<h2>Tuna Burgers</h2>
<p>1 – 7 oz can of tuna, drained<br />
¼ Cup minced onion<br />
¼  Cup mayonnaise<br />
½ Cup grated cheddar cheese<br />
1 Cup celery – chopped<br />
salt and pepper to taste<br />
6 <a title="Hamburger Buns" href="http://www.breadmachinediva.com/2010/07/hamburger-buns-in-the-bread-machine-updated/">hamburger buns</a></p>
<p>Combine all ingredients except buns to make filling.  Split the rolls and add filling. 				<content:encoded><![CDATA[<p><img class="alignleft size-full wp-image-1489" style="margin: 0 20px 20px 0;" alt="honey" src="http://www.breadmachinediva.com/wp-content/uploads/2013/06/honey.jpg" width="200" height="304" />I found this recipe for honey bread in a Zojirushi bread manual.  (If you lost your the booklet that came with your bread machine, check out this<a title="bread machine manuals" href="http://www.zojirushi.com/support/manuals_breadmakers.html" target="_blank"> handy page with manuals for almost all of their bread machines</a>.)  The bread is soft and has a great flavor.  What surprised me about it is that it isn&#8217;t sweet.  It&#8217;s just a great loaf of bread that you can make from ingredients you probably have in your kitchen right now.<br clear="all"></p>
<p><strong>Honey Bread Recipe</strong><br />
1 ¼ cup water<br />
¼ cup honey<br />
4 ¼ cups bread flour<br />
2 ½ Tablespoons butter<br />
2 teaspoons salt<br />
2 ½ teaspoons yeast</p>
<p><strong>This makes a two pound loaf.</strong> Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. With my machine (a <a href="http://www.amazon.com/gp/product/B0000T6J3I/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0000T6J3I&amp;linkCode=as2&amp;tag=breadmachinediva-20" target="_blank">Zojirushi BBCCX20</a>), I add the liquid first. I found it helped to put the correct amount of water in a two-cup measure and then add the honey into the same cup. I stirred the honey/water mixture to blend them.  I wanted to make sure to use all of that yummy honey and not leave any on the side of the measuring cup!</p>
<p>Check on the dough after five or ten  minutes of kneading.  Just pop the top of the bread machine and see how the dough is doing.  It should be a smooth, round ball.  If it’s too dry add liquid a tablespoon at a time until it looks OK.  If it looks too wet,  add flour a tablespoon at a time until it looks OK.  Most of the time though, the above amounts should be just right.</p>

<p><strong>Mrs. C raised an interesting issue about the <a href="http://www.breadmachinediva.com/2010/06/two-pound-sour-milk-bread/">sour milk bread recipe</a>.  &#8220;My question is how to get the sour milk (other then the obvious) as milk never lasts in our house long enough to go sour. Thanks!&#8221;</strong></p>
<p>Great question!  To make sour milk add one tablespoon of vinegar to one cup of room-temperature milk. (adjust amounts as needed for each recipe) Stir and wait about 5 minutes.</p>
<p>I&#8217;ve added this hint to the recipe as well as instructions for making the bread using the quick cycle of your bread machine.</p>

<p><em>I love love love these rolls! I’m making them right now! I haven’t bought hamburger buns since I’ve found your recipe! My whole family loves them!</em></p>
<p><em>I use 3 cups bread flour and 3/4 cup of freshly ground wheat flour. I have also added chia seeds and that gives a nice extra texture.</em></p>
<p><strong>My friend, and frequent reader, Marion commented that the site looked a little funny.</strong></p>
<p>It turned out that Marion had only viewed the site with her desktop and iPhone.  When she saw the mobile website them for the first time, she was taken aback at how the site looked.  The layout and colors are very different!  If you find the mobile view of the site distracting, look at the bottom of the page for the on and off button for the mobile view.</p>
<p>While we&#8217;re on the subject, if you ever see anything strange or &#8220;not quite right&#8221; on the site please let me know.  The more helpers I can get to keep the site in good working order, the better!</p>

		<description><![CDATA[What's normal wear and tear for a bread machine?  It looks like I'm going to find out!]]></description>
				<content:encoded><![CDATA[<p>Last night I spotted a serious problem with my bread machine.  I was making bread dough.  The machine finished and as I removed the dough I noticed a dark spot in the dough near the kneading blades.  It was a small spot, maybe the size of a grain of rice.  I&#8217;ve had this before though.  It&#8217;s caused by the gasket around the kneading pin allowing oil from the undercarriage of the pan into the bread-making area. That is not the kind of oil that I want in my food!</p>

