This is by far one of the most beautiful camping trip I've been to.This is a great place to visit, if you enjoy water, hiking, and simply beautiful scenery.

Midnight Queen

Midnight Queen or Queen of the Night Plant

I've heard, and read some pretty interesting things about this plant. I first saw this plant growing at my aunt. There was just something about it that I had to have it. I had no idea what surprise it will bring me. She told me it was very easy to grow. She snipped a few leaves and instructed that I simply lay it in the ground. Her only warning, try to keep it away from direct sun light.

It took about a month before seeing something sprouting out from the leaves I had put in the ground the month prior. Once its settled in the dirt, it grows really fast.

After about a year into its growth, I saw my first bloom. I did nott see when it blossomed, before I knew it, it was already a flower like the ones I've shown here. The rest as they say it, was history. Now, I get beautiful blooms year after year.

The flowers opens when the sun goes down, and fully blooms later in the evening, hints the name Queen of the Night or Midnight Queen.

Young bloom, about two weeks old. By the time they get this size, keep checking on them. One blink of an eye, and you'll miss the bloom. By the time you see, it will start to close like the ones you see below.

I've read that only the lucky will see the flower. Some have never seen it bloom. Guess I'm one lucky lady ^__^ ! I've seen them bloom every year since it first started to flower. In it's earlier year there were only a few blooms every now and then, but in the last couple of years, I've seen it bloomed 8 to 10 flowers in just the pot I've shown above.

I am "lucky" to see the flowers blooms and they're such beauties, it would be a shame not to share it. Enjoy!

Spicy Glazed Pork

Fish sauce, sugar, water, pork and pepper? Does that sound like a good combination? Sounds more like a shopping list for the local Asian food market. Hehe. I certainly didn't think so at first, but I wanted to experiment and find out what the ingredients above would combine and turn into. Would it challenge my taste buds or destroy them?

When you cook majority of the time, coming up with new ideas for cooking becomes a very challenging chore. If I was one to give up easily, that would have been the end of it, but luckily I'm not. I enjoy experimenting and discovering new flavors that make my taste buds EXPLODE! When you enjoy eating as much as I do, you tend to discover all sorts of food that makes your mouth tingle.

Due to me not knowing what to cook for the next meal, I wanted try something new, all I had was chunk of lean pork with some skin and some left over pre-made sauce (the above listed ingredients).
The sauce itself went really well with the chicken wings(see post: spicy lemon chicken), so I figured it should go just as well with pork. For the pork, I left out some other ingredients such as ginger and garlic which I used for my chicken.

I have to say. It went really well on the first try. My taste intuition did not fail me, in fact, now it's a favorite among my family.

I have not come across a similar dish anywhere yet, so I've decided to call my new dish "Spicy Glazed Pork". Enjoy!

Spicy Glazed Pork

If you're wondering what the greens are, don't. It's a mixture of wild edible greens. Some would consider it weeds but I find it makes a delicious additions to my cooking.

Want to know how I prepared and cooked my Spicy Glazed Pork?

Here is what you will need:

Pork (your choice of lean or not) - Step 1) slice the pork about 1 inch thick, add seasonings (salt,black peppers,paprika, or what ever seasoning you like) mix well, then sprinkle some all purpose flour lightly cover the meat and toss to mix well. Step 2: heat vegetable oil in fryer ( make sure oil is hot and ready), then put in pork fry it until golden brown. Strain excess oil off pork.

Sauce
1 cup of sugar
1 cup of fish sauce
1 cup of water
In a small pot combine above ingredients. Turn on med heat. Let simmer til it thickens then set aside to cool. Depending on how much sauce you want just use equal parts of the above listed ingredients. I used 1 cup because I like to have extra for later uses. Keep unused sauce in the refrigerator, it will be good up to about a week.

Finally, in low heat, put pork on a good size pan. Slowly pour sauce over pork toss to mix well and when the sauce begins to thicken and is equally covering all the pork, add pepper flakes(option if you like it spicy)Turn off heat and Enjoy!

