory will be forever burned in your mind to the point where you can smell the room and feel the energy?

I met my husband on Facebook and eventually flew to Vegas to meet him. The smell of a casino brings me back to our very first date at a Cirque show. I don't like the smell of cigarettes by any means, but there's something I just like about the casino smell now. Maybe that's weird. Meh.

What movie and/or book speaks to you?

Oh dear...hmmm get back to me. lol

What is your greatest wish right here and now?

Ben and I want to live in the city so badly. We moved to a small town last summer. It seems to suit families so well here, but we would love to get to Phoenix or back to Vegas before we start our family.

I Now have no idea how I came across Christ's blog!!! But I am SOOOOO glad I did.

Christy is s H*U*G*E inspiration to me for running. Her time is amazing and she is so dedicated; just my kind of girl!!!!

Valentine's Day Lollipop Cookies!!!

INGREDIENTS for cookies

2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 cup sugar
1 egg
1/2 teaspoon vanilla extract
Powdered sugar, for rolling out dough
3 tablespoons milk
1/2 cup white chocolate chips or disks
lollipop sticks
sprinkles
INGREDIENTS FOR ROYAL ICING:
3 egg whites
3 cups of confectioners sugar
1 teaspoon lemon extract
1 tablespoon pink gel food coloring (you can purchase this at hobby lobby or your local craft store)
DIRECTIONS FOR ICING:
1. place egg whites in a bowl and whip on high until fluffy, slowly add the confectioner's sugar and keep beating. Now add the lemon extract and the food coloring and beat until slightly stiff. Set aside.

DIRECTIONS for cookie dough:

Preheat oven to 375 degrees F.

Sift together the flour, salt and baking powder and set aside.

Cream butter and sugar together in another large bowl. Add egg, vanilla, milk and beat until incorporated. Gradually add the dry mixture, beating until combined. Knead dough for a few minuets to combine thoroughly. Wrap with saran wrap and place

in the refrigerator to chill for about 30 minuets.

To Make Cookies:

1. break the dough ball in half and roll out on a clean surface covered with powdered sugar to prevent sticking.

2. ll dough out until about 1/8 of an inch thick.

3. use heart cookie cutter to cut cookies.

4. Now use small heart cookie cutter to create the heart hole.

5. use a spatula to lift cookie off of counter and onto a sill pat or cookie sheet lined with wax paper.

6. bake cookies for 10-15 minuets at 375 degrees. Cookies should just start to get golden brown around the edges.

7. Repeat with the other half of your dough. You may do it all at once if you have room in your oven and enough cookie sheets to fit the entire batch. I had to do it in 2 rounds.

9. While the cookies are baking take 1/2 cup of white chocolate and melt it in the microwave. Set it aside with lollipop sticks ready.

10. MOST IMPORTANT STEP FOR SUCCESSFUL LOLLIPOP. As soon as the cookies come out of the oven very carefully transfer them to a wire wrack with spatula while piping hot. Now dip a lollipop stick in the white chocolate and press into the lower portion of the heart. You MUST do this when the cookie is still hot and soft. Do it as soon as they come out of the oven. Once you have them finished place them in the freezer right away for the chocolate to set around your stick.

11. Make your royal icing while the cookies are setting in the freezer.

12. Now ice your cookies, top with sprinkles and add a bow. You may place them in the refrigerator to set. The royal icing will harden after a couple hours and be easy to transport with no mess.

I have started a little interview process called "Brutal Truth is a Beautiful Thing."

What's your greatest Weakness?

I think my greatest weakness is not believing in myself enough to go after what I want. However, I can say that that's changing.

What's your greatest strength?

I think my greatest strength is my passion for the things I care about. I get very emotionally involved in issues and people that are important to me. I used to try and curb that, but now I think it's a positive thing and I'm learning to channel those feelings into good things that can change the world.

What has emotionally crippled you in your lifetime?

My dad's absence from my life and death several years ago. It was left to me to handle everything after he died. It was not easy.

What has elated you with joy in your lifetime?

Meeting John. That one's easy :) Actually, I knew him when I was a teenager and we got reacquainted about a year ago. But our relationship has been the most life-changing part of my life. Here we are 10 years ago... though we were always just friends, I think you can see from this picture that what is between us was always there in some form. This hangs above our bed now.

Have much have you evolved since your teenage years? Are you a similar person?I'd say I'm similar but yes, I've definitely evolved. I hope! Straight out of high school I moved to an ashram and then to India for a time. That was an extension of things I have always been interested in and definitely shaped who I am today.

To John. Unfortunately, I have not always had someone who creates a safe space for me. But he does. Every day.

Do you have any goals? What are they?

Yes! Lots! I really want to find a career that let's me do something creative. I want to travel a lot with John. And we want to get married by the end of the year.

Can you honestly say you love what you do?

I have been a preschool teacher for many years and I absolutely loved it. However, I am in the middle of changing gears and as I said, looking for something in the creative/design field. I will keep you posted :)

Who has been the single most influential person in your lifetime thus far?

Again, I'd have to say John. I could gush on and on about him, but sometimes someone else says it better than me...