<p><strong>Normal Wear and Tear?</strong></p>
<p>About a year ago I figured out a way to use my bread machine to make <a href="http://www.breadmachinediva.com/2012/04/yes-you-can-make-granola-in-a-bread-machine/">granola</a>.  I&#8217;ve been making granola at least once a week ever since.  We buy walnuts halves that I put through a nut grinder.   Ideally the grinder would turn them into chopped nuts, but they come out very finely ground.  It tastes great and so I haven&#8217;t worried about it.</p>
<p>Now I&#8217;m wondering this those teeny, tiny bits of ground nuts work their way under the paddles while the machine is going.  If so, could they be damaging the gasket?</p>
<p>I got the machine in November of 2008.  The first pan wore out in June of 2011.  (That was my first experience with the leaky gasket situation.)  At that point I ordered a <a href="http://www.amazon.com/gp/product/B001AQDE6U/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B001AQDE6U&amp;linkCode=as2&amp;tag=breadmachinediva-20" target="_blank">replacement pan from Amazon</a>.   That means that the original bread pan was used for 32 months.  The second pan lasted only 23 months.  That&#8217;s nine months shorter than the first one! I&#8217;m using my machine a lot more than I used to though.  I make all our bread, dinner rolls and hamburger buns.  Plus there&#8217;s the granola.  Plus there&#8217;s the occasional cake or batch of jam.   All in all, I think I use the machine 6 times a week.  So maybe the nuts have nothing to do with it.  Maybe this is normal wear and tear.</p>
<p>While researching this issue I found this quote at Amazon about a Zo bread machine:</p>
<blockquote><p><em>I bake bread every single day and have to replace my bread pan about every year to 18 months. The paddles I replace about twice a year. In my opinion that is good enough although it would be nice if they lasted longer of course.  Things that will influence how long your pan and paddles will last is how rough the dough is (the more seeds or nuts you put in, the more the non-stick layer will be damaged during the kneading process) and how sturdy you make your dough (if the machine has trouble moving the dough around you probably don&#8217;t have enough water or other fluid in it which is harder on the motor, as well as the paddles).</em></p></blockquote>
<p>Note though that the talk in the above quote is about scratches and not oil leaks.  My pan is a little scratched, but nothing deep or alarming.  The scratches are so tiny and few that it&#8217;s hard to notice them.</p>
<p><strong>Question One &#8211; Does the use of finely ground nuts harm the bread machine?</strong></p>
<p>I&#8217;m going to email Zojirushi about this.  I&#8217;ll let you know what they say.  Until I hear from them, I&#8217;m advising people to hold off on making granola with your bread machine.  If you do make granola, my advice would be to use nuts that are not finely chopped.</p>

<p class="first-p">It was hard to get a firm answer from Zojirushi on this.  I called and emailed them and got the same response both times.  Here&#8217;s the emailed version, &#8220;Over time depending on the usage of the bread machine, the baking pan, kneading blades and/or belts will eventually be worn-out and would need to be replaced. This is normal wear and tear and the baking pan is machine pressed and not repairable.   Using such ingredients may harm the nonstick coating. Please remember, recipes other than ours may require adjustments or may not work at all. We can only guarantee and advise regarding our own recipes.&#8221;</p>
<p>Based on the response and my own experience, I&#8217;m going to continue to make granola.  However, I&#8217;m going to use chopped nuts instead of ground nuts.</p>

<p><strong>Question Two &#8211; Do I get another pan or do I buy a new machine?</strong></p>
<p>My current machine is a <a href="http://www.amazon.com/gp/product/B0000T6J3I/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0000T6J3I&amp;linkCode=as2&amp;tag=breadmachinediva-20" target="_blank">Zojirushi BBCCX20</a>. I love it, but I&#8217;ve got to admit that I&#8217;ve had my eye on the <a href="http://www.amazon.com/gp/product/B0067MQM48/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0067MQM48&amp;linkCode=as2&amp;tag=breadmachinediva-20" target="_blank">Zojirushi BB-PAC20 Home Bakery Virtuoso Breadmaker</a>. But I can&#8217;t justify the cost of a new machine if I can spend just $65 or so and get a new pan.  Also, while the Virtuoso looks amazing, it doesn&#8217;t seem to do more than my current machine.</p>
<p>The real question is, how long do bread machine&#8217;s last?  My first machine lasted about six years.  If that&#8217;s normal, then I&#8217;ve got a little over a year to go and my money would be better spent buying a new bread pan.  I&#8217;ve also seen people claim that machines last anywhere from three years to eighteen years.  It&#8217;s hard to know what to think.</p>
<p>I&#8217;m going to make a decision in the next day or two.  Right now I&#8217;m leaning toward just buying a new bread pan. If this machine lasts six years, that would make the most sense.</p>

		<description><![CDATA[This is a variant of my Hawaiian bread recipe.  The rolls are soft and sweet with the lightest taste of pineapple.  They’re really quite good!]]></description>
				<content:encoded><![CDATA[<p>I was going to call this recipe Hawaiian rolls, but I&#8217;m not sure that would be accurate.  This <em>is</em> a variant of my <a href="http://www.breadmachinediva.com/2010/01/hawaiian-bread-in-the-bread-machine/">Hawaiian bread recipe</a>.  The rolls <em>are</em> soft and sweet with the lightest taste of pineapple.  But my brother, an aficionado of Hawaiian rolls,  would say that they aren&#8217;t nearly sweet enough to earn the name Hawaiian rolls.  That&#8217;s why I&#8217;m calling this recipe pineapple rolls.  Whatever you call them though, they&#8217;re really quite good.</p>

<p><strong>Pineapple Rolls</strong><br />
¾ cup pineapple juice<br />
1 egg<br />
2 Tablespoons olive oil<br />
2 ½ Tablespoons sugar<br />
¾ teaspoon salt<br />
3 cups bread flour<br />
2 tablespoons milk<br />
1 ½ teaspoons yeast</p>
<p>Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first.  <strong>Use the dough setting</strong>.</p>
<p>As always, check on the dough after five or ten  minutes of kneading.  Just pop the top of the bread machine and see how the dough is doing.  It should be a smooth, round ball.  If it’s too dry add liquid a tablespoon at a time until it looks OK.  If it looks too wet,  add flour a tablespoon at a time until it looks as it should.</p>
<p>When the dough is done put it on a lightly floured surface and divide in half. Form into rolls. The goal is to get about 16 dinner rolls of appropriate size and shape. Put the rolls on a greased cookie sheet.</p>
<p>Cover the rolls with a clean, light-weight kitchen towel and let the rolls rise for half an hour. Then remove the towel and put the rolls in a 375 degree oven for 12 to 17 minutes or until done.  (I baked mine for 16 minutes.)</p>
<p>Move the cooked rolls to a rack to cool.</p>