Miner's Lettuce

Last year went camping and saw these beautiful green circular plant growing all over up along the side of the road. It looked so tasty. I told my husband, it look so good, I bet they are edible. He laughed, but admits it does look really good... After returning home, I could not get the images of those delectable plant out of my mind. I decided to do some research on it. There was only one problem, I had no idea what they're called. It was one of those thing when you really need to know something, but can't find any information on it. Time went by and I eventually forgot about it.
My kids wanted to visit the local library to check out some books. While at the library, I decided to check out a book about medicinal plants and herbs. As I flipped through the pages of this book, I happily surprise by a photo of the very plant I was looking for. With the information I got from this book, I then started to do more research on the web and much to my surprise, this plant has been around for a long time and people has been and still are eating them today.

A recent trip to the mountain, guess what I saw again? Yes, miner's lettuce! It was so bountiful! I had to pull over and harvest some to try.

My trip to the zoo...

How often does one get a chance to capture nature's surprise? I was not aware of this accidental pose ^_^ I didn't even notice it until I came home and uploaded the picture to view.. This alone made my day today!

Tasty! Tasty Noodle!

Some people call it Kapoon.. Many people have their own ways of making this dish. it is the one dish that you can put almost anything you like into it and it will still taste great. Below is my way of making it. Try it and let me know if you like.. I will say this... if you like noodle and I mean, tasty noodle, you'll love this!

Oh yeah, Don't be afraid to experiment!

Here is what you'll need..

Ingredients A

vermicelli noodle
1 whole chicken (boil)
a whole clove of garlic (crush)
1-2 can of coconut milk ( depends on how thick you want the broth - eye ball )
1/2 teaspoon salt ( more or less to your taste)
1-2 table spoon of red curry ( find in Asian grocery stores )
shrimp paste ( teaspoon full ) ( optional )
1-2 can of crab meat ( optional )
2 table spoon of instant sour soup paste ( yum tum )
fish sauce (more or less depending on how salty) I prefer to use 3 crab fish sauce, but you could use whichever you chose.
kaffir lime leaves
couple slices of galangal
sliced varity of bamboo shoots ( optional )
1-2 potatoes ( peeled and dice/cube) ( optional )
variety of mushroom ( optional )
sliced baby corn ( optional )
1-2 can of quail eggs ( optional )

Note: keep in mind that you want the sauce to be a bit saltier. Once the noodle and other condiments are added to the broth, the saltiness will tone down.

Condiments Put aside for later

(do not cook these items)

thinly sliced cabbage
cilantro (coarsely chopped )
green onion (chopped )
bean sprouts
thinly sliced banana blossomNote: put blossom in cold water/rinse so it does not turn dark

Directions

Boil the vermicelli noodles, make sure its soft and cook. Drain it. Take a small amount of noodles in your palms, making a round circle to squeeze the water out and place in a strainer. This will make it easier to pick the noodles up when its dry. Repeat your steps in doing the noodles (set aside)

Boil chicken in high heat ( once chicken is cooked remove chicken from broth, cool chicken, use your hand or fork to shred the chicken breast, thighs, and legs. Put the shered chicken back in the hot broth)

add all the ingredients to the boiling broth, stir and cook for ten more minutes, then you are done!

Serve:

put desire amount of noodle in a bowl
put desire condiments
add broth, mix and enjoy!

Why Do We Dream?

Don't you hate it when you have a creepy scary dream?

On the bed was my husband to the right, my son, then me on the left. So I see that there were two black smoky like figures lurking outside our window. My husband said did you see that? I turned my head toward the window, and yes, I saw it. Don't quite remember what happened next, but now we're sleeping. As I turned my body toward my son and husband, I sense like something was watching or coming over so I opened my eyes and saw that one of the black smoky like figure was floating over my husband. I swing my left arm over and told it to go away. I said it louder and louder, it didn't go. I then remember that my husband always told us when this happens, for us to say "In Jesus name, he command you to go away" So I called out Jesus name several times more. As I continue yelling and swinging my arm over that figure, I caught myself saying "Go Away" then I woke up....

When I opened my eyes for real, it was still dark out and it just gave me the chills. It took me a long while before I could go back to sleep.

To think of it, I don't recall ever having good and happy dreams. Only these awful scary one. Why is that?