Honestly, we are all striving for something, what is your greatest goal in life? I'm not talking about money!

My greatest goal is to keep finding ways to be more selfless. I want to learn how to get out of my own way and try and put other people before myself.

Name your most defining moment!!!

The moment I realized that I could be alone. Of course that was when I got reacquainted with John.

Are there people in your past that you wish you could make amends with?
No. What memory will be forever burned in your mind to the point where you can smell the room and feel the energy? The moment John picked me up at the airport! We had not seen each other in 10 years but had fallen in love over the phone... I was so nervous, I can't even describe it. He picked me up with pink tulips and the sweetest smile... The rest is history.

What movie and/or book speaks to you? Oh, so many! I love to read so it's hard to choose, but I'll name a few: Of Love and Other Demons by Gabriel Garcia Marquez, The Year of Magical Thinking by Joan Didion, and the Corrections by Jonathan Franzen. Movies, I'd have to say Lost in Translation and Food Inc

What is your greatest wish right here and now? To keep learning what love is. To have my relationship be my spiritual practice in that I continue to diminish my own ego, wants, desires and learn how good it feels to give into love without reservation. I am lucky enough to have someone who helps me do that and wants the same things. This "Brutal Truth Interview was very special to me because Jessica is a real life friend. And not just any real life friend, a friend of 15+ years. We met when we were just wee little trouble makers and have continued our friendship on and off throughout the years. It is in fact Jessica who turned me on to blogging. So Thank you my friend. Obviously she is head over heels in love and I couldn't be happier for her. She deserves it more than you know. Hot Pink Chocolate Chip Cookies

Happy Valentine's Day Lovelies!!!!

Chocolate Chip Cookies

This is the New Yotk Times Recipe (you could just as easily use any recipe you'd like)

Adapted from Jacques Torres

Time: 45 minutes (for 1 6-cookie batch), plus at least 24 hours’ chilling

2 cups minus 2 tablespoons

(8 1/2 ounces) cake flour

1 2/3 cups (8 1/2 ounces) bread flour

1 1/4 teaspoons baking soda

1 1/2 teaspoons baking powder

1 1/2 teaspoons coarse salt

2 1/2 sticks (1 1/4 cups) unsalted butter

1 1/4 cups (10 ounces) light brown sugar

1 cup plus 2 tablespoons (8 ounces) granulated sugar

2 large eggs

2 teaspoons natural vanilla extract

2 tablespoons of GEL pink food coloring (buy at craft store)

1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (see note)

Sea salt.

1. Sift flours, baking soda, baking powder and salt into a bowl. Set aside.

2. Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Now add in 2 tablespoons of gel pink food coloring!!! MIx well, 2 minuets! Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches, and can be refrigerated for up to 72 hours.

3. When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.

4. Scoop 6 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. IF YOU ARE NOT MAMKING GIANT COOKIES THEN ONLY COOK THEM FOR 12 MINUETS!!!! Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day. Eat warm, with a big napkin.

Yield: 1 1/2 dozen 5-inch cookies.

I'm doing this because I love to get to know the "real" people behind their blogs. I think so many of us are afraid to tell the truth whatever it may be. We want others to like us. We want others to read our blog. We don't want to scare anyone away.

What's your greatest Weakness?

Trusting too easy.

Putting faith in people I shouldn’t.

What's your greatest strength?

Making things pretty whether it be wrapping a gift or

decorating for a party. It’s all in the

details!

What has emotionally crippled you in your lifetime?

Struggles with anxiety. I don’t do so well with severe traffic, elevators

or flying. Anything that makes me feel a loss of

control really.

What has elated you with joy in your lifetime?

Simple moments with my kids. Silly things they say or do. I hope I never

forget.

How much have you evolved since your teenage years?

Are you a similar person?

Not at all! I’m

completely different. I thought I knew everything and that my mother knew

nothing. (don’t all teenagers feelthat way?) I gave her

such a hard time. Today, I realize how right she was about so many things. I

am softer. More sensitive to how

she and others feel.

What's something you don't want to tell us about?

A past abusive

relationship. Definitely something that changes who you are.

When the world is crashing down on you, where do you go?

Home. I love to be

home. And the older I get, the more I like it.

Do you have any goals? What are they?

I’m embarking on a new

journey right now…the one that lead me to being a stay-at-home mama after

working in the

corporate world for

just shy of 21 years. Definitely a HUGE change and one that I hope to get

better at. I still need to

find my groove.

Can you honestly say you love what you do?

I’ll answer this

question based on where I was at when I was working outside the home. My answer

would definitely

have been no.

Sometimes in life you get thrown into something that is completely different

than what you envisioned

for yourself. I ended

up in a great position with a great organization but…was it my lifelong

dream? My passion?

Absolutely not.

Who has been the single most influential person in

your lifetime thus far?

I would have to say my older brother, Brian. There is a significant age

difference between us and as such, he was left

to look after me and guide me often as a young girl, and later as

a young adult. He taught me so many things, from

how not to be afraid to public speak, {grade 4 speeches} to how to wrap

gifts {sadly, true} and what good music was {Elton J

John and more Elton John}. He is somewhere reading this right now. And

smiling.