About 3 am on Sunday a sharp throbing pain. Toss and turn trying to ignore the pain and get some sleep. I would dose off, but the lingering pain would wake me up. I was trying fearlessly to deny that it was my wisdom tooth that was causing me so much loss of sleep. I was well aware that I needed to eventually go in and have it extracted. In between my struggle to sleep and ignore the pain, I come to accept that in the morning, I must go in to have it remove.
     Monday morning arrived and the first thing I do is call my dentist. What! no answer! I called all morning long. The same recording over and over. Finally realize, oh it's president's day. They must be closed. Great another long agonizing day and night. Hopelessly, I hoped the pain would just go away. No. it didn't.
     Tuesday called first thing. Yay! their open. "You have an opening this morning?" "yes" "can I come in? I need to get this wisdom tooth removed before I talked myself out of it." Come in now" I was never ever so happy to go in to have this tooth OUT!
     Scared out of my mind, I sit in the chair. The doctor take out the needle, I closed my eyes and open my mouth. Sharp pinch on my gum. Turn iPod volume up. Doc poked around the area, AAAHH! pain.. he gives me another dose of anesthetic, try again... again.. AAHH...third dose... finally numbness. The doctor tells me, let me test it out. Ok.... I felt pressure pushing, tugging, then he said ok rinse. Really I'm done. That was easy!!!
     I come home with gauze in where my tooth once was. My mouth still numb, but slowly it was wearing off....Now here is what I was not expecting...Blood and saliva. Lots of it.. I couldn't swallow it. I spit, how? Too afraid to open my mouth. So I found a way. The blood was so much, I was spitting so often, my lips were drying out. I started to research on the net to see what I could do about the blood, cause it now late evening and it was still bleeding.
     I found out, need to stop spiting out, I have to start swallowing my eewww....After many gagging. I eventually was able to swallow it all in..yuck!!!
     Well, it's day 2 since I had it extracted. By the time I wrote this, I am feeling better and the blood stopped and I was able to remove the gauze. Slowly eat soft food.... What an experience. I'm not really a good writer, Trying to write and express the horrifying event is probably no clear. Forgive me.. But to sum it up. I was terrified, painful and not prepared. If you don't need to have it remove, DON'T.....

A day with me

Now going on six years unemployed! In 2005 my husband and I decided that it would be more beneficial for our kids (4 of them) if I stayed home and attend to them. I was happy to stay home and take part in the everyday stuff of our kid's lives. I found it to be very rewarding. Seeing my kids change over the years, not missing any school event was fantastic. I would not trade any of those moment for any thing. However, now all my kids are in school. Now a day, my typical day begins by waking up 6:45 am, wake all the kids up, ensure they are all ready for school. 7:45 am drop off the three younger kids (elementary), then the eldest, now high school.(how time flies). I get back to the house around 8 to 8:15 each morning. Make myself a cup of tea or coffee which ever I happen to fancy that morning. I relax a bit with my tea or coffee, watch a little morning news(usually depressing). Prepare breakfast and lunch for my other half. By the time I am done, it is now about 11 to 11:30. The day is already half gone. What have I accomplished? Still trying to figure this one out.. From the time I see my husband off til time to pick up my kids from school. I fill it with ensuring our finances are in order. Pay the bills, make appointments( pediatrician, dentist, and whatever else), and run numerous errands. Before I know it. Time to pick up my kinder, then the second grader, then fifth grader, lastly the high schooler. This alone takes up about 2 hours. Really? Yes, really!! Once everyone is home, got to make sure food is ready for them (not just food, it has to be food that are good for them. Try to get my youngest to eat vegetable is a whole story in itself). Everyone eats, rest for about half an hour to digest, then off we go...
Homework!! you should hear the excitement in my kids voices and the facial expression. One word. PRICELESS! guess what? I get this wonderful delight everyday! Now that everyone is situated, helping each individual with homework, this is where the challenge come in. The younger three, I can still help out, but the high school-er, not always. Especially math. Never was my strength. She is very bright and seldom does she need my assistant, but the few times that she need the help (math) we have to wait for dad to come home.. Do you know how this makes me feel. Stupid.... yes stupid...at least when it comes to math...By the time everyone is done with homework, it's now time for dinner. I feel like all I ever do is cook! I love food, I don't mind cooking, just don't like to clean....Well, after dinner and dishes, everyone wine down a bit, some relax by whatever means makes them relax... then bed times. A very difficult task trying to send these kids to bed. I would say, "light out", light goes out, now chattering, then laughs what must a mother do? Eventually, as the night continue, it begins to calm and I can finally put up my feet and relax.. Ready for bed? yes........Comes 6:45 am, lights brighten up the room, my day starts all over again.

My kind of WEEDS

     In the last year, I've been very interested in natural remedies so reading off I go, and I have to say, I'm not much of a reader. Thanks to the web, I searched for images "natural herbs" Wow... I was amazed of what I have found. I come to learn the names and benefits for many of the common every day plants which I thought were just weeds. This is when I realize what a treasure my backyard is. Today I have a whole new outlook on these once considered by me irritating weeds.
     I have a little garden, and the one thing I hated most about gardening was pulling out weeds. It use to be such a drag to pull out these weeds, made every effort to be rid of them, but nowadays I go looking for these weeds. I just find this funny somehow..
     Several months ago, two of my little nieces got burned with boiling water and I wanted to find out if there were any natural remedies for burns. I went to the local library and checked out A Field Guide to Western Medicinal Plants and Herbs in hope of finding something for my nieces. I found some and much more.
I love plants in general, there's just certain beauty about them, so whenever I see something that I think is beautiful or different, I find a way to get my hands on it. Many of my plants were given to me by others. These plants were given to me for ornamental purposes, not knowing the benefits to these plants. I quickly realized, many of the plant in this book which were beneficial one way or another, I have. Needless to say after learning about the benefits of these plants, I took better care of them. This book was very informative and illustration was well illustrated. You get a clear picture and less likely to make a mistake of identifying the plants.
My favorite weeds are: Dandelion, Plantain, and Burdock just to name a few. These grew all by themselves in my backyard. Yay.....

LOST

In one instance, two wonderful brothers gone, leaving sorrow and heart ache.

On Wednesday, January 26, 2011 uncle N, one of my mom's brothers, he could not be a more gentle and kinder person, has passed on. It was known to most of us that uncle N has had may health problems at his young age, however, this did not make the news any easier to bear or hear. Families and friends from far and near comes to say their final good byes. My mom called to see if I will be there. Of course..

On Thursday, January 27, 2011, My other uncle (T) who is the eldest of my uncles, flew down from the mid west to see is decease younger brother. He went to the uncle N's house to get settle in, and planned on in the morning go to the funeral home to see his brother for the last time. Meanwhile, at the house, somcuh commotion, never a moment of calm. There are people asleep, as well as those who are awake doing whatever it is they are doing. Uncle T was sleeping, resting for the days ahead. In the midst of all the commotion around the house no one really took notice of what was going on, especially those who are asleep or at least seems like it. Finally one of the boys who were still awake took notice, but was unsure of the matter, so he went to get the eldest son (S) of uncle N. S came over and checked on him, he too was unsure, uncle seemed like he was just sleeping. He leaves the room, somehow, he heart is unsettled, he checked on him again, noticed that uncle is sweating heavily, he went out to get a warm damp cloth. He went back to the room wipe off the sweat, then notice that the look on uncle's face was much like his father. He came to the living room in a panic, "Auntie, come uncle's face is like my dad!" All that heard his panic, rushed to the room where uncle was sleeping. Called out his name, no answer, tap and a little push on the shoulder, no movement or response of any kind. Now everyone's in a panic. Call 911, so someone did. We thought he had a chance to come out of it. He had a stroke. So many people had stroke and came out ok. We thought we would be so lucky.

Comes Saturday morning, gathering my kids prepping to head up to the funeral, little did I know about uncle T. Now at the funeral, busy hugging and crying with uncle N's kids, my mom said, "by the way uncle T is in the hospital" "What! What happened?" mom said, " he had a stroke". I didn't know what to say or how to respond, I went numb for a while. The worst thoughts went through my head, but I thought for a moment to myself, so many people had stroke, they lived to tell about it, uncle T will too...

That evening, I gathered up several people about 10 people and went to visit uncle T at the hospital, and left for the hospital. The news were encouraging. Once the group got to the hospital, my sister and I rushed in to the ICU to see how he was doing. One of uncle T's sun was there holding on to his hand. We asked him, Is he getting any better? His son (L) said, "yes, the doctors said he is making progress" That was good and encouraging. Seeing uncle T with all the tubes and wires,and there was nothing I could do for him, my heart just ached. A site I would not wish even on my worst enemy.