And for my part, I still know almost every.single.word on the Captain

Fantastic and the Brown Dirt cowboy album.

Honestly, we are all striving for something, what is

your greatest goal in life? I'm not talking about money!

My greatest goal in

life is to raise confident, caring, sensitive, hard-working children. I have

three. This is no easy feat!

Definitely my decision to leave my job.

It was one of the most difficult things I have ever done.

This one is easy. The

birth of each of my babies. I remember the warmth of the room. The lighting.

Key. I have read the book but have yet to see the movie. I have a slight

obsession with that

particular historical

period. I just recently finished the Journal of Helene Berr. Also chilling.

And ridiculously sad.

What is your greatest wish right here and now?

For the happiness and

health of my family. (and a beach vacation!!!!)

Self Sabotage

It can be such an ugly wretched little beast!!

Anybody else well acquainted with it???

Well unfortunately self sabotage has been something I have struggled with my entire life. My life seems to be like a merry go round. Round and round we go thought the different stages: happy and productive most of the year, then down and self sabotaging for a few months, then recovering from the down time and moving froward again. Technically I think it's called Cyclical Depression.

I feel very blessed because the birth of mt children have helped this tremendously. There simply isn't enough time to even be selfish enough for one second to self sabotage. You must warrior on.

Well. Last night my battle with self sabotage began AGAIN!!!

What did I do?

AT 10 PM I went into the kitchen and ate an ENTIRE bowl of frosting. Not because it tasted good. Not because I was craving it. Not because I needed a treat. In fact because I bake so many goodies for my blog, there are ALWAYS sweet treats lying around here. I could have had a chocolate chip cookie or a truffle but I went for the frosting because I knew it would do the most damage.

I did it to punish myself.

WHY?

Because it's easier to fail then it is to succeed!!!!!!!!

I haven't done anything wrong.

I did it to sabotage all the amazing healthy choices I have made over the past year and managed to loose 110 pounds. I did it because I felt bad about myself. I wanted to punish myself and I knew if I made my self sick I wouldn't want to run today.

It's easier to be overweight and depressed and stay in bed all day and do a mediocre job raising your kids. Why do you think 70 % of tghe country is feeding their children McDonalds which is basically poison rather than taking the \time to buy and prepare healthy food? Because it's easy!!!!! And we wonder why our children are obese and have hormone problems.

To succeed is a triumph but it comes with a high price tag. Anyone is capable of it but it's not easy. If it were, we'd all be exactly where it is we want to be. We must keep striving for our goals and never give up. Once you acheive one....It's time to move on to the next!!!!

Well guess what I ran 8 miles at 9.55 pace ANYWAY, despite the 5 cups of icing that certainly did make me ill...!!!! I WILL NOT LET LIFE HOLD ME DOWN!

So.......This is how it begins, with a bowl of frosting, and then I start to move on to bigger, more harmful things until I am in the gutter.

WHY? WHY would anyone do this to themselves??

Great question!!!!

Like I said before because it's MUCH easier to fail than it is to succeed. Failure comes with a million excuses. Success doesn't come with a single one except your blood, sweat and tears to get there.

I was conditioned at a very young age that I should be a certain way, act a certain way and look a certain way. I hated that feeling and try VERY HARD to NEVER, EVER make my children feel like that.

I have done a lot of work around this stuff with a therapist and for some reason I don't feel worthy of the success. The success I deserve, The success I created for myself, so I ruin it on purpose.

SELF SABOTAGE!

Well...............NOT THIS TIME!!!!!!!

I woke up this morning, immediately started balling, got on my knees and stayed there for a very long time crying and crying and crying.

My wonderful, supportive husband came to me, comforted me, listened to me!

I WILL NOT LET THIS THING BEAT ME!!!!

NOT THIS TIME!

I worked 80 hours last week......Ran 40 miles last week............I've had a recent death in the family which has left me estranged from a different family member because of a fight between us and my kids hardly know me anymore because I work so much. I'm sad. Very sad today.

BUT........Mark my words friends. I am a FIGHTER!!!!! and I will FIGHT until there is nothing left to fight for. I will not let all these misfortunes beat me!!!!!!

A little Inspiration goes along way........My life is not easy by any stretch of the imagination but every single day I wake up and try my absolute hardest to be thankful, grateful, and make the best of my situation.

I mean what can I do, Just lie down and die? Give up? NO!! I have 2 beautiful children to set an example for.

Put my dreams on hold?? NO WAY!!!

Bankruptcy, overtime, death, family estrangement.........LIFE MUST GO ON and it will so I might as well live it out loud!!!! Life is way too short. Even in the face of unrelenting mercy I must persevere and I will my friends. I will!!

Everyday I thank God for blessing me with 2 beautiful, healthy children who have changed my life completely and a wonderful husband who supports me NO MATER WHAT!!!!!

I am so grateful to all of you followers who support me and send positive energy my way. THANK YOU from the bottom of my heart!!!!