Returned home with my family, but couldn't forget the lost of uncle N and what his kids must be going through. Not too long ago, they lost their mother, now their father. Devastation is the only thing I could think of when I think of these now orphan kids, who are no stranger, but family.

Phone rang, my younger sister on the other end, she said, " uncle T might not make it, we're heading back to the hospital" I told her to go and call me back with an update. "OK" she replied. A little later, my brother called and said the same thing to me. I said the same thing to him. Several hours later, my brother called me back and said, "the doctors said there is nothing more they can do for uncle. His brain is no longer functioning, his heart rate is slowing down. The only thing keeping his heart beating is the machine. He is basically dead." I did not respond, just tears rolling down my cheeks and my heart aches even more. My eyes are still swollen from the lost of uncle N. Mom comes on the phone, she said, "this is the last we will see of uncle T. Don't cry." His death is so unexpected...How often does someone goes to attend a funeral, but never make it to the funeral, now your family is planning yours?

I write this because my mom's family is the only family that had enough love and shared with me. They were more like my fathers. I may have a father, but only in name. I will miss them dearly and may they find peace and love in God. The one thing that brings me some comfort is knowing that they are no longer and that they are in a better place now.

I pray that we all will see each other again, but in a place where there will be no sorrow, sickness, and death.

The Leg

One evening, around the time when the sun is going down, but you could no longer see the sun, just the grey in the sky. You could hardly see clearly. That evening, Mona decided to go out to the backyard to clean and wash her rug while the rest of her family stayed and watch television.
As she washes the rug, the door to that leads to the backyard was open slightly. Mona saw a leg from the knee down due to the limited light, the leg was a pale grey. Mona thought nothing of it.

Mona continue washing the rugs, she dried and hang the rug then went back inside the house. She was curious who came outside, but didn't say anything. When she got inside, she noticed that everyone was siting around the sofa and all so into the t.v. "Which of you kid came outside, but didn't say anything to me" Mona asked. The family all looked at her and said what do you mean which one of us came out. We've all been siting here watching the movie the entire time you were outside.

At this very moment, Mona have chilled climbing up her spine, every single hair on her body rose. She still have no clue as to what she saw, but without a shadow of doubt, she know what she saw. She kept quiet and told her family, maybe she thought she saw something, must of been mistaken......

Note: this is a true story.. althought I changed the name....

The Hotel

True Story.........

Vacation to Astoria, Oregon. The hotel will remain nameless, but everything that happened are all true....

Two couples and their kids went on vacation together to Astoria, Oregon. They all booked a room together with. First couple(Couple A) had one child, a little girl 3 years old. The second couple(Couple B) has two, a boy 7 years old and also a little girl 5 years old. Couple A took the King bed on the right side of the room, while the couple B took the one on the left, and their kids on the floor.

Late into the night everyone was soundly asleep . Suddenly, child cried frantically. It was the 3 year old. Mom of the 3 years old awoke from her child's cry. "What's the matter?" shed asked.

And..... This is what the child had to say....

"I saw...something. I saw...Chucky's arm.i-i-it was on top of you Mommy. Then it [Chucky] went to uncle and their bed and just stopped and stared at them.....th-th-then it ran out of our room all of sudden. When i got up to see where it went the door was left open. The one leading outside."

The child then looked at her mother....

"Mommy......do you think he's gonna come back and hurt us?? Ca-ca-can you go and close the door?"

The Mother then got up and quickly, turned on the light then went close the sliding door. The Mother too frighten to go back to sleep turned on the t.v trying to take her mind off of what just happened. The Mother looked around to see if any of the others were awake, but all of them were still sound asleep.

Once daylight broke, everyone had gotten up and packed up to leave the hotel. The Mother of the 3 years old then asked other adults...

"Why didn't any of you wake up last night? Did any of you not hear the commotion going on? Didn't you here my daughter crying?"

The others just awkwardly looked at each other. The other Mother replied...

"Well I don't' know about the others, but I did hear you...but...I was just too scared to open my eyes. I was awake I just kept my eyes shut and pretended to sleep."

"Some friend you are..." replied the 3 years old's mom

After this event the families never returned to that very Hotel.
